Championship the first time she qualified and participated in the cookoff
It is an honor to be the 41st Terlingua International Chili Champion. It all started when Steve
and I moved to Austin in November 2005. Several times Steve overheard our neighbor at
Lone Star RV Park talking on the phone about chili. Steve asked our neighbor if he knew
anything about competition chili cooking.
That neighbor was Ken Rodd. Ken was a wealth of information and suggested we attend
a cookoff and judge chili. We went to a cookoff in Bastrop, judged chili and met many nice
people. Ken offered to loan us stoves, pots and told us everything we would need to cook
chili. He convinced us to go to Bergheim, Texas and give it a try. We were introduced to
several people and everyone was most helpful at that first cookoff. Steve got 10th place, and
we were hooked.

ED Pondering
It’s a Wrap
Congratulations to Debbie Ashman and all of the other
TICC winners. Thanks to all those who helped during
TICC week. You make us proud to be CASI.
Yes, TICC 41 is a wrap. Thanks go out to all the hundreds
of volunteers who make the annual pilgrimage to the desert
a success. We had some new personnel this year in many
areas. They stepped up to the plate and did a great job. Oh
yes, mistakes were made in our execution of the game plan.
We will fine tune and correct any shortcomings.
We tried some new things and turned the corner in a lot of
categories. Please note your comments and observations
and get them to a Director for our workshop on January 26, 2008 at the Elks Lodge in Irving,
Texas. We will recap TICC and the financials. Assignments will be made for 2008. Yes, we
have decided to do it again! There will be a 42nd version.
It always amazes me to observe the skill and efficiency of our judging process on Friday
and Saturday. This judging procedure sets a standard of excellence for the competition
cooking world. With so much going on to prepare for the arrival of thousands of people and
provide services, it would be easy to diminish the importance of our judging procedure. The
integrity of our cause rests in the speed and efficiency of the people we trust to handle this
duty. Once again, the crew came through, and my hat is off to you. A record number of 337
cooks turned their chili in.
I would like to thank our sponsors for being on hand at the event. Your generosity and
enthusiasm for CASI is evident when you take the time to come out and participate. It is much
more meaningful in person. We have some great sponsors who contribute mightily toward
the financial stability of the organization. It is a pleasure to fly their banners.
The preparation of Rancho CASI de los Chisos was outstanding and the weather cooperated
for a truly great event. We should never underestimate how important these two factors are
to the success of TICC. Nature wields a strong will in the desert and the ranch suffers much
damage and vegetation overgrowth that must be groomed prior to our arrival. Likewise, the
grounds must be cleaned and returned to their natural state when we depart. This, too,
requires much work that goes largely unnoticed in our absence.
Your Board of Directors has eleven members. They are charged as their primary responsibility
with the execution of The Terlingua International Chili Championship. It is my belief they
excel in this duty. It is an honor to lead this special group of people. I have nothing but praise
for my fellow Directors and their choice of volunteers, who once again painted a masterpiece.
Think positive, CASI. You are the greatest chili cooks. Congratulations to the winners and
all who were fortunate enough to qualify for the big show.

In the past year, we’ve discussed a number of rules.
This month, I’d like to look at a portion of the CASI
Bylaws. The following excerpt comes from the portion
of the CASI Bylaws that addresses the pod requirements
for CASI affiliation:
13.01. A pod must meet the following criteria for CASI affiliation and sanctioning:
(a) Work for the benefit and promotion of chili through CASI only…………
13.02. All Great Peppers, Pod Officers, Regional Referees and Area Referees must
be members of CASI and support the CASI Terlingua International Chili Championship.
13.03. Any pod not conforming to Article 13 may be suspended by the CASI Board
of Directors and suffer loss of all privileges and sanctioning.
During TICC week, there are two competing chili cookoffs being held in Terlingua.
Ours is, by far, the largest but both compete for a limited amount of resources:
spectators, sponsorship dollars, and community support. We also compete for media
image as THE Terlingua cookoff.
I frequently hear bitter complaints against CASI members who have failed to qualify
for TICC and cook Behind the Store. The basis for these complaints is that they are
not supporting TICC and they are being disloyal by lending credibility to our
competitor. When the cooks in question are CASI referees or Pod officers, there is
usually a demand for their removal. To date, the Board has chosen to look the other
way but I think the intent of the bylaws is pretty clear.
TICC flourishes because of the large number of CASI members who pitch in with
their time and effort and help assure our success. I’d like to invite any cooks who
might be considering cooking Behind the Store in the future, to forego that and,
instead, come to Rancho CASI and help in the judging area, help in the concessions,
or help at the gate. We need you and we’ve got a job waiting for you.
This is a great time of year for good weather, so let’s get
out there and start chasing points. See you at the cookoffs.

