THE ONES YOU LOVE, AND THE PEACE THAT GOES WITH IT
The last thing that is written in each issue
of the Public News is my little column, Letter
Rip. The process in getting to that particular
last thing is making sure the paper is full,
laid out correctly and any errors are caught.
Admittedly, I’ve missed
some but for the most
part I’ve been pretty satisfied with the results.
I also want to make
sure that all the writers
are represented well.
They all do a very fine
job reaching out to the
community and helping
give them a voice. Reviewing the growth and
Ken Petty influence of the PN (Public News’ official nick
name) I have discovered that a new writer
joins up with the Public News every issue. I
feel very blessed to have these individuals
helping forward effort.
This issue marks the second time within a
month that we have put together an 18-page
publication. We’ve begun to expand our music
coverage as well as our film and dining sections. The art section has also shown to be a
strong voice in the community. The Public
News has much to be thankful for and hope
you appreciate the efforts of Bart Pearston,
Nick Rama, Rosanne Friedman, Paul Van
Deusen, Jamie Alvear, Mark Crampton and
Philip Shrei. Not only have they provided
great content for the PN, but they represent the
best of go-getters looking for the underserved
and underpromoted aspects of this community
that we call North Houston. Without missing
anyone, there have been others who have
written small commentaries, submitted music
listings, asked questions in the Mail Bag, and
in other ways contributed to the success of the
Public News.
As a community of writers, editors, readers
and advertisers, we hope that you are taking
the time to visit, call on and do business with
all the companies that advertise in the PN. We
also hope that you take the time to write us a
note from time to time. Let us know how we
are doing and let us know what we should be
doing to make this newspaper better.
The goals and aspirations of everyone connected with the PN is a never ending and an
always expanding quest for being better and
achieving more. I just wanted to take the time
to say a quick thank you and to point out those
who have made a difference over the course
of our existence in serving the greater good in
the marketplace.
Lastly, I need to thank the one person who
puts up with my pursuit of newspapering, my
bride. Without her support and encouragement, this modern version of the Public News
would have never launched.

and Chardonnay varietals. Founder Justin
Hunnicutt Stephens will be in attendance
at the event to present his wines and the
Hunnicutt story.
Guests will enjoy the sounds of Maydwell Musical Group while sampling
Hunnicutt wines and hors d’oeurves during
the reception. A seated dinner by Fleming’s
Prime Steakhouse & Wine Bar immediately follows the reception. Fleming’s has

San Antonio Institute
of Texan Cultures
hosting exhibit on Sikhs
The Institute of Texan Cultures (ITC) in
University of Texas at San Antonio will host
an exhibit ‘Sikhs: Legacy of the Punjab’ from
February 21 to January three next.
Developed by Smithsonian Institution and
sponsored by the Sikh Heritage Foundation,
it features a collection of traditional Sikh art,
information
on the cultures history and beliefs, artifacts
such as ceremonial weapons and armor, and a
model of the Golden Temple. March 21 will
be Sikh Family Day, offering hands-on opportunities to learn about the Sikhs and their
traditions.
Religious statesman Rajan Zed, in a statement in Nevada today, commended ITC for
sharing the rich Sikh heritage with the rest
of the world through this Sikhism focused
exhibition. Sikhs had made remarkable contributions to the world, nation and society and
these needed to be highlighted, Zed added.

Society of Hinduism, pointed out that world
needed to have a broader and more inclusive outlook about religion and urged major
museums/art-galleries of the world to organize
more such exhibitions.
The ITC in downtown San Antonio gives
voice to the experiences of people from across
the globe who call Texas home and Angelica
Docog is its Executive Director. ITC is a component of The University of Texas at San
Antonio whose “Core Values” include dialogue and inclusiveness. Ricardo
Romo is the President.
Sikhism is fifth largest religion in the world
and Sikhs believe in one immortal Being; Ten
Gurus, from Guru Nanak to Guru Gobind
Singh; the Guru Granth Sahib; the utterances
and teachings of the ten Gurus; and baptism
bequeathed by the tenth Guru. Personal contact with Sikhs usually impresses the outsider
with energetic hospitality.

