If you have a question, concern, or complaint,
which you believe has not been satisfactorily
addressed by our staff, feel free to call our
Administrative Hotline. Our Hotline can also be
used to report suspected fraud, waste and abuse
in accordance with the federal Deficit Reduction
Act of 2005. The Hotline number is posted
throughout the facility. An Administrative
Assistant will take calls, or you can record a
message when no one is available. Please follow
the instructions when leaving a recorded
message. Your call is confidential, but you do
need to provide your name and telephone
number, in case we need to contact you for
more information, and to inform you of the
action taken. You can report Fraud, Waste and
Abuse to the Lehigh County Ethics Hotline at 610
-782-3999. This information is confidential and
caller may remain anonymous.

Years ago, Memorial Day was called
“Decoration Day”. Maybe it was because everyone decorated graves for family, Veteran’s
or friends. When I was a child my family piled Iris and
Peonies in buckets of water and put them in the truck
of the car. Upon arrival of the cemetery other relatives
were there for the same reason. We prayed at each
gravesite and had even packed a lunch, had a family
picnic. It was a simpler time but I still think of it as a
remembrance.
To Marilin...I just wanted to thank you for opening our
minds to journalism. We saw how much there is to
learn and yet when we wrote our experiences it was
like being a writer. We had a lot to learn. I hope we
can do it again.
My mother gave me the greatest gift anyone could
give another person. She believed in me.

Try this tasty version of
Mexican Street Food.
Grilled Corn on the Cob.
The corn is slathered with
a rich combination of
mayonnaise, cayenne,
lime juice and butter.
You never had Corn on
the Cob like this







4 Ears corn, husks intact
1/4 Cup mayonnaise
1/4 Teaspoon cayenne, plus more for garnish
Juice of 1 lime
1-1/2 Teaspoons minced fresh cilantro
2 Tablespoons (1/4 stick) unsalted butter,
melted
1/2 Cup grated Cotija Cheese *Queso Fresco or
Parmesan can be substituted.
Carefully pull down the corn husks and remove
only the silks. Pull the husks back on the corn.
Submerge the corn in cold water for 30 minutes.
Make sure the corn is fully covered with water.
Whisk together the mayonnaise, cayenne, lime
juice, and cilantro in a bowl. Preheat the grill to
medium-high heat. Remove the corn from the
water and shake off any excess. Grill the corn for
18 to 20 minutes, rotating the ears every 3 to 4
minutes to make sure the corn is cooking on all
sides. Remove the corn from the grill. Using
mitts, remove the husks, leaving the core attached
at the end of make a holder. To char the corn,
return the ears to the heat and grill for 1 to 2
minutes. Spread each ear with 1-1/2 teaspoon
melted butter, followed by 1 tablespoon
mayonnaise mixture. Sprinkle each ear with 2
tablespoons grated cheese and extra cayenne.

Nursing announced we will begin trialing a new
Fiber sauce program. Fiber sauce is a natural
laxative that we will be offering as an alternative to
pills.
New Administrator, Joseph Shadid, was
introduced. He shared some of his personal and
professional background and invited anyone with
any questions/concerns to come see him.
Announced we have a new in-house TV channel.
Channel 22 is our in-house channel. Currently
you can watch the newly hatched eaglets in their
nest just outside of Pittsburgh.

Wireless access to the Internet is now
available at Cedarbrook-Allentown and
Cedarbrook-Fountain Hill.
Residents with
wireless devices such as laptops, notebooks,
tablets (Kindle, Nook, etc) may request access
through their Social Worker or Therapeutic
Recreation Aide. Our PC Specialist will assign
a unique username and password, which must
be kept confidential. Visitors may request
access at the switchboard. Usernames and
passwords for visitors will automatically expire
after three days.
Are you looking to drop off a payment for
services at Cedarbrook Allentown after
business hours or on the weekend?
Financial Services now has a lock box located
in the Main Lobby. Feel free to drop off
payments anytime day or night.
It’s official! On June 15, 2015 Cedarbrook
launched its first official website, designed to
inform Lehigh County residents - and the
world at large - about the quality services and
operations provided here.
It also offers
dropdowns for both Allentown and Fountain
Hill locations, with directions, departmental
listings and the newsletters, posted every
month.

will change from time to time. A highlight of

At Cedarbrook, we are able to witness the kindness
shown to our fellow man every day. Our volunteers are
a perfect example of the “paying it forward” lifestyle. As
Albert Schweitzer, a French philosopher, said, “the
purpose of human life is to serve, and to show
compassion and the will to help others.” We are blessed
to have such great volunteers.

