ELEVEN YEARS OF GOOD FOOD
It’s hard to believe that we launched the first sustainable, local food trade show in America
nearly 11 years ago. Since then over 700 unique speakers have shared their knowledge. The
Good Food Festival & Conference has become the best event of its type in America!
We are pleased to welcome you to our 11th Good Food Festival & Conference. It’s a big one,
with a great lineup of world class speakers, chef demos, DIY experts, and leaders in the
business of Good Food. We are also celebrating the Good Food Business Accelerator, which
supports the development of Good Food businesses to better meet the demand for local and
sustainable food. Our first cohort of nine Fellows joined our larger community of food and
farm businesses which have together raised over $11 million in debt and equity financing,
showing the power of this festival and the Good Food movement.

Good Food Financing & Innovation Conference
OUR IMPACT
A Good Food Movement Leader and Innovator
FamilyFarmed is a national leader in building the
Good Food movement and developing regional,
sustainable food systems. Its annual Good Food Festival
& Conference — America’s longest-running sustainable
and local food trade show — brings together key
stakeholders to be inspired and do business.
FamilyFarmed has been instrumental in the launch
and growth of numerous Good Food businesses, and its
Wholesale Success technical assistance manual has been
used to train thousands of farmers in the economics and
food safety imperatives of today’s Good Food market.
The Good Food movement has grown exponentially.
Since FamilyFarmed began more than 15 years ago,
the Chicago-based nonprofit likewise has grown. To
stimulate entrepreneurship, it now operates the Good
Food Business Accelerator. And to better engage
businesses, producers, and the public in the Good Food
conversation, it launched goodfoodoneverytable.com.
Organizational achievements include the following:
Good Food Festival & Conference
FamilyFarmed launched the first sustainable local
food trade show in America 11 years ago. The Good
Food Festival & Conference, held annually in Chicago,
includes the Good Food Financing & Innovation
Conference, Good Food Trade Show, a School Food
Summit, a Food Policy Conference, a consumer-focused
Festival, and Localicious, one of Chicago’s premier
annual tasting events and one that focuses on chefs who
obtain ingredients from local and regional farmers as
well as local and regional craft beverage producers.
Nearly 5,000 attend to meet, learn, get inspired, and do
business — including farmers, policy makers, food hub
operators, artisan food businesses, retailers, individuals
and families, restaurateurs, and distributors. The 2015
festival and conference is held March 19-21 at the UIC
Forum in Chicago.
Good Food businesses can grow quickly, and
entrepreneurs often need financing to help them succeed.
Recognizing this, FamilyFarmed created the Good Food
Financing & Innovation Conference. This conference
brings together national and regional leaders in farming,
food production, and finance to create channels for small
farms and food businesses to access capital and finance
growth.
SLoFIG, a Chicago-based angel investment group
focusing on sustainable food businesses, debuted at this
event, and the recently formed Angel Food Network
participated for the first time last year. Together,
these groups have 40 angel investors. Businesses that
participated in the past two conferences have raised
more than $11 million in debt and equity capital. One
of the best examples of this is FarmedHere, a 90,000
square-foot indoor organic farm in Bedford Park, Illinois,
a suburb of Chicago. FarmedHere now employs more
than 35 people, many of whom were homeless, formerly
incarcerated, or at-risk youth.
Growing Sales for Good Food Farms and Businesses
More than 99 percent of the agricultural products
consumed in America are purchased through wholesale
channels. So, creating new wholesale markets for family
farmers and artisan food producers is key to building
Good Food systems.
FamilyFarmed works to build the overall supply chain of
local food by providing technical assistance to farmers,
connecting wholesale buyers with producers, and helping
to create infrastructure that supports the growth of
these systems. FamilyFarmed works with many leading
buyers of local food, including Whole Foods Market,
Chipotle, Goodness Greeness, Sysco, Compass Group,
Chicago Public Schools, McCormick Place Convention
Center, Testa Produce, Aramark, FarmLogix, Midway
Airport, Lettuce Entertain You, and Natural Direct to
connect them with local food sources. FamilyFarmed also
partners with the Green Chicago Restaurant Coalition
to work with restaurants to increase local food sourcing.
McCormick Place, the largest convention center in
America, announced its intention to buy Good Food at
our trade show and now buys more than 40 percent of its
food from local and or sustainable sources.

