Every Friday my kids and I have what we call "our date night". That's when we sit together and watch our favorite family friendly shows together. We watch American Idol, Dancing with the starts, So you think you can dance....The great escape. All shows that feature no sex, no violence, but instead feature people making real efforts to be successful at something. I want to share with my kids how important goals are and how much work goes into achieving them. We love our date night. We have our favorite people and we cheer like we actually know them. My other goal is to show my kids that while we always strive to win it's just as important to be graceful when we lose. It's important (in my humble opinion) that kids realize that they are not the center of the universe. That other people may have the same goal they do. That even with their best efforts the other person may come out on top, and when that happens that they respect the efforts of the other person and be able to congratulate the "winner" sincerely. These shows while very entertaining, help me make all those points as we watch the hard work that goes into a contest ending with only one winner. I am only chattering on about this because tonight instead of watching our usual "date night" show (this time of year it's So you think you can dance) we watched the opening ceremonies of the Olympic Games. I never miss the Olympics, and now we watch as a family. We cheer like mad for our team (The US Team) as this is our home, but we apply this rule.....even when our team does not take home the gold the team that did worked damn hard and earned that gold medal. This rule makes watching the games so much more fun. My kids (the oldest) now appreciates these people as athletes and people not just opposing teams. When they are amazing she is thrilled for them. Even if they are not on our team. Of course I hope the US team does really well, thankfully they always do. But, tonight I was thrilled to share yet another opening ceremony with my kids...our date nights must be working....she is really excited to see everyone compete not just "our team". Enough about me and my kids.....Let's cook shall we? Homemade Scallion Pancakes with dipping sauce ~ Adapted from the Food Lab Note: You can make this recipe without the food processor. Just stir the flour with a wooden spoon or chopsticks in a large bowl as you add the boiling water. After it comes together, turn it out onto a floured work surface and knead for five minutes until satiny and smooth. Place flour in bowl of food processor (see note). With processor running, slowly drizzle in about 3/4 of boiling water. Process for 15 seconds. If dough does not come together and ride around the blade, drizzle in more water a tablespoon at a time until it just comes together. Transfer to a floured work surface and knead a few times to form a smooth ball. Transfer to a bowl, cover with a damp towel or plastic wrap, and allow to rest for 30 minutes at room temperature, or up to overnight in the fridge. Working one ball at a time, roll out into a disk roughly 8-inches in diameter on a lightly floured surface. Using a pastry brush, paint a very thin layer of sesame oil over the top of the disk. Roll disk up like a jelly roll, then twist roll into a tight spiral, tucking the end underneath. Paint with another layer or sesame oil, sprinkle with 1/2 cup scallions, and roll up like a jelly roll again. Twist into a spiral, flatten gently, and re-roll into a 7-inch disk. Repeat steps two and three with remaining pancakes. Cook, shaking the pan gently until first side is an even golden brown, about 2 minutes. Carefully flip with a spatula or tongs (be careful not to splash the oil), and continue to cook, shaking pan gently, until second side is even golden brown, about 2 minutes longer. Transfer to a paper towel-lined plate to drain. Season with salt, cut into 6 wedges. Serve immediately with sauce for dipping. Repeat with remaining 3 pancakes.
