We’re JAQK Cellars. We’re a wine company with a slightly different take on things. In
addition to being dedicated to making great wine, we’re also passionate about something else: play.
For us, play includes the excitement of testing our luck—and tempting fate—at games
of chance. It also includes getting together with friends and enjoying each other’s
company. And a bottle (or two) of great wine can be quite helpful in that regard. So,

SONOMA COAST
VINEYARDS
The Sonoma Coast wine region is known for its cool climate and high rainfall relative to other
parts of Sonoma County. Our estate vineyards are exposed to extreme wind, cold and fog, resulting in Chardonnay with bright citrus aromas and flavors, with fresh, crisp acidity.

VINTAGE
2013 was a year of many gifts, including a mild growing season and rains that stayed away until
everything was picked. With a warm late summer and mild fall, the Sonoma Coast appellation
was lucky to have such an amazing growing season.
WINEMAKING
We hand-picked the Chardonnay grapes at night to bring them fresh and cool into the winery.
They were then whole cluster pressed directly to small stainless steel fermentation tanks to let the
grapes slowly turn into wine under ideal cool, controlled conditions. The wine is 85% Malolactic
complete, in order to maintain a racy freshness, and lees stirring in tank provided round mouthfeel and additional complexity. A mix of 30% new French and 10% American oak contributed
notes of vanilla, spice and butterscotch while allowing the natural fruit to shine through. We aged
on the lees for 9 months in order to extract the maximum richness from this wine.
WINEMAKER’S TASTING NOTES
Our High Roller Chardonnay is crafted for those who “go big”, at the dining table as well as the
game table. This hearty Chardonnay stands up and demands notice. It’s the perfect complement
to a succulent, buttery Maine lobster tail or the celebration in your comped suite after you’ve
made the house feel a little pain.
Aromas of tree-ripe Fuji apples, honeysuckle blossoms and sweet vanilla give way to a mouthful
of fresh pears, lime zest and orange blossom. Notes of French oak dominate the long finish.
