Dear Members,
September rolls around once again. Where has the summer gone?
While we had plenty of projects we were able to complete in August, it is always the unanticipated things that make life interesting. It seems that when
the weather is at its hottest, the A/C goes out and of course Murphy’s Law requires us to deal with it. By the
time you read this we will have replaced portions of at least seven different units between the sites and have
identified more that we need to include next year before the summer comes.
While the summer thunderstorms haven’t revealed any serious leaks in our roof, we have had a few leaks in
our water pipes. The proximity to the ocean here at the Links wreaks havoc on copper pipes and we will be
replacing some, but need to identify other areas where we might have an issue. Our Chief Engineer would
call this type of ongoing problem “job security”, but we work really hard to keep the building as fresh as possible for your enjoyment, so we find these things to be opportunities to make improvements.
If you look in our Lobby, The Boardroom Magazine has awarded your club its second “Distinguished Emerald Club of the World” award and a nice framed medallion is on display. Interesting to note that while the
program has only been in existence three years, your club was selected to receive this honor based on the
member experience our members enjoy. For me it means that we have dedicated Department Heads who
work really hard to make what we have the best it can be. Are we perfect? NO, but we are working on constant improvement!
So wherever you are, I hope you are having a great day!

Kitchen Views: What is Cookin?
Herbs & Spices
Many members of our Club ask what they should do with the abundance
of herbs and Spices from their gardens this time of year. This discussion
addresses several options, from storage, to drying, and the use for herbs and
spices.
Herbs: Are the leafy parts of the plants. The American Trade Association
reported that each American consumed nearly four pounds of herbs and spices
last year, doubling from 20 years ago.
Spices: are aromatic seasonings derived from the bark, buds, seeds, or stems
of plants.

Cultivation: To keep your herbs producing for a longer period, clip off any
flower buds before they bloom. This allows the plant continued growth, which
means more herbs. Drying herb leaves, can be done on an herb rack or on a window screen in a dry, dark
place, because sunlight will leach nutrients from the herbs.
Freezing Herbs: Chop the herbs into the desired size and place into an ice cube tray. Add enough water to
cover the herbs and freeze.
Herb Storage: Dried herbs are best to store them in an airtight container for up to six month; they can be
stored in the refrigerator for a little longer.
Ground or crushed Herbs and Spices in a coffee grinder as needed. To crush herbs, for example, place
herbs in a zip lock bag and use a rolling pin, or mortar and pestle etc.
Herb Flavored Food: brush the Herb flavored oil directly on meat, chicken or fish: for example, simmering
rosemary or mint with a little bit of oil; it can be brushed on lamb chops before grilling. Basil-flavored oil
will also make a flavorful Salmon. Shrimp brushed with olive oil flavored with Tarragon, and garlic can be
tasty, chicken with thyme or oregano and so on. Food will absorb moisture and seasoning when it is hot.
When cooking with fresh herbs, fresh herbs are not as concentrated as dried herbs. While more fresh
herbs are needed to achieve the same strength of flavor, fresh herbs have of course a fresher flavor. Herbs
with tough leaves, such as rosemary, sage, etc. it can be added at any point during the cooking process.
Flavors will mellow when herbs are added at the beginning of cooking. Herbs with soft leaves such as
parsley, tarragon, basil, cilantro, etc, will have a brighter green color if they are added at the end of the
cooking process, perhaps minutes before serving time.
Some of our club members grow their own herbs and share their excess with us, and we use them in the
kitchen. The Links gardeners are preparing the grounds by the golf shop, for growing our own herbs that
will be completed by winter.
Have a craving for something out of the ordinary? Maybe a rack of lamb, veal chop, or something a little
more exotic….Chef Moussa & the culinary staff at Hammock Dunes would be happy to prepare a specialty
meal for you at the Club. They do require at least 48 hours notice, but the more notice the better! Contact

Fall is getting closer and we are excited about the
upcoming season. I have a few competitive events of
which I would like to make you aware.
18 Holers

