Day 1 – The Study of Hospitality
Key note Speaker
Professor George Ritzer, University of Maryland, USA
George Ritzer is Distinguished University Professor at the University of Maryland.
Among his awards: Honorary Doctorate from La Trobe University, Melbourne,
Australia; Honorary Patron, University Philosophical Society, Trinity College,
Dublin; American Sociological Association’s Distinguished Contribution to Teaching
Award, and the 2012-2013 Robin William Lectureship from the Eastern Sociological
Society. He has chaired four Sections of the American Sociological AssociationTheoretical Sociology, Organizations and Occupations, first Chair of Global and
Transnational Sociology, and the History of Sociology. Among his books in theory
are; Sociology: A Multiple Paradigm Science (1975/1980) and Metatheorzing in
Sociology (1991). In the application of social theory to the social world, his books
include The McDonaldization of Society (7th ed., 2013), Enchanting a Disenchanted
World (3rd ed. 2010), and The Globalization of Nothing (2nd ed., 2007). George is
also the author of Globalization: A Basic Text (Blackwell, 2010). He edited the WileyBlackwell Companion to Sociology (2012), The Blackwell Companion to
Globalization (2008) and co-edited the Wiley-Blackwell Companions to Classical and
Contemporary Major Social Theorists (2012) and the Sage Handbook of Social Theory
(2001). George Ritzer was founding editor of the Journal of Consumer Culture. He
also edited the eleven-volume Encyclopedia of Sociology (2007), the two volume
Encyclopedia of Social Theory (2005) and the five-volume Encyclopedia of
Globalization (2012). He co-edited a special double issue (2012) of the American
Behavioral Scientist on prosumption. His books have been translated into over
twenty languages, with over a dozen translations of The McDonaldization of Society
alone.
Foundation Theory
Professor Conrad Lashley, Hospitableness, Stenden University of Applied Sciences,
Netherlands
Senior Researcher in the Academy of International Hospitality Research at Stenden
University of Applied Science in Leeuwarden, Holland. He is editor of Taylor and
Francis’ Hospitality, Leisure and Tourism and co-editor of the Events Management series
of books. He is author or editor of fifteen books including In Search of Hospitality:
theoretical perspectives and debates, and Hospitality: a social lens. He is Editor Emeritus of
the journal Hospitality & Society and co-editor of Research in Hospitality Management.
He has published well over 100 hundred papers in refereed journals and books of
refereed conference proceedings. He has supervised or is supervising 18 PhD projects
and has examined over 36 PhD/DBA theses. He has generated over £3 million in
commercial income from commercial research activities and in-company
management development programmes.
Dr. Luiz Octávio, Os domínios da hospitalidade" (The domains of hospitality)

Professor at the Escola de Artes, Ciências e Humanidades da Universidade de São
Paulo, Doctor of Sciences at Sorbonne University, Paris and graduated in
communications/ journalism from the School of Communications and Arts,
University of São Paulo (1974). Luiz is a sociologist, with research in the areas of
entertainment, education, hospitality, tourism and socio-culture. He began his
professional life in the field of leisure at Serviço Social do Comércio São Paulo where
he directed projects such as the Center for the Study of Leisure, the SESC LeisureSeries, Scientific Library and partnerships with universities and international
organizations. He was a consultant for leisure and tourism plans and regional
development. Luiz was coordinator of undergraduate courses in Tourism and
Hospitality University Sorocaba. His main publications are in Brazil on: What is
leisure?, Education for leisure (Modern), Hospitality, and also published articles in
Tiers-Monde (France), Loisir & Societe (Canada, Quebec) magazines and USA
(Leisure Journal). He was a lecturer and later coordinator of the Master in Fashion,
Art and Culture at Senac University Center of São Paulo. He is currently a faculty
member of the Master Program in Hospitality University Anhembi Morumbi and
teaches on the Bachelor of Leisure and Tourism EACH-USP and Professor of the
Masters in Tourism USP / EACH. His research is currently focusing on two key
themes: tourism and hospitality.

Developing Theory
Professor Elizabeth Kyoko Wada Contrasting and comparing frameworks,
Universidade Anhembi Morumbi, Brazil
Ph.D, MSc and B.A. in Communication Sciences; operational and managerial
positions in the Tourism and Loading Industries, with C-Level responsibilities since
1987. As of March 2007, she started a new professional path both in the contract
format and type of activities. After acting as an executive in the tourism and lodging
industries for more than 25 years, Elizabeth faced the new experience as a consultant
in a TMC, plus the return to the wonderful activities of teaching and researching at
the Universidade Anhembi Morumbi. The combination of both allowed her to
dedicate time to deal with young people, learn a lot about hospitality,
competitiveness, distribution, have refreshed thoughts and support the strategic
planning, without the day-by-day obligations of reports and meetings. Elizabeth says
about this: “The usage of time and energy is more productive and the personal
rewards are great!”

