Miami, FL - This summer, foodies
will celebrate the opening of Egg & Dart,
the Miami Design District’s newest dining destination. Named after the iconic
decorative moulding found on much of
Greece’s architecture, Egg & Dart will
bring to the region’s hottest culinary
district a chic Greek restaurant and bar
serving up soulful regional cuisine and
uniquely-crafted cocktails in a vibrant
atmosphere.
The duo behind Egg & Dart are no
strangers to the culinary landscape.
Co-owners Costa Grillas and Niko
Theodorou both come from families
with years in the restaurant business.
Grillas hails from the acclaimed Coral
Gables institution, Maria’s, where diners have enjoyed traditional Greek
cooking for over 28 years. Partner
Theodorou’s family owns and operates
the popular Sea Satin Market, a
romantic waterfront restaurant nestled in the heart of Mykonos. The combination of their restaurant backgrounds and their creative, timely concept for the restaurant are certain to
make Egg & Dart a premiere hotspot in
what is arguably the most trend-setting, culinary zip code in town. “With
the culinary diversity of Miami’s
Design District, we are excited to bring
a hip upscale slice of Greece to the
neighborhood,” says Grillas.
Under the guidance of Theodorou’s
mother, Vagia Theodorou, who operates a successful catering company in
Athens and a restaurant on the island of
Tzia, the menu at Egg & Dart will honor
the breadth of traditional Greek cuisine
by bringing fresh, wholesome cooking
from all regions of Greece.
Diners can whet their appetites or
form an entire meal with the array of
meze (small plates) including calamari,
grilled and stuffed with a trio of
cheeses; shrimp saganaki sautéed in a
tomato and feta sauce and steamed

mussels, infused with white wine, dill,
garlic and parsley.
Greek staples like hummus, a selection of olives and dako, the Greek version of bruschetta, topped with crum-
bled feta are also great starters. Main
courses feature a selection of grilled
meats, seafood and the star of the show,
whole fresh fish for two, grilled to perfection with Greek olive oil, lemon,
oregano and dramatically presented on
an elevated tray of glass (market price).
Meals are rounded out with a variety of
side dishes including lemon roasted
potatoes, horta – a medley of red, white
and gold Swiss chard with escarole,
dandelions and spinach and Greek
fries, tossed with oregano and grated
kefalograviera cheese. Guests can complement the dining experience with a
selection of signature specialty cocktails, as well as traditional Greek liquors
like ouzo, metaxa and masticha.
Grillas and Theodorou collaborated
with their designers to create a rustic
environment with an urban appeal.
The 202-seat restaurant features organic clay walls, polished concrete floors
and white lacquered tabletops, creating an unpretentious yet sexy
ambiance. “When you think Greek
restaurant, think again. Egg & Dart will
combine the best of what Greek dining
has to offer – comforting rustic cuisine
and warm and inviting service, with a
hip, modern surrounding that today’s
diner is looking for,” says Theodorou.
Revelers and diners can mingle and
imbibe at the stunning cherry wood
and polished concrete bar, featuring
backlit shelving and a dramatic wood &
glass chandelier. A banquette lining the
length of the restaurant, an Indonesian
teak communal table and an eyecatching fresh seafood display produce
an inviting, contemporary vibe. Sleek
frosted glass doors lead to a private
dining room, complete with a state-ofthe-art video and sound system.
Slated to open mid-July 2011, Egg & Dart will
be located at 4029 N. Miami Avenue in the
Miami Design District. The restaurant can be
reached at 786. 431.1022.
Reality cooking star launches BBQ sauces
Los Angeles, CA - It brought "secret
weapon" heat to the competition,
earned praise from some of the toughest
food critics around and satisfied a room
of hungry truckers — and now a new
line of BBQ sauces are available from
Reality cooking star Sharone Hakman.
The debut of HAK’s BBQ Sauce, a
premium all-natural sauce line developed by the self-taught Hakman, who
was a finalist on the first season of
FOX's hit culinary competition series
is an option for restaurants for
bulk purchases.
"BBQ is second nature to me, and
I've been working on different sauce
recipes as long as I can remember," said
Hakman, who grew up in a workingclass Los Angeles neighborhood and
found his way to the kitchen at an early
age, where he instantly felt at home.
"When I made it onto MasterChef™,
Sharone Hakman with his new sauce.
I was able to use some of my recipes
in competitions, including feeding
marines and satisfying hearty appetites
during a big truck-stop challenge, and
everyone was blown away by the sauce.
I knew I was on to something, and