City Of Huntsville Wins Second
City Planning Award
Huntsville TX - The City of Huntsville has
been honored with a second award for its
Harnessing Huntsville’s Potential Report. The
result of the H-GAC Housing and Economic
Development Case Study and conducted as
part of the Our Great Region 2040 project, the
plan is the recipient of a 2015 National Merit
Award for Outstanding Small Town or Rural
Plan from the American Planning Association’s Small Town and Rural Planning (STaR)
Division. The City of Huntsville’s project
partners were the Houston-Galveston Area
Council (H-GAC), Design Workshop, and
Franklin Associates.
Harnessing Huntsville’s Potential outlines a
strategy for the city to capitalize on development opportunities where land is available.
The study also provides a clear framework for
addressing other priority issues, such as creating affordable housing options; increasing and
diversifying the labor pool; and promoting
business development, retention, and expansion.
APA’s STaR Division Awards Committee
informed the City that the case study plan
was chosen for a Merit Award because of its
unique case study approach and that the committee had been impressed with the breadth of
strategies outlined in the plan, the extensive
business involvement, the way the plan was
laid-out, and how the images helped make the
plan user-friendly.
H-GAC included the following in their
information on the plan, “Our Great Region
2040 is a high-level plan that presents big
ideas and proposes strategies to move the
H-GAC region toward achieving the vision
of being one of the world’s greatest places
to live, work, and succeed by the year 2040.
During the development of the plan, six case
studies were selected from a variety of entities
to examine overarching issues of regional importance. Together, they provide a tool box of
actions and practices that can be used by other
communities across the region as they respond
to similar challenges and opportunities. Case
studies were conducted in Bay City, Brazoria County, along Cypress Creek Greenway,
Galveston, Houston, and Huntsville.

Spring Break Activities at the
Huntsville Public Library
On Monday, March 9, the library will have a
preschool movie at 10:30 a.m. in the Children’s Room. This movie is appropriate for
preschool ages and is rated G.
The library will celebrate Teen Tech Week
beginning with Go Animate Photography on
Monday, March 9th and an Audacity Audio
Editing Program on Tuesday, March 10th.
These classes are appropriate for ages 13-17.
Both classes are from 2:00-3:30 p.m. in the
Community Room.
On Tuesday, March 10th at 10:30 a.m. there
will be a live Candy Land game in the Community Room. This game is for all ages.
The library will have its regular story time
on Wednesday at 10:45 a.m. The theme will
be St Patrick’s Day and Rainbows.
Also on Wednesday afternoon at 2:00 p.m.
in the Community Room, there will be a
special program just for Spring Break, featuring Belinda Henry, The Creature Teacher.
During this program Creature Teacher will
feature eight exotic animals, including Chester
the Hedgehog, Lilo the Sugar Glider, Paisley
the Prairie Dog, Spice the Chinchilla, Slinky
the Ferret, Scooter the Giant African Spurred
Tortoise, Bullwinkle the Python, and Dino the
Bearded Dragon.
The library will offer a teen craft activity,
Altered Books, on Wednesday, March 11th at
3:30 p.m., in the Community Room. Altered
Books uses a variety of art mediums to create
an art journal.
There will be a special Preschool craft time
with sensory bins on Thursday, March 12th
at 10:30 p.m. Take the pressure off and let
someone else provide the fun and messy crafts
today! Dress for messy play (craft aprons will
be provided for the children as well).
Thursday’s Teen activity will be clock making from old LPs and CDs. The activity will
take place in the Community Room at 2:30
p.m. on Thursday, March 12th.
Also on Thursday, March 12th will be the
monthly Family Movie Night at 5:30 p.m.,
sponsored by Texas Children’s Health Plan.
All movies are rated G or PG and complementary drinks and popcorn will be served.
On Friday, March 13th, the library will have
an Elementary Craft at 10:30 p.m., on making
Lava Lamps. This activity will be in the Community Room and is for children ages 5-12.
The last Spring Break event for teens will
feature a movie marathon from 12:00-5:00
p.m. on Friday, March 13. Complimentary
drinks and popcorn will be served. Movies
will be appropriate for teen audiences and will
be rated PG or PG-13.

