“I
t was bizarre how it came full circle for me,”
the country crooner says.
“While I was getting the tracks recorded in
Nashville, I sang the song and thought to myself,
freedom’s a very broad word for Australia right
now and in any decade and it’s a powerful word;
why not lead the album out with a powerful word
like freedom because we all strive for that.”
With more than two decades in the music
industry under his belt, Troy has amassed
numerous ARIA and APRA awards, 26 Golden
Guitars, reached gold and platinum records and
gained legions of fans, and he has no intention of
slowing down.
This month Troy celebrates a new national tour to
coincide with the release of Freedom Ride, made
most enjoyable due to the lengthy process of
writing the album.
“This was a great, fun record to write because
I’ve had time to write it,” the indigenous singersongwriter says.
“I think sometimes we make the mistake of
rushing things together and trying to do your best
and then you’re not really happy with it. I don’t
believe in putting out an album a year. I think people
deserve a bit more quality than quantity.”
Taking two years to write, Troy enlisted other
classic country vocalists including Paul Kelly, Colin
Buchanan and Pete Denahy.
“Collaborating with people is something I dearly,
dearly love,” he says. “I’m very lucky to have these
fellas and call them friends. They are people I love
to hang with and these friends are there forever,
that’s the best part.”
Working on the album, Troy found his musical
talents extended to the fly-in, fly-out world,
following a plane trip from WA’s mining region.
Striking up a conversation with a FIFO worker
delivered the blue-collar anthem Two weeks on,
two weeks off.
“It was a fascinating conversation,” Troy says. “I
didn’t think of the heartache it causes them when
they’re away and their families when they’re stuck
at home without them. It’s a tough call adjusting
to that and I wanted to write about it.”
The humble musician says it was amazing working
on the duet with iconic Aussie rocker Jimmy Barnes.
“To me it sounded like quite a reasonable song
before Jimmy sang on it and then he blew it out
of the water for me,” he says. “It made me feel
like getting rid of my vocals and leaving Jimmy’s
on there!
“I’ve always seen Jimmy as being very blue collar
and when I put a sprinkling of that Cold Chisel
voice on there, it just completed the picture,
which I really enjoyed.”

While he doesn’t quite have that same roster,
Troy can relate to the FIFO lifestyle, being away
from his family while on tour. At home however,
when it comes to family singalongs, he can still
experience what every typical dad goes through.

“We never play my stuff, it’s not cool enough to
play my stuff,” Troy laughs.
“They’ll want to play a Ryan Adams song or they’ll
find something quirky or Jem (his daughter) will find
something on the net she quite likes, like a Birdy
song or an Adele song and I can strum along to all
that good music. I love the way they introduce me
to new artists as well, which is great.”
While he’s spent time living and working in
Nashville, the world-renowned capital of country
music, Troy admits there’s no better place than
being right at home.
“Australia is the greatest country because of the
people. I think people have known this country is
amazing for many, many years. I love every corner
of where I get to go on tour and I’m very lucky
to do it, but the people I meet and the fondness
they have for music and what I do is something
that always humbles me,” he says.
“And you know what, Australia has a definitive
smell. I don’t know whether it’s the eucalyptus
trees, but over in the States when we were living
there, we’d walk around this big park and there
were all these blooming flowers and my wife said
‘it doesn’t smell like home’ and I said ‘no it doesn’t’.

“There’s something not right about walking out into
the bush and not smelling gum trees or whatever
our smell is here that makes it uniquely home.”
The consummate professional, Troy consistently
works on perfecting the art of his music.
“I think the craft of songwriting is something
we should all be trying to better ourselves at as
musos. I think it should be a journey,” he says.
“You’ve got to be hard on yourself and not think
you’ve peaked yet. I’m going to try to be like a
bottle of Grange. Hopefully I’ll still be going okay in
20 years and someone will bother to open me up.”
For now, Troy is more than content to continue
doing what he loves best. The epitome of a
typical country larrikin, he has no desire to give up
his passion just yet.
“I’d hate to traumatise an audience by falling over
dead on stage but that’s pretty well my retirement
plan,” he says.
“I’d love to be able to continue driving around or
get on a plane or drag a caravan round and round
for a bit and still play guitar and sing.”

and roots festival, in Queensland.

