York, Kelly Chen is one of the leading actresses

The Club des Chefs des Chefs is an informal club of the personal chefs of the world’s heads of state. The prestigious guest
list at Amber incorporated 25 top chefs from the club, including Cristeta Comerford, chef to President Obama; Mark Flanagan,
chef to Her Majesty Queen Elizabeth II; Jérôme Rigaud, Executive Chef to the Kremlin; Bernard Vaussion, Chef to President
Sarkozy of France; and four chefs from the Chinese Great Hall of the People.
The Chefs des Chefs shared culinary preferences and anecdotes from preparing fine cuisine for the world’s most powerful
leaders, and indulged in a sumptuous menu specially created for the occasion by Richard Ekkebus, himself a former member
of the exclusive club.
The bathroom is fitted with a stunning seven foot
round bathtub and rainforest shower. Guests
also can look forward to the added indulgence of

The L600 Executive measures 600 square feet

A Platinum welcome for Hervé Pennequin
Amber is truly delighted to welcome new head sommelier Hervé Pennequin. Recognized by his peers as one of the
best sommeliers in the world, his long list of achievements over a 20 year career includes earning 3rd place in the ‘Best
Sommelier of the World’ competition in 2004.
A native of Lille, France, Hervé’s interest in gastronomy started at the age of fourteen in a culinary school in France
where he discovered his true passion and talent was in wine. He won ‘Best Young Sommelier of France’ in 1989, and
then embarked on a wine career in Michelin-starred restaurants in Paris, working alongside star chefs such as Philippe
Groult and Alain Senderens, followed by high-profile restaurants in Los Angeles and New York.
Topping his list of favourites are Pauillac, Saint Emilion, Champagne, Riesling, Syrah from The Rhone Valley, and Pinot
Noir from Burgundy and Central Otago.

Peter Michael Wine Dinner

In 1982, Sir Peter Michael established the Peter Michael winery on a square mile of rocky volcanic ridges in Mount St Helena in
Sonoma County, California. From the beginning, the wine growing philosophy was modelled on French tradition: the vineyard terroir
would be the single most important feature; the wines would be elegant rather than overstated; and there would be a 100 year
commitment to the development of a great estate.
Given this commitment to the product, only a limited quantity is made, but diners at Amber have the opportunity to sample wines
from this amazing estate in the company of owners Mr and Mrs Paul Michael on 21 October. Mr and Mrs Michael will present the
history of this exclusive estate, together with 7 of their most celebrated vintages such as the 2008 Ma Belle Fille Chardonnay and
2004 Les Pavots.

For the last 35 years, limited stocks of Veuve Clicquot’s finest vintage champagnes have been kept in the house’s private cellar, the
Cave Privée in Crayeres. Each bottle is individually numbered on the neck collar, and the back label carries disgorgement details
including the date, the total number of bottles disgorged and the residual sugar in the dosage liquor – these are amongst the most
exclusive champagnes in the world.
This unique collection of rare vintages will be presented for the first time ever in Hong Kong when Dominique Demarville, Cellar
Master for Veuve Clicquot, opens the doors to the famous Cave Privée on 26 October at Amber for one night only. Monsieur
Demarville will present the 1980, 1990, 1978 rosé and 1989 rosé, paired with the two Michelin star cuisine of Chef Richard Ekkebus.

Comte Audoin de Dampierre is an outstanding small house that has been associated with producing fine champagne for over 700
years. In the constant quest for quality, only Grand Cru and Premier Cru grapes are used, producing a range of cuvèes, including
the Cuvèe des Ambassadeurs Premier Cru, which are served in the French presidential cellars and French National Assembly, as
well as the Spanish court and 42 French embassies around the world. Comte Audoin de Dampierre champagne is known as a luxury
champagne only for royalty, heads of state and those who can afford it.

Changing of Seasons
The Oriental Spa
With autumn here and winter just around the corner, it’s time
to start thinking about the changing needs of our skin. While
we may have spent all summer wishing it was less humid,
we should also remember that with less humidity comes
drier skin which can lead to cracked skin and itchiness too
sometimes. Our Spa Director, Derek Long, has some tips on
how to best combat the changing needs of your skin.
Drink lots of water: Hydrate your skin from within by drinking
at least 8 glasses of water a day. Carry a reusable bottle
wherever you go. Herbal tea is another option for those who
don’t like water or want something hot. Here at The Oriental
Spa, we love the MO ginger tea.
Don’t spend too long in the shower or bath: Long showers/
baths will wash off the skin’s natural oils, leaving skin
dehydrated. Try to limit showers/baths to 5-10 minutes in
winter and use a gentle body wash instead of harsh soaps
which may further strip your body of all natural oils.
Bath oils: Skip the bubbles which can also dry out your skin.
Instead, add a few drops of bath oil into your warm bath
which will leave a protective barrier locking moisture into your
skin when you get out. Our favourites include Aromatherapy
Associates Relax Bath and Shower Oil.
Moisturise: After a shower or bath, pat your skin dry with your
towel and then moisturise while still damp to lock the water in
the upper layers of the skin and prevent it from evaporating.
For your face, apply toner, then moisturise before the toner
dries off.
No licking: Don’t lick your lips when they’re dry as it’ll dry
them out more. Lips can often become dry and even crack in
winter. Keep our Sara Happ Lip Scrub and Lip Slip handy for
a quick and luxurious lip fix.
The Oriental Spa will be launching some new products and
treatments to protect and nourish your skin through the cooler
months.

Morrocan experience for women, and a perfect way to prepare
the body before any massage or facial treatment. An ancient
healing ritual, carefully selected natural mud is prepared for
application by your therapist to your face and body within the
Rasul chamber, which is heated at 38ºC. The heat dries the mud
and allows your skin to draw out impurities from the body. After 10
