a.m. followed by a buffet of beefsteak
with gravy, savory baked chicken, mashed
potatoes, Scandinavian vegetables, tossed

Bill’s Byline........
Anyone who has ever visited the Gloria McClellan Adult Activity and
Resource Center know how integral volunteers are to the services we
provide. Whether you take a volunteer driver ride with Out & About,
register for or are served by a Nutrition Program Volunteer for lunch, or
take a trip with Culture Caravan, you are being served by one of the
McClellan Center’s many wonderful volunteers. Even though it has been
said a hundred times, it bears repeating, we would not be able to provide
the services we do without the efforts of the McClellan Center’s many
wonderful volunteers.
April is National Volunteer Month, which is the time we recognize the
thousands, if not millions of volunteers around the country that, by their
efforts, help make our communities great. Here at the McClellan Center
we have about one hundred volunteers serving our nutrition program,
Out & About Senior Transportation Program, and our Culture Caravan
Travel program. Thank you to all of our volunteers for their services.
This year Maia Hodge is planning our Annual Volunteer Recognition
Event on the afternoon of Thursday, April 16th. Invitations will be
distributed shortly. Speaking of Maia, in March she was selected by her
peers as the 2014 City of Vista Employee of the Year! Maia was selected
based on all of her positive efforts here at the McClellan Center and her
involvement in the City’s Employee Outreach and Recognition
Committee. The recognition should not be much of a surprise to
everyone here at the McClellan Center who has seen what a great job
she is doing. When you see Maia, please congratulate her on this award.
In March, quite a few of our regular participants were involved in
individual and “focus group” surveying conducted by business students
from CSU: San Marcos. The students completing these surveys were
working on behalf of the Vista Silver Star Foundation (VSSF) to prepare
a needs assessment of the McClellan Center and the senior community
in Vista. The needs assessment will be used by the VSSF to plan their
efforts in the coming years. If you were one of the people that participated
in one or both of the surveys, thank you for your participation!
April is hopping at the McClellan Center with all kinds of events and
activities. Some of the month’s highlights include the Spring Luncheon
on April 3rd, buffets on April 16th and 24th and the North County
Community Dance on April 10th at 2:00pm, but these are only a few of
the many activities in April. To see what else is happing, check out the
Mark Your Calendars feature on page 11.

Maia’s Musings
April is usually associated with tax time but it is also a time of renewal. I cannot think of a better place
to pass the time than the Gloria McClellan Adult Activity and Resource Center. Yes it is a new name and
the unveiling of which will occur on Tuesday, April 28 at 1:00 p.m. in the front parking lot. While you wait for the official ribboncutting ceremony of the new sign for the Gloria McClellan Center, why not join us for memorable events during the month.
Don your best spring hat and parade your style at the 2nd Annual Hat Parade to be held at the Spring Luncheon on Friday, April 3.
Hat decorating begins at 10:00 a.m. with the parade at 11:45 a.m. The day will be “hopping” with fun as The Music Men provide
classic barbershop harmony entertainment before lunch is served at 12:00 p.m.
The Community Dance features the Billy Harper Band on Friday, April 10 from 2:00-4:00 p.m. Please join us this month as we
glide across the dance floor, sample delicious hors d’oeuvres, and win festive door prizes.
Partnering with health care organizations at the center is key to providing the services we may need. This month we are beginning
an Alzheimer’s Support Group for individuals and caregivers on Tuesday, April 14 from 3:00-4:00 p.m. in the Conference Room.
Then on Friday, April 17 we have an Alzheimer’s workshop entitled Know the 10 Signs: Early Detection Matters from 10:00-11:00
a.m. in the Jasmine Room. Both events are free and co-sponsored by the Gloria McClellan Center and the Alzheimer’s Association
– San Diego/Imperial Chapter. Sign up with Maia at 760-643-5281.
How’s your brain strength? Have you done your brain exercises today? No “worries” because you can join us on Thursday, April
16 for our Brain Games Buffet. Nourish your body and flex your brain with interactive and entertaining brain teasers to keep your
memory sharp. The games start at 11:00 a.m. in the Park Terrace Café.
Greatcall has returned to guide us in the use of our smartphones. An Introduction to the Smartphone Class will begin at 11:00
a.m. in the Park Terrace Café on Friday, April 17. Then at 1:00 p.m. Allen Farberov of Greatcall will instruct the Smartphone Class
in the Azalea Room. Please reserve a seat in the class by calling Maia at 760-643-5281.
Let’s go fly a kite and send it soaring up in Brengle Terrace Park! Wednesday, April 22 is the day to share your love of kite flying
with the Vista Preschool children. Beginning at 10:00 a.m. we will meet in the park and fly kites. Then the children with walk with
us back to the center to entertain us with a few songs before lunch. Sign up with Maia at 760-643-5281.
Earth Day 1970 achieved a rare political alignment, enlisting support from Republicans and Democrats, rich and poor, city slickers
and farmers, tycoons and labor leaders. The first Earth Day led to the creation of the United States Environmental Protection
Agency and the passage of the Clean Air, Clean Water, and Endangered Species Acts. – www.earthday.org
Today we celebrate Earth Day to remember to be environmentally conscience of our planet. We will celebrate on
Friday, April 24 at our Earth Day Buffet with entertainment by Dean Ratzman. Wear that comfy tie dye T-shirt and blue
jeans and join us as we celebrate flower power and a clean, healthy, diverse world!