TIME’S A
CHARM
I
t’s the year for much anticipated seventh
instalments of blockbuster franchises and it’s
kicking off with Furious 7.
Critics are already suggesting the film could
be the biggest hit to come out of the action
franchise so far.
But fans of The Fast and the Furious saga are
most eagerly waiting to watch their hero Paul
Walker, who died in a fiery car crash in 2013, on
the big screen for the final time.
His death forced filmmakers to finish his scenes
without him through the use of CGI and body
doubles, including his brothers Caleb and Cody.
It is believed Walker’s character Brian O’Connor
will be retired rather than killed off in the seventh
film. Whether this is to keep a window open for
the series to continue remains to be seen.
James Wan (The Conjuring and Saw) takes the
director’s seat, with a cast of returning stars led
by Vin Diesel and Dwayne Johnson.
The new instalment sees Ian Shaw (Jason
Statham) on the hunt for Dominic Toretto (Vin
Diesel) as he seeks revenge for the death of his
brother at the end of Fast and Furious 6 and the
crew will also lose one of their own.
Furious 7 hits cinemas on April 2.

The Days single for several months, it took a lot
longer for The Nights to hit the airwaves.
Taken from new album We Are All We
Need, the single All Over the World was the
standout anthem from the trio’s sold out
Madison Square Garden set late last year.
Sachin Tendulkar is the most celebrated Indian
cricketer of all time and the greatest run-scorer
the game has ever seen. So undoubtedly
this was going to be the most anticipated
autobiography in the history of cricket.
In addition to All Over the World, the
band’s new album features several songs
in collaboration with singer-songwriter
Alex Vargas.
Tendulkar tells his remarkable story from his

cricket will find his autobiography falls short.
Granted The Nights has a lot less substance
than its daytime counterpart but it has that
distinctive Avicii dance anthem flair that so
many have come to love to obsession.
In this newest EP Avicii continues to grow his
unique sound that has seen the Swedish DJ sell
more than two million tracks in Australia.
The Days/Nights includes four tracks, two
original compositions and two remixes from
Swedish producer Henrik B and German

It’s the fourth studio album by the British

The darkest chapter in Indian cricket, match
fixing, was hardly mentioned and there was no
satisfactory explanation of his decision to quit
One-day International Cricket. More openness
would have given fans a greater insight into the
cricket legend behind the headlines and records.

I
t’s a case of art imitating life for Black Sails
actor Hakeem Kae-Kazim, who’s spent almost
as much time crossing oceans as his on-screen
persona, former slave-turned-pirate Mr Scott.
The Nigerian-born actor, known for his
involvement in Hotel Rwanda, Pirates of the
Caribbean: At World’s End and X-Men Origins:
Wolverine, divides his time between the UK,
South Africa and his current home in Los Angeles.
Hakeem speaks on the line from South Africa,
where he’s currently at work on the third season
of the successful adventure drama, about his
latest exploits.
“Black Sails is all about pirates in the 16th and 17th
century. It’s about the ins and outs of that whole
world during that period, but is mainly focused on
pirates and their relationship to each other and
their relationship to the empire,” he says.
“It’s an intense little show. It’s not like your Pirates
of the Caribbean; it’s a lot more raw (there’s a lot
more sex and violence) and intriguing, it’s a really
interesting and powerful show.”
Hakeem plays Mr Scott, whom he describes as
“the moral backbone of the show”. In preparation
for the role Hakeem undertook his own research
into the world of pirates, drawing inspiration from
key figures of the time.
“I took a lot of hints from a character called Black
Caesar, who was a prolific pirate at the time who
actually worked with Blackbeard. He was a former
African chief who was kidnapped off the west
coast of Africa,” he says.

Hakeem first journeyed abroad at the tender age
of one to Britain where he eventually trained as a
actor before heading to South Africa for the first
time for a friend’s wedding.
“I met an agent from South Africa who phoned
me about a month after the wedding, just before
I was about to come back, and asked me to come
in and do an audition for a commercial. I did and I
got the job and then left to go to America for the
first time,” he says.
“Then I got a call about a month later saying come
back and do some more of these commercials
for us. When I came back I was sort of mobbed
at the airport; these commercials had gone mad
so I ended up staying and working…and then 10, 15
years went by.”
When he finally managed to leave his busy life
in South Africa behind and head for the big city
lights of LA there was no rest; Hakeem was quickly
snapped up for a role in Pirates of the Caribbean:
At World’s End.
Since then he’s been in between the US and Africa
more times than he can count on a “rollercoaster
ride being an actor”, but as thrilling as it is, Hakeem
says the lifestyle is not without its challenges.
“When people ask me where I’m from I always
find that a difficult question because I was born
in one place, lived in several other places for many
years and have a really deep connection to these
places,” he says.
“I always say I’m from the world because it’s lovely
to have a connection with many places but it’s
also a bit weird not completely belonging to any
one particular place.”

