Spring/Summer 2013 Edition – English version PALACE MERANO ESPACE HENRI CHENOT “Kleenex” Society In this throwaway “Kleenex” society, it’s useful to understand the frame of mind of people who come to our treatment centre to regain their energy and health, and learn what drives them to make sacrifices in order to continue playing an active part at the helm of the companies they manage. After 40 years in the business, I have noticed that there is now, more than ever before, a tendency to want to stay on in managerial roles. Such difficulty in handing on the baton to the new generation creates tension, discord and malaise. This means that our society has not been able to adjust to the development of large-scale changes over the last few decades and I strongly believe that this phenomenon will become even more marked in the future. This reflection reminds me of my studies in philosophy and Chinese medicine, in particular the story of the pupil who goes to ask his master for 2 4 5 6 8 Editorial by Henri Chenot advice on how to solve a problem. It is the link between memory and the duty of memory that has to integrate continuity in society through a forward-looking vision, fitting into the evolutionary spiral where every one of us is a particle dependent on all the other particles as a whole. This all goes to define the “human phenomenon”, clearly explained by Teilhard de Chardin in his book of the same name. Man is not a subject to be used and then eliminated when no longer productive, as becoming something “more” means joining together to a greater degree. Henri Chenot Fibre is a class of vegetable substances consisting of long molecular chains (polymers) – very often carbohydrates (polysaccharides) that are part of the skeleton (structure, cell wall, type of sheath). They are not processed by enzymes in the body and reach the large intestine without being digested: some of them can be degraded by the intestinal bacterial flora either wholly (mucilaginous pectins) or partly (cellulose, hemicellulose) to produce important vitamins in the B and K groups. Fibre can either be soluble (pectin, rubber, mucilage, beta-glucans, resistant starch …) or insoluble (cellulose, lignin …). Fibre Soluble fibre is transformed by bacteria into short-chain fatty acids and gas, causing an increase in bacterial mass and a drop in pH. Insoluble fibre mostly absorbs water in the large intestine and swells up, improving the consistency of faeces. In general, fibre increases the weight of faeces and frequency of bowel movements, as well as accelerating the transit time in the colon. A diet lacking in fibre is the most common form of bad diet in industrialised countries. This deficiency is linked to the emergence of certain diseases associated with the culture of wellness such as constipation, diverticulosis and cancer of the colon.These diseases mostly occur in countries where diets are characterised by a low intake of dietary fibre such as Europe, the United States and Canada, while they are less common in Third World countries where there is a high intake of fibre. A low intake of fibre leads to a slower transit time in the colon and a reduction in the weight of faeces and frequency of bowel movements. The primary treatment of constipation consists of the increased intake of fibre along with sufficient liquids. An insufficient intake of fibre is often associated with an increase in the presence of diverticula (50-80% of eighty-year-olds are affected by diverticula). Numerous epidemiological studies have demonstrated that a sufficient intake of fibre in childhood significantly reduces diverticulitis and diverticulosis. Colorectal carcinomas are the second most widespread form of cancer in Europe. The risk of colorectal carcinoma as a result of a diet that is low in fibre but rich in protein and fat is 8 times greater than for a high-fibre diet with a low intake of fat and protein. With a low-fibre diet, not only are more carcinogenic substances formed, but they also stay in the large intestine for longer. It also leads to the formation of more carcinogenic substances. Different studies have shown a reduction in the frequency of colorectal carcinomas when there is a sufficient intake of fibre. In terms of preventing the diseases associated with a diet lacking in fibre and following a healthy diet, although there is no recommended intake of dietary fibre, it is advisable to consume between 20 and 35 grams a day as part of a balanced diet including all the main food groups. Legumes, fruit and vegetables should be eaten on a regular basis to increase the intake of fibre and refined cereals should be replaced by whole grain cereals. In such a diet it is no longer essential to eat bran or bran-enriched products. It is important to underline that fibre consumed as part of a varied diet including fresh unprocessed vegetables does not have any harmful effect on the absorption of minerals and vitamins: the demineralising effect only occurs if there is an excessive intake of concentrated fibre supplements. Antioxidant effect RESISTANT STARCH Two widely accepted suppositions about the digestion of starch have proved false during the last decade: that starch is hydrolysed and absorbed more slowly than sugar and that starch is completely absorbed in the small intestine. Numerous studies carried out during the last 20 years have demonstrated that starch is digested and that the resulting carbohydrates are absorbed at different speeds depending on the type of food and the treatment it has been subjected to. Furthermore, a sizeable amount of starch reaches the colon, where it is fermented by the intestinal flora. This is called “resistant starch” and includes both starch and the products of the hydrolysis of undigested starch at the bottom of the small intestine. Resistant starch can consequently be likened to fibre. The analysis of numerous foodstuffs ready for consumption shows that the content of resistant starch generally accounts for less than 5% of dry matter. However, this figure may increase through the processes of cooling, canning, heating or freezing.This is especially true for potatoes and dry legumes. The consumption of resistant starch has been estimated in different countries and seems to be approximately 3.5-5 g a day. Starch that has not been absorbed in the intestine reaches the colon and becomes one of the substrates for anaerobic fermentation. In a certain sense, what happens to starch at a digestive level can be compared to what happens to dietary fibre: fermentation leads to the production of short-chain fatty acids (above all acetate, propionate and butyrate), carbon dioxide, hydrogen and, depending on the person, methane. One part of the fatty acids is absorbed at the level of the colon, but butyrate is used by colonocytes as an energy substrate. Acetate and propionate are partly metabolised by the liver. As resistant starch is not assimilated by the intestine in the form of glucose, it constitutes a certain loss of energy. It is calculated that the energy value of the fermented fraction at the level of the colon is 8/9 kj/g (1.9-2.2 kcal/g). Foodstuffs that are rich in resistant starch seem to play an interesting role in the prevention of the above-mentioned diseases (cancer of the colon, arteriosclerosis, obesity). LIGHT PESTO CURRY SAUCE BULGUR HAMBURGERS 1 onion 3 cloves garlic 2 tbsp yellow curry powder 1 tbsp turmeric 1 tbsp ginger ½ tbsp cardamom ½ tbsp sambal oelek 1 vegetable stock cube 3 leaves parsley 1 tbsp sesame oil Ingredients for 4 people: 250 g bulgur wheat 1 vegetable stock cube 100 g natural tofu 100 g smoked tofu 20 g celery cut into tiny cubes 20 g carrots cut into tiny cubes Mixed herbs (coriander, dill, oregano, chervil) 1 tbsp sesame oil Ingredients for 4 people: For salads, crudités, to serve with fish. Liquidize all the ingredients in a blender for a few minutes 3 bunches basil 1 bunch parsley 3 tbsp extra virgin olive oil 100 ml vegetable stock 10 g pine nuts Pinch of ginger Pour the bulgur into at least 300 ml of water, add the vegetable stock cube and boil over a low heat in a covered pan for about 15 minutes until the water is completely absorbed. Remove from the heat and leave to cool. Add the two types of sliced tofu and the cubed celery and carrots, along with the chopped herbs and sesame oil. Mix well and shape into hamburgers. Cook on the grill or in a non-stick frying pan for a couple of minutes. Serve with a caponata salad or sweet and sour sauce.
