Program Professional TEHNOLOŠKA OPREMA PIVNIC V SKLOPU PIVOVARN PRESENTATION KITCHEN The main and the most eye-catching part of the pub is the presentation kitchen. This part consists of a heat treatment block parallel to a worktop. The heat treatment block is equipped with devices that enable quick and impressive preparation of meals (gas stoves, grill and deep fryer). The main part of the heat processing part of the presentation kitchen is the lava rock gas grill. The presentation kitchen is the last stage of heat processing where only cleaned and pre-prepared food is used. Guests are served over the serving counter. CENTRAL BAR The central bar with four taps is similarly constructed as the presentation kitchen. The animation area is in the centre, including classical beer tapping. Glasses and cups are washed in two dishwashing machines in the main bar. The form and size of the bar enables storage and preparation of all kinds of cold and warm beverages. Pivnica je registrirana kot restavracija v velikosti 554m2 s sodobno ponudbo jedi z vključevanjem klasične prehrane, ki je značilna za pivnice. Kuhinja v pivnici je organizirana kot lastna oz. centralna kuhinja in ima kapaciteto za pripravo cca 200 toplih obrokov ter pripravo hladnih in toplih jedi za pivnico. Kuhinja je primerna tudi za pripravo cca 200 obrokov za potrebe razdelilne kuhinje za zaposlene Pivovarne Union. PROGRAM PROFESSIONAL CENTRALNA KUHINJA Centralna kuhinja s svojim gospodarskim vhodom ima hodnik za sprejem živil. Shrambo in pripravo živil ločuje glavni komunikacijski hodnik od centralnega dela kuhinje in pomivalnice. Preko dostavnega hodnika omogoča vhod v shrambo pijač kar omogoča direktno dostavo večjih količin pijač, med drugim tudi sodov za pivo, ki se nahaja proti glavnemu točilnemu pultu. Hladilnica za hrambo sodov za pivo je ob izhodu proti pivnici in se uporablja za klasično točenje piva. Ob shrambi za živila je odprt prostor za obstoječe hladilnike. Centralna kuhinja ima dve hladilni komori, kjer je ob eni hladilni komori prostor za pripravo mesa z dvojnim delovnim pultom za meso, tukaj je možen direktni prehod proti toplotni obdelavi in ob drugi hladilni komori priprava zelenjave. Toplotni blok in parno-konvekcijske peči so v osrednjem delu centralne kuhinje, kjer je ta del predvsem namenjen dolgotrajnejši toplotni obdelavi in pripravi toplih jedi za potrebe razdelilne kuhinje. mail: [email protected] Tel.: 03 899 11 09, 03 899 13 94 Fax.: 03 899 26 06 Gorenje GTI, d.o.o., Partizanska 12, 3320 Velenje, Slovenija Program Professional Program Professional TECHNOLOGICAL EQUIPMENT OF BREWERY PUBS In November 2014, Gorenje GTI d.o.o. provided equipment for a new pub in the premises of the preexisting cafeteria of the Union Brewery, which was opened to celebrate the brewery’s 150th anniversary. PREZENTACIJSKA KUHINJA Glavni in najbolj atraktivni del pivnice predstavlja prezentacijska kuhinja. Ta del je sestavljen iz toplotnega bloka z vzporedno postavljenim delovnim pultom. Toplotni blok je opremljen z napravami, ki omogočajo hitro in atraktivno pripravo jedilni (plinski štedilniki, žar in friteza). Glavni del toplotne obdelave prezentacijske kuhinje je plinski lava žar. V prezentacijski kuhinji poteka finalna toplotna obdelava: uporablja se očiščena in pred pripravljena živila. Strežba jedi za goste poteka preko izdajnega pulta. PROGRAM PROFESSIONAL mail: [email protected] CENTRALNI TOČILNI PULT Centralni točilni pult s štirimi točilnimi pipami je izveden podobno kot prezentacijska kuhinja, torej na sredini prostora je prostor za animacijo – tudi točenje piva na klasičen sistem. Kozarci in skodelice se pomivajo strojno v dveh pomivalnih strojih v samem osrednjem točilnem pultu. Sama oblika in velikost točilnega pulta omogoča shranjevanje in pripravo tudi ostalih vrst hladnih in toplih napitkov. The pub’s kitchen is organised as a central kitchen and has the capacity for the preparation of up to 200 warm meals as well as cold and warm meals for the pub. The kitchen can also be used for the preparation of about 200 meals for the employees of the Union Brewery which are distributed in their distribution kitchen. The food storage and preparation room are separated from the central part of the kitchen and the dishwashing area by the main communication hall. The delivery hall also leads to the beverages storage room, which allows for direct delivery of larger quantity of beverages, including beer kegs, located near the main bar. The refrigerated room for beer kegs is located next to the exit towards the pub and is used for classical beer tapping. Next to the food storage room there is some open space for the existing refrigerators. The central kitchen has two cooling chambers. One is adjacent to the meat preparation area with a double worktop for meat and a direct access to the heat treatment area. Adjacent to the other cooling chamber is the vegetables preparation area. The heat treatment area and steam-convection ovens are in the central part of the central kitchen, which is intended primarily for long-term heat treatment and preparation of warm meals for the company’s distribution kitchen.