group of citizens and staff and the project
partners who produced the award winner by
reaching out into all parts of Huntsville.
“I am very proud of what our community accomplished with this plan and am thrilled that
all our hard work is being recognized with this
national award.”
The plan was previously awarded the
Waves of Change 2013 Long Range Planning
Award by the Texas Chapter of the American
Planning Association in September 2013.
Aron Kulhavy, Director of Community and
Economic Development, echoed at that time
McKibben’s praise of the consulting firm that
helped garner the project the nomination and
win.
“The consultants did a great job guiding us
through the process and putting together a
great plan from discussions with the community,” he said. “In the end, we have a priority
list that includes some great ideas and projects
and a plan in place to implement them.”
WALKER COUNTY
HOSTS ANNUAL
TRASH BASH MARCH 7
Walker County Proud Communities
(WCPC), consisting of members from Walker
County, City of Huntsville Solid Waste and
Recycling, Texas Forest Service, Master Gardeners, and local businesses, is sponsoring the
20th Annual Trash Bash on Saturday, March 7,
2015, from 8 a.m. to noon. Annually, over 400
vehicles come through the three drop-off sites,
including the City of Huntsville Disposal and
Recycling Facility, Walker County Precinct
Barn 3, and Walker County Precinct Barn 4,
with over 150 tons of garbage, tires, and metal
(brush is composted and not disposed of).
The drop-off sites do not accept farm implement tires, concrete, bricks, burn barrels,
junk vehicles, liquids of any type, or vehicle
batteries (some rejected items may be handled
at the upcoming Household Hazardous Waste
Day in April). Over 100 volunteers from
the Walker County Sheriff ’s Office, Walker
County Community Supervision and Corrections, Master Gardeners, Walker County
Environmental Enforcement, Walker County
Commissioners, Try 2 Recycle, Waste Management of Houston, and the City of Huntsville Disposal and Recycling staff assist during
this multi-site event.
The purpose of Trash Bash is to provide
citizens an opportunity to dispose of materials
at no cost and to prevent illegal dump sites.

Painting in pastels is quick, easy, colorful, beautiful, very portable - and FUN! Handled correctly,
pastels will last many lifetimes and their pure
colors never fade, crack, or peel.
No stress and no pressure here to paint a masterpiece. You’ll learn how to turn “happy accidents”
into a part of your painting, or erase it - pastels are
very forgiving. Everyone will hjave a chance to
experiment with different techniques and materials, and you’ll develop your own unique style over
time.
For those who are new to art, you’ll learn the
basics of drawing and painting. For more experienced artists who are new to pastels, you’ll learn
the characteristics and techniques that are unique
to pastels. At the end of each class, you’ll have a
finished or nearly-finished painting to take home,
ready for framing.
Each student is encouraged to learn at their own
pace. You are welcomed to do a class-based painting from reference photos provided by the instructor, or bring in your own reference materials to
use. We may also paint from life, or go outdoors

Today I re-enrolled
my senior son at Spring
H.S. We withdrew him back in January in the
middle of the year just before all the scheduling mess in the district came out. We felt
almost compelled to take a break from the
overwhelming problems we were experiencing. My older two children graduated there a
decade ago in 2003 P.D. (pre-Draper). Eight
years ago, the district had one exemplary
school, 17 recognized, and 11 acceptable.
The only “unacceptable” under the existing
ratings system, out of 30 schools, was a brand
new high school which was included in the
district’s ratings due to not having a “baseline”
to show improvement against. That rating
system has been replaced by a “met standard”
or “needs improvement” system in the past
three years by TEA, so it is nearly impossible
to make direct comparisons. The new TARP
report released last week that replaced the old
AEIS report that existed from 1990 to 2012
does make some direct comparisons between
the district and both Region IV and the state.
Estimates that 80% of Westfield Seniors, 70%
of Dekaney seniors, and 50% of Spring seniors
have “scheduling irregularities” according to
TEA and district investigations reported in the
Houston Chronicle. Even with enrollment in
online credit recovery classes, night classes
and Summer School dozens of them will not
be able to graduate in May

