Saturday 9/3/2016 10:30am-1:00pm DEMYSTIFYING THE FRENCH MACARON WORKSHOP WITH VALERIE LINDSLEY You’ve seen those colorful orbs everywhere! Come and discover the technique for preparing, piping, baking and filling these amazing cookies that could quite possibly be the quintessential pastry of France. Saturday 9/3/2016 2:00-4:30pm AIRBRUSHING ON CAKES DEMO WITH LINDA BILLS Learn the basics of airbrushing from Linda Bills, who was taught airbrushing by one of the world's leading experts. She'll talk about the different types of airbrushes for cakes, show exercises you can do to build your airbrushing skills, and examples of how airbrushing can speed up your cake decorating. She will show different designs using stencils and she'll even give some pointers on doing portraits using your airbrush. This is designed for people who are considering buying an airbrush or people who have one and are afraid to use it. No supplies needed. You will learn to make Chrysanthemums, a Lotus like flower, and a Rose out of rice paper. These flowers appear delicate yet are quite sturdy. We will use multiple methods of coloring to embellish these flowers in class. Saturday 9/17/2016 2:00-5:00pm GUMPASTE BITTERSWEET AND BERRY SPRAY WORKSHOP WITH TAMI UTLEY In this hands on class, we will be making bittersweet on a branch, blackberries, berry flowers, buds and leaves. Students will learn how to wire, color and create a spray for two different seasons to enhance their gum paste floral arrangements . If you have promised to do a tiered cake or wedding cake, but don’t know all the options, this is the class for you. Linda will show you some tricks of the trade to make your wedding or tiered cake construction easier. Linda will discuss cakes, types of fillings, types of pillars, stacking, do’s and don’ts of covering with fondant, buttercream and Pastry Pride, whipped topping, as well as transport suggestions. This class is for beginners who might be afraid to attempt a wedding cake. Avoid disaster and learn the best options before you attempt a tiered cake. This class is a demo using dummy cakes to demonstrate how each system works. Bring your questions or cake designs and Linda will help you make the best decisions. Even if you know how to airbrush, using a fat based product like cocoa butter, takes some different instruction. If you are interested in the tips and tricks of going from water based to fat based airbrushing then DON'T miss this fun demo. So many other avenues open up for you within edible art if you learn how to airbrush with cocoa butter. Charity will teach you the do's the don'ts, the must have's, the nice to have's, and the don't need's of using this versatile medium. No Supplies Needed INTERMEDIATE FRENCH MACARON WORKSHOP WITH VALERIE LINDSLEY (Formerly the “Beyond the Basic French Macaron Class”) If you’ve already taken Valerie’s beginning class on these beautiful cookies, then you’ll want to continue on in this exciting class. We will make two-toned macarons as well as learn how to create beautiful special occasion/holiday macarons. You will take home a box filled with these little beauties. Thursday 9/29/2016 6:00-9:30pm CAKE BAKING 101 DEMO WITH CHARITY PYKLES-GEORGE Join Chef Charity as she takes you on a baking "trip"! You'll learn how to make scratch cakes, cake mixes kicked up, and some frostings to go with. Chocolate, vanilla, chiffon, red velvet (done right!), carrot and pumpkin (since it's that time of year). Plus Meringue buttercream, cream cheese frosting (also done right) and variations will be discussed. You will get to help make and eat the cakes and frostings. Learn all sorts of baking knowledge! These cakes are stunning and impressive, yet not as complicated to create as they look. Monika will demo creating the decorative design in the sponge cake, putting the cake together and adding the finishing touches. All recipes will be included. Valerie will review roses to start and progress to ten other types of flowers. We will do a 3D dinosaur class, Baby Under the Blanket (as seen in American Cake Decorating magazine), a themed cake, and a basket of roses cake. This is a hands-on class and students must purchase their own supplies after the first class. Price includes all six weeks of lessons. (Class dates: 10/11, 10/18, 10/25, 11/1, 11/8 AND 11/15.) Wednesday 10/12/2016 6:00-9:00pm BEGINNING CAKE DECORATING COURSE WITH LINDA BILLS Learn the basics of cake decorating with Linda Bills, an accomplished cake decorator and confectionist for over 40 years! You will start by learning the tricks on how to split, fill and successfully frost a cake. Move on to lattice work, drop flowers, leaves and borders. 3-D children’s designs, transferring patterns, rice paper designs and roses will also be covered. It's a great way to start learning some easy techniques that you can use to make beautiful cakes for your family and friends! Cream cheese, white and dark chocolate buttercreams will also be covered. Charity will show how to split. Fill and shave a cake and frost it as smooth as fondant. Hints on piping and coloring various frostings will be discussed and demonstrated. Make SURE you eat a meal before attending this class!! HALLOWEEN COLOR FLOW COOKIES WITH TAMI JONES Learn how to create the proper consistency icing for decorating colorful cookies for any theme. We’ll make various Halloween themed cookies in small and large sizes that can be incorporated into a cookie bouquet if desired. All supplies provided and students will decorate and take home four to six cookies. This class is for beginners or those who want to work with run sugar/color flow. (Made with royal icing.) Recipes for cookies and icing will be provided. Please bring: a cookie sheet or ¼ sheet box to take home your cookies. ZOMBIE COOKIE WORKSHOP WITH NANCY LINSTEAD Let’s get ready for Halloween and create some ghoulish Zombie cookies using fondant and royal icing to decorate the Walking Dead! This class is great fun for the kids and adults alike. All supplies provided. We will be using confectionery coating chocolate, but all the techniques can be used with real chocolate. You will make the centers for dipping; including vanilla cream, peanut butter, chocolate cream, coconut, and maple-nut. You will "hand-dip" your centers in white, dark, and milk chocolate. Linda will also cover packaging ideas and "dusting" your dipped creations for a dramatic sparkling effect! All supplies provided and you get to take home over a pound of chocolate too! Find out how. Now that California has passed the California Homemade Food Act (AB1616) you can legally sell food from your own home kitchen. This class will take you through all of the steps to obtain your Cottage Food Operators (CFO) permit. We will review what you can sell, which type of permit you will need as well as provide you with the majority of the paperwork you will need to file in San Diego County. We will review label samples and discuss what information needs to be included on your labels. This class will cover it all. So bring a pen and paper and be ready to take notes. Which dough to use for different types of pie. All the different tops that can be done. Tami will demo how to wrap your mini cake in chocolate using a basic chocolate wrap, wrap with a transfer sheet, piped wrap and marbling all with a fall theme. Then you will do a simple wrap of your own cake to take home. What could be more delicious than a cake wrapped in pretty chocolate? No side, bottom or top borders are necessary. Linda will show you easy turtles, caramel truffles, chocolate covered cherries, and chocolate dipped Oreos using transfer sheets. Packaging, coloring, and the use of sparkling dusting powders will also be shown. All supplies provided. Class is mostly hands-on and you will take home a nice box of chocolates. Cupcakes are covered in fondant and decorated with royal icing, luster dust and ornament hangers set in a box with tissue paper to resemble ornaments realistic enough your friends and family members will want to hang them on the tree!