The summer is probably the most
popular time for people to take trips and
visit sites all over the world. I have done
some sight seeing over the years in some
unforgettable places and some forgettable places too. For those of us in the
food industry, travel is a great way to get
a head start on trends that may be coming towards us from the other coast or
another country.
I remember being in Spain on the
Costa del Sol with a group of friends
and having a great time. I was single
then so when I met a beautiful local
girl I arranged to go out on a date with
her and her friend for my friend.
It has never been easier to take advantage of the
benefits of a point of sale (POS) system.
Harbortouch offers a full-featured point of sale system
without all the hassle or the high cost. We removed
the cost barrier and simplified the process so you
can easily transition from your current transaction
terminal to a state of the art touch-screen POS
system that will streamline your business
operations and automate your daily
management activities. Harbortouch offers countless time
and money saving features that allow you to focus on

Before we left to meet the ladies I
was developed an upset stomach and
was not feeling my best. I wasn’t going
to let it interfere with our plans. We
picked up our dates and went to a local
hotel cocktail lounge. We were having a
great time but my stomach was still
upset. I mentioned it to my date and
she smiled knowingly and ordered a
drink from the bar and told me that it
would help my stomach. It was called
Frenet Blanca. She told me it was
named White Window. Here is the

may also be served with coffee and
espresso or mixed into coffee and
espresso drinks. In Argentina it is commonly mixed with Coca-Cola. It contains 45% alcohol by volume. It may be
served at room temperature or on the
rocks (with ice). A mint-flavored version of fernet is also available.
Because of its list of ingredients, a
number of home remedies call for fernet, including for the treatment of menstrual and gastrointestinal discomfort,
hangovers, baby colic, and (formerly)
cholera. Its flavor has been described as
"like black licorice-flavored Listerine." I
feel good after reading this now knowing
she wasn’t trying to kill me.
I drank the Fernet Blanca but felt no
change in my condition at first and
shortly thereafter I decided to go to the
men’s room. I walked in and stood facing the wall that held the toilet and sink.
I then remember hearing two loud
thuds and then nothing. I awoke with a
cut over my right eye, blood streaming
down my face but feeling otherwise
great. I later realized the two thuds were
my head hitting the wall and then the
floor. A few stitches later I was feeling no
pain and finished the evening with no
further calamities.
If I hadn’t traveled to Spain I never
would have heard about the wonder
drink and never would have had the
experience to talk about all these years
later. That’s the great part of sharing in
a culture that is foreign to you. You
learn so much about the destination’s
food, customs, people and yourself. No
Reservations, Chef Anthony Bourdain
and Bizarre Foods, Chef Andrew
Zimmern have it right. If it looks good
eat it or drink it and do it with gusto
and with eyes wide open. It also helps
to have a local show you around.

The Best Filtration Matters in your Operation
The benefits water treatment delivers to a foodservice operation affect the
success of your business every single day. It keeps your equipment running
smoothly and maximizes its efficiency. Water treatment improves the taste
of the foods and drinks you serve, and delivers consistent results every time.
Water treatment provides operators with the peace of mind that their water
is the best it can be. But when it comes to the important task of maintaining
and servicing filters and their replacement cartridges, operators unfortunately
have little time to think about it.

