FRENCHMAN ETIENNE GUITTARD STRIKES GOLD IN SAN FRANCISCO, USA
In the 1850's, Etienne Guittard embarked on an arduous journey from France to America
during the California Gold Rush. In just a few short years, while still in his 20’s, this
adventuresome Frenchman struck gold on the rough streets of early San Francisco.
An experienced chocolate maker, Etienne had brought delicious French chocolate to
trade for mining supplies, but soon discovered that wealthy miners were willing to pay
premium prices for this elegant treat. Etienne sailed back to Tournus, France, where he
worked in his uncle's chocolate factory until he could afford to buy his own chocolate
making equipment. In 1868, he returned to San Francisco and opened Guittard
Chocolate on Sansome Street.
In no time, San Francisco became one of the great chocolate manufacturing centers in America, where
ships from exotic regions of the world brought their cacao beans to market. Of the original family-owned
companies that brought commerce & culture to the streets of early San Francisco, CA, Guittard Chocolate
Company is the only one that remains family-owned.
HORACE A. GUITTARD RELOCATES FACTORY IN BURLINGAME, CA
Horace's son, Horace A. Guittard, became President of the company in
1950 and relocated the factory to Burlingame in 1955. It soon became and
still remains one of the foremost suppliers of fine chocolate to acclaimed
professionals in pastry, confectionery and ice cream trades. Though
Horace A. was instrumental in bringing the company into the era of
automation, he continued to operate in the old-world tradition, producing
small, carefully tended batches of chocolate and working closely with
customers, tailoring products according to their needs. This visionary
approach placed the Guittard Chocolate Company at the forefront of
Guittard Factory, Burlingame, CA (1955) innovation for several American food trends.
INNOVATIVE EDGE EMERGES EARLY ON IN COMPANY HISTORY
One of Guittard's earliest and most important innovations was their proprietary
Guittard Sweet Ground Chocolate which may have been the forerunner of
today's trendy cafe mochas. Guittard milk chocolate chips, white chips and
super-sized chips were other notable innovations as was the idea of truffles,
which Guittard passed along to some of their confectionary customers.

“Strung around the world along the Equator (between 20ºN to 20ºS parallels of latitude), cacao growing regions lie in a
ring of fire (anillo del fuego in Spanish). We search this region to find the best cacao beans. Then we painstakingly
combine them to craft the ultimate blended chocolate flavors – E. Guittard Anillo del Fuego Blended Chocolates.” –

Cacao is grown in 34 countries around the world in Latin America, Africa and Asia principally in areas that
fall within 20ºN and 20ºS of the Equator. Each is highlighted in our map below. Other countries, such as
Honduras produce only very small amounts of cacao, much of which grows wild in the jungle.
Guittard Anillo del Fuego Blended Chocolates are made from the best hand-selected cacao beans we can
find from roughly 20 different cacao producing countries around the world.
SINGLE ORIGIN CHOCOLATES
Guittard carefully selects Trinitario type cacao beans
from this region. Long, slow, deep chocolate flavors are
accented by pleasant hints of peppery spice.
Cacao beans from Venezuela’s Sur del Lago region are
harvested from trees of Criollo and Trinitario heritage. In
this chocolate, complex, well-rounded chocolate flavors
are accented by subtle hints of red berry fruit.
