Named after the iconic decorative moulding found on much of Greece’s architecture, Egg & Dart will bring to the region’s hottest culinary district a chic Greek restaurant and bar serving up soulful regional cuisine and uniquely-crafted cocktails in a vibrant atmosphere. The duo behind Egg & Dart are no strangers to the culinary landscape. Co-owners Costa Grillas and Niko Theodorou both come from families with years in the restaurant business. Grillas hails from the acclaimed Coral Gables institution, Maria’s, where diners have enjoyed traditional Greek cooking for over 28 years. Partner Theodorou’s family owns and operates the popular Sea Satin Market, a romantic waterfront restaurant nestled in the heart of Mykonos. The combination of their restaurant backgrounds and their creative, timely concept for the restaurant are certain to make Egg & Dart a premiere hotspot in what is arguably the most trend-setting, culinary zip code in town. “With the culinary diversity of Miami’s Design District, we are excited to bring a hip upscale slice of Greece to the neighborhood,” says Grillas. Under the guidance of Theodorou’s mother, Vagia Theodorou, who operates a successful catering company in Athens and a restaurant on the island of Tzia, the menu at Egg & Dart will honor the breadth of traditional Greek cuisine by bringing fresh, wholesome cooking from all regions of Greece. Diners can whet their appetites or form an entire meal with the array of meze (small plates) including calamari, grilled and stuffed with a trio of cheeses; shrimp saganaki sautéed in a tomato and feta sauce and steamed ◆ Grillas and Theodorou collaborated with their designers to create a rustic environment with an urban appeal. mussels, infused with white wine, dill, garlic and parsley. Greek staples like hummus, a selection of olives and dako, the Greek version of bruschetta, topped with crum- bled feta are also great starters. Main courses feature a selection of grilled meats, seafood and the star of the show, whole fresh fish for two, grilled to perfection with Greek olive oil, lemon, oregano and dramatically presented on an elevated tray of glass (market price). Meals are rounded out with a variety of side dishes including lemon roasted potatoes, horta – a medley of red, white and gold Swiss chard with escarole, dandelions and spinach and Greek fries, tossed with oregano and grated kefalograviera cheese. Guests can complement the dining experience with a selection of signature specialty cocktails, as well as traditional Greek liquors like ouzo, metaxa and masticha. Grillas and Theodorou collaborated with their designers to create a rustic environment with an urban appeal. The 202-seat restaurant features organic clay walls, polished concrete floors and white lacquered tabletops, creating an unpretentious yet sexy ambiance. “When you think Greek restaurant, think again. Egg & Dart will combine the best of what Greek dining has to offer – comforting rustic cuisine and warm and inviting service, with a hip, modern surrounding that today’s diner is looking for,” says Theodorou. Revelers and diners can mingle and imbibe at the stunning cherry wood and polished concrete bar, featuring backlit shelving and a dramatic wood & glass chandelier. A banquette lining the length of the restaurant, an Indonesian teak communal table and an eyecatching fresh seafood display produce an inviting, contemporary vibe. Sleek frosted glass doors lead to a private dining room, complete with a state-ofthe-art video and sound system. Slated to open mid-July 2011, Egg & Dart will be located at 4029 N. Reality cooking star launches BBQ sauces Los Angeles, CA - It brought "secret weapon" heat to the competition, earned praise from some of the toughest food critics around and satisfied a room of hungry truckers — and now a new line of BBQ sauces are available from Reality cooking star Sharone Hakman. I wasn’t going to let it interfere with our plans. We picked up our dates and went to a local hotel cocktail lounge. We were having a great time but my stomach was still upset. I mentioned it to my date and she smiled knowingly and ordered a drink from the bar and told me that it would help my stomach. It was called Frenet Blanca. She told me it was named White Window. Its flavor has been described as "like black licorice-flavored Listerine." I feel good after reading this now knowing she wasn’t trying to kill me. I drank the Fernet Blanca but felt no change in my condition at first and shortly thereafter I decided to go to the men’s room. I walked in and stood facing the wall that held the toilet and sink. I then remember hearing two loud thuds and then nothing. I awoke with a cut over my right eye, blood streaming down my face but feeling otherwise great. I later realized the two thuds were my head hitting the wall and then the floor. A few stitches later I was feeling no pain and finished the evening with no further calamities. If I hadn’t traveled to Spain I never would have heard about the wonder drink and never would have had the experience to talk about all these years later. That’s the great part of sharing in a culture that is foreign to you. You learn so much about the destination’s food, customs, people and yourself. No Reservations, Chef Anthony Bourdain and Bizarre Foods, Chef Andrew Zimmern have it right. If it looks good eat it or drink it and do it with gusto and with eyes wide open. The name is a phonetic spelling of tandoori and it is emblematic of Pat's simple goal: to demystify traditional Indian cuisine, making it more accessible and affordable without compromising quality. He gathered family recipes with an emphasis on authenticity, bought a vending trailer, and started TUN-DU-REE. Lauderdale. Since opening his restaurant, in April of 2006, Chef Mike has endeared himself to legions of loyal diners. Local residents, and visitors alike, cannot get enough of Chef Mike's sublime Thai dishes, as well as his superb selection of fresh sushi, sashimi, and specialty rolls. Chef Mike is dedicated to creating delectable dishes, comprised of highquality ingredients, combined with fresh Thai herbs (including lemon grass, basil, coriander, and kaffir leaves) to ensure authentic flavor. While many Thai chefs only stir fry dishes, in woks, Chef Mike also sautes, broils, bakes, and grills dishes. He is also proud to create his unique Thai dishes, from his own recipes, using French culinary techniques.. Chef Mike's success is not surprising, since he started cooking as a youngster. His family ran a small restaurant, out of their home in Thailand, which specialized in serving popular dishes such as pad Thai and nam sod. While he assisted his mom in their restaurant, he also helped her at festivals, where they sold noodle dishes, fresh vegetables, and homemade ice cream. He attended high school in Bangkok, where he worked on expanding his culinary repertoire. While he went on to attend Siam Business School in the city, he studied hotel and restaurant administration. Concurrently, Chef Mike worked as a cook and a food taster, at the Officer's Club at the Chaopraya Hotel, which catered to United States Army officers who were stationed there during the Vietnam War. In 1974, he moved to London, where he studied business, at South Theme College, as well as English, at the City of London Polytechnic. While going to college, Chef Mike worked at a casual American restaurant and an upscale French restaurant. While he started as a dishwasher, at the French fine dining spot, he worked his way up to head chef over the course of nine years (with stints as a line cook and a sous chef along the way).
