Hushpuppy success strikes again for Boyd McGaugh of Greenville, Missis‐
sippi who won the title as the nation’s 2007 Southern Hushpuppy Champion. Boyd, a 1983 champion traveled 350 miles to compete in the 36th Annual Southern Hushpuppy Championships on Saturday, September 22 at the 23rd Annual Texas State Forest Festival. While 20 other contestants tried spicing up their hushpuppies with eve‐
rything from crawfish to cranberries, Boyd stuck to the Martha White recipe he and his wife have used for over 15 years. Cooking hushpup‐
pies has always been a special event for Boyd, who started frying up the little “fritters” on fishing trips. Boyd looks forward to participating in the 37th Annual Southern Hush‐
puppy Championships next year. “I’m passing on the recipe to my son, who will most likely be competing in future hushpuppy competition events, “ said Boyd. McGaugh’s Hushpuppies 2007 Southern Hushpuppy Championships 2 cups Martha White self‐rising corn meal mix 3 tablespoons Martha White self‐rising flour 2 tablespoons chopped jalapeno peppers (seeds & stems removed) 1 bunch (about 6) green onions, chopped 1 medium white onion, chopped 3 medium eggs Salt & Pepper to taste Sprite 1 tablespoon sugar Mix all ingredients, then add the sprite, stirring until the batter is “tacky,” or of the consistency to stick together properly. McGaugh drops the balls of batter from a small butter scoop, which makes a better hushpuppy than does a tea‐
spoon, he says. Always use fresh cooking oil heated in a deep fat fryer attached to a butane tank. The oil must be 350°; the hushpuppies are cooked until they are golden brown. Yield: about 50 hushpuppies. Boyd also adds ,”of course that recipe isn’t exact, but it’s the best I can tell it. I do a lot of adding and subtracting just to get it right!” Hello Holidays!

The First Street Arts Center is excited to announce a call for artwork for our ʺCelebrate East Texasʺ our One Year Anniversary Exhibition. We will award a $300.00 Grand prize to our ʺBest of Showʺ. Our Juror is Christian Cutler, the current Director of Galleries for S.F. A. Our winner will be announced at our reception October 27th at 7pm. We will also award 1st, 2nd and Honorable Mention in 2D and 3D work. All professional artists are welcome to participate, and we would like to invite submissions of artworks in any medium. Students will be awarded prizes in their own division. There is no size restrictions for this show. Each Piece will be juried into the show by the Exhibition Committee. sion fee for up to 5 pieces and $2.00 for each additional piece after 5. All artwork must be submit‐

While East Texas is known around the state for its spectacular displays of fall color, you can find beautiful color across most of the other regions in Texas. If a trip to New England states isnʹt in the cards this year, think about exploring the color shows that are put on a little closer to home...especially in your own backyard. Share your foliage reports and photographs with the Lufkin Convention & Visitors Bureau! Just e‐mail photographs (in jpeg format, please) to [email protected]. How to View Fall Foliage
Determine the best time to view fall foliage in your area. The color season runs from late September to as late as early November, depending on the location. You can usually trace the path of changing colors from the northwest to the southeast ‐ in general, the farther north and the higher in elevation, the earlier the color show. Make reservations for lodging in advance if youʹre planning to visit a popular area during peak leaf season. Reservations may be advisable for busy weekends. Take as little as an afternoon to make a leisurely drive through a neighboring area; plan for a weekend getaway in the midst of fall color; or arrange a longer trip to take in other high lights and local events. Check for special fall foliage excursions. Narrow‐gauge railroads, for instance, often offer leaf‐peeping trips! Learn to identify the brilliant fall trees and how they vary from region to region. This makes your outing even more enjoyable. Fall is also a great time to bird watch. Don’t forget to stop by the Chamber and pick up your Birding Guide from the Lufkin Convention & Visitors Bureau!
