Instructions:
To assemble layered salad: 2-Full size pan inserts
begin by dividing ingredients in half to assemble both
pans
Ingredients:
Quantity:
Baked Tortilla chips
4.0 lbs.
Black beans
4.0 lbs.
Cheese (low-fat
Cheddar)
8.0 lbs.
Diced Tomatoes/Pico
de gallo
4.0 lbs.
Enchilada Sauce
4.0 lbs.
Fat Free Ranch
Dressing
2 qt.
JTM Shredded Chicken
Taco
15 lbs.
Shredded Lettuce or
Salad Mix
12 lbs.
Sliced Jalapenos
2.0 lbs.
Prep Time: 40 min.
1. Start with Tortilla chips (crushed) as a base for the
salad
2. Top the tortilla chips with 1/2 of the lettuce
3. Spread 1/2 of the taco meat over the lettuce
4. Top the taco meat with the remaining quantity of
lettuce
5. Spread the remaining taco meat over the lettuce
6. Top the Taco meat with the vegetables (tomato &
black beans)
7. Top the meat and vegetables with the enchilada
sauce
8. Sprinkle with the shredded cheese
9. Spread salad dressing over the top
10. Finish with diced Jalapenos as Garnish
