Terre de Châtaignier Chatus Ardèche Protected Geograpical Indication GRAPE VARIETY: Chatus. VINEYARD: The vineyard is situated on the southeast side of the southern part of Ardèche. Chatus is solely planted on the terraces of the Cevennes Mountains, facing directly south, protected from wind gusts on soils with a high percentage of sandstone. It is located in the districts of Payzac, Largentière and Rosières. WINEMAKING: The Chatus grape variety is harvested at the end of the September with a naturally high content in alcohol. It is then transformed into wine according to traditional methods, after being destemmed and crushed. This wine is aged in oak vats for 12 months. The abuse of alcohol is a health hazard. Drink in moderation. TASTING NOTES: Garnet with violet tints in its youth, it gradually develops into a dark red color, with a deep robe underscored by dazzling brightness. Its aromas are complex, including notes of over-ripened fruit (quince jelly, figs, and prunes in alcohol), coffee and tobacco, with a touch of vanilla and cinnamon. Strong and well-structured on the palate, including rich tannins, this wine is true to type. FOOD AND WINE PAIRING: It is best to open this wine a couple of hours beforehand. It goes marvelously well with strong red meat, grilled or served with gravy, as well as goats’ and sheep’s cheese. It is surprising with dark chocolate. SERVING TEMPERATURE: 18° C. AGEING POTENTIEL: This is an age-worthy wine par excellence. It starts to express itself as of 3 years and offers its full potential after 5 to 10 years.
