HAPPY HOUR FOOD*

HAPPY HOUR FOOD*
Like most great things in the United States, the Happy Hour is a creation of
Prohibition. Since one could not enjoy a glass of wine or an incredible creation
from a mustachioed mixologist with one’s dinner, citizens of this great country
would gather in speakeasies before dining and enjoy a happy hour of imbibing.
After the 21st Amendment was passed, cocktail lounges carried on the tradition.

Sherry is the most underrated beverage on the planet earth.
And it is our mission to increase Sherry consumption three fold over the next 12 months.
So, say “yes” to Sherry…say “yes” to the world’s greatest beverage.

Let’s begin with the obvious or maybe not so obvious…R I E S L I N G I S N O T A N
I N H E R E N T L Y S W E E T W I N E . Okay, so that is out of the way. Next up.
What needs to be made abundantly clear is that when the Riesling grape is grown in the
perfect terroir, it can produce some of the most sublime, well-balanced wines on the planet Earth.
And yes, there may be some residual sugar in some of those German examples. But who cares! In
America, we talk dry but we drink sweet. Don’t deny it; other than New York City school kids,
someone is drinking all that Coke and Dr. Pepper and Snapple. What you need to understand,
accept, and embrace is when one does encounter a little residual sugar in a riesling, it is
counterbalanced by a high level of tartaric acid. When a wine rides this razor’s edge of balance, it is
the most thrilling beverage possible.
This next fact may be even harder to accept but you’ve come this far: wine does not
have to be super-spoofulated to be considered great. Greatness should be defined by the following
criteria:
-the terroir of the grape resonates through the wine like a summer thunder clap
-the fruit of the grape enlivens the wine like a perfect Georgia peach
-the sense of man’s involvement in these expressions of the grape should mirror the
sound of Mark Sanford’s reception back into his wife’s home...silence
-the penetration of the wine on the palate invokes memories of our first encounter with
Mom’s milk…super fricken’ yummy (and you never want to stop drinking)
Let’s be honest for a moment, if God had wanted us to drink those Frankenstein wines,
he would have given us the neuro complexity of an amoeba.
Rudolf Steiner urged us to become aware of one’s humanity.
By drinking Riesling, you become a better person.

In the revolution that was Italian wine in the 1970s / 1980s, Angelo Gaja not only manned the battlements to defend
the honor of Italian wine but he led the charge to overthrow the archaic mindset that dominated the Boot. It is
incomprehensible to think it now but there was truly a time, not so long ago, when Italian wine and the word “quality”
were not often used in the same sentence. From his family’s base in the town of Barbaresco, Angelo seized the reins
of the industry and willed it into the modern age, all the while helping to define what the modern age was. Minus the
robes and the stone tablets, Angelo is the Moses of Italian wine.

**These bottles were sourced from a private cellar in Europe.
They are representative of very old school winemaking in Piedmont.
By this, we mean that the wine remained in large botte for many years to shed
the tannic cloak of Nebbiolo and gain a measure of velvet and grace.
Please do not expect to perceive much fruit in the wine. Please do not expect to be blown away by power and weight.
Please expect to enjoy a glorious piece of vinous history that makes us happy each and every day and very much puts
an extra dose of snap, crackle and pop into our breakfast cereal (it is the most important meal of the day afterall).

8 Reasons to love Red Burgundy:
1. When you consume a Red Burgundy, you are not drinking a Pinot Noir;
you are enjoying the liquid bounty of Mother Earth.
2. In exile, Napoleon was allowed a magnum a day of Chambertin…
he stated it maintained his regal stature.
3. Compared to Bordeaux, these domains in Burgundy are tiny…sort of like comparing
a 1982 Lada to a 1964 Lincoln Continental.
4. The monks at Cluny and Citeaux worked their arses off for over 750 years
cultivating this land and making these wines…do you want to disappoint them?
5. Pinot Noir is a very fickle grape to grow. And in Burgundy it thrives (when Mother Nature
allows it to). And any opportunity to drink a great Pinot Noir is a damn good day.
6. Gerard Depardieu is banned from drinking it since his renunciation of French citizenship
7. “One must be lazy when you grow Pinot Noir” stated the great Henri Jayer…
so let’s all be lazy.
8. Because Daniel Johnnes told me it would make my life better…
and he is always right.

===========================================
Sherry is the most underrated beverage on the planet earth. This statement brings tears to the eyes of a
few souls, mainly those standing before you now. It is our mission to be accomplished to increase
Sherry consumption three fold over the next 5 years. And from our little pulpit in the East Village we are
saying “no” to the naysayers…no, you cannot have another Cosmopolitan or Apple Martini or Espresso
Spritzer with a Sambuca Float…no, Sherry is not just for your grandmother who likes it on the rocks at
3:00pm while watching As The World Turns…no, Sherry is not just the tipple for Royals lamenting the
loss of old Mother England.
So, say “yes” to Sherry. Say “yes”to the world’s greatest beverage!
And now for something completely different: the facts.
-the region of production is in the extreme south of Spain, in a geographic triangle formed by the three towns of Jerez, El Puerto and
Sanlucar; this area comprises 50,000 total acres
-the soil in the region is called albariza (from the Latin alba, meaning white); it is composed of a white, chalky loam with magnesium, clay
and lime
-the climate is greatly affected by the proximity to the Atlantic Ocean which brings moisture to the vines; having said that, there are still
290 days of bright sunlight here
-the main grape in the production of dry Sherry is the Palomino grape; all sweet Sherries are made with the Pedro Ximenez or Moscatel
grapes (these are dried in the sun to allow the water inside to evaporate; a little brandy is then added to the must to create the sweet
nectar
-the two main types of Sherry are Fino and Oloroso. Everything begins as a fermented wine and then through a massive tasting session, the
lightest and cleanest will become Finos (the wines are fortified to 15 degrees and the wine remains under the veil of flor -a strain of
Saccharomyces yeast which helps to prevent oxidation) and the ones with more body become Olorosos (the wines are fortified to 17
degrees and there is no protection against the air so these wines have an oxidative note)
-an Amontillado is an Oloroso trying to be a Fino
-a Palo Cortado is a Fino trying to be an Oloroso
-the wines mature in an ageing mechanism called a Solera System. Easy to understand, hard to explain, please ask your waiter for a visual
description. Just know that the running of the scales results in a blended, consistent wine that angels drink before they retire at night.

The Port Region of Portugal stretches from just outside the city of Oporto all the way to the Spanish
border. The Atlantic Ocean has very little influence on the temperatures in the region, which often exceed 95
degrees Fahrenheit in the summer. The terraced vineyards are carved into the super steep schist (iron ore)
hillsides and the vines generally have about 5 feet to establish themselves before hitting granite (thankfully,
the bedrock fractures vertically so the roots do have a chance to go in search of water and minerals).

Madeira is a volcanic island in the Atlantic Ocean, located about 625 miles from the coast of Portugal. The
grapes are planted on terraces called poios, carved into the red and grey basalt bedrock. The island
experiences high rainfall and the average temperature is 66 degrees Fahrenheit. The majority of the best
vineyards are planted at altitude (5900 feet) to minimize the effects of the tropical climate. If you want to
drink American, there may be no better drink than Madeira...the signing of the Declaration of Independence
was toasted with a glass of this glorious juice. Celebrating the completion of the US Constitution, the fifty-five
drafters racked up a bill for 54 bottles of Madeira…truly, giants roamed the earth in those days.