about the whole time period, the pain of that and it

“It seemed like a little film at the time but I
had no idea how it would resonate while doing it;
it was an amazing project to do and it resonated
profoundly.”
While it seems Hakeem has traversed just about
every sea he has yet to make it to Australia –
something he says is on the list.
With an impressive list of film credits to his name
and starring alongside the likes of Hugh Jackman
and Johnny Depp, Hakeem says his work on the
2004 film Hotel Rwanda was a career favourite.
“I would love to come to Australia; hopefully I will

Mandurah
Western Australia’s largest regional city is home
to the Peel-Harvey estuary where you’ll find

birds nesting, breeding and feeding on the estuary,
it is the perfect location for bird watchers and
nature lovers.
Murray
Home to the towns of Pinjarra and Dwellingup,
the Shire of Murray conveys a feeling of stepping
back in time with its steam train rides in the
Darling Ranges and historic homesteads in the
Edenvale Heritage Precinct.
Camping enthusiasts flock to this part of the Peel
region where the banks of the tranquil Murray
River and the ancient forests are just waiting to
be explored.
Lane Poole Reserve, covering nearly 55,000
hectares, is a must-see place offering visitors the
chance to go picnicking, bushwalking, mountain
biking, swimming, canoeing, four-wheel driving
and wildlife observing. Popular tracks include
the Munda Biddi Trail, King Jarrah Walk and the
Bibbulmun Track.

South Australia is home to the largest open-range

for the Zu-loop shuttle bus, which departs the
visitor centre at regular intervals. The bus is the
perfect option to see it all and further explore
your favourite spots as it stops at a number of
viewing platforms for the giraffe, rhino, cheetah,
lion, African painted dogs and chimpanzee.
Monarto Zoo is open every day and is a
60-minute drive from Adelaide.

Across the Nullarbor
Crossing the Nullarbor plain is a must-do for any
avid outdoorsman. Leaving from Perth, you can

hills, you will head out on to a flat expanse of
low shrubs and kangaroo-lined roads. Your home
for the duration of the journey will be a number

There’s an app for that
The 16-day journey along the Canning Stock route
is not for the faint-hearted. You will be travelling
more than 2000km along an isolated part of
outback Western Australia, which passes through
the Gibson and Great Sandy deserts from Wiluna
in the Northern Goldfields to Halls Creek in the
North West. Whilst this route should only be
attempted by the most confident drivers, there is
now an app which will help you on your journey
through the remote deserts. You can download
the Canning Stock Route project from the Apple
App Store.
A cycle across Australia
For the friends of lycra, there are plenty of
options to get around the outback. For those
cyclists who are really keen on seeing the extent
of this great country, there is a tour that knocks
off most of the states in one hit. Starting from
the South West Rocks in New South Wales, the
Remote Outback Cycle Tour travels from Sydney,
to Broken Hill, up to Mt Isa, across to Katherine
and then over to Lake Argyle and eventually
finishing in Broome. You will experience the
full length of Australia, with vast distances and

Walk across Tasmania
It is quite easy to forget the beautiful tranquillity

aving a deposit, navigating bank loans and
finding the perfect fit can make owning your
first home seem like an impossible task but
it’s not as tricky as you might think.
Everyone should have the opportunity to own
their own home at some point in their lives.
At least that’s the view of long-time property
broker Tim Boyle and the foundation for his
book Escape the Rental Trap.
Inspired by a conversation with a dejected
homeowner hopeful, Tim developed a sevenstep methodology for those looking to buy their
first home.
“It started off from a conversation I had with
a nurse and she was expressing to me her
frustration that she’d been refused finance by
two banks,” Tim says.
“She’d been told she needed a sizeable deposit
and she said she just would never be able to save
that money.
“I ended up being able to get her a loan with
very little deposit and I thought it’s not that
people haven’t got the money, it’s that people
don’t know how to go about it.”
With constantly increasing house prices many
Australians simply feel out of their depth when
it comes to buying and instead fall into renting
properties, which can quickly become a trap,
according to Tim.
“The problem is that rent is expensive and
people end up spending most of their wages
on rent and then at the end of it they’ve got
nothing to show for it,” Tim says.
“The frustrating thing is, they struggle to save for
a deposit and house prices are always going up
(they go up an average of eight per cent a year, so
pretty much they double in value every 10 years
in Australian capital cities) and so at the end of
the day it just gets harder and harder to buy.
“The longer you’re renting you can get stuck in
this trap of being further and further away from
buying property.”
So how does one escape the rent trap?
Tim advises that it’s important to first determine
whether buying is the right move and from there
it’s about asking yourself where you want to live
and what type of property you wish to buy.
“You want to narrow down wherever you’re
living and then you want to work out what type
of property you can afford and then what type
of property you want to live in. Are you going to
compromise your location for a unit for example
or are you prepared to go out of town a little bit
and buy a bit of land?” he says.