REE's mettle as a franchise concept.
"We built TUN-DU-REE for scalability
on a hub-and-spoke model. We plan
to have 10 locations in Central Florida
within three years, and 20 in Florida
within five years. Long-term, we want
a TUN-DU-REE on every corner, to
provide diners who need quick service with a choice other than burgers,
fried chicken, sub sandwiches, tacos,
and pizza."
A host of Indian fast casual concepts
have appeared recently, but people
around TUN-DU-REE think it sets itself
apart from the crowd. "We were drawn
to TUN-DU-REE because its product
integrity is unique in fast casual dining.
It's slow-cooked quick service," says
Dylan Johnson of elham&tull, TUNDU-REE's Marketing and PR agency.
"It's different from the other Indian fast
casual concepts that have shown up
because TUN-DU-REE doesn't do
Americanized Indian food. It's authentic Indian food, in a comfortable, fastcasual setting." TUN-DU-REE has locations at 1506 West Kennedy Boulevard
and 3409 West Bay to Bay.

Tampa, FL - Four years ago, Naval
aviator Patty Bhavahung hung up his
pilot's cap to start an Indian fast casual dining concept called TUN-DUREE. The name is a phonetic spelling
of tandoori and it is emblematic of
Pat's simple goal: to demystify traditional Indian cuisine, making it more
accessible and affordable without
compromising quality. He gathered
family recipes with an emphasis on
authenticity, bought a vending trailer,
and started TUN-DU-REE.
"A lot of people told me that I was
crazy when I started," Pat says, "or said
I needed to adapt my concept to the
American consumer. But I trusted my
gut and that my customers wouldn't
want anything other than a true product, called by its name." The success of
the TUN-DU-REE trailer and now two
locations in South Tampa shows that
customers seem to agree.
TUN-DU-REE thanked their customers with a fourth anniversary celebration, in June with the Triple Tikka

TUN-DU-REE also offered discounted

pound packages and offered as whole
bean or ground. “Our Blended Gold
Gourmet Coffee is a five-bean blend
that uses a unique two-phase roasting
process. The result is a vibrantly rich,
well-balanced gourmet coffee that customers already enjoy in our chocolate
bar drinks”, said Jeff
Guy, President. “After
listening to our customers, it became
obvious that 3 Sisters
Chocolate needed to
offer our proprietary
blend coffee as a
stand-alone product”.

Boca Raton, FL - Steve’s Wood Fired
Pizza, Located at 9180 Glades Road
founded in 1999 by Steve Greenberg,
was the first wood fired pizza restaurant to open in Boca Raton, sparking a
major trend.
Steve’s was named one of America’s
10 Best Pizza Parlors by American Way
(American Airlines) Magazine. To celebrate having served over a quarter million customers since opening, Steve’s
offered a complimentary personal size
pizza with the purchase of one entrée
during the month of May.
Greenberg started making wood
fired pizza in 1987 — there were very
few people in the country making
wood fired pizza at that time. Located
at 9180 Glades Road at the southwest
corner of Glades and Lyons, Steve’s
serves 50 kinds of thin crust pizza,
and offers more than 40 different toppings. Homemade whole wheat crust
is also available.
“When you come to my restaurant,”
Greenberg said, “you are given a choice
of how you want your pizza cooked.
Anybody can burn a pizza, but our oven
is like a Ferrari--you really have be an
experienced artisan to operate it, so the
pizza comes out crispy, crunchy and not
burnt. Some other pizza restaurants are
serving burnt pizza and pizzas that are
slapped together, making them dry,
salty or even undercooked.”

1/3cholesterol cheese now
available for restaurants
Sturtevant, WI - All-natural cheese
with 1/3 less cholesterol and no additives is now available globally for purchase and private labeling, according to
the dairy division of Alliance Enterprises
of SE Wisconsin, LLC.
Full-fat, reduced-fat and fat-free
cheeses can now be produced using the
all-natural, patented Benelact® technology, which reduces cholesterol while
retaining taste, functionality and nutrients in milk products.
The technology can be used to
make a variety of commodity cheeses
(such as Cheddar, Mozzarella and
Colby), as well as specialty and
Hispanic cheeses (such as Queso
Blanco, Quesadilla and Chihuahua).
“Processors, retailers and foodservice companies can deliver the hearthealthy cheeses consumers want without sacrificing flavor and functionality,”
said Brandon Malacara, Benelact marketing director. “This cholesterolreducing technology adds great value
to commodity-type cheeses, but it is
also valuable to the growing Hispanic
cheese market, which lacks healthy
options right now.”
Companies may purchase lowercholesterol cheeses directly from