Paulo (USP) e UNESP. Postdoc in Urban and Education Sociology with Professor
Manuel Castells and Pierre Bourdieu (École des Hautes Études en Sciences Sociales,

Professor Sȇnia Regina Bastos Scientific Research in Hospitality: Challenges in Search of
a Theoretical Shape, Universidade Anhembi Morumbi, Brazil
Sȇnia holds Bachelor’s, Master’s and Doctor’s degrees in History from the Pontifical
Catholic University of Sao Paulo (PUC). She is currently a professor of the Master’s
programme in Hospitality from Anhembi Morumbi University (UAM), is a
researcher of the Centre for Emigration (CEPESE/Porto), second leader of the
Hospitality Research Group: Processes and Practices (UAM) and editor of the
Hospitality Journal. She has been the scientific director (2005 – 2009) of The National
Association for Research and Post-graduation in Tourism – ANPTUR, and editor of
the Brazilian Journal of Research in Tourism (2007 – 2009). Sȇnia worked as director
of the Research Division of the Centro Cultural São Paulo (1999 – 2001) and as
researcher at the Department of Heritage of the city of São Paulo (1991 – 1998).

Professor Kevin O’Gorman Research Agendas and Futures, Herriot Watt University,
UK
Head of Business Management Department at Heriot-Watt University, Edinburgh.
His current research interests have a dual focus: origins, history and cultural
practices of hospitality; and philosophical, ethical and cultural underpinnings of
contemporary management practices. Current research projects include:
 Origins of capitalism as found in the Greco-Roman world of Classical Antiquity Building on previous work exploring the evolution of the commercial hospitality
industry. This research is aimed at investigating the underpinning motivations
that lead to the conception of capitalism.
 Conrad Hilton and the Creation of the Global Hotels Industry - This research
seeks to chart and explain the emergence of the global hotels industry based upon
previously unexploited original archival sources.
This year the professors in Business Management are joining together to teach the
core 1st Year class ‘Management in a Global Context’ and Professor O’Gorman is the
course leader. He is also the course leader on 3rd Year research methods course.
Professor Kevin O'Gorman is Professor of Management and Business History and
Head of Business Management in Dubai and Malaysia.
Professor Barry O’Mahony Exploring the impact of the constructs of the three
domain approach on private social and commercial hospitality provision, Swinburne
University of Technology, Australia
PhD (UM), MEdu (VU), GradDipEducational Administration (UM), BBus (VU),
DipTeaching (UTS), is Department Chair, Marketing, Tourism and Social Impact and
Professor of Services Management within the Swinburne Business School. Barry
holds a PhD from the University of Melbourne and was previously Director of the
Doctor of Business Administration program within the Victoria Graduate School of
Business at Victoria University (VU); Acting Associate Dean Research and Research
Training (VU); Head of Research at Galway-Mayo Institute of Technology and
Director of the Centre for Hospitality and Tourism Research (VU). Barry has taught
undergraduate, postgraduate and doctoral courses in Australia, Ireland, Hong Kong
and the United States and has developed undergraduate, masters and executive
education programs. He has served on higher education program accreditation
panels for the Victorian and New Zealand Governments and has an extensive
industry network. He was the recipient of an Executive Dean's award for Industry
Engagement and a Vice Chancellor's Citation for Excellence in Teaching and
Learning. Barry has held a number of leadership positions within the hospitality
industry both in Australia and internationally and has extensive expertise in food
and beverage management. He has led and conducted numerous funded research
projects, published in leading international journals and received best paper awards
for his peer reviewed contributions to international conferences. Barry teaches on:
PhD by Practice Based Research, MBA Operations Management, Managing the
Customer Experience (Executive Program), Hospitality and Tourism Marketing and
Event Management. His research interests include: Management and Marketing of
Leisure Services, Consumer Behaviour and Food and Wine Marketing.

Professor Alexandre Panosso Netto, Escola de Artes, Ciências e Humanidades da
Universidade de São Paulo - EACH/USP, Brazil Hospitalidade and Journal of Research
in Hospitality Management Collaboration
Professor and researcher (Leisure and Tourism) at Escola de Artes, Ciências e
Humanidades, Universidade de São Paulo (EACH-USP), Brasil. Graduated in
Philosophy and also in Tourism. MBA in Tourism, Master in History, and PhD in
Communication Sciences (USP). Postdoc in Tourism (The Origins of Tourism
Knowledge, Universidad Europea Miguel de Cervantes, Spain). Research interests
include (a) Epistemology of Tourism, (b) Tourism and Education (c) Critical Theory

Dr. Sjoerd Gehrels, Future Directions for Education and Research, Stenden University
of Applied Sciences, Netherlands
Sjoerd started in Dutch higher education in 1989, after 10 years in the hospitality
industry where he worked as apprentice, sommelier and operations manager in
Michelin star restaurants. In Stenden, he is currently course leader for the Master in
International Service Management, and researcher within Stenden Hotel
Management School’s Academy of International Hospitality Research. Sjoerd holds
an MSc (University of Surrey 1999), MBA (Oxford Brookes University 2004) and EdD
(University of Stirling 2013). His doctorate thesis looked at how the Contextual
Characteristics of Successful Small Upper Segment Culinary Restaurant Owners
could potentially influence Hospitality Management Education. Currently, Sjoerd is
in a Postdoc at the University of Algarve, Portugal. His research focusses on
innovation in hospitality with the emphasis on diversity and value creation. A recent
funded project for the Center of Expertise in Leisure, Tourism and Hospitality
(CELTH) examines Employer Branding application for the Dutch Hospitality
Industry. He is co-editor of the Research in Hospitality Management journal and
member of the editorial board for the European Journal of Tourism Research.
