Polly's Pancake Parlor, owned by Kathie and Dennis Cote,
serve breakfast and lunch to more than 58,000 customers a
year. Kathie's grandparents, Polly and Bill Dexter, opened the
restaurant in 1938. "My grandparents had a maple sugaring
business and opened a tea room in an 1800s carriage house to
showcase their maple syrup," said Kathie, who has worked in
the restaurant since she was a girl. The restaurant business
started growing and became the Dexter's primary focus, so
they started buying maple syrup from other producers in the
area. In 2001, Kathie and Dennis took ownership of the
restaurant. Five years later, Polly's Pancake Parlor received
the James Beard Award as one of "America's Classics," and
over the years, has received attention from food celebrities
Rachel Ray and Paula Dean.
Last year, the Cotes decided to tear down the shed to assure
that Polly's Pancake Parlor would be around for generations
to come. They replaced it with a new, larger restaurant that
has more seating and radiant flooring that will enable it to be
open 12 months of the year, not just five.
"We salvaged all of the antiques, artifacts and barn board
from the original building to maintain the charm and rustic
vibe. It's the same people, same food, same great view of the
mountains. Even the layout of the dining room is the same,
just with more room to move," said Kathie. "I've had
customers tell me it is like the old building on steroids!"

Another constant is having Fuller's Sugarhouse products. "The
Fullers are wonderful, honest, hardworking people that
produce a fantastic, quality product," said Kathie. "After we
re-opened, business was gangbusters and we needed more
maple syrup. The Fullers came through for us and personally
delivered their product over the weekend."