The April Birthday Celebration will be
held on Tuesday, April 12, 2016 in the
Family Room. We have 21 residents
invited to attend the event.
Our Third Resident Kitchen tour for 2016
was done on Thursday, March 31, 2016
at 10:30 am. The following residents
toured the kitchen: Kay Lopota and
Dorothy Shunk. Our Tour Date for April
is Thursday, April 28, 2016. Please let
your Dietitian know if you want to join
the tour!
You are to be offered an evening snack
each night by the nursing staff. Please
let us know if you have any questions or
concerns about this snack.
We are
continuing to research new ideas for your
snacks.

New Spring Summer Menu will start on
Sunday, May 1, 2016. Some of the new
items you will see are: Chocolate Cake

Dietitian’s Corner Program
Have you been hearing a lot about diabetes
lately? Diabetes and pre-diabetes are very
common in the news lately as the incidence
of these two conditions rise. What is diabetes? From the American Diabetes Association - it is a problem with your body that
causes blood glucose (sugar) levels to rise
higher than normal. This is also called hyperglycemia.
When you eat your body
breaks food down into glucose and sends it
into the blood. Insulin then helps move the
glucose from the blood into your cells.
When glucose enters your cells it is either
used as fuel for energy right away or stored
for later use. In a person with diabetes,
there is a

problem with insulin. Types of diabetes
include type 1, type 2 and gestational
diabetes.
Type 2 diabetes is where your body does
not use insulin properly. this is called insulin
resistance. At first the pancreas makes
extra insulin to make up for it. Over time
your pancreas isn’t able to keep up and
can’t make enough insulin to keep your
blood glucose levels normal. Type 2 is
treated with lifestyle changes, oral medication and insulin.
Risk factors for Type 2 diabetes include
history of hyperglycemia, pre-diabetes and
or gestational diabetes; overweight or
obesity; physical inactivity, genetics; family
history; race and ethnicity; age; high blood
pressure; abnormal cholesterol.
What is the treatment for Type 2 diabetes?
The two goals are to make sure you feel
well day to day and to prevent or delay long
-term health problems. The best way to
reach those goals is by: taking medications,
if your doctor prescribes them; planning
your meals-choosing what, how much and
when to eat; being physically active.
How do I know if my treatment is working?
You will monitor your A1c which will tell
your average blood glucose for the past 2 to
3 months. Improvement or a normal range
will show that your treatment is working.
Diabetes is becoming more prevalent in our
society as the previous risk factors seem to
increase. By monitoring our health status,
eating a balanced diet and participating in
physical activity we can decrease our risk of
developing diabetes.

Tips for Keeping
Your Money and
Valuables Safe
Although we discourage residents from
keeping money and valuables in their
room, we realize that many of you will
choose to do so. Therefore, we would like
to offer these tips to help you keep your
money and valuables safe from loss or
theft. Since you have access to the money
in your account during normal business
hours Monday through Friday, we suggest
that you only withdraw the amount you
need for immediate use. If you need larger
sums of money for gifts or to reimburse
your family members for purchases made
on your behalf, we suggest that you
contact Financial Services to arrange for
payment by check. If you choose to keep
money and valuables in your room, we
highly recommend that you secure such
items in the locked drawer of your bedside
cabinet. Keep your key with you, or keep
your key out of sight in a safe place. As
soon as you realize that your money or
property is missing, it is important to
report it immediately to the Charge Nurse.
Cedarbrook will not assume responsibility
for replacing missing property kept by residents on their person or in their room.
However, we will take action to
investigate, and to try to recover your
property if possible. Finally, we ask that
you help us maintain a current inventory of
your personal property. Any property that
you purchase or receive during your stay
should be added to your Valuables
Received After Admission Form, including a
description of the property. This information is essential when trying to locate
missing items.

Dental services will no longer be provided by Stuart Field, DMD, at Cedarbrook
Allentown and Cedarbrook Fountain
Hill. Although some residents have
been enrolled with our other contracted
dental service, HealthDrive, we are
working with HealthDrive to enroll all
residents beginning October 26th.
Residents or their responsible parties
will be contacted by HealthDrive
directly for consent to enroll. Once
enrolled, dental services will be
provided by David Miller, DMD, on-site
at Cedarbrook Allentown and Cedarbrook Fountain Hill.