REPORT
Our Forty-first Terlingua International Chili Championship
was bigger and better than I could’ve imagined. The cooks,
the people, the weather; everything was perfect. After last
year’s Fortieth celebration, I thought we would see a small
decline in the number of cooks at TICC this year. I am happy
to report that the 343 cooks registered and 337 chilies
turned-in for judging are all-time highs.
Congratulations to our 2007 TICC Champion, Debbie
Ashman. I’m sure Debbie will be a great champion and fine representative of CASI. Debbie
is a relatively new cook, so I’m sure her experiences this year as TICC Champion will be very
enlightening.
What makes CASI such an outstanding organization is its people and their willingness to
help – to volunteer. Every aspect of TICC has CASI people helping out, making it work.
Registration was no exception. I didn’t register those 343 cooks by myself. I want to thank
each and every one who helped at registration and the cooks and show captains for their
cooperation. I couldn’t have done it without you.
Now, it’s back to cooking chili (at least for those of you who live where it’s warm) and getting
qualified to return to the Ranch next November. It’s also time for my annual pep-talk to our
Regional and Area Referees.
I have already processed all the cookoff paperwork that I received prior to TICC and there
is one problem that stands out: the inaccuracy and incompleteness of recording show team
winners. This is not a new problem; it has been around for quite some time. The recording
of show winners is just as important as the recording of the winners in chili. Three years
ago, we developed the Official Showmanship Entrants List and it has been included with
each judging packet sent out since them. The use of this list would go a long way in reducing
the errors in recording show winners. Referees, if you will insist that this list be part of the
paperwork given to you to send to me, and review the list (it’s only three) of the winners
recorded on the Results Sheet, I think we’ll see a vast improvement in recording errors in
the future.
Last month I emphasized the importance of the cookoff identification information. So this
year let’s concentrate on that and the recording of show winners. And one other thing. Last
year we had an extremely successful year with our cookoffs raising over $1.3M for our
various charities. Yet, there were still many cookoffs that did not report any money raised.
Remember, even after the cookoff has been sent in, it’s not too late (well it is for last year)
to send me the charity information. I will be glad to add or revise the cookoff record.
CIS continues to be a useful tool for the cooks as well as those of us who use it on a regular
basis (Membership, Upcomings, TallyMaster and ED). All the reports for the Terlingua
Trails come from CIS. All the registration and gate lists for TICC were generated by CIS. Let’s
use it to the fullest. I would encourage all CASI members who have access to the internet,
to get a CIS login and periodically check on your qualification status or just to browse.
Usually, unless I’m out of town, a cookoff will be entered within a day or two of my receiving
it. Having said that, this month is a little different. TICC is the first cookoff to be entered in
the new year so those winners will receive qualification numbers one through ten. Also, the
previous year must be kept active until TICC. My goal is to have all the cookoffs received
prior to TICC processed before November 15 to be included in the December Terlingua
Trails. This goal was accomplished. There are several cookoffs I received upon my return
from Terlingua that will appear in the January Trails, so if you don’t see a cookoff from
October in this Trails, it will be in the January issue.

A Big Thanks
Two weeks before TICC 2007, the site was the best prepared, ever! The new memorial
board and surrounding area with the new rock work is great, thanks to Jimmy Taylor.
The landscaping, weed & grass cutting, trash removal, painting, concrete washing,
cooks & spectators camping area scraping, reworked roads, trash dumpster, port-apotties, and steel posts for sponsors’ signs did not happen by accident. A big, big

Important Insurance Notice
If you are holding a cookoff, please make sure the venue has their own
insurance before having them listed as an additional insured on the CASI
certificate for that event. Holding a cookoff at a location that does not have
insurance, and basically sharing the CASI insurance for their liability, could
have catastrophic consequences to our insurance and ability to continue
holding cookoffs.
The purpose of CASI insurance is to protect CASI and is not to protect
those too foolish to protect themselves.

