Cheese loaves with entire cheese rind can not be packaged with the traditional
vacuum packaging technology. The air locked in the cheese can not escape through
the impermeable cheese rind. The loaf is swelling, ruptures are developing inside.
When cutting or portioning the cheese the ruptures become visible and the cheese
might fall apart.
For this special application the VC999 K6A 2CV with dual evacuation system
was designed. With this machine cheese loaves with entire cheese rind can be
packaged in pouches or shrink bags.
The chamber machine K6A 2CV is equipped with a vacuum snorkel/dual
evacuation system and has three sucking nozzles/snorkels. The evacuation process
has two steps. First the air of the large machine chamber will be evacuated
according to a vacuum value set before. Then the air inside the bag (little chamber)
will be evacuated to the vacuum value set before, through snorkel. Afterwards the
bag is sealed. Thanks to the pressure and counter pressure the loaf does not swell
and ruptures will be prevented. The cut surface is thus intact.
With the VC999 K6A 2CV other vacuum sensitive products with entrapped air
e.g. terrines, pastries and meat loaves can be packaged as well.
