customer base. Mt. Jezreel Baptist
of Alexandria, Virginia did, and
for the four years they’ve worked
SHARE into their community,
they’ve maintained consistently
high volumes of families served, every month. Moreover, their team is
dedicated and passionate about the
SHARE mission, with a loyal group
of hard workin’ folk supporting the
program. Let’s congratulate them

Wow! What an honor, privilege
and delight it is to write about the
highlights of our partnership with
SHARE Food Network. Innovative
ways are always being explored and
discovered to inform, maintain, attract, and educate the community
we serve.
First and foremost, many
thanks, recognition and support are
all extended to our Pastor, Reverend Anthony T. Oliver. He has been
an assumed force behind us from
day one when the “Awesome 10”
joined and attended the workshop
at SHARE, nearly four years ago.
Special recognition to Esther
Chapter#23, OES of Virginia members Deborah Nelson and Linda
Payton as, they too, were in the
forefront with us. We accepted the
assignment of a “feeding program”,
and gained the Pastor’s approval to
establish Mt. Jezreel Baptist Church
as a SHARE site for drop off/pick
up of food.
Looking back at how it all started and grew … our group “Community and Church” came together
to perform the needed work for
those families/individual wanting
to save money on groceries. Our
Church already offered a weekly
“free bread program” (bread, cakes,
and cookies), but more was desired
as a food program for an Outreach
Ministry.

in my book. The portions of food are out of this world. Keep the good work up!”
“Bacon wrapped beef was very tender and flavorful. It was better to cook the frozen pasta in the
sauce in the oven or microwave, as boiling in salt water before adding to the sauce takes away too
much flavor from the cheese inside. Spinach and cheese rigatoni didn’t have good spinach flavor. Potato and cheese pirogues had lots of flavor”.
“Sodium in the ham steak is 900 plus. The lower the sodium the better. The variety is very nice. Love
the recipes in the newsletter”. Thank you for this comment. We hope that everyone will use all the
SHARE products to their best advantage, keeping their individual diet and health needs in mind. It
was great to hear that one clever customer chopped the ham steak and added small amounts to a rice
dish. This would dramatically reduce the sodium, stretch the product to serve more people, and could
work in a variety of pasta, grain, or egg dishes. Do you have any suggestions that we could share with
others? We’d love to publish your ideas.
“The program is excellent for people like me on a fixed income and can’t afford the store prices. I just
wish it would last me longer. I thank you all for this program, and I mean this from my heart”. We at

Giving Thanks

In the 1600s, the tradition of Thanksgiving began as a celebration of a year full of bountiful harvests. While football games and parades have added some
action to this holiday, food is still at the center of Thanksgiving. At SHARE, we are endlessly thankful for all of our host site coordinators, SHARE distribution teams, warehouse volunteers, SHARE customers, and community members that support SHARE host sites behind the scenes. Without all of these people,
we would not be able to get healthy, affordable food into communities and into homes. In the spirit of Thanksgiving, it only seems appropriate to express our
gratitude for the people who work tirelessly to make food accessible to their communities year-round.
Although we have things to be grateful for throughout the year, November gives us the opportunity to take a step back and truly appreciate all of the
blessings in our lives. We hope that you will join us this year in giving thanks for our food, friends, families, and each other. Happy Thanksgiving!
A Holiday Welcome to New Staff and New Opportunities

For the past few years, SHARE, through the generosity of a van donated by Poor Richard’s Charities and the Order of Malta, has been experimenting with mobile
outreach activities. Mostly in concert with the Capital Area Food Bank’s free produce drops, Mobile SHARE has partnered at service sites around Prince George’s and
Montgomery Counties, and Southern Maryland to sell affordable proteins to the community. As we have gained perspective and experience at these events, we learned that
not only the great prices but the convenience of a “local delivery” is very helpful for our community. We’ve acted on that information and written and been given
a grant by the Prince George’s County Department of Health (PGDOH) to narrow the geographic scope and widen
education around mobile distribution, nutrition and health. In October, SHARE began the Healthy Eating and Active Living (HEAL) program. HEAL takes education, cooking demonstrations, supermarket tours, and the Mobile
SHARE Market into the community, and we are very pleased and proud to introduce you to Paola Zambrana, our
new Mobile Outreach Coordinator, in charge of HEAL.
Paola comes to us from the world of catering, special events, and customer service. She has a tender heart for
community, a nurturing spirit, and wonderful energy. Paola, a vegetarian who at home has always managed an
excellent table for her girls even when the budget was tight, is a creative and thrifty cook. She is organized, efficient,
and adds another bi-lingual voice to the SHARE staff. Paola cannot wait to begin her work with HEAL, and is
excited about sharing her love for good food and sensible budgeting with everyone in the SHARE community. Look
for more recipes and healthy cooking tips from Paola and the rest of the staff starting this month, as we expand
“The Lost Art of Cooking” into an entire “food section”. Want to welcome her to SHARE or have questions about