We have made friendships that will last a lifetime. The help people in SOT Pod gave us at
first did not end once we joined CASI. We continue to receive encouragement and guidance
from many people. All of you are very special to me. I hope all new cooks feel as welcomed
as Steve and I have felt.
One of my goals will be encouraging all CASI members to make a special effort to recruit
new cooks, invite them to cook next to you, help them with their chili, and make them feel
part of the group. Invite them to your Pod meeting and let them help and learn the jobs
required at cookoffs. Chili, charity and fun say it all. It is amazing how much money is raised
for charity through CASI.
Yolie Rodd gave my mother in law, Leila, and me a tour of the school and library in Terlingua.
It made me proud to be a member of CASI that has helped raise money in order for this school
and library to be built. The drop out rate in Terlingua has decreased substantially since the
school opened as some students would drop out of school rather than face the long bus
ride. CASI’s scholarship program is available to students throughout the United States and
children deserve the opportunity for the best education possible. What a wonderful feeling
it is to know that we are helping to meet these goals.
I thank our sponsors for their products and services. Their support enables CASI to
promote chili thru charity. It costs a lot of money and requires the work of many volunteers
to have an event as large as the Terlingua International Chili Cookoff. My thanks to
everyone for a job well done.
I look forward to this year in promoting Chili, Charity and Fun with CASI. I thank everyone
I have met cooking chili for their friendship and “helpful hints”. I look forward to meeting
many more of you, and I will do my best to represent CASI as those who have won the title
before me have done.

I was pleased as to the number of individuals who approached me at TICC relative to the
CASI history project. The Board is excited and it’s gratifying to see so many of the CASI
members who are, too.
I have received several biographies of individuals whose names appear on the Memorial
Board. If you can provide any information on any of these individuals, I encourage you
to do so.
One member offered me a complete set of TICC posters from 1984 to the present. Another
provided me important information relative to the original Memorial Board; yet another
promised to go through file cabinets as to possible information he might have.
As previously stated, this important project cannot happen without your input. Please
submit articles, pictures and other related materials to me at [email protected].
The preservation of CASI history will not be possible without you. Please help us with this
important project.

Highway Cleanup
The highway cleanup during TICC was done again this year. The highway was pretty
clean but a lot of cans and trash were still picked up.

