FROM THE MANAGER
Spring is just around the corner and so is a full lineup of Club
events. The Easter Bunny will make a visit to the Club April 12th.
Make plans to bring the entire family and remember little nibblers
4 and under eat free.
New carpet, dining chairs and window treatments have been installed on the east side of the Club. A new lunch menu will debut
in March along with the introduction of our 25th Anniversary
Menu. Additional details for this Thursday night offering can be
found on page six of this newsletter.

Recent improvements to the building include TV’s in the elevators, restripping of the
parking garage and new carpet in the garage stairwell area.
When dining at the Club, we always like to know you’re coming. Reservations help us
staff properly and prepare food in sufficient quantities to ensure every member receives
the service one expects of a fine private club. Even if you’re in the car on the way to
brunch, we’d like the opportunity to have your special table ready and waiting when
you arrive. Our dedicated staff wants to make every visit to the Club a special and
memorable event. Reservations will go a long way assisting us in this effort. On behalf

Europe. Wines from France, Italy, Germany, Spain and
Austria will be represented. Light hors d’ oeuvres will be
accompanied by over 20 wonderful wines.
A great debate raging in the wine world today is over the differences between wine coming from the New World versus the Old World. Much of
this arguing quickly becomes obscured by emotions. Wine has the ability to
create great passions. This in some way is proof of its greatness and importance to humankind. However, beyond the prejudices and rancor this discussion has some valid points of contention.
Old world wines come from the "classic wine making regions" in Europe.
New world wines come from everywhere else. The Old World can generally date their origins of wine production back to the Roman Empire

and beyond. Spans of time like this simply cannot be replicated by any

other means. Throughout this 2000+ year period growers were able to
figure out which grapes grew best and which areas of land consistently produced the finest quality. When the Roman Empire collapsed many of the vineyards were abandoned and so by natural
selection the grapes which managed to survive became the grapes that are still grown today.
Naturally the growers from these regions-France, Germany, Austria, Italy and Spain have some
pride in this history. Many growers are descended from families that have been tilling the soil for
generations. This type of history has its’ dangers in that it creates a kind of complacency, if it’s not
broke than why fix it kind of thinking. In this regard the advent of New World wines has been a
positive influence on the established order as they are compelled to compete with a broader market and changing tastes.

FROM OUR KITCHEN TO YOURS
Pesto is getting to be such a mainstream food in America that you
will find it in many different recipes and in many different applications. Some of the more common types are spinach, cilantro, sundried tomato and parsley; and, of course, the traditional is with basil.
The name is contracted from Pesta, meaning to pound or to crush.
The ancient Romans ate a cheese spread called “moretum” which was
made from basil. Basil originally came from North Africa, although it

was domesticated in India. Ligurians around Genoa took basil and

adapted the recipe we know today by grinding garlic, parsley grated
hard cheese and pine nuts with a little olive oil to form “pesto”. In France, the dish
evolved into Pistou, the same pesto recipe but without pine nuts. Let me leave you
with a recipe you can try in your own kitchen. It stores well in your refrigerator for
future applications.
Pesto
INGREDIENTS
3 large garlic cloves
½ cup pine nuts
2 ounces Parmigiano-Reggiano,
coarsely grated (2/3 cup)
1 teaspoon salt
½ teaspoon black pepper
3 cups loosely packed fresh basil
2/3 cup extra-virgin olive oil
½ cup grated cheddar cheese
PREPARATION
With food processor running, drop in
garlic and finely chop. Stop motor
and add nuts, cheese, salt, pepper and
basil, then process until finely
chopped. With motor running, add
oil, blending until incorporated.
Makes about 1 1/3 cups
