The leaves ar starting to change – hopefully the colors this year will be spectacular. Before the colors are at their peak I look for individual trees that have great color. I also scout out areas that I think will look great at peak time so I’ll be ready when the leaves finally turn. I prefer areas that have the trees reflected in water. Farm markets have some colorful shots and don’t forget the cranberry harvest. Fallen leaves make interesting patterns, so don’t forget to look down. A great way to enhance your images is using a polarizing filter. This filter works the same as polarizing sunglasses – it is designed to cut glare and reflections. Removing the glare from the leaves makes the colors brighter and more saturated. Simply rotate the polarizing filter until the sky or leaves are at their darkest. Fall Foliage images are best shot on days when there is no wind. How to Avoid Three Common Myths Standing in the Way of Retirement Security [INSERT FOR GLBT version] (A Retirement Strategy is the roadmap that shows us where to go, provides signposts along the way, and gets us back on track if we make a wrong turn. With a Retirement Strategy in hand, you have a better chance of getting where and when you want to be - without it you may flounder, or even remain stuck in the same place you are today.) Today, most of us expect to live longer, healthier and more active lives. How are you going to spend your time in retirement? Will you visit family? Travel? Volunteer? The possibilities are endless but when you do decide, the next step is determining how your choices translate into dollars and cents. So ask yourself: can you afford the lifestyle you envision? Will you have dependents? What will my other expenses be? These are just a few of the questions that need answering, but following through still does not guarantee a dream come true. There are 3 popular myths about retirement that you want to avoid falling prey to. Myth #l - Lower Expenses in Retirement In the past, ifs been suggested that a good target for retirement income was 50% to 80% of preretirement aftertax income. However, your mortgage might not decrease, your healthcare and insurance costs may increase and with more free time you may tend to spend more money, depending on your situation. In short, you can't just assume your retirement income needs will decrease during retirement. A good tactic is to base your planning on a range of scenarios. Myth #2 - My Social Security and Pension will be Enough Traditionally, income at retirement has come from three sources - government programs, employer-sponsored plans, and private savings. However, today private savings is becoming an increasingly more important part of the equation. Social Security was never designed as an alternative to personal responsibility. And, the higher your preretirement income, the less you will receive from Social Security as a percentage of pre-retirement income. When it comes to employer-sponsored pension plans, the trend in recent years has been for employers to offer tax-advantaged retirement savings plans to employees instead of employer funded pensions. One difference is that while a pension plan is guaranteed, a retirement savings plans (401(k) plans are the most popular) are subject to the ups and downs of the stock market. Another difference is that retirement savings plans today are often funded largely with the employee's contributions. If you fail to contribute or make poor invest- ment choices, the benefits you receive from your retirement savings plans could turn out to be less than expected. Myth #3 - I Know How Long My Money's Going to Last Life expectancy is on the rise. You may end up being retired longer than you were in the workforce and this can make a big difference in how much you have to save while still working. Your life expectancy can make a big difference. For example, if you start with a retirement nest egg of $775,000 and earn 6% on your money, you can expect to receive about $75,000 per year for 15 years before your money runs out. If you live 20 years in retirement, you will need to start with $915,255 instead of just $775,000, to stay in the money for the duration of life. After dispelling these myths, you may want to recalculate the