Food Hubs—Aggregators and Processors of Local Food
Food hubs are essential economic stimulators in the Good
Food movement. They provide infrastructure to get local
food from farms to wholesale buyers and give smaller
producers greater market power.
FamilyFarmed is a leader in food hub development
and has done extensive work researching and
developing facilities that aggregate and/or process food.
FamilyFarmed has helped launch Blue Ridge Produce
in Virginia and the Wisconsin Food Hub Cooperative.
Additionally, FamilyFarmed published Building Successful
Food Hubs: A Business Planning Guide for Aggregating and
Processing Local Food in Illinois, a “how to” guide for
entrepreneurs. Currently in the works is Food Safety for
Food Hubs and Their Farmers, a technical assistance
publication being produced in partnership with the USDA.
Farmer Training and Development
Wholesale buyers have strict quality and food safety
guidelines that can be formidable obstacles for smalland mid-acreage producers. Recognizing a need for
comprehensive information and training, FamilyFarmed
published Wholesale Success: A Farmer’s Guide to Selling,
Postharvest Handling and Packing Produce. The 315-page
manual, now in its fourth edition, includes sections on
issues such as Building Relationships with Buyers, On-Farm
Food Safety, and Calculating Return on Investment. It
also includes more than 100 crop profiles that give specific
harvesting, cooling, storage and packing information on
most of the fruits and vegetables grown in the United
States. FamilyFarmed has trained more than 8,000 farmers
from more than 30 states through Wholesale Success.
Farm to School
Through strategic partnerships with Chicago Public
Schools (CPS) and its foodservice providers, FamilyFarmed
has helped develop local food procurement programs that
provide healthy lunches to urban children. In the past
five years, CPS has purchased more than $13 million in
food from local farmers. CPS is now sourcing antibioticfree chicken from an Indiana Amish farmer, the largest
purchase of its type in the U.S. CPS has also worked with
school districts in New York City, Los Angeles, Houston,
and Miami to encourage them to source antibiotic-free
chicken. FamilyFarmed also partnered with CPS on “Eat
goodfoodoneverytable.com
What You Grow,” a school garden food safety project.
Together, we created a school garden manual and training
materials that allow CPS cafeterias to source produce from
their own school gardens. The first school garden-grown
produce was served in cafeterias in spring 2013, and the
program has since rolled out to multiple CPS locations.
Good Food Business Accelerator
FamilyFarmed recently launched the Good Food Business
Accelerator. The Accelerator provides a mentor and
support network for Good Food entrepreneurs, helping
them to launch, stabilize and grow their Good Food
businesses. By the end of the program, Fellows are better
equipped to run their businesses, and those needing
funding are better prepared to meet with investors to
obtain initial or follow-on investments. This strategic,
operating, and financial support enables Fellows to
launch or scale their business more rapidly, allows
other participants in the supply chain to stand on their
shoulders, and spurs the development of Good Food
business clusters. Fellows are showcased at the annual 2015
Good Food Financing & Innovation Conference.
Food Safety
FamilyFarmed’s On-Farm Food Safety Project gives smallto mid-acreage fruit and vegetable farmers the tools to
comply with national best practices in food safety. With
the Food Safety Modernization Act regulations soon to
be implemented by the federal government, farmers will
be facing increasing regulation. This program provides
technical assistance to help them adopt best practices in
food safety.
This project was developed in partnership with the USDA,
FDA, and a wide range of national partners, giving
growers access to a free, easy-to-use online tool that guides
them through the steps necessary to create a personalized
food safety plan. With this plan, farmers have the capacity
to get Good Agricultural Practices (GAP) certified
for food safety, a key requirement of most wholesale
buyers. This tool is available in English and Spanish at
onfarmfoodsafety.org. Nearly 500 farmers have created
food safety plans to date, and more than 30,000 people
have used the site. Food safety is also a major component
of Family Farmed’s Wholesale Success publication and
forthcoming Food Safety for Food Hubs and Their Farmers
report.