Tim says for those who are time poor or lack the
confidence to go about it themselves, a financial
planner may be able to help, however if you’re
willing to put in the effort then you should be
fine doing your own research.
One of the most common-held misconceptions
around home ownership is how much money is
needed for a deposit.
Tim says most people believe they need a deposit
of at least 10 per cent or even 20 per cent, which
is required savings of $40,000 to $80,000 for an
average priced house of $400,000.
“There’s a lot of flexibility among the second tier
lenders outside the big banks in terms of what
type of income they’ll consider and the sources
of the deposit,” he says.

what people commonly think.”
A large part of home ownership is preparing for
retirement; Tim says he’s seen many workers
looking to retire in the next 10-15 years but
without an asset to fall back on to.
“You don’t want to be retiring as a renter because
you’re going to be paying rent after your income
has stopped and you’ve got no asset to show for
it, so that’s why it’s a trap,” he says.
Aside from the financial aspect, Tim says renters
need to also consider the emotional effect of
their living situation.
“The big problem with renting is you can be
pushed around having to move houses every
couple of years and you’re uprooting your kids,
sometimes they have to change schools and
circles of friends change, so it’s that whole
stability of the environment that you bring them
up in. It’s a side that often gets overlooked in the
financial press,” he says.

f you love watching greyhound racing then there’s nothing stopping you
taking the next step and actually owning your own greyhound and being
part of the exhilarating action.
I
A fun, easy and relatively inexpensive way to get started is through greyhound
syndication – simply gather a group of friends and share the costs of owning a
greyhound which could go on to become a champion race dog.
Greyhounds WA Racing Manager Dennis O’Brien says for many people the
overriding reason to purchase a share in a greyhound is to have fun and
experience the thrill and excitement of racing.
A ready-to-race greyhound can cost anywhere between $3000 and $30,000
depending on its age and ability. Greyhounds are usually aged 16 to 18
months when they first start racing, so if people purchased a pup aged three
months, it would cost about $8000 to train and prepare the greyhound for
the racing track.
“For first-time owners buying a race age greyhound, I would recommend
contacting a trainer to assist you with any purchase for two reasons,”
Dennis says.
“First they will have a better idea of the real value and worth of a greyhound
and, secondly, once you buy a greyhound you will need a trainer to train it,
so it’s best to combine that process.”
Dennis says training fees are negotiable but people should budget about $80
to $100 per week.
“Additionally, trainers will receive a percentage of any prize money (for
example 20 to 30 per cent), whereas some trainers operate on the basis of
50 per cent of all earnings but charge no weekly fee,” he says.
RACEHORSE OWNERSHIP
“This covers most costs involved in racing your greyhound. Greyhounds are
capable of racing up to about five years of age and many get beyond 100
career starts.

“Many syndicates arrange social nights when their greyhound is running and
win or lose it is a great night out. The aim is to win a big race but in reality
wining any race provides a thrill and excitement.

eyond conventional schools with
classrooms and lockers and detention,
there exists a safe space for troubled
teens who have yet to find their way.
This place, says Alta-1 Principal Dave Stevens, is
a haven for students who are not getting the
emotional or intellectual support they need from
a conventional school.
Alta-1 is a not-for-profit organisation that provides
community development services to young
people in Western Australia.
“We’re like a primary school class, working with
secondary school aged kids in as much as we have
one teacher, delivering all the subjects,” he says.
Classrooms are broken up into small pockets of
students operating out of third party buildings
across Perth.
Each pocket has a teacher, a chaplain and some
assistants responsible for the wellbeing of
those children.
Dave says as the son of a navy man, he
understands what it feels like for children who
may not see their dads on a daily basis.
“FIFO is an added pressure for families,” he says.
“They have a really intense job for seven or eight
weeks, they’ve got two weeks to come home and
rest, but what the family needs is really for them
to pick up the game. It’s a really hard gig.”
According to research conducted by the
Australian Institute of Family Studies, parenting
is found to be more difficult under a FIFO
arrangement as the absence of one parent
makes it more difficult for the stay-at-home
parent to provide for the physical, emotional and
intellectual needs of the children.

