Talmer Avenue in North Judson. Please bring a photo ID and boxes or bags to carry food. Harvest Festival volunteers needed KNOX — The City of Knox is seeking volunteers to form committees to have a Harvest Festival this fall. Some committees have already met. Dates of Saturday, Sept 19 and Sunday, Sept 20 have been selected for this year's festival. The weekend activities will begin with a parade down Main Street and will begin at 10 a.m. An entertainment committee has been formed as well as a fundraiser; but numerous other committees are still looking for volunteers. Hebron Elementary announces 35th annual arts and crafts fair HEBRON — Hebron Elementary School, in Hebron, is pleased to announce the 35th annual Arts and Crafts Fair on Saturday, Oct. 10, 2015 from 9 a.m. until 3 p.m. The Elementary School is located at 307 South Main Street, three blocks south of the junction of Highways 8, 231, and 2. More than 125 exhibitors will be present to sell all types of hand crafted items. Past exhibits have included baskets, bird houses, ornaments, doll clothes, silk flowers, knitted and crocheted items, wood furniture and wood crafts, toys, puppets, jewelry, rugs, seasonal items, doll house furniture, sweat shirts, afghans, ceramics, home baked goods and oil paintings. There is no admission charge for the Arts and Crafts Fair. Concessions and a bake sale will be available. Interested exhibitors should contact Wanda Vawter for booth information. Stoves Will pick up used appliances in working order free of charge and leave a $25 Rosa’s Gift Certificate Page 4 – Starke • The Review July 28, 2015 Chinese Five-Spice Grilled Chicken Lots of flavor from just a few ingredients makes this a cinch for outdoor or indoor grilling. 1/4 cup dry sherry 1 tablespoon Asian sesame oil 1 teaspoon Chinese five-spice powder 1/4 teaspoon ground red pepper (cayenne) 1 cut-up (8 pieces) chicken (about 3 1/2 pounds), skin removed from all but wings if you like 1/3 cup hoisin sauce 1 tablespoon soy sauce 1 teaspoon sesame seeds 1. In large bowl, stir sherry, sesame oil, five-spice powder and ground red pepper. 2. Add chicken to spice mixture and toss until evenly coated. Cover bowl and let stand 15 minutes at room temperature, turning chicken occasionally. 3. Prepare charcoal fire or preheat gas grill for covered direct grilling over medium heat. 4. Place chicken on hot grill rack. Cover grill and cook chicken 20 to 25 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife, turning pieces over once and removing pieces to platter as they are done. 5. In small bowl, mix hoisin sauce and soy sauce. Brush hoisin-sauce mixture all over chicken and return to grill. Cook 4 to 5 minutes longer or until glazed, turning once. Place chicken on same platter; sprinkle with sesame seeds. Serves 4. * Each serving: About 350 calories, 15g total fat (4g saturated), 41g protein, 10g carbohydrates, 121mg cholesterol, 595mg sodium, 0g fiber. Virgil’s Smoked Chicken Wings With Blue Cheese Dip Blue Cheese Dip 2 cups blue cheese crumbles, divided 1 cup mayonnaise 1⁄2 cup buttermilk 2 teaspoons hot sauce 1 teaspoon Worcestershire sauce 1⁄2 teaspoon kosher salt 1⁄4 cup finely chopped scallions 1⁄4 cup finely chopped celery Marinade 1⁄2 cup vegetable oil 1⁄2 cup hot sauce 4 tablespoons Virgil’s Dry Rub (see below) 4 tablespoons granulated garlic 4 tablespoons granulated onion Juice of 1⁄2 lemon Wings 8 large chicken wings 1⁄2 cup Virgil’s Dry Rub (see below) Sauce 10 tablespoons unsalted butter 1 teaspoon cornstarch 4 tablespoons white vinegar 3⁄4 cup hot sauce 1⁄4 teaspoon cayenne pepper 1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food processor and blend on low until smooth. 2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the large blue cheese crumbles. Place in a covered container and refrigerate overnight. 3. Mix all the marinade ingredients in a large mixing bowl. Place the wings in a large container with a lid and pour the mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days. 4. Preheat the grill or smoker to 245 F. 5. Spread out the wings on a sheet pan and wipe away any excess marinade. Sprinkle liberally with the dry rub, coating the wings all over. 6. Position the wings on the grill away from the direct heat of the coals or burners, and add hickory to the smoker, or place hickory chips on the coals or gas burners. 7. Cook the wings for about 3 hours, flipping every 30 minutes (their internal temperature should be about 165 F when cooked). 8. While the wings are cooking, cut the butter for the sauce into 1-inch cubes and refrigerate. Whisk the cornstarch into the white vinegar in a small bowl. 9. In a medium sauté pan over medium heat, bring the hot sauce to a simmer and whisk in the thickened vinegar. Return to a simmer, cook for 1 minute, and remove from the heat. 10. Add the cayenne and slowly whisk in the cold butter. Keep warm until serving. 11. Remove the wings from the smoker or grill and put half of them into a bowl, cover with the sauce, and toss. Repeat with the remaining wings and serve on a platter, with the blue cheese dip on the side. Virgil’s Dry Rub Makes 5 to 51⁄2 cups 21⁄2 cups sweet paprika 1 cup granulated sugar 1⁄2 cup Texas-style chili powder 1⁄2 cup minced onion AUCTION ACTION 6 Tips for Better Grilled Chicken --- * Grease your grill: Chances are you won’t have a sticking problem if your chicken has skin, or if it’s marinated or rubbed with some oil. But play it safe. Before you light the grill, spray the rack with nonstick cooking spray or brush it with oil. * Close the top: If your grill has a cover, always cook your chicken with the cover down. It will make your grill more ovenlike, and your food will cook more evenly. Also, because the cover cuts off some of the oxygen, you’ll have fewer flare-ups. * Be patient: Resist the urge to continuously move the chicken around while it cooks. The chicken will cook more evenly (and more quickly!) if you follow the recipe cooking instructions