The Good Food Financing & Innovation Conference addresses one of the biggest challenges facing the growing Good Food
movement: helping food and farm businesses gain access to investment that will allow them to scale up and meet the demand
for local, sustainable food. The afternoon Financing Fair provides a dynamic environment where innovative farms and food

from a part of the coffee plant, Rowida
describes Kishr as “like tea, but better”. It
resembles tea, but its main ingredient is a
little-known, nutritious superfruit.
Farmer/Rancher – Cabery, Illinois
Harry and his wife Gwen founded Mint
Creek Farm in 1992, qualifying them as
pioneers in the now fast-growing market
for grass-fed, pasture-raised livestock. Their
daughter and son now work in business
operations on their ranch, located about
25 miles southwest of Kankakee near the
southern edge of metropolitan Chicago.

Shane is utilizing his past experience
in entrepreneurial ventures, including
clothing, entertainment, and children’s

company. The start-up company, which
launched in April 2014, makes a variety of

Nik is a third-generation cattle feeder at his

Illinois, the livestock and grain farming
operation was started in 1949 by his

from Europe to escape the Holocaust. The
farm is now run by his father, David Jakobs,
and his brothers Ricky and Alex have
joined him in the operation.

Tour four of Chicago’s most innovative urban agriculture projects and learn about their work to build a
sustainable food system in our city.

Chicago Botanic Garden’s Windy City Harvest (2800 S Western Ave., Chicago, IL 60608) is a social enterprise that
provides professional certification in sustainable urban agriculture to at-risk young adults and brings tangible benefits to
North Lawndale and the other neighborhoods it serves on Chicago’s West side by providing fresh, organic produce to this
recognized “food desert,” as well as providing job training for residents and new jobs as farm production increases.
Growing Power Chicago (3333 South Iron Street, Chicago, IL 60608) is a 7-acre site on Chicago’s south side that produces
local, healthy, and sustainable food year-round with a focus on serving, training, and engaging vulnerable populations.
The Plant Chicago (1400 W. 46th St., Chicago, IL 60609) is a nonprofit dedicated to promoting sustainable food
production, entrepreneurship, and building reuse through education, research and development. To this end, Plant Chicago
is repurposing a 93,500 sq. ft. retired meatpacking facility, The Plant, into a net- zero energy vertical farm. A complex and
highly interrelated system, one-third of The Plant will hold aquaponic growing systems and the other two-thirds will incubate
sustainable food businesses by offering low rent, low energy costs, and a licensed shared kitchen.
Growing Home’s Wood St. and Honore St. Farms, (5814 S. Wood Street, Chicago, IL 60636) provides transitional employment
and training to Chicagoans who have multiple barriers to employment, such as having been previously homeless or
incarcerated. Through a social enterprise business based on organic agriculture, its job training program assists individuals
in securing permanent and unsubsidized employment.
Tour Leader Ben Jaffe is a Program Instructor for the Windy City Harvest nine-month certificate program in sustainable urban
agriculture. This program, a partnership between the Chicago Botanic Garden and City Colleges of Chicago, trains individuals
with hands-on experience in everything from greenhouse propagation to urban site development and crop planning and
has produced 69 graduates since 2009. Prior to joining Windy City Harvest, Ben’s urban agriculture experience includes
coordinating the Jr. Green Youth Farm program of the Chicago Botanic Garden and working as the Community Garden
Liaison with the Chicago Park District. He has experience working at many diversified, organic farms on the East Coast and
an agricultural non-profit in Northeast Ohio. Ben’s extensive background in horticulture, agriculture and education prepared
him for the challenge of guiding a class of diverse backgrounds and ages into leadership roles in the world of sustainable
urban agriculture. Ben has a degree in economics from Earlham College and a professional gardener’s certificate from the
Chicago Botanic Garden.