produced a graduation minefield statewide. I
sincerely hope that this problem isn’t as prevalent elsewhere as it is in Spring ISD. I suspect
it is like an onion that the smell will only grow
as the layers are peeled. The indisputable decline at Spring ISD is due to a conglomeration
of factors. Identifying each one is necessary
to repair and prevent them in the future. I am
hoping Doctor Watson and all the other “Doctors” in Superintendent positions in the area
make a thorough examination, prognosis, and
an accurate diagnosis. The educational success
of our area’s youth depends on these people
and the school boards which hire them. Election of ex Board members like Ruth Houston,
who was terminated under scandal while
director of Special Education at North Forest,
highlights the need for community involvement. Dr. Draper’s recommendation of those
terminated from positions of leadership being
approved by the School Board makes them
contributors in this travesty.

In fairness to the first year superintendent who
has pushed for the termination of the “Old
Guard” at the top of the district, his recent
meetings deserve the opportunity to follow
through with the promises to fix the problems
that have been found to have existed for the
past 6-8 years.
Currently working as a high school
counselor, I can attest to the complications of
numerous graduation plans and requirements
under HB3 and HB5 during that timespan.
It is critical that the four year plans required
by law to be made in 8th grade statewide be
regularly checked for graduation compliance.
The stories of many colleagues and neighbors
of repeat courses being scheduled, credits
awarded to classes not taken or for credit by
exams never taken are plentiful. The increased
amount of non-academic responsibilities being added to high school counselors makes it
even more likely that these types of errors will
occur.

It’s that time of the year again. You made a
resolution for dramatic change, and by now
you have already fallen off the bandwagon.
This is the same story every year. February
brings the Super Bowl, Girl Scout Cookies,
Valentine’s Day and a
host of other things to
derail your best made
intentions. But why
do your New Year’s
Resolutions fail every
year? Simple, you try
to change too much too
fast! Your brain and
body’s biochemistry
are not geared toward
dramatic changes. We

and to change unhealthy
lifestyle habits we must do it slowly. Most
people have heard that it takes just 21 days to
make something a habit, but scientific research
has proven this to be a myth. Research from
the European Journal of Social Psychology
shows that it takes 66 days for the human
mind to turn a new activity or behavior
from practice to automaticity. Simple tasks
like drinking 8 cups of water per day could
become a habit in 21 days, but more complex
difficult tasks, like doing 50 sit-ups everyday
will take significantly longer to become a
habit. This is why most people fail if they rely
on this 21 day model. So, what can you do?
Here are a few tips I give clients to help
them create and achieve lasting change.
1) Monitor your lifestyle for a week and
make a list of the unhealthy activities that
you do and those healthy habits that you
want to do.
2) Rank these activities from simplest to
most complicated.
3) Start working on the easiest one first!
Once you have incorporated this into your
daily lifestyle without thinking about it, it
is a habit! Give yourself a pat on the back
(not a food reward)
4) Now, start working on the second activity on your list being careful not to forget
about your first one. We are building momentum here, adding activities, not doing
one at a time.
5) Continue adding activities from your
list each time you feel that you have successfully mastered the previous activity.
Its all about momentum!
Be sure you are not forcing the next activity
or making a huge effort to accomplish it when
you move to the next one. Remember the
research; it takes on AVERAGE 66 days. The
first few activities on your list may only take
21 days, but as you move down your list it
could take as long as 120 days for one activity
to become a natural part of your life.
If you find yourself falling off the bandwagon, you are progressing to the next activity
too quickly! Slow down and don’t rush this,
otherwise next year you will be back at square
one! Stay Positive and try harder!