or turn it over only once, midway through grilling. * Use the right utensil: Use long-handled tongs or a wide metal spatula to move the chicken. Poking it with a fork will cause precious juices to escape. * Test for Doneness: Don’t risk serving undercooked chicken. When in doubt, make a small cut into the thickest part so you can be positive that it’s no longer pink inside. You also can use a meat thermometer to check if your meat has reached a safe internal temperature: 180 F for whole chicken and 170 F for breasts. * Be sure to clean up: Scrape your grill rack after each use; otherwise, the chicken will pick up charred bits from your last barbecue. How to save on school supplies Back to school season can be as expensive for parents as it is exciting for students. Once the initial letdown of the end of summer vacation wears off, many kids are excited to return to school, where they can see their friends, study their favorite subjects and participate in extracurricular activities. Parents of school-aged youngsters may share in that excitement while also knowing that back to school season can stretch their budgets. One of the ways to salvage those budgets is to save on school supplies. Fortunately, there are several ways parents can do just that. • Be patient. Shopping early can save shoppers money in many instances, but parents may benefit by exercising patience when it comes to buying school supplies for their children. Teachers often give students lists of supplies they will need for each class, and parents who wait to receive such lists can avoid spending money on items their kids won’t need. Even if you wait it out, you may be able to get a head start, as some teachers may post supply lists on school websites, while others might email lists to parents before back to school season hits full swing. • Take inventory. If you have more than one child, chances are you already have lots of school supplies around the house. Dust off kids’ backpacks and study areas from last school year to determine which supplies you need to buy and which you already have. Going forward, encourage kids to store their supplies in a predetermined area once the school year ends, as this will make next year’s inventory that much easier to examine and assess. Make school day mornings easier School day mornings can be hectic, as getting kids ready for school and out the door on time is not always easy. Working parents may find school day mornings especially difficult, as their own work schedules can make mornings feel even more rushed. Fortunately, parents can employ several strategies to free up time in the morning so every- one starts their days off in a more relaxing atmosphere. • Wake up earlier. Sleep might seem like a precious commodity, but waking up just 10 to 15 minutes earlier can remove some of the stress from weekday mornings without costing you a lot of sack time. Let kids sleep in until their normal wakeup time, using your extra 10 or 15 minutes to shower or enjoy your morning cup of coffee before the house is abuzz with activity. • Tackle certain chores the night before. Delaying certain chores until you wake up makes for a hectic morning, so tackle as many morning chores as possible before you go to bed for the night. I suppose there will come a day when a woman’s looks aren’t factored into her sporting prowess, but I’m guessing that day will not be coming very soon. The comments and conjecture engendered by Serena Williams at Wimbledon and the women’s World Cup provided more than enough fodder for that thought. With a broad brush, Serena was alternately described as having a “manly physique,” or, dressing like a “Disney princess” for the Champion’s Ball. Many of the athletes on the field for the Cup were physically described in the usual terms--hot or not--by fans and announcers alike. Danica Patrick, we were told, spent July 4 in a bikini and a few days later was seen cursing out Dale Earnhardt Jr. for an on-track collision. His lament was not so much that his brakes failed and he hit a driver, as much as it was his brakes failed and he hit HER, of all drivers, so now he would never hear the end of it--just like an episode of “The Honeymooners” or any other show that features a woman nagging a guy over something. When Serena won Wimbledon, J.K. Rowling took to defending her body image. The top three stories on Google News the day after were about “appreciating” Serena, her body and her dress. Not one story (and this column is guilty as charged, too) about 6-4, 6-4, game, set, match, Williams. At the same time, a look at Serena’s own Facebook biography describes her as, “an Athlete, an Icon...[who] embod- ies style, power, beauty and courage.” When you go to Roger Federer’s Facebook page, his bio states that he is a “A Swiss professional tennis player.” It goes on to say that many pundits consider him to be the greatest tennis player who ever lived, which for the Swiss, who may on occasion cop to making pretty decent chocolate and nice enough timepieces, is about as large a statement the country has ever made outside of one of their banks. Nowhere will you read that he is “handsome.” And not that there is anything wrong with that, either. With the exception of maybe Joe Namath and Andre Agassi, you’d be hard-pressed to find many male athletes talking about looks or fashion in their player bios anyway. Danica Patrick, Maria Sharapova and, yes, Serena, make no apologies for having traded a bit on their looks. But it was on their terms. The sexes will never have an even playing field, and for another generation at least, men’s athletics will outdraw female athletics and earn more at the gate. There may never be a truly “level” playing field in that regard. But in the meantime, here’s hoping that the next time a woman leaves the starting line, steps up to the plate or walks out of a tunnel, the adult sport fans among us will notice more than what she is wearing but what kind of game she is bringing.