Technology Tip: How to safely clean your technology – not on the inside but on the outside. Please follow these steps once per
month to eliminate germs and bacteria from your devices: 1) Turn off your smartphone or tablet; 2) Remove your screen
protector and case; 3) Use a microfiber cloth and tech-safe cleaning solution to clean the surfaces of your device; 4) Clean the
ports of your device with compressed air (designed for use with electronics); and 5) Put your screen protector and case back on
your device.

Kitchen Capers with Walter
BUTTER CAKES and POUND CAKES
“Shortened” cakes have just four ingredients: fat, sugar, eggs, and flour. Some recipes
also call for baking powder or baking soda, milk, buttermilk or sour cream, flavoring extracts, and a
pinch of salt to heighten the flavors.
Butter cakes and pound cakes are characterized by their high proportion of fat and sugar to flour,
which makes them tender and moist. To achieve these results, you must use high quality butter and
pure flavoring extracts, measure carefully, and follow the recipe directions.
Before you begin, make sure that all of your ingredients are at room temperature, particularly the
fat, eggs and any liquid you may be using. It’s essential because if the butter is too cold, the batter
will not increase in volume when during baking. When the eggs and liquids are cold, the batter will
curdle, and the liquids and fats will separate. This will make the cake’s texture dense. And, if any of
the ingredients are warm, the fat will melt and you will not be able to whip air into the batter.
You don’t have to have a stand-up mixer to make these cakes, but it helps when adding the ingredients
because we add them a little at a time. After the softened butter is creamed until fluffy, the other
ingredients are added slowly starting with the sugar and then the eggs one at a time. After you’ve
beaten in these items, the remaining dry ingredients must be added as gently and quickly as possible
to avoid deflating the air from the batter. You see why a stand –up mixer is better? Any other
ingredients like berries, chocolate chips, etc. must be folded in with a rubber spatula by hand so
their colors do not bled into the rest of the cake.
Now it’s time to bake. Pour the batter immediately into a greased and floured baking pan and bake in
a pre-heated oven. To test for doneness, lightly press the cake on top at the center. If it springs
back…it’s done!
BLUEBERRY POUND CAKE
2 T. butter
¼ cup white sugar
2¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
2 cups fresh blueberries
1¼ cup all-purpose flour
DIRECTIONS:
1. Pre-heat oven to 325 degrees, grease and flour a 10 inch tube pan with 2 tablespoons of
butter, sprinkle with ¼ cup sugar. Mix together 2¾ cup flour, baking powder, and salt. Set
aside.
2. In a bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs
one at a time, then gradually add the flour mixture. Dredge blueberries in the remaining flour,
and fold into the batter with a spatula. Immediately pour into pan and bake for 70 to 80
minutes. Let cool for 10 minutes, then turn onto a wire rack to finish cooling.