Jacinth says while more research is needed into
the field, there are some examples in the case
study of adolescents who have been affected by
having a FIFO parent.
Jacinth studied the children in terms of resilience,
and says when compared with non-FIFO children,
there is a slightly lower average level of resilience.
She found that while some FIFO children had high
resilience levels, there were cases where they had
very low resilience. Her study remains ongoing.
It said a “significantly higher” level of
dysfunction was recorded in communication and
behaviour control for FIFO mothers than in coparented families.
Alta-1 offers psychology not only for the students,
but also for parents who may not be dealing well
with the situation.
Edith Cowan University PhD student Jacinth
Watson is currently conducting a study regarding
the effects of FIFO work on children.
“The teachers are very suited in talking to
students about different issues, they have to
relate and integrate to work with these students.”
Early results found 73.5 per cent of adolescents
were sad when the FIFO parent returned to work,
while 43.1 per cent felt nervous or anxious when
the FIFO returned to work. About 42.7 per cent
of respondents said it was more difficult to talk

healthy habit and sticking to it during their time off.
“My brother has worked on the mines, he’s spoken
to me numerous times about what it’s like on the
minesites and it’s pretty difficult, especially with
the monotony at times,” he says.
“You really need to have that discipline and frame
of mind to achieve what you set out to achieve,
but firstly you need to have a goal.
“What is it that you’re working towards?
“A lot of minesites now have gyms, so there are
pretty much no excuses to getting into the gym,
following a program or even working with the
trainers that the mines employ.”

“The same happens for people in everyday life,
although there’s a lot more distractions that they
need to work through.
“It’s about looking at how they perceive
themselves and where they put themselves on
that priorities list and again how to overcome a
lot of excuses.
“Not achieving, I believe comes from ignorance
and a lot of excuses we keep telling ourselves.
“Ask yourself the question: Am I being a drama
queen? Am I making this something that it’s not?
“Look at it for what it really is and make some
smart choices and decisions to move forward.”
In the end it’s the intrinsic reward and motivation
from helping others that will continue to inspire
his training camps, online programs and books.
“We’re all human beings, we’re all dependent on
one another for certain things and being able to
offer that to help people in a time of crisis or
need is very rewarding,” Commando Steve says.

s the summer months begin to wind
down and there is that noticeable chill
in the air, many people begin their
yearly hibernation indoors. During the extended
Australian summer, millions move outside to fire
up the barbecue and jump in the pool. The sun is
shining and life is bliss.
While the dial on the barometer never drops
a great deal during the Australian winter, there
is always that chill in the area that keeps you
from enjoying your outdoor area as much as
you should. As winter fast approaches, there
are many things you can do to keep your
outdoor entertaining area as the life of the party.
Here’s a few inexpensive DIYs and some bigger
investments that will add value to your outdoor
entertaining area.
Invest in an outdoor heater
There is a big range of outdoor heaters on the
market, which can fit the smallest or the largest
budget. You can pick up a second-hand outdoor
heater for as little as $30 on Gumtree in relatively
good working order. This is handy if you’ve got
an event coming up outside and you just want to
add a little bit of heat to the party. On the more
expensive side you have the Heat Strip electric
heater, which is not only much better to run, but
also makes a great permanent addition to your
outdoor entertaining area. It will cost you less in
the long run to use, but will set you back about
$600 per panel in the installation phase.
Get a pool cover
Most people spend up big on installing their
swimming pools, which really only get used about
half of the year. Whilst it gets too expensive to
run your pool heater all year round, adding a pool
cover to the mix will not only save you electricity
and water, but will keep your pool at a swimmable
temperature during the cooler months. Pool
covers can cost anywhere from $100 to $3900, but
are well worth the investment.
Set up a windshield
If you have an open alfresco area, you may be at
the mercy of the wind gods. However, there are
little things you can do to protect yourself from
the elements. Putting up a windshield around your
alfresco, much like many restaurants have, will give
you the option to still eat a meal outside even if
the elements outside are less than inviting. What
is better than a plate of puttanesca and a glass

of red on the alfresco while the rains pours down
outside? You can pick up a really inexpensive wind
shade for about $20 from Ikea, or get the pros to
do it.
Set up an outdoor movies
While you may not be able to have a roaring party
until all hours of the morning outside during winter,
there are clever ways you can still use that space
practically. More and more people are setting up
their own outdoor movie cinemas and then rugging
up with a blanket and some hot chocolate. All
you need is a white sheet, a projector and some
outdoor-friendly chairs and cushions to create the
ultimate outdoor movie experience.
DIY fire pit
There are great (and cheap) ways to build a fire
pit in your backyard. This will give your guests
the option to sit around an open fire, roasting
marshmallows and reminiscing about summer. For
less than $100, you can collect about 30 concrete
bricks and six concrete slabs. While the slabs are
laid down on a flat surface, you stack the bricks
in a rectangular pattern, creating a small fire pit.
You can also hire the experts to install a more
professional fitout.

