The company is now spread over a 26 ha wide estate and has invested in modern Henri, Philippe, Georges CHAVET in 1957 equipment in order to meet with new demands and standards. Yet, our passion has remained untouched and we are still proud to produce a high-quality wine in the respect of nature and tradition. In the Heart of France, about 11 miles away from Bourges, on the calcareous clay hillsides, the vineyard is planted on a kimmeridgean subsoil (limestone soils dating back to the early Jurassic period). It became one of the best wines served on the local lords’ tables, especially that of Jacques Coeur, who was King Charles VII’s Great Bursar. Jacques Coeur obtained the title of Lord and bought Menetou-Salon in 1450. This is where Sauvignon Blanc was originally grown. Indeed, it is in our Centre-Loire region that the best soil and climate conditions meet to offer you this unique wine. Pinot Noir It is a rare variety in the vineyards of the Loire Valley. Pinot Noir is the single variety for Menetou-Salon rouge and Menetou-Salon rosé. Because it is cultivated on our local soil and climate, it produces delicate and elegant wines. Yet, their delicacy always reveals a shade of aromas which vary from year and year and make each vintage unique. It is both fruity and bodied, and offers exceptional aromas of exotic fruits and flowers. In the mouth, it is full with a long finish, and finally reveals its flavour with persistent great aromas. Served as an aperitif, It will gently prepare your palate for the most delicate dishes, and beautifully suit whichever meal may be served with it (i.e. sea food, fish with sauce, warm starters, goat cheese, etc). The Menetou-Salon rouge, from the elegant Pinot Noir variety is ruby-coloured with a ripe-cherry and plum-scented bouquet. Supple and elegant, it is among the very few wines that you can equally enjoy whether you taste them young or after a few-year stay in your cellar. As a young wine, it perfectly suits all your meals, whereas after 2 or 3 years in the bottle, it will astonish you with the most prestigious meals. The Menetou-Salon rosé, also from the Pinot Noir variety, is delicate and elegant. It has a salmon colour and a subtle aroma. Very refreshing with a snack or during a barbecue party, it will be very pleasant with improvised meals and smart with exotic dinners. It is the quintessence of the A.O.C. MENETOU-SALON. The "cuvées "EXCEPTION It is another expression of our wines. Menetou-Salon Blanc Cuvée “Exception” is harvested after a 10-day delay. It is matured for 10 months on thin lees (25 % in oak barrels and 75 % in thermo-regulated tanks).These methods result in full-bodied and aromatic wines, with a long finish but still a classic Menetou-Salon. The Menetou-Salon Rouge Cuvée “Exception” matures in oak barrels during 12 months. We were the first estate in the Centre-Loire vineyards that was granted both qualifications for all our practices: "AGRICULTURE RAISONNÉE" (ENVIRONMENTALY FRIENDLY VITICULTURE: the only qualification given by the French Ministry of Agriculture) and "QUALI'TERRE" (provided by the Chamber of Agriculture). To offer you a better guarantee, safety, and traceability, we put in application the HACCP method. A sorting + recycling + valorisation system has been created for our waste, packages, by products and so forth. The quality of our wines arises from the harmonious blend between what nature gave us and our work. This is why we were the first winegrowers in our appellation who chose to practice the “thinning” (i.e., green harvest) that is, to bring the yield down by cutting the surplus bunches. Our parcels are grass covered to preserve the life in the soil and prevent erosion. We only harvest when our grapes are perfectly mature and after to a series of analysis completed by a certified laboratory. Our grapes are healthy because of these methods and a permanent technical follow-up.