Atlantic City. Deana’s concert tour, “Memories Are Made of
This,” featured her singing the fabulous hits of Dean Martin,
Frank Sinatra, Sammy Davis, Jr. and Judy Garland. Most
memorable of all-Deana singing her father’s "Everybody
Loves Somebody Sometime."

SENIOR SERVICES

Veteran and Family Resource Center Groundbreaking Event
Interfaith Community Service's (ICS) initiative to address veteran homelessness was witnessed
recently by over 150 people as an official "sledgehammering" was done to begin construction of
the new Veteran and Family Resource Center in Escondido. Upon completion, this 10,000
square feet facility will enhance ICS’s mission of "Helping People Help Themselves".
Brandon Enggleston, a Palomar Jazz
student, provided guitar music to the
Senior Connection event held at St.
Francis of Assisi Church in Vista for over
24 persons from all over North
County. Once a month music is provided
to all four sites, two each in San
Marcos and Vista.
The Aloha Hawaiian Dancers from
Carlsbad show a dance using bamboo
sticks at the Senior Connections event
held in the San Marcos Lutheran Church.
Every Thursday seniors are welcome to
attend from 11:30 a.m. to 1:00 p.m.
Lynn Paine, Master Gardner from the Vista
Garden Club gave an informative
talk about Monarch Butterflies to the Senior
Connections lunch group at the Vista Village
Mobile Home Park. All seniors are welcome to
these talks and can call Nadine Kaina at (760)
941-0140 for schedule information.
Dancing one of several Hawaiian
dances are the Aloha Dancers,
under the direction of Christinia
Pualani, held recently at the San
Marcos Lutheran Church with
Senior Connections. Once a month
music is provided while the other
days, Monday thru Thursday,
weekly guest speakers talk about
hobbies and services for seniors at
two sites in Vista and San Marcos.

Volunteer Recognition
2015
National Volunteer Week, April 12-18, 2015, is about inspiring, recognizing and encouraging people to seek
out imaginative ways to engage in their communities. It’s about demonstrating to the nation that by working
together, we have the fortitude to meet our challenges and accomplish our goals.
National Volunteer Week is about taking action and encouraging individuals and their respective communities
to be at the center of social change – discovering and actively demonstrating their collective power to make a
difference.
National Volunteer Week, a program of Points of Light, was established in 1974 and has grown exponentially
each year, with thousands of volunteer projects and special events scheduled throughout the week.
This month we are spotlighting our Senior Center, Out & About, and Culture Caravan volunteers who will be
honored at the Volunteer Recognition event on April 16th. Thank you to all of our wonderful volunteers!

April 3rd – Spring Luncheon at 12 noon in the Park Terrace Café. Please join us at 10:00 a.m. to decorate
spring bonnets and fedoras. Then sit back and enjoy entertainment by the Music Men (Palomar Pacific Chapter
of the Barbershop Harmonies Society) at 11:00 a.m. At 11:45 a.m., join us in our second annual hat parade.
Lunch will be served at noon. The main entrée is baked fish filet with tartar sauce, red potatoes, Brussels sprouts
and strawberries. Alternatives to the main entrée are taco salad or burgers.
April 3rd – Newcomers Recognition at noon in the Park Terrace Café. Join us as we recognize the newest
members of our lunch nutrition program!

