Linda says that barley combines well with most foods so it is a perfect addition to your colourful dishes. “It’s a burst of summer,” she says. To beat the heat, you can precook barley in a rice cooker or slow cooker and keep it stored in the fridge for four days for a hearty addition to meals. “I love barley in salads,” Linda explains. “Get a nice salad filled with summer vegetables and throw some barley in. I’d recommend cooking the barley in a broth. It will take on the flavours in the broth and give it a bit more added flavour.” She enjoys putting barley in her Greek salad as a colourful and delicious dish.
