How to Make Your Own Preserves
Step 1
Prepare your Le Parfait Jars or Terrines
Make sure the glass surfaces are not chipped, and there are no signs of
abrasion. Clean the jars, terrines, and lids thoroughly with hot soapy water,
or add a tablespoon of bleach per liter of water. Rinse thoroughly with warm
water and let air dry. Do not wipe the inside.
Step 2
Prepare the food
The food you preserve should be fresh and healthy. Never use frozen or
defrosted products or ingredients.
Step 3
Cook the food
Follow the instructions for your recipe.
Step 4
Fill the Le Parfait Jars or Terrines
The filling for your Le Parfait Jars and Terrines should be as hot as possible
- even boiling. Fill up to the engraved mark limit, or 2 cm from the brim.
Step 5
Seal the Le Parfait Jars or Terrines
Use a NEW Le Parfait Super universal rubber seal specially designed for
the shape of your jar or terrine. Boil the rubber seals before fitting them onto
the lids. Make sure the brim of your jar or terrine is perfectly clean before
closing. Finally, tightly clamp the closing system shut, and immediately
move on to heat treatment, if your recipe calls for it.
Step 6
Heat Treatment
Place a clean cloth at the bottom of your pressure cooker. Fill it with hot
water and completely immerse your jars or terrines upright with the lids at
the top. Seal the pressure cooker tightly. Once the valve starts steaming,
begin timing according to your recipe. When the time has elapsed, let it cool
down naturally, with the lid closed. You can use a pot instead of a pressure
cooker, but keep a careful eye on the water temperature which must reach
100°C, and cook 30% longer.
Step 7
Check and store the jars
Once the jars or terrines have cooled down completely, check that there is
a vacuum inside by unfastening the clamp. The lid should stay sealed to the
jar and resist pressure. If this is not the case, it may be due to:
•Incorrect filling: too little or too much volume.
•Inadequate heat treatment: not enough time, or the temperature was not
hot enough.
•Lack of air tightness: there may be a chip or dirt particle on the rim or
the lid.
•Using a rubber seal which is too old, worn, damaged, or the
incorrect shape.
•Correct the problem and repeat the heat treatment, making absolutely
sure that you use a NEW rubber seal. To keep your preserves for several
months, DO NOT lock the closing system on the Le Parfait Super Jars or
Terrines. Store them in a cool, dry place, away from direct sunlight. They
do not need to be refrigerated or frozen.
Step 8
Opening the jars or terrines
Before opening, make sure the jars or terrines are still vacuum sealed
(see Step 7). Pull the tab of the rubber seal to let in air, and the lid should
release.

How to Make Your Own Jams
Step 1
Prepare your Le Parfait Jam Jars
Make sure the glass surfaces are not chipped, and there
are no signs of abrasion. Clean the jam jars and lids
thoroughly with hot soapy water, or add a tablespoon of
bleach per liter of water. Rinse thoroughly with warm water,
and let air dry. Do not wipe the inside.
Step 2
Prepare the fruit
Why not pick some fruit in the garden? Or purchase fruit
at your local grocer. Clean the fruit with warm water, and
cut into chunks if necessary. Discard mushy fruit, stalks
and stones.
Step 3
Mix
Measure the fruit and sweetener according to your recipe.
Add the sweetener into a stock pot, and mix in the fruit.
Step 4
Cook to a full boil
Put on a high heat, and follow the cooking time precisely.
Cooking times vary depending on the fruit, type of
sweetener, use of pectin or not, or the result wanted.
Step 5
Test the jam
To test the thickness, pour a tablespoon of boiling jam on a
cold plate, then tilt the plate. The jam should flow smoothly
without being too runny.
Step 6
Skim
Finally, skim the jam, and immediately fill the Le Parfait
Jam Jars. Screw on the lids until perfectly closed, and
turn upside-down right away. Always use new lids. If
you are using jam pots (without lids), then cover them
with cellophane disks when the filling is hot. Or cover
with paraffin wax when the jars are cold (12 to 24 hours
after cooking). In both cases, carefully follow the recipe
guidelines.