ur mild autumn months invite us to entertain and cook outdoors and it’s a trend that continues to
grow in popularity. While some people can afford the space to recreate an entire kitchen outside,
you may only have room for a small portable barbecue. Since cooking shows have skyrocketed on
television, more people are taking a serious approach to cooking and making the most of the weather
by hosting a backyard barbecue. But just how should you cook your meat outside?

BARBECUE
Be sure to consider the size of your
outdoor entertaining space before
purchasing a barbecue, as you don’t
want it to look oversized for the
area, nor do you want there to be
little room left for your guests. If
you have a large backyard and do quite a bit
of outdoor entertaining particularly over
the warmer months, consider investing in a
built-in design or go as far as constructing a
spectacular outdoor kitchen. For the ultimate
in luxury, build a kitchen by the pool for a
swim-up pool bar. Smaller courtyard-style
spaces are better suited to a freestanding
mobile model that you can easily pack away
in a shed or tuck around a corner.
ROTISSERIE
This style of cooking involves meat being
skewered on to a long solid rod, which rotates
the meat as it is cooked over a fire or in the
oven. A favourite with meat lovers, because
the animal bastes in its own juices, it leads
to incredibly tender texture and intense
flavour. Spits are often used for larger parties
or special occasions and are a great method
for cooking larger cuts of meat or whole
animals. Rotisserie spits are ideal for outdoor
entertaining if you’re planning on hosting a
function. With everyone standing around,
stoking the coals and watching the meat
cook as the delicious scent fills the air,
it creates a wonderful
atmosphere.
Spit roasting a pig is a sure-fire favourite on
party menus, especially at larger, barbecuestyle family functions.
A suckling pig is a popular option because they
have more collagen than adult pigs as they are
yet to fully develop their muscle fibres.
This leads to moist and delicate meat that’s
soft as the heat from cooking breaks down
connective tissue into gelatin.
While you can opt to hire a spit and have your
pig done for you, don’t cancel out the chance
to have your own fun and DIY at home.
Roasting the pig via rotisserie is a much simpler
way than using a grill, oven or barbecue, as the
animal will come out more tender and juicy
and be more evenly cooked.
Be sure to order your pig well in advance so
your butcher has time to source it.
INGREDIENTS
• 1 suckling pig
(between two and six weeks old)
• 1 tbsp coarse salt
• 1 tbsp cracked pepper
• 750ml olive oil
METHOD
• Light the barbecue coals and wait until they
are white hot.
• Rub salt into the surface of the pig to create
crackling, before adding pepper to the skin.
• Using the instructions from your spit, place
the pig flat on a table, stomach down.
• Slide the main axle along the length of the
pig, inserting it from the rear.
PIZZA OVENS
Nothing adds warmth and deliciousness to
the cool outdoor nights than a toasty, freshly
baked pizza. An increasingly popular option
for DIY men, there are numerous ways to
incorporate a pizza oven to your space. Opt
to purchase the materials and build it yourself,
engage a company to build an oven for you
or simply add a ready-made model to your
outdoor kitchen. A woodfired pizza oven
is commonly constructed from refractory
materials so it is able to withstand extremely
high temperatures. A brick oven is less popular
as it can take hours to
heat to the required
level for cooking.
SMOKING
Smoking your meat gives it an incredibly
rich texture and flavour, made possible by
exposing it to smoke from burning wood.
The process is long though, with a smoking
motto of ‘low and slow’, because reduced
temperatures and an extended length of
cooking time result in maximum flavour
and melt-in-the-mouth meat. The smoking
method of cooking is ideal for larger cuts of
meat, such as whole fish, shoulders or ribs.
Beef and pork are other great meats
to smoke. The type of wood
you use will determine the
strength of smokiness your
meat will have.
• The thickest parts of the pig require the
most heat, so move the majority of the
coals to underneath the leg and shoulder
area, with a smaller amount of coals under
the belly.
• Add olive oil liberally, several times
throughout roasting, to help with the
crackling.
• To check whether the meat is thoroughly
cooked, insert a meat thermometer to the
thickest part of the leg area. A reading of
65C is medium, with 75C being well done.
• When it is ready, place the pig where you
intend to serve it, as removing the parts of
the spit may cause the meat to fall away.
• Carefully remove the spit mounting when it
has been moved, then carve and serve.

