Cut the squash lengthwise and remove the seeds. If needed, cut a small, flat spot on the back of each half to help them lay flat. Place the squash, cut side up, in a baking dish. Pour enough water into the pan to cover the bottom. Toss the apple chunks with the honey, cinnamon and nutmeg. Fill each squash half with the apples and top with a Tbsp of butter. Bake until the squash is tender – about 40 minutes. Enjoy for breakfast or dessert! Know your Farmer, Know your Food Good Natured Family Farms All-Natural Beef Co-op, Sabetha, KS The farmer-owned All-Natural Beef Co-op represents about 25 third and fourth generation Kansas and Missouri family farms all dedicated to upholding the standard of sustainable farming and humane treatment of animals. The co-op has embraced each step of the food supply chain – raising the animals, processing them at a local plant (owned by co-op members and GNFF founders and Diana and Gary Endicott) and selling meat directly to stores. After processing in the plant in Uniontown, Kansas, beef is dry aged naturally. This old fashion, slow aging beef process is compared to the quality of a proper aged bottle of wine. It gives the beef an exceptional juicy and robust flavor and superb tenderness. Strict procedures allow the co-op to trace every cut of meat, including ground beef, back to its source. GNFF ground beef comes from ground chuck and ground round, which has been de-boned by hand. These efforts produce superior beef with great flavor. Raised on local family farms (on open pastureland) from birth to processing. Fed a grass-based, vegetarian diet (no animal by-products). Grain-fed (50% grain) for 6090 days before processing. Free from sub-therapeutic antibiotics at any time. Free from growth hormones. Buy Fresh Buy Local Workplace Wellness CSA Good Natured Family Farms pumpkin in shape and color. It goes well with cheese and crackers or as a glaze for pork and chicken. Here are links to two great recipes. This is due to their antioxidant richness, antiinflammatory power, and high level s of glucosinolates, especially sinigrin. The sinigrin in cabbage can be converted into allyl-isothiocyanate. This isothiocyanate compound has shown unique cancer preventive properties with respect to bladder cancer, colon cancer, and prostate cancer. Isothiocyanates help regulate inflammation by altering the activity of messaging molecules within our body's inflammatory system, and they improve our body's detoxification system and leave our cells with a smaller toxic load. For maximum health benefits, make cabbage a staple in your diet! Source: whf.com CSA Member Comments “Wow - joining the CSA is one of the best decisions I have ever made. It's a real bargain given the quality and quantity. I am actually sad that it is coming to a close. I will have to be more diligent about seeking out local growers this fall. I rarely eat hotdogs but I thoroughly enjoyed the hot dogs we had this summer. The red pepper relish was the cherry on top.The watermelon was the best I have ever had! I would like a little less cheese - It has all been very tasty, especially the pepper farmhouse cheese. I just don't eat that much cheese. I suppose if I was trying to feed more than 2 people I would use it up faster. Green beans would be great - but maybe not a good year for them. Thanks so much!” Suzanne Hunt, KU Medical Center “Thank you to everyone at Good Natured Family Farms - especially the participating farmers. It has been an unforgiving summer and it’s sometimes hard to fully appreciate that when I sit in an air-conditioned office all week and just drive over to pick up my bag of goodies on my way home. I am truly grateful for the hard work everyone is putting in to make sure that we continue to have a bag full of deliciousness every week! I know the farmers are experiencing dire conditions and I can only imagine the kind of exhausting and frustrating work they are putting in everyday as this is their means of survival. However, with as tough as things are, you all still ensure we have quality (and quantity) food! Also, to those who are standing out in the heat to pass out the food - always with a smile on their faces and the best attitude and energy – thank you for brightening our day!” Sarah Clark, Children’s Mercy What’s In Your CSA Bag Next Week?* • Campo Lindo Whole Chicken • Cal Ann Farms Basil • Bainter Sunflower Oil • Farm to Market Bread • Eggplant • Honeydew Melon • More produce to come * Produce may change based on Mother Nature * Produce may change based on Mother Nature As always, we would love to hear from you.