Bess’ Best
First off, congratulations to all the winners at Terlingua 2007
and to all the others who came and cooked and showed. We
all got to remember that there can only be so many winners,
but to get that magic number of cooks and show teams we
needed all the rest who qualified and made the journey this
year and every year in the past.
Next comes “The White Hat Award”. Remember back when
we were all young and got to go to the picture show on Saturday afternoons and saw the
westerns, or even now turn on the Western Channel like Harry does and see the likes of Roy
Rogers, Gene Autry, and The Durango Kid? Now when you view (or in plain language
watch), they show a rating about the show and that it might contain violence and offend
someone. But back in the days when we saw our hero’s at the picture show, it didn’t matter
because our guy wore a white hat and always made things turn out right.
This year our rental car turned out to be a nightmare; give it time and something would break
or not work. Shortly after turn-in Saturday at Terlingua, Harry went out to take some pictures
and I went to the car to try and get some rest. I know Saturday afternoon you can’t rest but
maybe to get away from some of the crowd. We both went back to the car. Harry got the
camera and a Coke and left. I got in the car, rolled the windows down some, and tried to close
my eyes. The wind started kicking the dust around so I started to roll up the windows a tad
as anyone would do.
Oops - dead battery. Harry had returned by this time and I sent him in search of help or a
jump start. After several stops and asking, he found that jumper cables were going to be
hard to find. So here is where our three “White Hat Award” winners come on the scene.
To Jimmy Taylor who hauled Harry all over the ranch (in his gasoline-powered mule) in
search of cables when he realized his were not in the truck tool box. To Harvey West for
coming up with water for a dry battery. To Everett Crawford for having that set of life- saving
jumper cables and that big shiny pick-up that got our Ford Taurus started.
Thank goodness for Harry’s automotive know how. Jimmy dropped him off back at the car
before Everett got there. Harry had me turn the headlights on and try to start it (old Indian
trick Harry knows); it almost started but didn’t so Harry pulled the battery caps off and the
battery didn’t have any water in it. Harry was going to try and use water from the ice chest
but couldn’t get enough in the bottle.
This is when Harvey showed up and made the wonderful gift of water to fill the battery. We
got the car started, let it run for about 15 minutes, and that solved the battery problem, but
not some of the others. So again, a great big thanks. You gentlemen were not in the top
ten of chili this year but you all three tied for first in the world of Bess & Harry.
When we returned the car in Midland, Harry had a rather lengthy talk with the attendant.
Now when it comes to car talk and repair, Ole’ Harry is not too shabby, and he proceeded
to tell the attendant about the battery and many other items that were and had been neglected
for sometime by check in and check out maintenance. It must have done some good because
before I paid for the car, she had talked to someone and we were only charged for a oneday rental.
Thanks to Darrell & Beth Baxter for putting the word out on road resurfacing between Fort
Stockton and Alpine. Darrell and Beth go back quite a ways like Harry and I. I bet they
remember when that road from Fort Stockton to Alpine wasn’t much more than a dirt road
with a few places of blacktop.
No way leaving out a BIG THANKS to CASI for making TICC 2007 the success it was. Also
thanks to some of the behind-the-scenes people like Brewster County Law Enforcement,
Terlingua Area Medics, and the Terlingua and Fort Stockton Rural Fire Departments.
It seems like we hit the ground running when we got out of the pick-up from Terlingua and
haven’t stopped. It seems like when you need to make a buck to pay for something, the shop
phone never rings. Then be gone for 4 days and everything breaks loose. We have had two
hard freezes since we returned and that has brought about all of the remaining leaves down.
Harry now has twice the amount of leaves to burn as he did last month. I told Harry the leaves
and another leaf burning party are going to have to wait.

Thanksgiving is fast approaching and that means I’ve got to get a date set for some kind
of a meal for all the family when we can schedule everyone off on the same day. This year
has gone so fast, and the ole timers say, “The older you get in years, the faster they go”
and I am beginning to believe it.
Thanks to all for asking about the grandson, Austin. His surgery and rehab were successful
and are behind him now and he is released to go back to Rodeo (team roping). Austin tore
everything apart in his right knee in a freak accident this summer helping friends bale hay.
He was lucky and had a very good surgeon in St. Louis do all the surgery and repair work.
This doctor (or specialist) is also the same person who takes care of the professional
baseball team, the St. Louis Cardinals.
I mentioned that business at the shop has kept us busy. We have been playing with the
idea of a new chili recipe, so what we have been doing is getting the Coleman stoves out
and cooking outdoor chili while we detail. Harry made a big sign saying Free Chili Samples.
When the chili is done, we give out samples to the street traffic that wants to stop and sample
it. It doesn’t take long for the old chili pots to run dry, and the amount of people stopping
for samples is getting larger.
The interest in chili seems to be increasing in the Lamar, Barton County area; not only tasting
but also cooking. Between the first of December and the 16th of February, we have 8 civic
organizations and 7 school functions to cook for and each event wants to serve 300 to 400
people. Harry and I are very fortunate to be able to keep up the pace we do for our age, even
though sometimes it feels like I have to carry Harry.
Looking at Harry’s latest clock (an original 14-inch Dr. Pepper clock), it looks like the hands
have passed the 10, 2, and 4 marks, Mickey Mouse is slumping, and the old John Deere
Tractor is sputtering again, so that means it must be about time to think about the evening
chores.
So “Thank You for Your Time This Time and Until Next Time
& Remember To Start Slow Then Taper Off”.