THE ART GUYS PLAY
WITH THE WORLD

Marcel Duchamp put a snow shovel in a gallery, suspended from the ceiling and called it,
“In Advance of a Broken Arm” with that and his
Readymade series Duchamp wanted to put art at
the service of the mind. Critics point out that it
sold for millions of dollars and is in a museum;
Marcel Duchamp was having a little fun with the
business of the art world.
Marcel Duchamp put a urinal in a gallery,
placed it upside down, and signed it. He was
the first in placing a non art object in an art context created a whole new awareness of
both objects and the context. This happened in
1915 one hundred years ago. Dada was
the anti art movement that threw stones at the art
world but ended up extending the
definitions of what is possible in art. Surrealism
was first defined as the chance meeting
of an umbrella and a sewing machine, tickling
the conscious to tend to the subconscious, images
of Meret Oppenhiem’s fur lined tea cup become
iconic, again extending the possible in art.
I asked my 18 year old son, can you think
of anything that when you put it in a different
context it changes. Immediately he responded,
“Cows” Then he said, “Water” , then “Houses”.
Then he said, “Yeah, pretty much everything.”
We have a Houston treasure in the Art Guys.
They went into the lobby of a pricey office building and created an art space and an art event:
It’s a public space—they made it a private
experience
A light empty space—they made it a black
controlled space.
They controlled what the viewer would see.
They controlled where the viewer would
look.
Going into the black tunnel are Peek holes that
entice the viewer to stretch and bend to
look where The Art Guys have decided. And
what one finds are found objects—non- art
objects, objects that create new definitions when
placed together—echos of the surreal.
The viewers attention gives the miniature scenes
preciousness, and as Marcel
Duchamp would say, the work is
finished by the viewer.
The viewer comes from public
space to dark space and then to
a kind of vacation space—two
chairs, boots off, the chairs are
organized to view an outdoor
woodlands scene. Real leaves are
mechanically moving, in a surreal
manner, providing a somewhat
total relief from the city.
The Art Guys are playing with
the world. They are creating art
spaces where there were sterile
lobbies of the most pricey office
buildings in Houston It’s art at the service of
the playful minds of the Art Guys, it’s all good
fun, and it’s all Marcel Duchamp come alive as

New York style Pizza?
RC: I initially learned how to make great New
York style pizza in New York at Bleeker Street
Pizza. Of course I spend endless days and
nights since then traveling to NY and conferring with friends and colleagues from NY as
well as trial and error to perfect my dough and
sauce recipes.
RC’s NYC Pizza and Pasta
is one of my favorite local Pizza
Joints, but they do so much more
then their signature hand tossed
New York style pizzas. RC’s wings
are some of the best in the area,
with his signature sauces that are
so good. Owned by RC Gallegos,
his other location was so successful in Kingwood he decided
to open another location. Most
pizza joints that serve a multitude
of menu items, usually only do a
couple of them well.
RC’s has fantastic pastas, great appetizers,
original sandwiches (like the NY – TX Italian
Beef) and just recently introducing their take
on Deep Dish pizza. It is one of the best in
town. One will notice crazy creations like the
Bam Burgers and his not so famous (yet) Pork
Wings (more on those later). RC’s even has a
28” Pizza if you happen to be feeding a crowd
or party. If you haven’t been yet, you need to
check out this great fast casual restaurant. It
will definitely satisfy the whole family’s cravings with their many great menu choices.
Nick: What inspired your menu choices and
recipes?
RC: Honestly, my
experience in New
York inspired my
menu choices and
earlier restaurant.
New York pies are
very basic. Most
popular pizza in
NY: Plain cheese.
They just walk in
and order a plain
pie. My recipes
were initially
inspired by my
time in New York,
but have evolved
over the years to
accommodate the
tastes and feedback
from our guests.
Each new restaurant
I have opened have
been different in
kitchen design and
menu choices. Each
one has also been a step closer to the direction
of my final concept, which is this one we’re
sitting in here in The Woodlands/Spring market. A larger floor plan, larger kitchen layout
with a bar area and more parking. But each
community we operate in probably inspires
our menu more than New York ever did.
Since opening after my return from New York,
I have had to “Texify” many of the products
I cook and the way I cook them. Our original
pie was “too greasy” for my new guests, my
chicken wings were too crisp because they
were not breaded, and my Texas patrons didn’t
appreciate that. Also, the few toppings we
offered were not enough, nor gourmet enough.
Plus, my pizza cooks were having problems
cooking the pies straight on the stones. We
have gotten a great reaction to the custom
designed hand painted tables of different New
York scenes by a local artist who has done a
GREAT job, Cheri Paulson. She also painted
some fantastic custom pieces for both locations, The Woodlands and Kingwood, of Frank
Sinatra, The Rat Pack, Marilyn Monroe and
Central Park that adorn our walls. My goal in
designing the menu to take us into the future
was “diversification”. I want to be known for
MORE than just the best pie around. “RC’S is
more than just pizza.”
Nick: Where did you learn to make great
Nick: I heard you have won some pizza
competitions. Tell me about the competitions and what awards you have won?
RC: Yes, we have. My first award was a big
one. The Pizza Expo put on by Pizza Today
Magazine, in Las Vegas, is the largest Expo
for the pizza Industry. Well. I decided at the
last minute to enter but the competition was
full, so I asked them to put me on a short call
list if someone cancelled. Sure enough 3 days
before leaving for the Expo I got the call and
got a spot. I competed in March 2009 with
a plain cheese pie, no toppings, and won 1st
place in my region. It was like a big deal for a
little fish like me. Then in June 2009, I entered
The Texas Restaurant Association (TRA)
Best of the Southwest pizza competition in
Dallas, TX, and won 2nd place there with
our California Pie. I returned to Las Vegas in