With a small staff in Hyattsville in lower Prince George’s County, it is difficult for us to be physically present in
and around Baltimore and Western Maryland; until now. New Community Developer, Karen Saul, comes to us as
a lifelong resident of Northern Frederick County, with family still living Rocky Ridge and Thurmont. She has loved
her work in community outreach from Baltimore to Hancock, which has focused on predominantly on seniors.
Karen was the Program Services Supervisor of Meals in Baltimore, with responsibilities for satellite distribution,
operations plans, fundraising and marketing. She is experienced in volunteer management and in grant writing,
research, data base management, and statistics.
Besides surviving the holidays at SHARE, Karen’s short-term goals are to learn where and how SHARE currently operates in Central/Western Maryland, to bring the mission to more rural and often under-served areas, and
to strategically expand satellite sites that make sense for everyone. She wants to strengthen each SHARE Site team
by offering them more resources and hands-on support. With that support, we hope to touch more families each
month, and ensure access to healthy groceries for those of all ages.
When I asked Karen why she so loved working with seniors, she told me that, as a generation, they always offer an amazing glimpse through a window of rich history, to a past one can never discover in a book. Pretty cool,

SHARE’s FOOTPRINT
As of January, our Community Development staff has re-assigned themselves to areas where their special talents are needed and appreciated. I am grateful for their
contribution to what SHARE does every day, and for the initiative they’ve shown in the work they do.
Veteran Debbie Smith will focus on developing Washington DC, and will service a broad range of counties in Northern Virginia. Debbie has long worked in the Virginia
counties, and is taking on DC as new territory.
Jenna Hippensteel has adopted Prince George’s County, and will also service Southern Montgomery County and Southern Maryland. As a country girl from Tennessee,
she’s very happy not to navigate DC’s busy streets, and hopes to periodically see family that lives in Southern Maryland.
Karen Saul has moved from Northern Frederick County to Silver Spring to be closer to the SHARE Warehouse, but she will take her skills and experience on the road
to broaden SHARE’s footprint in her “stomping grounds” of Central Maryland. She will also serve (Eastern) West Virginia and Northern Montgomery County.
These “territories” are not hard and fast, but gives everyone a solid foundation on which to serve as many families as possible.

Apple Slab
Simple Pollock Fillets
This is a magical little apple pie that transports easily in its 9” x 13” pan; readily
divides itself into 2 dozen easy-to-plate servings (try THAT with a round pie); and
is ridiculously tasty.
Defrost the fish. Drain but do not pat dry. Sprinkle both sides with black pepper and a pinch of salt, OR dried lemon pepper seasoning and skip the salt all
together. Dredge each fillet in flour. Shake off the excess flour.
Make your favorite double pie crust recipe, one that uses 2 1/2 to 3 cups of flour
Pan fry in a little melted butter and olive oil over medium heat setting; just
enough so the fish doesn’t stick, about 3 to 4 minutes per side, or until the fish
is flakey and no longer translucent. This is a nice quick dinner with coleslaw
and garlic bread.
Divide the crust into two parts: one should be roughly 3/5 (60%) of the dough,
the other roughly 2/5 (40%). Shape each piece of crust into a rectangle; you’re going to be rolling them into rectangles, so might as well give yourself a head start.
Cover with plastic wrap, and refrigerate for 30 to 60 minutes, till thoroughly
chilled.
Roll the larger piece it into an 11” x 15” rectangle. Don’t worry about the ragged
edges; they’ll disappear under the top crust. Fold the crust in quarters and move
it to an ungreased 9 x 13 pan.
Stuffing Waffles With Creamed Turkey
1 T melted butter
3 ½ cups leftover stuffing, warmed slightly
2 eggs
Leftover turkey, sliced, or diced
Leftover gravy or cranberry sauce
PREPARATION
Beat the eggs, and stir in the warmed stuffing (much easier than trying to stir
in cold, lumpy stuffing!). Add a little milk if the mixture is dry, or you can
throw in another egg.
Patch up any holes by pushing the pastry together with your fingers, or adding a pinch
from the excess on the sides. Push the pastry up the sides of the pan a bit, to make a shallow pastry container for the apples.
Preheat your waffle maker (or a hot skillet because you can also make these
into “fritters” or pancakes). Brush generously with melted butter. Press stuffing into your waffle iron and cook for 7-8 minutes until the waffle is golden
and crispy. Open the waffle maker and let the waffle cool for two minutes
before removing. Top with either chopped warm turkey mixed with leftover
hot gravy, or with sliced turkey and cranberry sauce. What fun!
Put the crust in the fridge while you get the apples ready. Preheat your oven to 350°F.
Peel, core, and slice about 5 large or 6 to 7 medium baking apples such as Granny Smiths.
Sprinkle the crust with a layer of coarse, dry bread crumbs, or crushed corn flakes. This
helps to absorb the apples’ juice and keep the crust from becoming soggy. Spread the
crumbs evenly over the crust. Top with the apples, and sprinkle with 2/3 cup sugar
mixed with a teaspoon (or more) of cinnamon.
Training Trivia
Roll the remaining piece of pastry into a 9” x 13” rectangle. Fold and flop the top crust
over the apples, and pinch/tuck the edges of the crust together, where you can. If you’re
working in a warm kitchen and the dough becomes too sticky, pop it in the refrigerator
for 15 minutes to firm it up. Just enough time for a cup of coffee.