The TICC Judging Operation
This year 337 chilis were judged at TICC using 358 judges. Judging began with 32
preliminary tables and finished with 20 judges on the final table.
“Dog” Luhn & Risa Ray kept the chili moving; I did the “cattle call” and kept the tables
moving with judges.
In 2004, 333 chilis were turned in and it was a new record. So with 337 judged this year,
we have another new record in the books! We were off our time schedule by 10 minutes.
I’ll take that any day. The monitors, kitchen help, computer crew, all the folks that
volunteer - it is a team effort and what a helluva team we have!
The judges I have worked with over the past 12 years have become part of the family,
just like the chili cooks. They can’t wait for judging and some have expressed it is
wonderful what CASI does for charity.
Mikie McGarity handled judge’s registration last year and listened to my numerous
comments that there must be an easier way. She took the time to listen, went home, and
told Nick who set it up in an Excel file. Changes and fine tuning were done by May and
Nick delivered the labels in late July. Letters were done in August, with judges
invitations mailed out September 1st. Yea, somebody listened; another teamwork project
was successful. Thanks to Mikie and Nick.
I hope after reading this some of you will understand my devotion to the cause, as some
of my little white blood cells have CASI stamped on them this time of year! Put a smile
on your face, take a deep breathe…till next year.

Nobody Told Me
Winners and Losers?
I have now been home from Terlingua for 9 whole days! I
would be feeling pretty good, except 4 days of Shrine Circus
interrupted my recovery. Perhaps men should not be Shriners
and chili cooks at the same time. The Great Peppers’ Meeting
comes three days after a Shrine convention, and TICC hits one
day before the circus. It may have been easier when I was
younger, but I did neither when I was younger.
But, boyee, have I had fun!
Another TICC has come and gone, and in my opinion, a
great one it was! There were a few bumps in the road, but
all-in-all it was a successful event.
The trip to Terlingua is always amazing. It starts when we
leave home in Kansas City and start the trek to the edge of the world. The trip this year was
pretty uneventful. No flat tires, no collisions, we didn’t even run out of gas; just 1128 miles of
bliss with four people in one truck.
We pulled into Rancho CASI de los Chisos on Wednesday about noon. Our campsite was
already occupied by our friends, Virgil and Roylene Johnson and Bill and Cheryl Pierson, so the
welcome mat was out.
After setting up our camp, we found more friends from many other places, most of whom had
been in place long enough to be comfortable and ready for fun and excitement. You’ve all heard
me say that chili people are always willing to have fun, and that’s still true. Some groups seem
to get together to complain and argue, but chili folks get together to celebrate. It’s great to be
around chili people.
Wednesday marks the start of the Terlingua Party Season with so many things to do that one
can gain 20 pounds in one day. The Central Texas Pod serves breakfast at 8:00 AM. Then
there’s a Tea Party at noon. At 5:00 PM, the Houston Pod takes over with Happy Hour and a
Steak Dinner. Where else can you get a Filet Mignon as a reward for joining a chili pod? Who
needs a reward for joining a chili pod?
Wednesday night brings the world-famous Tequila Rose Party. That seems to be off limits for
me because there are too many beautiful ladies there. Fortunately, the same time slot brings the
Tequila in Terlingua Society meeting. That’s a party specifically for ugly men and attendance is
always good, I think.
The Krazy Flats Saloon opens on Thursday morning, where everyone is welcome. At 9:00
AM, we have the Girls Gone Wild Pajama Breakfast. It says that “All CASI ladies are
welcome,” so I didn’t try to crash that one either. At 12:00 Noon, the Black Gold/Concho
Valley Ice Cream Social takes center stage, at least for me. OMG, those folks know how to
make ice cream and pie! Another Happy Hour comes on at 4:30 PM courtesy of the Central
Texas Pods.
At 7:00 PM, we get serious to honor those of us who are enshrined on the memorial board. It
was a rather sobering event.
While all that revelry was in action on Thursday, you were expected to register for all of the
competitive events.
On Friday, if you’re still vertical, you can play golf at 10:00 AM, and then drink margaritas
with Mild Bill at 2:30 PM.
Friday is CASI Scholarship Day, a time when we can feel good because we’ve done something
worthwhile. We do a lot of worthwhile things, but helping young people get an education is one
that really makes me happy. Then finally, competition begins! Wings, Beans, and Salsa
contestants turn in their entries from 11:00 AM to 1:00 PM, and find out who won at 5:00 PM.
This day is good preparation for Saturday’s big event.
Saturday, of course, is the day of the chili competition. Even those of us who don’t win can be
proud of competing with 336 other excellent chili cooks, all making good chili.
There were many winners. I’m sure the local economy
experiences a boost during Terlingua week. The Terlingua
Medics, Terlingua Volunteer Fire Department, Brewster
County, Terlingua School, and the Sul Ross Rodeo Club all
received funds from CASI as a result of the cookoff.
The Old 320 drawing was a windfall for Michael Mayorga, Gil Hewlett, and Joyce Jowers.
Tammy Jo Holloman is now the proud owner of a Wendell Rankin raffled stove. And Steve
Lopez and Marilyn Martin were the lucky winners of the school quilts. A Dr. Feelgood
trophy went home with Tom Cook, who was also the overall winner of the Halloween
costume contest. Cowtown Pod, Houston Pod, and Black Gold Pod were determined to have
published the top 3 newsletters for the previous year.
There were top 10 winners in the beans, wings, and salsa competitions on CASI Scholarship
Day, as well.
Congratulations to Donna Conrad, CASI Chilihead of the Year, and Dodie Simpson, CASI
Great Pepper of the Year. Both these ladies were rewarded for jobs well done!
Debbie Ashman of Bastrop, Texas (my hometown) was awarded the title of 2007 TICC
Champion! I know Debbie will represent CASI well. Congratulations, also, to the other 19
individuals who were honored for their final table rankings. Only 19 points separated 1st and
20th place chilis.
Congratulations to the 11 show teams who received awards.
Now to the losers. But wait, there were no losers! In my opinion, anyone who attended TICC
was a winner. What other time of the year do we have the opportunity to be with so many
friends from so many geographical areas and so many varied backgrounds and enjoy being
together?
I turned in my cup of chili at TICC and came home with no trophy. But I did come home with
the realization that my cup of chili has made a difference in every cookoff I’ve entered. I
didn’t place in any of the categories on Friday’s CASI Scholarship Day, but my entry fee
made a difference to the CASI Scholarship Fund.
I saw old friends and made new friends. I laughed and cried with others at the candlelight
vigil. I went to a housewarming, a costume contest, chaperoned a prom, ate homemade ice
cream, beef stew, filet mignon, and fried fish, stood by a fire in Krazy Flats, and judged
Tequila Rose desserts! I watched show teams delight the crowd with their antics.
Did I win? You bet I did.