estimate of what it's going to take to finance the retirement lifestyle you envision. If you're like many people, you may encounter a gap between what you need and what you can expect to have. Your choices are pretty straightforward: • Delay your retirement date. • Reduce your retirement income goal. • Increase your savings level. • Increase the return on your investment. When you took your driver’s test, you had to learn the rules of the road in order to pass so I’m not going to go thru that information. Because there have been accidents in our communities where the driver in the right lane was making a legal right turn and a driver in the shoulder was making an illegal right turn, I will remind you that if there is a solid white line, dividing the shoulder from the right lane, the shoulder should not be used as a turning lane. For your own safety, do not use the shoulder as a turning lane. If the police see you, they can, and probably will give you a ticket. The Right of Way does not change when an emergency vehicle, Police, Fire or Ambulance, is involved. The use of lights and/or sirens on an emergency vehicle is a request for you to yield the Right of Way. I have heard all sorts of things about what lights and sirens mean. They’re all wrong. Just because the ambulance is not running with either, doesn’t mean there is no seriously ill patient on board. It’s always a good idea to safely yield the Right of Way. If there is a life-threatening situation on the ambulance, we, most likely will be running with emergency lights and sirens. How to safely yield the Right of Way: The Ambulance obeys all traffic rules. Do NOT stop short in a moving lane of traffic. We do not want to see you as our next traffic accident call. Make sure there is no one close behind you if you do stop. The best way to yield, is to pull over to the right as soon and as safely as possible. Be aware of who else is around you. Assume that no one else sees or hears the ambulance and yield the Right of Way so that you are safe and the ambulance will safely take that Right of Way. Assume the possibility that even if our patient’s situation is not life threatening, the patient on board may be seriously ill or in terrible pain. There may be no emergency lights in this situation, but consider safely yielding the Right of Way any way. You would want to get to the hospital ASAP if it were you. Notice that I have used the words safe and safely multiple times. We want you and, us to be safe. It is the most important piece of our training and I would like to pass it on to you. Note from previous column: It’s a good idea to have a key somewhere or lock code so EMS can get in without breaking down your door. Most of us never think about that until we call 9-1-1 and can’t get to the door. We are the busiest EMS squad in Ocean County. We need more help. Volunteer 1 day a week. You’ll be CPR certified. A biblical deluge of rain 2 1/2 months ago - 24 inches in three days or what Seattle gets in an entire rainy season - left Baton Rouge and surrounding areas devastated by floods. At least 15 people died and 110,000 homes were damaged or destroyed. Many of these homes were not in flood plains, so homeowners didn't have flood insurance. It is in short the worst natural disaster in the United States since Superstorm Sandy in 2012. Yet the national media usually so drawn to "disaster porn" - has for the most part remained wholly uninterested. This complaint isn't trivial in New Orleans. Relief funding for disasters tends to be commensurate with media attention. With national news coverage scarce, Louisianans are understandably worried that recovery funds will be just as scarce. There are several reasons why these floods received so little attention. Hurricanes and Storms with names - like Sandy or Katrina - and telegenic winds generally create much more media attention and public interest than torrential rainstorms. The rain hit when the Olympics and the presidential election dominated news coverage, so on a Friday night in August when many newsrooms - already understaffed because of summer vacations - were emptying out for the weekend. Unfortunately, Mother Nature doesn't work on a 9 to 5 schedule. When the media did pay attention to the flood, it focused