The ever-popular Hammock Dunes Ryder Cup will be
held on September 11, 12 and 13. The event kicks
off with a pairings party on the evening of Friday,
September 11. Two teams will be chosen from among
those entered to compete for the 2015 Cup. The Red
Team will be captained by Director of Golf Brad Myers
and the Blue Team will be captained by First Assistant
Roman O’Rourke. Sign-up today as this event will fill
quickly.
Ladies, don’t forget to sign up for the 3rd Annual
HDLGA Invitational, to be held on September 29 and
30. Enrollment is limited to the first 88 players and
sign-up sheets are in the golf shops. The golf shop
will pair singles and twosomes if necessary to make
additional teams. The $100 entry fee should be made
payable to “Hammock Dunes Club” and can be mailed
or dropped off to Geri Neely, 13 San Gabriel Lane,
Palm Coast, Florida 32137. If you have any questions,
please call 386.246.5067.
Gentlemen, please don’t forget that the Sign-up period
for the Dunes Classic will begin the third week of
September. Signup will begin at the Links Golf Shop
at 7 a.m. on September 15. The Signup period is
September 15 to the 19 (a completed registration form
must be in by September 26 to secure your spot in the
field).
As the summer starts to fade and we see fall on
the horizon, we hope that you used the offseason
for game improvement. We also hope that you
are starting to get as excited as we are about the
beginning of the upcoming season. If you don’t
feel that you are reaching your playing goals or that
you want to create a plan for improvement, then we
would love to help you with that. Please let any of our
professionals know and we will work with you setting
your goals, scheduling the appropriate instruction
time to reach them, working on a practice routine
that would develop your skills or any equipment
deficiencies that may be holding you back.

The King & 3 Queens held on August 19 was
once again a big success. Thanks to everyone for
participating, especially our Kings.
Preparations are in full swing for the 3rd Annual
HDLGA “East Meets West” Invitational on September
29 & 30. If you haven’t signed up yet but would like
to join in the fun, please contact Geri Neely or Maria
Dumke for availability.
We are rapidly approaching the start of the 2015
HDLGA season, on October 7. The later starting date
has been well received since it allows so many snow
birds to return in time for our opening day. There will
be a shotgun start at 9:00 a.m. with a luncheon to
follow golf.
Don’t forget that the Dunes Cup will start on
Wednesday, October 14 this year. If you haven’t
secured your partner, don’t delay as the matches will
be drawn up shortly.

Links Course - The golf course is healing well after
aerification last month. Even though the greens were
only vented with the ¼” tines, they were heavily verticut
and topdressed to help ensure maximum health for the
season.
Creek Course - The greens at the Creek are as good as I
can remember. They have a good root system and have
rolled pretty consistent for most of the summer. The
fairways have good color and roll and should be totally
healed by the beginning of this month. The traps are
holding their own as we seem to have missed most of the
heavy downpours last month.
Clubhouses - You will notice a lot of improvements at
both clubhouses as we began last month re-landscaping
around them. At the Creek , we finally have some color
which has been missing forever, and the Links is really
looking good as Mike Mangaroo and his crew have done a
lot of planting and sodding this summer.
Projects - Sod projects are starting to wind down as we
will be starting to lose growing days later this month.
There are very few areas left at the Links with #13 being
the biggest one and at the Creek, we will be working on
#14, #17, #18 and #15.

HDLGA Dunes Cup
in October
Sign up with a partner with similar handicaps
(10 stroke differential) at the Links Golf Shop on
Wednesday September 9. Matches will start on
Wednesday, October 14 and will be played on all
Wednesdays, Ladies Day, at the designated courses.
Each team will progress in the tournament with a
win of a match, once you lose a match the tournament is over. Every player should realize that they
could be playing five Wednesdays in succession
until the Tournament is finished, November 11.
If it rains on a Wednesday Ladies Day, the teams
must schedule their own matches and the matches need to be completed before the following
Wednesday. Failure to complete a match will result
in a forfeit. All teams will play at a 90% handicap.