More teams have come to rely on extra boxes that we have at the warehouse, and we simply don’t have enough. Usually, our stock is gone by Friday afternoon.
Costco has some great deals on bins, and many of the big box stores have great sales from time to time. By using commercial bins, you will find it easier to load, and your
vehicle will stay cleaner!

Healthy Holiday Tips

As the holidays approach, it is time to celebrate with family and friends. For many of us, including me, this season can be the time that I add a couple of unnecessary
and extra pounds. According to the National Institutes of Health, holiday eating results in an extra pound or two every year. Here are some healthy tips I SHARE to help
you avoid the “overeating guilt”, the most important of which is to BE REALISTIC. This is not the time to lose weight and diet, but the time to maintain your weight. Have
fun, and laugh plenty, as we all know laughing is a good medicine that increases both heart rate and calorie expenditure by up to 20%. Just 15 minutes of laughter a day
will burn 10-40 calories, so laugh and SHARE your joy with others.
Here are some tips that help me stay in control of the holidays.
1. Keep up your exercise routine, if you have one. If not, try scheduling a brisk 10-minute walk once or twice a day. Gather family and friends and make it a fun walk
around the neighborhood or in the mall.
2. Beverages hold hidden calories and are a sneaky factor to weight gain. Choose lighter beverages, or better, stick to water. If you cannot avoid the traditional egg
nog, limit yourself to one. Alcoholic drinks are also loaded with calories, even if they are not sweet.
3. We eat with our eyes. If going through a buffet, choose a small amount of meat or fish, all the vegetables and salads you want (but try to limit the rich sauces and
dressings), and only 1 or 2 starchy dishes. Eat slowly, enjoy conversation as much as the food, and stop eating when you are satisfied, not stuffed like the turkey!
4. Make simple substitutions to traditional recipes. Use reduced fat milk rather than whole milk. Try Greek or strained yogurt instead of sour cream. Reduce or
eliminate the salt in a dish until the “season to taste” step in the recipe. Use drops or small splashes of lemon or vinegar to “brighten” a dish just before serving. Try more
baked and broiled proteins instead of fried.
5. If invited to a “pot luck”, set a good example by preparing a healthy dish. Some ideas are:

Stuffin’-Muffins
2 tablespoons olive or other oil
1 stick butter, softened
1 fresh or dried bay leaf
4 ribs celery and greens, from the heart, chopped
1 medium to large yellow onion, chopped
3 apples, quartered and chopped
Salt and pepper to taste
2 tablespoons poultry seasoning
1/4 cup chopped fresh parsley leaves
8 cups cubed stuffing mix
2 to 3 cups chicken stock
Directions:
Maple Roasted Sweet Potatoes
2 pounds small sweet potatoes (about 5), peeled and cut lengthwise into
1-inch wedges
1 tablespoon vegetable oil
salt and freshly ground black pepper
1 tablespoon pure maple syrup
1/2 teaspoon finely grated lemon zest
Freshly grated nutmeg, to taste, for serving
Directions:
1. Preheat the oven to 425 degrees F. Toss the sweet potatoes on a large, foillined rimmed baking sheet with the oil; season, to taste, with salt and pepper.
Roast the potatoes for 20 minutes.
2. Remove the pan from the oven and toss the potatoes with the syrup.
3. Back in the oven, roast, tossing twice, until the potatoes are beginning to
brown and are tender, about 15 minutes more. To serve, sprinkle warm potatoes with freshly grated lemon zest, salt, and nutmeg to taste.
Preheat oven to 375 degrees F.
Preheat a large skillet over medium high heat. Add oil to skillet and half of the
butter. When butter melts, add bay leaf and add the vegetables as you chop them,
celery, onions then apples. Sprinkle the vegetables and apples with salt, pepper and
poultry seasoning. Cook 5 to 6 minutes to begin to soften vegetables and apples
then add parsley and stuffing cubes to the pan and combine. Moisten the stuffing
with chicken broth until all of the bread is soft but not wet.
Butter 12 muffin cups liberally with remaining butter. Use an ice cream scoop to
fill and mound up the stuffing in muffin tins. (Remove the bay leaf!) Bake until
set and crisp on top, 10 to 15 minutes. Remove stuffin’ muffins to a platter and
serve hot or room temperature.
Healthy Mashed Sweet Potatoes
2 pounds sweet potatoes, peeled and cut into chunks
1/4 stick butter
1 small banana, sliced
1 small orange, zested and juiced
¾ cup chicken stock
1/3 cup brown sugar
1/4 teaspoon grated nutmeg
Salt and pepper
Directions:
Boil potatoes until tender, drain and reserve. Return the pot to the stove top
over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice
to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash
potatoes, banana, stock and sugar together until well combined. Season with
nutmeg, salt, pepper and orange zest, to your taste. Combine well to meld
flavors and serve.