on "political" theater. President Obama, on vacation did not show up until a week later after being criticized for not cutting short his vacation. But the far more important issue is that these floods are "exactly what climate scientists have been warning. The little baby sugar pumpkins have lots of flavor, but they are expensive, and you don't get much. So why not buy a great big cheap pumpkin and get five times the fruit so you can try some new pumpkin recipes, plus loads of tasty pumpkin seeds? Note that you can also substitute butternut squash for pumpkin. Just wash off the outside, and start carving. Cut in half or quarters or random chunks. Remove the seeds, and scrape the strings off the inside with a big spoon. Oil the flesh and place flesh side down on a jelly roll pan (a cookie sheet with edges). Bake for about 40 minutes at 3500 or until tender (when you can easily pierce through it with a knife). Baking your squash will give it that nutty roasted flavor. While your pumpkin is baking, clean off the seeds and rinse them. Then spread the cleaned seeds in a single layer on a cookie sheet, and sprinkle with a pinch or two of salt to your taste. When the pumpkin is done, reduce oven temp to 2000 and bake seeds for about 20 minutes until dry, not brown. Allow pumpkin to cool to handle, and then scrape the flesh away from the peel with a spoon. Chop the flesh in chunks. Throwaway the skins and the stem, or add them to your compost pile. Puree the pumpkin in batches. I like using an immersion blender, but you could also use a food processor or a blender. Store two cup portions of pureed pumpkin in your freezer for later use. Whitmeyer TO STAY SLIM, EAT MORE GOOD FAT Americans have long viewed fat as a dietary enemy in the waistline wars instead filling their shopping carts with all manner of fat-free fare. But a new study is turning conventional wisdom on its head, suggesting the key to keeping thin is eating more fat. The researchers analyzed 56 past studies investigating the link between diet and chronic diseases often tied to obesity. They found that people following a Mediterranean diet - rich in “healthy” unsaturated fats like olive oil, nuts, fatty fish and avocados, along with other fruits, legumes and whole grains - had a 29 percent lower risk for heart disease and stroke. The risk for breast cancer also dropped 57 percent and the chances of developing type 2 diabetes fell by 30 percent. The researchers argue that when it comes to obesity and related diseases, processed carbohydrates and sugar, not fat, are the real culprits. So how much fat is good for you? If you are eating healthy fats that are monosaturated fats like olive oil or canola oil, you don’t necessarily have to limit them. The good fats make people feel full, helping them avoid too many carbohydrates. HOTEST YEAR EVER Just half-way through 2016, sweltering June temperatures all but guaranteed that this year will surpass 2015 as the hottest ever recorded, according to NASA and the National Oceanic and Atmospheric Administration (NOAA). “2016 has really blown that out of the water, NASA tells Scientific American.” In June, the world was 1.62 degrees hotter than the average June in the 20th century. It was the 14 consecutive month of record heat for the planet -the longest streak of record breaking temperatures since people began keeping records in 1881. The Earth’s average global temperature for the first six months of 2016 was also 2.4 degrees warmer than it was in the late 19th century. A powerful El Nino was partially responsible for recent increases, but NASA says that rising concentrations of greenhouse gases in the atmosphere are fueling a long term warming trend. We are in a neighborhood beyond anything we had seen before early 2015, says NOAA’s. We have honestly left the 20th century far behind. This is a Big Deal. RAMPANT ROAD RAGE Four out of five United States drivers experienced road rage over the past year, a new AAA Foundation study shows and 90 percent feel threatened by such aggression. Based on a survey of 2,705 licensed drivers, researchers estimate that more than 50 percent ofthe nation’s 210 million driver’s holler at other motorist or purposefully tailgate them, while 45 percent honk out of fury or