Dear Friends,
In 1928, my family opened a small meat market in Morrilton, Arkansas where my father would
deliver meat to customers on his bicycle. Customers depended on and trusted Petit Jean Meats
to provide the highest quality products money can buy. Today, the fourth generation of Ruff
family members continue to use only the best cuts of meat, quality ingredients and time tested
smoking processes as we did back then, to ensure what ends up on your family table is simply
delicious…every time.
We hope that you will consider us when celebrating the holidays with your family, or when you

Petit Jean Meats has been a tradition in my family for more than 80 years, and I hope that we

Petit Jean Meats started as a small retail meat market
in 1926. In 1922, Felix Schlosser immigrated to Arkansas
from Germany to be near relatives and find a better life.
He had learned the butcher trade in his native land, and
began working in the meat packing industry in Little
Rock. In 1926, he moved to Morrilton to be near his
widowed cousin, Mary Ruff.
He opened a small retail meat market, and Mary’s two
sons, Edward and Lonnie, began making home deliveries on bicycles after school and on weekends. The Ruff
brothers eventually came to manage what is now known
as Morrilton Packing Company.
Today, the company is worlds removed from the small
meat market Felix Schlosser began decades ago. But yet,
so much has remained the same. It is still owned by the
same family. Ed’s son David serves as President and CEO
and is joined by his sons, Edward, Travis and Charles.
Even though the smoking process occurs
in climate-controlled smokehouses, the
bacon and hams are still smoked for 18
hours with real burning hickory.
While Felix Schlosser might have never
dreamed his company would become what
it is today, there is one thing he would still
recognize immediately, that is the taste.
“We still do things the old fashioned way,
which gives our meats the old fashioned
flavor,” said David Ruff. “We don’t use
anything but the best quality meats and
the best quality ingredients. So if you’re
looking for a great hot dog, a great ham,
bacon or a great smoked sausage with

Heat a stock pot on medium
heat. Coat the bottom of the
pot with about 1 tablespoon of
olive oil.

Once the vegetables get a little
brown, add the beans to the pot.

bay leaves, pepper and cayenne
pepper to taste. Do not add
salt at this point; it will make
the beans take longer to cook.
I also use about 2 teaspoons of
epazote, a Mexican herb that
reputedly makes beans easier
to digest. This is optional, or
you can substitute oregano for a
similar flavor, if
you like.

turn down to medium-low heat,

tilted so steam can escape and

Remove the bone from the pot.
Taste the beans and add salt and

3 heaping tablespoons mayonnaise
INSTRUCTIONS
In the bowl of a food processor, place the ham slices which
have been roughly chopped (large pieces). Pulse 5-8 times
just until the ham is coarsely chopped. Do not puree.
Add in the hard boiled eggs and pulse 2-3 times; Add in the
dill relish and the mayonnaise. Pulse just until blended.

How long can you freeze a ham?
Our products can be safely frozen for up to one year.
Hickory Smoked Bacon
No question about it, Petit Jean knows how to do bacon the right way. We use only the leanest cuts, which
yields a lot more meat out of the frying pan. While others use liquid smoke, we put our bacon in the smokehouse, giving it a treatment similar to our hams. One other thing: you won’t find any paper thin bacon in
a Petit Jean package! We cut our bacon thick, the way it ought to be. Try our bacon once and you will be a
customer for life!

How long can a ham be kept in the refrigerator?
Hams that are vacuum sealed can be kept in the refrigerator for up to
three weeks. When the vacuum seal is broken, the ham needs to be eaten
within 7 days.
Does the ham have to be cooled?
All of our products need to be kept in the refrigerator or freezer.
How many people does a ham feed?
Depending on the weight, our bone-in hams feed 25-40 people – Small 25,
Medium, 30, Large, 40. Our EZ Carve ham (boneless) feeds 25. Remember
to increase this number for a buffet and decrease it for a sit-down meal.
How do I cook the ham?
All of our hams are fully cooked and do not require additional cooking.
To heat through, heat for 10 minutes per pound at 325 degrees. You may
optionally add ¼ cup water to the pan.
What is the difference between an EZ Carve Ham and a Bone-In Ham?
The only difference between the two hams is that we have removed the
bone from the EZ Carve fore easy slicing.
Are your hams spiral sliced?
We offer both spiral-sliced and ready-to-slice hams. Pick your favorite!

When you place an order you have three shipping options:
Standard Shipping is included in the price of every order. Using this option, we will send your order
using either Ground or 3 Day Select®, depending on the destination, for all packages that can arrive
at their destination within two or three days. This option covers most locations within the U.S. An
additional charge of $20 will be added to each item shipped to Alaska or Hawaii. Please note that our
Standard shipping requires three business days in transit. This means you must place your order no
later than noon (Central Time) (Holiday Orders must be placed by 8:00 a.m. during Nov. 15 - Dec. 31)
on Tuesday to be sure it arrives by Friday to avoid sitting in a shipping warehouse over the weekend.
All Standard shipping orders placed after this cutoff time will be shipped the following Monday. If you
want your package to arrive sooner than 3 days from the time you place the order, you must choose
one of the other two options or call us to make special arrangements.
Two Day Air delivers your package within 2 business days. All 2-Day shipping orders must be placed no
later than noon (Central Time) (Holiday Orders must be placed by 8:00 a.m. during Nov. 15 - Dec. 31) on
Wednesday to be shipped that week. All 2-Day orders placed after this cutoff time will be shipped the
following Monday.
Overnight/Next Day Air delivers your package on the following business day. All Next Day orders must
be placed no later than noon (Central Time) (Holiday Orders must be placed by 8:00 a.m. during Nov.
15 - Dec. 31) on Thursday to be shipped that week. All Next Day orders placed after this cutoff time will
be shipped the following Monday.