Croquet News....
And the Games roll on.....as we roll back to July and our Croquet Beach Party. Everyone sported their
favorite beach attire. The judges' favorites were: #1 Lady - Sandy Rhodes and #1 Male - Ted Knopf.
The dinner was adorned by a "Beachy" decor. A "swimmingly" good time was had by all. Giving the
evening credence were Diane Leifer, social chair, with assistance from Nadine Sidawi. "Merci Beaucoup" Gals for a well planned gathering.

This month we highlight Pat Williams. Pat doesn't just tackle a job, she owns it.
She has been a driving force for Hammock Dunes 6 Wicket Croquet. Among her
many attributes are her patience teaching the croquet students; her proficiency as
Secretary on the Croquet Board; her credibility directing the Handicap Committee.
Pat has inspired us to play better Croquet. Dignified whether on or off the courts,
Pat Williams is one Lady you are proud to know. A big thank you, Pat!
Don Finch is to be congratulated as he assumes the Vice President’s position on the
Hammock Dunes Croquet Board for Linda Huxtable who has previous commitments.
Thank you, Linda for your continuing energetic support for Croquet at Hammock
Dunes.

On the Courts
Great Things are Happening!
Ryan Khan - Tennis & Athletic Director
I can’t believe it’s been four months already and we have seen so much
progress! After reviewing all sports facilities I was able to meet with numerous
members to understand individual needs and get valuable input and
suggestions.
So far, we have construction of two new Pickleball courts underway, replaced
all of the awnings in the Tennis park, refurbished and replaced fitness
equipment in the Dunes Life Center and developed a 2016 Calendar of Events
for Tennis, Bocce, Pickleball and Fitness Events.
Tennis - The courts are in great shape! We have purchased two sheds to store
equipment for social events (e.g. chairs, grill and a bar setup); Purchased
a new Har-Tru Tennis roller for proper maintenance of courts; Retrained
staff on proper court maintenance procedures with a regular maintenance
schedule; Re-landscaped the Tennis park and repaired irrigation and draining
issues; Contracted with Babolat to carry their product line for our members to
purchase in our Tennis Pro Shop (watch for more details on that!); Purchased
a stringing machine to service member racquets; Centralized the organization
of men’s and ladies’ round robin play with a schedule of groupings and
court assignments; Offered a number of complimentary clinics to members
and anticipate more member involvement in our growing tennis program.
Bocce - The courts are in great shape! We have purchased new Har-Tru
Bocce Roller for proper court maintenance; Retrained staff on proper court
maintenance procedures with a regular maintenance schedule; Organized
a wildly successful Summer Pairs League; Renovated courts and built gates
for easy access for proper maintenance; Provided members with staff, water,
towels and proper maintenance for Summer league play every Monday.
Pickleball - A trip to The Villages (the nation’s largest Pickleball facility) gave
me a firsthand understanding of the day to day operations and programs for
a successful Pickleball program; Purchased playing equipment for member
use; Reached out to local clubs in palm Coast to arrange seasonal and friendly
league matches.
Fitness/Aquatics - Added staff to maintain our facilities for the best member
experience; Serviced all Fitness Equipment; Developed stronger and more
efficient programs to better serve our members; Set new programs for

Replacing pool furniture and croquet umbrellas; Worked with trainers to make
all programs more exiting and challenging to members; Added a new Yoga
instructor for fall classes; Implementing new staff uniforms.
Future Sports and Social Activities - We are currently working on additional
sports and social activities for our members such as Horseshoes, Darts, Ping
Pong, and also re-designing the Tennis Pavilion to create a social lounge
environment for such activities like Sunday Night Football and viewing of
major Sports events around the world.
I am very excited to join Hammock Dunes Club as your Tennis & Athletics
Director. It is my opinion that this is one of the best facilities on the East Coast
of Florida and one of the best Memberships. I hope the programs outlined
will interest everyone, whether you are a beginner or a seasoned pro. Your

