Have your cake and eat it...
with our traditional Christmas cake recipe
Cake Ingredients
• 225g plain flour
• ½tsp mixed spice
• ½tsp cinnamon
• ¼tsp ginger powder
• 200g butter
• 200g muscovado sugar
• 50g black treacle
• 30g coarse marmalade
• 4 eggs
• 250g raisins
• 250g sultanas
• 250g currants
• 175g glace cherries
• 125g fruit peel chopped
• 100g whole almonds toasted
• 50g hazelnuts toasted
• 100ml brandy
• 100ml sherry
• Extra brandy for feeding
• 50-80g apricot jam
• 200g marzipan
• Baking tin 22cm / 8 inch
For the icing
• Icing sugar
• Egg whites
• Lemon juice
To decorate the cake
1. One week before Christmas, take out the cake and unwrap from the paper and place onto a
cake board.
2 Roll out a disc of marzipan using icing sugar, to around 0.5cm that will fit the top of the cake,
using the remainder of marzipan, roll out a collar that will fit around the cake.
3 Heat the jam with a little water and brush over the cake, top the cake with the marzipan disc and neatly fit the collar of marzipan around.
5. Squeeze the 2 joints together with a little water to a neat finish.
6. Cover with a kitchen towel and leave out to harden overnight.
7. Make the royal icing by whipping up the egg whites, once stiff gradually add the icing sugar a
little at a time until smooth and velvety then add the lemon juice.
8. Neatly spoon the icing over the cake using a spatula, then form peaks using a fork.
9. Decorate with Christmas ornaments and tie a ribbon around, allow to dry.
10. Keep the cake stored in the tin container until Christmas day.
To be prepared in advance
• Cut out a circular piece of baking parchment 22cm / 8 inch in diameter and a separate
piece 70cm by 8cm rectangular.
• Line a 22cm / 8 inch baking collar with grease and place onto a greased tray,
line with the baking parchment.
• Weigh out all the cake ingredients and leave to reach room temperature. (This is important, if the mix is cold the core of the cake will remain raw when the outside is cooked).
• Place the dried fruits into a bowl, pour over the brandy and sherry
and allow to steep overnight.
• If you want the fruits to be plumper and more flavoured, then soak them a few
weeks in advance.
Recipe
1. Sieve the flour and spices together and place into a mixing bowl.
2. In a large mixing bowl cream the butter and sugar together until light and fluffy.
3. Beat in the molasses and marmalade keeping the fluffy texture.
4. Beat the eggs together and add slowly to the butter, be careful not to over beat
or the butter will split.
5. Slowly add the flour until fully combined then add all the dried fruits and nuts,
making sure they are evenly distributed.
6. Spoon out the mixture into the prepared baking dish and place into an oven
at 150°C for 2½-3 hours.
7. Test if the cake is cooked with a skewer. (If the skewer comes out of the cake
clean then the cake is cooked), remove the collar and paper.
8. Pierce the cake surface with the skewer and allow to cool.
9. Once cool, spoon a little brandy over the cake surface.
10. Wrap the cake in baking parchment and place into a metal tin
and store in a cool dark place, like a pantry for example.
11. Once a week remove the cake and spoon over with a little brandy then return to the pantry.
