TASTING NOTES
Blend of a 70 year old vineyard with a neighboring 15 year old parcel. "Le Pavillon" is planted on
calcareous rock which gives the wine its minerality. 12 to 18 months aging on the lees in stainless
steel tanks. Mineral at first, the wine shows beautiful structure and finesse.