2013 I went back and won 2nd place with a
pepperoni pie. These were all huge feats for
me, but the win

2015. I went to
New York to
compete at The
Caputo Cup.
Normally this
competition is
in Naples, Italy.
This is the 1st
year they have
held it in the
states, along
with a Summit. So I have
been serving an
authentic NYC
product, developed by me 12
years ago while
working in NYC and perfected over the years.
I competed against other pizzerias in NY
and won 2nd place in a competition that was
judged on presenting the Classic New York
Style Pizza, again with a plain cheese pie.
Nick: Your Wings

RC: So, Pork Wings
are something I
came up with over
5 years ago with
the help of a friend
who is a chef. I liked
to keep it new and
fresh on my menu.
My guests have been
going crazy for my
chicken wings so I
wanted to find a way
to expand on that al-

ready popular item and *poof* the Pork Wings
were born. These little gems are pork shanks
that we fry like a chicken wing and toss in our
famous wing sauces. By the way, all of our
homemade sauces are for sale at both restaurants; especially my homemade RC’S Spicy
BBQ Sauce. My customers’ favorite appetizers are still led by our wings, but our calamari
and Yankee Dip (spinach and artichoke dip)
served with Focaccia Bread are 2 other VERY
popular appetizers. We put a very different
spin on these 2 otherwise common appetizers.
Our calamari is served with a sweet Thai pepper sauce and consist of steaks julienned, hand
battered and lightly fried. Also, don’t forget
about our meatball sliders, homemade meatballs, and homemade gravy. (Marinara) Oh
yeah and you can’t miss our Bam! Burgers. I
take 100% beef and hand batter the patties, fry
them to perfection and toss them in our wing
sauce. We serve them like a burger with lettuce, tomato, onion and of course your choice
of Ranch or Bleu Cheese. Bite into them and
experience the wing sauce and Ranch or Bleu
Cheese, then see how the batter keeps all the
flavor and juice from the burger inside until
you bite into it. Bam! There’s the beef flavor.
Nick: I really like your Wallstreet Chicken
Pasta. What a great dish! What are some of
your favorite pasta dishes here?
RC: It’s hard to answer that question. It’s
like asking a parent which one of their kids
is their favorite. But I thoroughly enjoy any
of the pasta dishes with our homemade gravy
(Marinara). We have an off-the-menu Veal
Parmigiana that is to die for. Our Ryan pasta
dishes are phenomenal! Shrimp or chicken,
you choose. Our pasta Del Nonna has always
been, and still is, our best seller. Our homemade Alfredo sauce, made fresh to order,
and our homemade Marinara mixed together,
served with chicken, mushrooms and onions.
So sweet, rich and delicious!
Nick: RC’S is pretty famous for their
original crust, but do you have other styles
of crust? What are some of the others you
offer?
RC: Well, we have our whole wheat crust that
we offer as a hand tossed NY thin. But right
now Grandma pies are trending and growing in popularity. A ½ inch thick rectangular
pie that is built differently. It has cheese on
bottom, sauce on top EVERY Grandma is
topped off with EVOO and fresh basil. These
finishing products really enhance the flavor of
the pie. We also have our Sicilian Pies. These
have ALWAYS been popular, with a 1 ½ inch
thick, twice proofed, twice baked crust. Both
of these are made with our original award-

