Legends of Lucky Charms

Do you carry an object that you believe brings you good luck? If so, you are not alone. Even with all of the scientific
advancements in our high-tech society, many people still have some superstitious beliefs. Here are some of the most common lucky charms:
• Horseshoes – Although considered a good luck charm in many cultures, the way to hang a
horseshoe varies. Some
people believe that you should hang a horseshoe on a door with the two ends pointing up so the luck doesn’t fall out. Others believe that the horseshoe should be hung with the points facing down so the luck pours onto you. To some people,
it doesn’t matter which way the horseshoe is displayed long as the horseshoe has been used (not new), was found (not
purchased), and can be touched as you pass by it.
• Four-leaf clovers – The more commonly found three-leaf clover or shamrock is a religious symbol that represents the
Trinity and is said to hold the “luck of the Irish.” Each of the three leaves can also stand for faith, hope, and love. The fourth
leaf stands for luck, which is why you’re considered lucky if you find one of the rare four-leaf variety.
• Crickets – There are many myths surrounding crickets. A cricket’s chirp may foretell pregnancy, coming into money or
impending rain, but is generally thought to be a good sign. In China, crickets are kept in cages as pets.

Zydeco music and serve on a bed of rice with corn bread and a cold beer. Whew doggie...be thankful to be alive and toast all
us Texicajuns!!!"
INGREDIENTS
1 tablespoon olive oil
1 cup skinless, boneless chicken breast halves - chopped
1/2 pound pork sausage links, thinly sliced
1 cup olive oil
1 cup all-purpose flour
Prep Time: 1 hour
2 tablespoons minced garlic
Cook Time: 1 hour
3 quarts chicken broth
Ready: 2 hours
1 (12 fluid ounce) can or bottle beer
6 stalks celery, diced
4 roma (plum) tomatoes, diced
1 sweet onion, sliced
1 (10 ounce) can diced tomatoes with green chile peppers, with liquid
2 tablespoons chopped fresh red chile peppers
1 bunch fresh parsley, chopped
1/4 cup Cajun seasoning
1 pound shrimp, peeled and deveined
DIRECTIONS
1. Heat oil in a medium skillet over medium high heat, and cook chicken until no longer pink and juices run clear. Stir in
sausage, and cook until evenly browned. Drain chicken and sausage, and set aside.
2. In a large, heavy saucepan over medium heat, blend olive oil and flour to create a roux. Stir constantly until browned and
bubbly. Mix in garlic, and cook about 1 minute.
3. Gradually stir chicken broth and beer into the roux mixture. Bring to a boil, and mix in celery, tomatoes, sweet onion,
diced tomatoes with green chile peppers, red chile peppers, parsley, and Cajun seasoning. Reduce heat, cover, and simmer about 40 minutes, stirring often.
4. Mix chicken, sausage, and shrimp into the broth mixture. Cook, stirring frequently, about 20 minutes.