Broward Nelson — the one stop for ALL your fountain needs wants to save YOU money!
Lured by the warm weather and a
chance to work at his cousin's restaurant — the former Yum Yum of Siam in
Sunrise — Chef Mike moved to Ft.
Lauderdale in 1983. He also worked at
Chang Mai of Siam and Mai Kai — as a
server and a captain — before opening
Thai Grocery, which morphed into Thai
Express. The latter specialized in takeout and delivery of Thai dishes. He also
worked as the chef at the Lighthouse
Point Country Club.
In 1991, Chef Mike opened up Thai
Pepper, in Coral Springs, where he specialized in cooking authentic, scrumptious Thai dishes. After an impressive fifteen year run, he sold this restaurant, in
2006, to open Coco Asian Bistro & Bar in
a larger space in Ft. Lauderdale.
Chef Mike, and his wife, Lisa, also opened
Mama Asian Noodle Bar, in Coconut Creek, in
February of 2010. This fast-casual eatery serves up
an array of Thai dishes in a casual setting. The
restaurant is located at 1841 Cordova Rd and can

Hak's BBQ Sauce is packaged in a
15.5-oz sleek glass flask with a modern black label and uses all-natural
quality ingredients with no added
preservatives. Chipotle Bourbon is
the debut flavor for the line, which
will be joined by Thai Chile Tamarind
and Habanero Pineapple releases
later this year. Future plans include
BBQ rubs and marinades.
The launch Chipotle Bourbon offeris
layers of sweet and tangy akin to a per-
fectly aged scotch. Punctuated by
caramelized onions, a deep smack of
bourbon and smoky roasted chilies, the
flavor starts off smooth then develops a
slow, satisfying heat on the palette.
"This sauce isn't for your average
cowboy!" says Hakman, who since his
TV debut is also having fun cooking
up a storm for Hollywood A-listers
and celebrity chefs. "The sauce is
masculine, yet refined and sophisticated too. It pairs with cigars and ribs
just as well as your everyday burgers
and grilled veggies."

Mike Ponluang is the talented owner
and the gifted executive chef, of Coco
Asian Bistro & Bar, which is located in
the Harbor Shops in Ft. Lauderdale.
Since opening his restaurant, in April of
2006, Chef Mike has endeared himself to
legions of loyal diners. Local residents,
and visitors alike, cannot get enough of
Chef Mike's sublime Thai dishes, as well
as his superb selection of fresh sushi,
sashimi, and specialty rolls.
Chef Mike is dedicated to creating
delectable dishes, comprised of highquality ingredients, combined with fresh
Thai herbs (including lemon grass, basil,
coriander, and kaffir leaves) to ensure
authentic flavor. While many Thai chefs
only stir fry dishes, in woks, Chef Mike
also sautes, broils, bakes, and grills dishes. He is also proud to create his unique
Thai dishes, from his own recipes, using
French culinary techniques..
Chef Mike's success is not surprising,
since he started cooking as a youngster.
His family ran a small restaurant, out of
their home in Thailand, which specialized in serving popular dishes such as
pad Thai and nam sod. While he assisted his mom in their restaurant, he also
helped her at festivals, where they sold
noodle dishes, fresh vegetables, and
homemade ice cream.
He attended high school in Bangkok,
where he worked on expanding his culinary repertoire. While he went on to
attend Siam Business School in the city,
he studied hotel and restaurant administration. Concurrently, Chef Mike
worked as a cook and a food taster, at
the Officer's Club at the Chaopraya
Hotel, which catered to United States
Army officers who were stationed there
during the Vietnam War.
In 1974, he moved to London, where
he studied business, at South Theme
College, as well as English, at the City of
London Polytechnic. While going to college, Chef Mike worked at a casual
American restaurant and an upscale
French restaurant. While he started as a
dishwasher, at the French fine dining
spot, he worked his way up to head chef
over the course of nine years (with stints
as a line cook and a sous chef along the
way). Ever the entrepreneur, he also
owned a casual place in London, called
American Heaven, which served hamburgers, steaks, and chilli.