These are the qualities Zane Williams
sings about in his rootsy anthem “Texas
Like That”—-the title track of his 5th
studio album—-and so it comes as no
surprise that these are also the qualities on
albums on which every song is worth listening to over and over, and “Texas Like That”
is no exception to that rule. The album continues with the catchy and romantic “She
Is”, the toe-tapping “Just Gettin’ Started”,
and the fan tribute song “Here’s to You”,

stirring ballad “Jayton and Jill”, which is

is a classic old fashioned. This is one of the

Whitmeyer’s Distilling
Co. along with Houston area food blogger
Gristle&Gossip to participate in a double blind
bourbon tasting.
Whitmeyer’s Distilling Co., a family-owned
business located in the

little business park, is just
a stone’s throw from the
hustle and bustle of 1960.
Founded in 2012 by
brothers Travis and Chris Whitmeyer, along with
their father Wesley, these native Texans and military veterans are putting out some amazing whiskey. They are currently making six products:
Peach Whiskey, Single Barrel Bourbon, Vodka,
Moonshine Whiskey, Moonshine Reserve, and
Gin. The first four products are available for

In Texas, it’s not hard to find a winery or
brewery to visit. However, we now have craft
distilleries popping up all over the place, giving
us Texans lots to choose from when it comes to
sippin’ spirits. In September of 2013, new laws
were implemented that gave distilleries more
freedom to produce and sell in the state of Texas.
In the Houston area alone, we are fortunate to
have three distilleries within a 45 minute drive of
one another.
Why visit a distillery? Just like any local business, visiting an artisan distillery gives you the
advantage of sampling products directly from
the experts that are making it. These aren’t mass
produced spirits. They are hand crafted and
most of the time hand labeled by people with a

Upon walking into the small warehouse, we
were immediately greeted by Travis Whitmeyer.
A genuinely nice guy, Travis was eager to share
his love of distilling with the small group of
whiskey enthusiasts that had arrived to partici-
pate in the tasting. On
a table sat six unlabeled
bottles with varying
hues of rich amber. We
were instructed to score
each bourbon on a scale
of 1 to 25 in each of the
following categories:
Nose, Palate, Finish,
and Complexity/Balance.
I paced myself to
make sure I gave each
bourbon a chance to
showcase its flavor and
finish. Of the six, I enjoyed four of them very
much. Finally, once everyone had finished, the
participants and results
were revealed. The
six bourbons included
1792, Baker’s, Whitmeyer’s, Basil Hayden,
Garrison Brothers, and
Russell’s Reserve. The
winner by an overwhelming majority was
Whitmeyer’s Texas
Barrel Select, a soon to
be released bourbon.
With the bourbon tasting out of the way, we
were now free to taste the rest of the Whitmeyer
arsenal and as a special treat we got to sample
some uncut moonshine. My favorite products
are definitely the Moonshine Reserve and the
Space City Vodka. Mixed drinks are available for
$5 each. I recommend the Peach Whiskey with
a splash of Sprite or a Bloody Mary made with
Moonshine Whiskey.
What’s next for the Whitmeyer family? In
addition to celebrating their three year anniversary next month, they are planning to add several
new products and an additional still. They are
also looking to expand their distribution area and
in a few years, perhaps a new facility. You can
find Whitmeyer’s at the second annual Houston
Whiskey festival later this month or stop by on a
Saturday for a tour. Tours are held every Saturday at 2pm and 4pm and include samples of all