frustration. Drivers also admit to cutting people off or preventing other cars from changing lanes. The survey also shows that about 4 percent of all drivers - roughly 8 million people - have gone so far as intentionally ramming other cars or leaving their own vehicle to confront another driver. Road rage also inspires more than a few obscene gestures - a practice 30 percent more common among drivers in the Northeast. The risks are significant. The study showed that 56 percent of fatal car accidents - which typically kill 40,000 Americans each year - involved aggressive driving. NOVEMBER 2016 THE BERKELEY REPORTER 27 Some Special Holiday Dishes Walnut Chive Oil Makes 1/4 cup, total time 35 minutes This bright green oil is a great finishing touch to the Roasted Butternut Squash-Apple Soup 1/2 (1 ounce) package fresh chives 1/3 cup olive oil 1/2 cup coarsely chopped walnuts 1/4 tsp. lemon zest 1/4 tsp. kosher salt **Fill a large bowl with ice **Bring 1 cup of water to a boil in a small skillet. Add chives and simmer 5-10 seconds or until chives are bright green and tender. Immediately place skillet in ice. Remove chives and drain on paper towels, squeezing out excess water. Wipe skillet clean. **Cook oil and walnuts in skillet over medium-low heat, stirring occasionally, 5 minutes or until walnuts are toasted and fragrant. Pour oil through a strainer into a bowl, reserving toasted walnuts for another use. Let cool 20 minutes. **Process cooled oil and chives in a blender until smooth. (If desired pour oil mixture through cheeseclothlined wire mesh strainer into a bowl and discard solids). Stir in lemon zest and salt. *****Helpful hints. Keep nut oils fresh by storing them in the refrigerator. Their polyunsaturated fats can turn rancid quickly with fluctuation in temperature, so store properly, to enjoy them until they’re gone. Remember to bring it to room temperature before serving with the soup. The soup itself can also be made ahead and will be great for lunch the next day. (Walnut-Chive Oil to follow) 2 1/2 pounds butternut squash, peeled and cut into 3/4inch cubes 2 medium size Gala apples, peeled and cut into 3/4 inch cubes 1 medium leek, cut into 1/2 inch half-moon slices 2 medium shallots, quartered 1 tbsp. finely chopped fresh thyme 1 tbsp. finely chopped fresh sage 2 tbsp. olive oil 1 tsp. kosher salt 1 tsp. smoked paprika 1/2 tsp. freshly ground pepper 5 cups of chicken broth 1 bay leaf 1 cup heavy cream Walnut-Chive Oil, Garnish with toasted walnuts **Preheat oven to 450 degrees. Toss together the first 10 ingredients in a large bowl. Divide between 2 large jelly roll pans. **Bake at 450 for 30 to 35 minutes or until tender, rotating pans and tossing vegetables halfway through. **Transfer vegetables to a large saucepan and add broth and bay leaf. Bring to a boil and reduce heat. Simmer 15 minutes or until liquid is reduced slightly. **Process mixture in batches in a blender until smooth (or use a hand held immersion blender if desired). Return each batch to pan. **Stir in cream and table salt and pepper to taste. Ladle soup into bowls and drizzle with Walnut-Chive Oil. Continued on page 29 WHAT’S FOR DINNER continued from 28 Stuffed Beef Tenderloin Serves 12, Total Time 1 Hour and 15 minutes BEEF 1 pound fresh Swiss chard, stemmed and chopped 2 tbsp. olive oil 2 garlic cloves, minced 1/2 tsp. kosher salt 1/4 tsp. freshly ground black pepper 1 tbsp. butter 2 (4 oz.) packages exotic blend mushrooms, chopped 1 (5 pound) beef tenderloin, trimmed RUB 1 tbsp. kosher salt 1 tbsp. fennel seed, toasted and crushed 1 tbsp. chopped fresh rosemary l tbsp. freshly ground black pepper 5 garlic cloves, pressed 1 tbsp. olive oil **Prepare Beef, heat oven to 500 degrees. Cook Swiss Chard in hot oil in a large nonstick skillet over mediumhigh heat, stirring constantly, until chard begins to wilt. Cook 1 minute or until completely wilted. Add minced garlic, 1/4 tsp. of the salt and 1/8 tsp. of pepper saute 1 minute. Transfer to a bowl, let stand until cool enough to handle. **Gently squeeze excess moisture from cooked chard. **Melt butter in skillet over medium-high heat. Add mushrooms and remaining 1/4 tsp. salt and 1/8 tsp pepper. Cook stirring occasionally, 8 minutes or until browned. Stir into chard. **Butterfly