Undercover Exercises
Do you ever wake up at night and feel like stretching?
I do that a lot and it helps me get back to sleep.
Undercover exercises are a gentle way to start your
day or end your day. Performed in the warmth of your
own bed. The exercises are designed to help you
wake up, remove the kinks, and oxygenate your blood.
Undercover exercises are to be done slowly while lying
on your back. If you are feeling particularly stiff, you
might choose to take a warm shower before doing the
exercise.
You may also enjoy these undercover exercises at the
end of the day to prepare for a good night's sleep. It
will help to release lingering tensions as you stretch
and breathe.
1. Rotate your head from side to side - nice and
slowly.
2. Rotate your eyes first left, then right, squint and
then relax.
3. Tighten, then relax the muscles of your face.
4. Wrap your arms around one knee and bring it in
toward our chest. Breathe while relaxing your
lower back. Repeat with the other knee.
5. Now, draw both knees to your chest, rotating your
ankles in ever-widening circles. Make sure you
circle to the right and left.
6. With both arms in the air, rotate your wrists slowly
right and left.
7. Extend your arms above your head one at a time
and then both together. Take nice big breaths in
and exhale and let it out. Relax.
8. Lengthen your legs.....one at a time and gently
flex and point your toes while gently holding the
stretch.
9. Now, bend both knees and slowly open them while
your feet come together......hold while you stretch
your inner thighs. Relax and breathe.
10.Grab under your right knee and bring your leg
up toward the ceiling until you have a gentle
tightness. Relax and let it stretch your hamstrings.
Repeat with the other leg keeping the other knee
bent unless you are extremely flexible.
After you finish, take a moment to just relax your
entire body. Start relaxing your face, your shoulders,
your chest and back, relax your legs and feet. Take
a nice big deep breath as you inhale thru your nose
and relax as you exhale out your mouth. Get rid of all
the tension in your body and let go of your pain and
stiffness. Just relax. When you get up I hope you feel
ready for a new day or relaxed enough to fall asleep.

Dana Wood the talented Culinarian, is mostly behind the
scenes working in the kitchen at the Creek Course. Dana
holds an AAS degree in culinary management. She started
working at Hammock Dunes 12 years ago when the Creek
opened. After a brief time away, she returned to us in the
summer of 2013.

Join us for Duplicate Bridge in the Links Lounge on

Scarlett O’Hammocks
Our next trip for the Scarlet O’Hammocks will
take us to the Flagler detention facility (address is:
County Jail, 1002 Justice Lane , Bunnell, Florida. )
on September 14. We will meet at 9:30 a.m. in the
parking lot below LeJardin.
The tour will be led by an officer of the facility and
will provide an opportunity for us to learn how the
county deals with those incarcerated for various
crimes. After the tour we will have lunch at the
Funky Pelican.
We are limited to two groups of 12 people.

In DEFENDING JACOB, Newton, Massachusetts
prosecutor Andy Barber is faced with a life-shattering case:
his teenage son is accused of murdering a classmate. The
dramatic mystery is driven by finely-crafted characters
and intimate knowledge of the legal system to a shocking
conclusion.
Kelly Marshall will lead our discussion of DEFENDING
JACOB on Wednesday, October 21 at 3 p.m. As always, all
members are invited to join the discussion.

Audubon Corner...
The armadillo is a really strange looking
mammal. The only species found in the
United States is the Nine-Banded Armadillo. Although they
look bald they have wiry hairs on their sides and tummy.
These hairs, curb feelers, help them to find food as their
eye sight is very bad and they mostly forage at night. They
are insectivores….dieting primarily on insects with an
occasional worm, spider, snake or frog thrown in. They
only live where the soil is soft as they love to dig. Most
water is no obstacle for them to cross as they can hold
their breath for up to six minutes. If shallow they “walk”
along the bottom to the other side or if deep water they
inflate their stomach with air and float across.
Contrary to popular belief most armadillos cannot roll up
into a completely closed ball. Their “armor”, hardened
overlapping sections of a fingernail like substance, gives
them a pleated look and does help to protect them from
predators. When startled they tend to jump straight up
into the air, 3 to 4 feet, that is the main reason so many
are killed on the roads as they are small enough for cars to
pass over. They can live up to 20 years in the wild.