ealth and fitness duo Luke Hines and
Scott Gooding have always lived by their
‘clean living’ mantra and now that the
former My Kitchen Rules contestants have been
thrown on to the national stage they’re sharing
their message with the rest of Australia.
H
The Bondi boys have been busy since their time
on the Channel 7 cooking program finished,
each returning to their separate personal training
business and collaborating on their healthy paleo
orientated recipe book series.
“With our first couple of books it was an
introduction to paleo…and now with the latest
two books they’re 100 per cent paleo,” Scott says.
“We wanted to get the message out there that
healthy eating can be really simplistic and doesn’t
have to involve lots of process and lengthy
ingredients lists. We want to break down those
barriers that people have of not having enough
time for cooking healthy food.”
Luke admits that he had an ulterior motive in the
creation of the new book, Clean Living Fast Food,
realising that things like donuts and fish and chips
are too good to get rid of completely.
“I’ve got a massive sweet tooth and I love
takeaway style food, but obviously being paleo
and trying to live such a healthy lifestyle it’s really
difficult to still enjoy those types of foods. We
saw a need to create paleo healthy versions that
would be quick and easy and affordable to cook
up,” he says.
With so many recipes already out there Luke
and Scott have a lot of work to do in creating
their own original meals, but they’re prepared to
venture far for the perfect recipe.

“Luke and I get to go to LA quite a bit and that’s
the real birth place of sustainable food and the
‘paddock to plate’ concept; they’ve been doing
that for many years in California so there’s a lot to
learn from that culture,” Scott says.
And when they experiment in the kitchen
everything must be trialled and tested by the
experts before it can be included in the book.
“My toughest critic is my son, who’s six and a
half so he’ll let me know straight away whether
it tastes nice or not and won’t sugar coat the
response at all,” Scott says.
While Scott developed a love for cooking at a
young age in his parent’s London pubs, Luke has
only recently found enjoyment in it, ironically
finding cooking relaxing on the fast-paced reality
TV show.
“Funnily enough before My Kitchen Rules I used
to find cooking really stressful. For some reason
I associated cooking with mess and being rushed
but throughout the process of the show I found
a great love for cooking…so post show I actually
find cooking really therapeutic,” he says.
Now he can’t get enough with his sights set on
spreading the clean living message abroad.
“I think to be on a world platform would be
phenomenal,” he says. “If it meant that I had
a career travelling

and commitment.
Get into gear
When it comes to assembling your kit car you really
have to do everything yourself. You are not afforded
the luxury of simply fitting parts into already drilled
holes; you’ll need to create those yourself.
Building a kit car requires a massive skillset. Think
about what goes into making any vehicle and
you’ll soon realise you will need to know how to
weld, plumb a car, fix the electrics, install relays
and diodes, work with fibreglass and wire up the
engine, among other things.
Humble beginnings
While it may be tedious, we all know lots of
research precedes any new project. Building a kit
car isn’t quick, easy or cheap, so you’ll need to be
clued in and certain on what you want.
You may already have an idea of what type of
vehicle you would like to build, but if you don’t
and aren’t sure where to get inspiration then

site you’ll find a list of just about every kit car
manufacturer out there.
You could recruit your mates or the assistance of
experts to help with the areas you’re not so sure
about or it could be a good opportunity to learn
a whole bunch of new skills.
A basic starter kit can cost anywhere from $12,000
to $50,000. However, this price is simply for the
essential body parts. As you go you will need to
add in costs for tools, electrical systems, braking
system, exhaust, cooling, engine, wheels, exterior
and interior finishes just to name a few. So even
if you started with $12,000, you could rack up a
$37,000 bill come completion.
Be mindful that kit car building is a long
endeavour, several years in fact, and requires lots
of space to complete your work. Before you order
your car, make arrangements as to where you

After wrapping up another successful year
on the world-famous Bondi Beach in Sydney
Sculpture by the Sea will wash up on Perth’s
Cottesloe beach from March 6 to 23.
Now in its 11th year, Sculpture by the Sea
Cottesloe is expected to attract 220,000 people
across the 18-day exhibition to its white sands and
grassed terraces overlooking the Indian Ocean.
The annual outdoor display is one of Perth’s
largest free to the public events, having quickly
become a favourite day out for families, serious
art-lovers and collectors.

