This year saw the return of the Flower Market awards. These awards
give industry recognition to the incredible work and inspiring
businesses run by our Flower Market customers, and to the sterling
job of our wholesalers who work crazy hours to support them.
Thank you to everyone who entered the judges were overwhelmed and had
a huge task to pick just one winner for
the Florist of the Year award. In the end
the talents of NB Flowers won them
the title of Florist of the Year 2014!
We would also like to congratulate our
shortlisted companies: Jay Archer
Floral Design and Mary Jane
Vaughan Designs.
Our Wholesaler of the Year award
was chosen by customers of the Flower
Market, and for the second year running
went to Dennis Edwards Flowers!
Zest and Donovans were shortlisted
for this. Well done!

Every Last Scrap
With sustainability still a hot topic in catering it has never been
more evident that food waste is unnecessary and expensive.
We ran a Tutored Tasting with
Chefs Mike Knowlden and Josh
Pollen at Blanch & Shock Food

ideas for minimising food
waste in the kitchen and

Useage: As with many
vegetables, most of the
flavour is found in the skin.
Roasted potato skins can be
used to make a stock that can
be served on its own as a consommé,
used to impart extra flavour to dishes,
or to loosen a potato puree or mash.
Note: Potato skins can be deep-fried
and served like chips or instead of
crisps and dip.

Left over: Kernels
Useage: Kernels can be removed from the stone and
crushed, toasted or blended into liquids to infuse the
bitter-almond flavour of benzaldehyde into food. The flavour
enhances dairy products. For example, hot butter can be
infused with crushed kernels and then used as a crumble
topping for fruit desserts.
Note: A little-known fact is that Amaretto liqueur is made from
apricot kernels rather than almonds.
Please note that bezaldehyde can cause skin and eye irritation and should
therefore be clearly identified on menus.

A Celebration of 40 years
New Covent Garden Market tenants past and present turned out in
40th anniversary of the Market’s move to Nine Elms at the annual
More than 550 guests were in attendance, held at a packed Westminster Park Plaza. Traders were joined by
customers and suppliers and a large number of Market ‘old boys’, brought together by former Covent Garden
Tenants Association (CGTA) chairman Philip Emanuel.

addressed the packed room, first
thanking everyone for being part of
what was a record attendance at the
event. “No other market in the country
can compare,” he said. “We are - as
Ali would say - the greatest; a boast
we backed up again by being named
the Best Wholesale Market in the
country for 2014.”
Cheques for £20,000 were presented
to each of the Market’s chosen
charities, the Anthony Nolan Bone
Marrow Trust and Trinity Hospice.
Generous diners and companies
donated a record of over £55,000 to
increase the total sum raised for the
two worthy causes in the 10 years
since Gary became chairman to more
than £450,000.

There was a particularly poignant
moment during the annual dinner, when
the CGTA’s lifetime achievement award
was given to the late Jamie Hulse, who
sadly died earlier this year. Jamie’s son
Beau picked up the award
and gave an extremely
moving acceptance
speech.
Gary added: “[Jamie was]
a hard worker, fast learner,
skilled and proper trader,
with whom business flowed in
a fair and honest manner, generating
a deserved mutual respect from clients
and co-workers alike.
“He was, and will remain, a true
Covent Garden man who loved the
Market and was a prominent character
and front-runner capable of standing
up for what he believed to be right, but
also having the strength and integrity
to accept when he was wrong.”

The Market is nothing without the people who make it so special. Generations
of families have come through the ranks and friends are made here for life.
Here are just some of our terrific traders who have graced our stands.
Flower Market College Day
Five hundred floristry students filled the Flower Market on Wednesday
5 November for a fun-packed morning of talks, tours, competition and
Flower Market shopping, topped off with a spectacular floral demonstration.
The Level 2, 3 and 4 students from
23 colleges from across England
had come together for the Flower
Market College Day, by now a
highlight in the floristry college
calendar.
Level 3 and 4 competitors were
tasked with creating a wall display
for a Bonfire Night Party (well, it was
5th November after all!), sourcing fresh
flowers and foliage in the Flower
Market to a tight brief and a tight
budget. The results were stunning!

The morning finished with a bang as
the wonderful Francis Rushby of
renowned florists McQueens gave
a truly inspirational demonstration,
starting with the largest hand-tie the
audience had ever seen! In rich
autumnal shades, the design sat neatly
inside a barrel, a witty nod to the
Gunpowder Plot!

‘It's got the power to refresh anything it
touches,’ says Mazzei of the bergamot citrus
fruit, which he adds to pastries, panna cotta,
cocktails and even a ‘nice and black’ squid
ink stew.

At L'Anima, seasonal ingredients that
feature now include bergamot, black truffle,
cime di rapa and puntarelle.

at the Market
This year Allison Risebro celebrated
their 35th birthday having been on
the market since 1979.
Francesco Mazzei is renowned chefowner of L'Anima, a chic and contemporary Italian restaurant in the heart
of
the City.
He creates high-end food that is a feast
for the eyes. His current menu includes
sophisticated dishes such as 'Hand-picked
Crab with Apple Sauce and Sea Urchin
Dressing', 'Wild Boar Maltagliati with
Juniper and Pistachio' and 'Pan-fried Veal
Fillet with Sage Mashed Potato and
Artichokes'.
