Baked Apples and
Gold Nugget Squash
1 Gold Nugget Squash
2 Golden Delicious Apples, 1” cubes
2 Tbsp butter
2 Tbsp GNFF Honey
1 tsp Cinnamon
1/2 tsp Nutmeg

Pre-heat the oven to 400.
Cut the squash lengthwise and remove the seeds. If needed, cut a small, flat spot on the back of each half to help them lay
flat. Place the squash, cut side up, in a baking dish. Pour enough water into the pan to cover the bottom.
Toss the apple chunks with the honey, cinnamon and nutmeg. Fill each squash half with the apples and top with a Tbsp of
butter. Bake until the squash is tender – about 40 minutes.
Enjoy for breakfast or dessert!

The farmer-owned All-Natural Beef Co-op represents
about 25 third and fourth generation Kansas and
Missouri family farms all dedicated to upholding the
standard of sustainable farming and humane
treatment of animals.
The co-op has embraced each step of the food supply
chain – raising the animals, processing them at a local
plant (owned by co-op members and GNFF founders
and Diana and Gary Endicott) and selling meat directly
to stores.
After processing in the plant in Uniontown, Kansas,
beef is dry aged naturally. This old fashion, slow aging
beef process is compared to the quality of a proper
aged bottle of wine. It gives the beef an exceptional
juicy and robust flavor and superb tenderness.
Strict procedures allow the co-op to trace every cut of
meat, including ground beef, back to its source. GNFF
ground beef comes from ground chuck and ground
round, which has been de-boned by hand. These
efforts produce superior beef with great flavor.

Nugget squash has the
appearance of a small
Gold Nugget Squash's orange
flesh is high in beta carotene,
the source of vitamin A.
Available year-round - best
season is late summer through
early winter. Gold nugget squash
will keep in cool, dry storage for
up to a month.

Pepper Jelly
This week we had extra red jalapeno peppers, so we added them to the CSA bag as a bonus!
Pepper jelly is a great way to use extra peppers. It
goes well with cheese and crackers or as a glaze for
pork and chicken. Here are links to two great recipes.

Nancy O’Connor, there is an intriguing combination of apples, onions, and jalapeno pepper in
a salad that’s delicious served as a side dish with Mexican or Indian food. Apple Salad with

Nutritional Spotlight – Green Cabbage
Cruciferous vegetables, especially cabbage,
top the list of cancer-fighting foods. This is
due to their antioxidant richness, antiinflammatory power, and high level s of
glucosinolates, especially sinigrin.
The sinigrin in cabbage can be converted
into allyl-isothiocyanate. This isothiocyanate
compound has shown unique cancer
preventive properties with respect to
bladder cancer, colon cancer, and prostate
cancer. Isothiocyanates help regulate
inflammation by altering the activity of
messaging molecules within our body's
inflammatory system, and they improve our
body's detoxification system and leave our
cells with a smaller toxic load.

“Wow - joining the CSA is one of the best
decisions I have ever made. It's a real
bargain given the quality and quantity. I
am actually sad that it is coming to a
close. I will have to be more diligent
about seeking out local growers this fall.
I rarely eat hotdogs but I thoroughly
enjoyed the hot dogs we had this
summer. The red pepper relish was the
cherry on top.The watermelon was the
best I have ever had!
I would like a little less cheese - It has all
been very tasty, especially the pepper
farmhouse cheese. I just don't eat that
much cheese. I suppose if I was trying to
feed more than 2 people I would use it
up faster.
Green beans would be great - but maybe
not a good year for them.
