Now called Varsity Club (2142 N. Clybourn, 773.348.0414), the well-loved hangout is suddenly more sports-centric than ever. Thirty-plus flat-screen TVs are tuned into games of every sort, ranging from soccer to hockey to pay-perview boxing. Ballpark fare dominates the menu, which is laden with hot dogs, jumbo pretzels doused in cheese sauce and ice cream sandwiches for dessert. His recently opened Risqué Café (3941 N. Clark, 773.525.7711) offers more than 200 craft brews from all over the nation. Café-dwellers will also find risqué café a staggering selection of risqué café turkey leg bourbons. Sop up all that liquor with Risqué’s stick-to-your-ribs fare. Meat is slow-cooked in onsite bourbon barrels, giving the Pulled Pork Platter ($12) and Turkey Leg ($7) a tangy tenderness. Other meaty options include Smoked Sausage ($8) sandwiches and the requisite Baby Back Ribs ($18). Side dishes focus on barbeque staples like Baked Beans, Potato Salad and Corn on the Cob ($3 each.) The café’s saucy name is channeled in décor that features 6-foot-tall pin-up girl pictures, campy red walls and 42-inch plasma screens showing blush-provoking B-movies. Another popular sports bar that recently got a face-lift: Sheffield’s (3258 N. Sheffield, 773.281.4989). Known for its sizeable beer garden and great beer selection, the Lakeview hangout recently took things up a notch with a décor overhaul and the introduction of a new Backroom Barbeque menu. So steer clear of the traditional pasta and pizza and get ready for a culinary adventure. While the menu at Sola (3868 N. Lincoln, 773.327.3868) offers upscale American cuisine with gourmet twists on traditional entrees, one particularly unusual appetizer stands out. For those looking to experiment, order the Quail Tempura ($11) with natural jus and citrus chile dipping sauce. According to Executive Chef Carol Wallack, “It’s an Asian twist on a classic dish…fried chicken! It’s tempura poultry with an Asian style dipping sauce. It suits our concept and matches with the other ‘exotic’ flavors that pepper our menu, including yuzu, wasabi, ginger, etc.” And the reward for venturing outside your culinary comfort zone is a twist on an American classic…their delectable Taffy Apple Pie ($7), with brown butter macadamia ice cream and calvados cider syrup. Chicago is the unofficial headquarters of deep-dish style pizza and we are certainly proud of our fame. We have perfected the pie and are nationally known for the classic combo of thick crust, zesty red sauce and plenty of mozzarella cheese. However, there’s more to this traditional dish than the typical toppings. La Madia (59 W. Grand, 312.329.0400) is a contemporary pizzeria with a progressive approach. The menu offers variations on the tried and true, balancing the traditional Margherita with more experimental options. However, it’s natural in Italy, so it makes sense.” If you’d rather experience the exotic through a straw, La Madia also serves unique cocktails including the Citrine ($11), made with Hendrick’s Gin, muddled tangerines, English cucumber, hand-extracted lime juice and rock candy syrup. Their diverse menu emphasizes specially selected ingredients…and may require a translation from the server. However, don’t be deterred by the unknown–these culinary concoctions are guaranteed to surprise and satisfy. Chef Martial Noguier recommends the Warm Rabbit Confit Salad ($17) because he loves the rich flavor, especially in winter. According to the expert, the combination of the rabbit meat and duck fat enhances the taste even more. One of his gourmet creations is Sogliola, Cosce di Rane e Pagliolaia ($45), made with poached Dover sole, woodroasted frog legs, crispy dewlap, quail egg and purgatory bean puree. This complex dish eschews one very important item. “The most important ingredient is the one you leave out,” says Mantuano. “To achieve this simplicity, we use the freshest, rarest ingredients available from Italy. Purveyors know that we are always looking for something unique like cuttlefish eggs, dewlap, fresh sea urchin and Mediterranean sea bass. We let freshness guide our menu.” Another testament to Spiaggia’s gourmet standards and unique offerings are their Italian botanical cheeses.