April 16th – Volunteer Appreciation Movie and Dinner at 1:30 p.m. in the Azalea Room. Enjoy “March

April 17th Smartphone Class at 1:00 p.m. in the Azalea Room. Given by Allen Farberov of Great Call. Free

April 17th – Alzheimer’s Workshop at 10:00 a.m. in the Jasmine Room. Given by the Alzheimer’s
Association.
April 22nd – Let’s Go Fly a Kite with the preschool children of the Recreation Center! We’ll leave the senior
center at 10:00 a.m. and walk over to the park where we’ll enjoy flying kites with the Rec Center’s Tiny Tots.
When we’re done having fun, we’ll go back to the senior center to have lunch and enjoy some singing
entertainment by the Tiny Tots.
April 24th – Earth Day Buffet at noon in the Park Terrace Café. One Man Band, Dean Ratzman, will be here
to entertain at 11:15 a.m. The buffet will include beefsteak with gravy, savory baked chicken, mashed potatoes,
Scandinavian vegetables, tossed salad, and peach cobbler for dessert. Free coffee day too!

In February, the Nutrition Advisory Committee
collected $1594.96 in donations from sponsors
and our coffee, candy, bread and raffle
fundraisers. The committee subsequently spent
$1726.40 on decorations for the dining hall,
helium, mileage reimbursement and special
desserts during the month of February.
At the March 2015 meeting, the Nutrition
Advisory Committee approved decorations and
desserts for April events and entertainment for the
Earth Day Buffet. The Vista Silver Star Foundation
reported that Focus Group meetings were ongoing
with the student team from CSUSM. The Nutrition
Advisory Committee approved tuning of the Pearl
River Piano by Jeff Lehman. The NAC also
suggested periodic presentations to the
congregate illustrating donations received via
glass jars and/or a pie chart or bar graph. April
raffle is a bottle of Tequila to be raffled on May 5,
2015 from a (150) number board.
Thank You for supporting the committee’s
fundraising efforts this year! Every donation you
make towards a cup of coffee, a loaf of bread, or a
candy bar makes a difference!

Spring Cleaning Tips to Keep
Seniors Safe This Allergy Season
Spring is finally here, and so is allergy season.
Whether you are providing care for your elderly
loved one, or (s)he is in the hands of a caregiver, it
is important to take the proper precautions to avoid
any allergy-related complications this spring. The
following are a few pointers on how to reduce
exposure to allergens and maintain a healthy
environment.
Allergens that are often trapped inside homes
include: pollen, mold, dust mites, and animal dander.
For seniors (especially those with respiratory and
other chronic illnesses), common allergies can
cause serious health complications.
Here are a few spring-cleaning tips to reduce
exposure to these allergens:
•
Filters: Clean or replace any filters around the
home, including air conditioners, humidifiers,
and furnaces.
•
Box springs: When cleaning your sheets and
pillowcases, vacuum the box spring in order to
eliminate any excess dust and allergen build-up.
•
Rug bottoms: Often times, area rugs are moved
out of the way to sweep and mop underneath.
Make sure to wash or vacuum both sides of the
rug frequently, as they trap dust.
•
Window and door tracks: These are often
times overlooked, but serve as prime spots for
mildew and mold to grow. Spray the track and
wipe it clean to avoid exposure.
•
Pets: Pet dander is a common allergen. Avoid
letting your pet in your bedroom; wash and brush
your pet frequently; and keep litter boxes clean
and isolated from the rest of the home.
•
Bathrooms: Keep bathrooms clean and wellventilated to minimize the presence of moisture
and mold from building.
Other Tips to Avoid Allergies:
•
Limit the use of ceiling fans and windows.
Windows bring in pollen from outside, while
ceiling fans circulate it throughout the home.
•
Avoid hanging clothes to dry outside, as
allergens may collect on the items.
•
Bathe after coming in from a day outside to
remove any allergens that may be trapped on
skin and hair.
•
Medications: WARNING: Over-the-counter
allergy medications may have harmful effects
when combined with other medications.
Before providing your loved one with allergy
medication, contact his or her physician.
•
Consider using non-toxic cleaning supplies and
avoid using bleach, ammonia, and other
products that can irritate allergies and respiratory
systems.
If you think your patient or loved one may be
experiencing allergies, contact his or her physician.
Often times, senior citizens have more than one
medical condition; therefore, diagnosing allergies
may be complicated.
