Teresian House Albany, NY Case History 300-bed Teresian House, a nonprofit skilled nursing facility administered by the Carmelite Sisters for the Aged and Infirm, had undergone a massive construction project to change the way their residents are cared for in a long-term setting. Resident Centered Care embraces the approach that a non-institutional setting helps enhance the quality of life by preserving the residents’ individuality. This belief meshes perfectly with Sodexo’s Mission to create and offer services that contribute to a more pleasant way of life for people whenever and wherever they come together. The client’s stated expectations of Sodexo Senior,IVINGS performance included: Food and Nutrition Services Resident Centered Care • Assist in changing the style and approach to Dining and Nutrition Services delivery to address the quality of life focus. • Customize Dining and Nutrition Services to provide meals on each of seven floors for a total of fourteen “neighborhoods,” to promote socialization, familiarization, and conversation. Institutional requirements were met by installation of a commercial under-the-counter dishwasher, a steam table, and a juice dispenser. Cherry cabinets hold the china, glass, and silverware needed to serve up to 25 residents and granite counter tops, along with other decorative touches that add to the ambiance. Sodexo Senior,IVING is responsible for providing all meal components, nourishment, and floor stock delivery, as well as pot washing for each unit. Fewer FTEs are needed due to the elimination of the trayline and waitress component. Dietary staff delivers the meal to the floors in a hot cart, then sets up the steam table. Certified Nutrition Assistants assigned to each unit are responsible for set up, serving, and cleanup. Continued >>> Teresian House Albany, NY Menus were modified to offer a single hot entrée, for both lunch and dinner, with an alternate vegetable and soup. A sandwich bar consisting of meats and salads is also provided as an alternative choice and has proven very popular. This innovation has eliminated the problem of forecasting the amount needed for an alternative entrée, by providing an immediate substitute if the entrée du jour is refused. Diets and portions are determined by following a computerized menu program that generates a detailed menu card for each resident. Residents are seated at tables of four to six, with a maximum of four tables.