elbourne’s National Gallery of
Victoria International is set to serve
as a backdrop for artist Jamie North
to display his latest works of concrete and
ore intertwined with native Australian flora, a
comment on the power of Mother Nature.
The event opens on March 27 through to July 13
and will feature six monumental rock columns
entwined with Melbourne-native Wonga
Wonga vines which will eventually erupt in a
cluster of creamy, bell-shaped flowers with pink
or red throats.
Made of concrete and recycled slag, the massive
beams tower over viewers, the largest standing
at 5m tall.
Sydney-based artist Jamie North says the
work comments on nature’s awesome power
to survive and thrive even in the most barren
environments and the complicated relationship
between nature and architecture.
“Rock Melt is the culmination of thoughts
around solidity and stability giving way into
something less material or certain,” he says.
“I think the divide between the natural and
man-made is an artificial one as the two are
always related and interacting.”
The idea of the work is for the flowers
to bloom and grow throughout the duration of
the exhibition.
The project takes its name from the Karl Marx
quote “All that is solid melts into air”, particularly
fitting when considering the location of the
National Gallery between the heart of the
Melbourne CBD and the Melbourne Royal
Rock Melt Botanic Garden.
“As I’m trying to achieve an ambiguous state
between the natural and man-made, in my mind
the works are successful if people have an initial
uncertainty as to whether the objects are found
or constructed, or even under construction or
conversely, in ruins.”
NGV Director Tony Ellwood says the work
welcomes nature back inside the walls of
the gallery.
“These sculptures look ancient, like ruins, an
especially clever effect given that the sculptures
are in fact modelled from a by-product of an
industrial process,” he says.
Entry to the exhibition is free and also gives you
the opportunity to lazily wander through the
rest of the expansive gallery.

Where does your interest in art
stem from?
My family. Both parents are artists and my
mother especially was a successful artist,
painting stories of the land and our community.
My father, a retired drover, did some art in
the 1960s, held a single sell-out exhibition and
never really went back to art, although there
are a few of his water colours in private hands
that I come across from time to time. The main
inspiration for my work is my wife Deeva; she is
the real artist in our family and has been a strong
encouragement for me to take up and create
artworks. We have been married for 25 years, so
art has been a part of my life from childhood
through to my adult married life.

How did you learn art?
I learnt from the experience of those around
me and by just doing. Sometimes with new
mediums, such as printmaking and ceramics, I
have undertaken short courses with inspiring
teachers who have allowed me to explore these
new mediums. In all my learning and teaching,
Deeva has guided the development of my work,
encouraging, advising and mentoring.
What mediums do you work with?
I use three main mediums. In the Revealed
exhibition I will be displaying ceramic artworks,
my kangaroo series. I am also a print maker
and have one lino print in the National Gallery
of Australia print collection and I do painting,
mostly acrylic on canvas. I mostly work in abstract
landscapes that merge lines with other desert
traditions of dot painting. In the exhibition I am
using my knowledge of Marlu (kangaroo) to try to
capture them in various poses.
How often do you create pieces?
We keep a very busy schedule so a lot of
the artworks I create are to be included in
exhibitions or shows or are project works.

I first created ceramic pieces as part of the
Walkatjurra Cultural Centre ceramic workshops. I
found I easily adapted to this medium, so much
so that I produced pieces for an exhibition in
Kalgoorlie, which has now gone on to being
accepted into the Revealed exhibition.

What inspires you when you are
at work?
I grew up with a semi-nomadic traditional life.
My parents lived and worked in the desert,
where only 30 years beforehand my mother
walked as a tribal nomad. We lived in a bush
camp and travelled to places my mother recalled
visiting with her family as a child. This traditional
Aboriginal world view, connecting self, spirit and
places is the primary source of inspiration in my
art. Even working with clay is connecting with
earth. My printmaking and paintings use lines in
the tradition of wood engraving into tools, such
as spear throwers and even sacred objects. The
boldness of colour in my paintings reflects the
strong vibrancy of my land.
How does your culture or
background influence your art?
My work is all about my culture and background.
As an Aboriginal man with traditional cultural
responsibilities to land and country, I work
with reverence to the spiritual authority of the
Dreaming or Tjukurrpa. In most of the artworks I
produce, I am presenting a representation of my
interpretation of the Dreaming as it exists on the
land. Creating artworks to me is a meditation on
country, on spirituality and the essence of the
subject matter, be it a place or an animal like
a kangaroo.