beef by making a lengthwise cut in 1 side, but not through the opposite side (leave about 1/2 inch), unfold. Flatten to a uniform thickness (about 3/4 inch) using a rolling pin or flat side of a meat mallet. Sprinkle with salt and pepper. Spoon chard mixture down center of beef, leaving a 1/4 inch border. Fold beef over chard and tie with kitchen string, at 2 inch intervals. Place beef seam side down on a lightly greased jelly roll pan. **Prepare rub, stir together kosher salt and the next four ingredients in a small bowl. Stir in oil to form a paste, rub mixture over beef. **Bake at 500 degrees for 10 minutes. Reduce oven temperature to 350 degrees. Bake 20-25 minutes or until meat thermometer inserted into the thickest portion of tenderloin registers 130 degrees (rare) Let stand 15 minutes before slicing. Cinnamon Apple Bourbon Bread Pudding Serves 6, time total 1 hour and 30 minutes 1 16 oz. package frozen cinnamon rolls, thawed Parchment paper 2 tbsp. butter 1 large Fiji apple, peeled and diced (about 1 1/2 cups) 1/4 cup firmly packed brown sugar 1/2 tsp. ground cinnamon 1/4 tsp. table salt 3 tbsp. bourbon 2 large eggs 3/4 cup half-and-half 1 tsp. vanilla extract 3/4 cup chopped pecans Garnishes: whipped cream, ground cinnamon **Preheat oven to 375 degrees. Break cinnamon rolls apart and place 1-2 inches apart on a parchment paper lined baking sheet, reserve icing packet. **Bake at 375 degrees for 12-15 minutes,or until golden brown. Cool 10 minutes, tear apart into 1-1 1/2 inch pieces. **Melt 1 tbsp. of the butter in a large skillet over medium high heat. Add the apple and saute 3 minutes or just until beginning to brown. Add 2 tbsp. of the brown sugar, cinnamon and salt, cook 1 minute, stirring constantly. Remove from heat and stir in bourbon. Cool 10 minutes. **Whisk together eggs, half-half, and vanilla in a large bowl, stir in apple mixture and cinnamon roll pieces. Spoon mixture into a lightly greased 8 inch square pan. (2 qt. baking dish) **Microwave remaining 1 tbsp. butter in a small microwave-safe bowl at high 30 seconds or until melted, stir in pecans and remaining 2 tbsp. brown sugar. Sprinkle over mixture in baking dish. Place baking dish in a 13 x 9 inch pan, fill pan with hot water to reach halfway up the sides of baking dish. **Bake at 375 degrees for 35 minutes or until golden brown and set (a knife inserted should come out clean). Drizzle reserved icing over bread pudding. Continued on page 30 NOVEMBER 2016 THE BERKELEY REPORTER 29 WHAT’S FOR DINNER continued from 29 Custard Whiskey Sauce Bring 1 cup of sugar, 1/2 cup butter and 1/2 cup half and half to a boil in a saucepan over medium heat, stirring until sugar dissolves. Reduce heat and simmer 5 minutes. Cool, stir in 2 tbsp. bourbon and 1/2 tsp. vanilla extract. Makes 1 1/2 cups Veal Scaloppini 4 5oz. slices of veal top round Kosher salt Freshly ground black pepper Flour 2 Tbsp. vegetable oil 1 to 2 Tbsp. minced shallot 1/4 cup dry white wine 2 Tbsp. fresh lemon juice 3 Tbsp. butter 1 Tbsp. chopped fresh parsley **Preheat oven to 200 if you’ll be cooking the veal n batches. Place each veal slice between two sheets of plastic wrap and pound with a metal mallet or skillet to a thickness of about 1/4 inch. Season slices with salt and pepper. Spread about 1/2 cup flour on a plate to coat all the veal. **Set a large saute’ pan over high heat. Dredge veal in flour and shake off excess. When pan is hot, add vegetable oil and swirl around pan until hot. Lower heat to mediumhigh and add to hot oil two to four floured scaloppini, depending on size of pan (they should not touch each other). Cook them until they develop a nice browned crust, about 60 seconds, flip and brown the other side. Keep finished veal slices warm in the oven while sauteing the rest. **When all scaloppini are done, add shallot to empty pan and saute till heated through, 15 to 20 seconds. Add wine and cook, scraping up any browned bits stuck to the pan, until the wine is reduced by two-thirds. Add lemon juice. Return liquid to simmer, swirl in butter and continue to swirl or stir until completely melted. Add parsley, stir sauce to distribute. **Return scaloppini to pan and coat each side with sauce. Serve immediately, spooning any remaining sauce over veal.