Toys for Terlingua
People ask me why I get so excited about TICC. I look at the list of events, and I think of all
the friends, and I say “I’m not sure why, but it sure is fun!” If you can’t find something that
you like in Terlingua, Texas, during the first week of November, you’re just not trying. To
paraphrase Auntie Mame, “Life is a banquet, and we’re not starving in Terlingua!” I’m ready
for next year.
I would like to thank all of the people that brought toys or gave money for toys to
Terlingua for the school kids. This means so much to them. For some of these kids it
will be the only toys that they will get. If you forgot your toys when you went to
Terlingua or were not able to attend and would like to send some money for toys or if
you just have some extra cash and would like to do something for kids at Christmas

that toys will be brought with the money. Remember Christmas is for Kids and these
kids need a good Christmas too.

The 7th Annual Breast Cancer Awareness Chili and Bar-B-Que Cookoff held Saturday,
October 13, 2007 was again a rewarding event. A total of 51 Chili Cooks and 20 Bar-B-Que
teams came together to raise money for the Gifts of Hope. Donations were sent from a number
of chili cooks who could not come; thank you for your support. Black Gold again did a Fish
Fry for the many cooks, sponsors and helpers on Friday evening. The 50-50 “Pot” of $788
resulted in the winning ticket of $394 donating the winnings back to Gifts of Hope. The 2007
Quilt brought $1,200 in ticket sales and was won by Buddy McGuire of Midland. The going
thing for the Silent Auction was a Double Barrel Shotgun – there were more men standing
around that than women at a George Straight concert – well maybe not that many, but there
were a lot. When it was said and done the cookoff once again raised over $20,000. Thank
you to all for your support in every way.

once a year. To help you advertise your pod cookoff we allow
each pod to place one quarter page ad in the Terlingua Trails,
each year, free of charge. This ad should run the month before
your cookoff occurs. Should you decide that you need an ad
larger than a quarter page we will simply bill you for the difference
in price. This ad should not be confused with the article
advertising your cookoff in the "Cooking with CASI Calendar"
section in the Terlingua Trails. That article will start to run as soon
as you request your cookoff packet and will run until your
cookoff occurs.
