WHITE RUM
WHITE RUM
Appleton White (Jamaica) 40%
90
White rum also known as “silver” or
“light” is usually dry and light-bodied, clear in
colour and lightly sweet in flavour.
It is produced from sugarcane juice and molasses, and normally has a short distillation period.
Bacardi Superior (Puerto Rico) 40%
85
Unlike other various rums which are aged
in charred oak casks, white rum is simply aged
in plain oak casks or stainless steel tanks, so it
remains clear. White rum is often the favoured
choice of rum for cocktails and other mixed
drinks.

Rum fact
The precursors to rum date back to antiquity.
Development of fermented drinks produced from sugarcane juice is believed to have first occurred either in
ancient India or China, and spread from there.
An example of such an early drink is “brum”.
Produced by the Malay people, brum dates back thousands of years.
Marco Polo also recorded a 14th-century account of a “very good wine of sugar”
DARK AND
AGED RUM
Aged rums are usually medium-bodied
which gain both a dark colour and richer
flavour from the process of ageing done in
wooden oak barrels.
Since they are slightly more distinct,
aromatic and flavourful than clear rums, they
often add unique tastes to cocktails compared
to that of their clear counterpart or just to
enjoy neat.

English-speaking islands and countries
are known for darker rums with a fuller
taste that retains a greater amount of the
underlying molasses flavor. Rums from
Trinidad and Tobago, Grenada, Barbados,
St.Lucia, Belize, Bermuda, Saint Kitts, the
Demerara region of Guyana, and Jamaica
are typical of this style.

DARK AND AGED RUM
Rum fact
“Rum’s association with piracy began with British privateers trading on the valuable commodity. As
some of the privateers became pirates and buccaneers.
The association of rum with the Royal Navy began in
1655, when the British fleet captured the island of Jamaica. With the availability of domestically produced
rum, the British changed the daily ration of liquor given
to seamen from French brandy to rum.
While the ration was originally given neat, or
mixed with lime juice, the practice of watering down the
rum began around 1740. To help minimize the effect of
the alcohol on his sailors, Admiral Edward Vernon had
the rum ration watered producing a mixture that became known as grog. The Royal Navy continued to give
its sailors a daily rum ration, known as a “tot,” until the
practice was abolished after July 31, 1970”

Dark rum is aged
longer than clear aged
rum, usually in heavily charred oak barrels.
It also possesses a far
greater flavour than
white rum or even
gold rum, likely with
a sweeter taste. It is
regularly flavoured
with caramel, spices,
molasses,
vanilla
and other subtle
flavourings and
most dark rums
are distinguishable.
Overproof
Rums are molasses rum but with a
higher alcohol
content, usally used in the kitchen or to flame
cocktails, not to drink as a shot.
16
Rum fact
Following his victory at the Battle of Trafalgar,
Horatio Nelson's body was preserved in a cask of rum to
allow transport back to England. Upon arrival, however,
the cask was opened and found to be empty of rum. The
pickled body was removed and, upon inspection, it was
discovered that the sailors had drilled a hole in the bottom”

RHUM
AGRICOLE
Rhum Agricole is the French term for
"cane juice rum", a style of rum originally distilled in one of the French West Indies islands
from freshly squeezed sugar cane juice rather
than from molasses.
Cane juice rums are made throughout
the Caribbean, including Trinidad, Panama and
the Dominican Republic.

Rum fact
Rum has humble origins. Its precursors date back
to ancient India and China and are thought to have
spread from here. As far as distillation goes, it was
sugar plantation slaves in the Caribbean who discovered that sugarcane molasses could be fermented
and then distilled for a pleasant tasting drink!

Rum fact
Rum was also at the epicentre of the infamous 'slavery triangle',
which operated from the late 16th to the early 19th centuries
The first leg involved the shipment of molasses to New
England from the Caribbean to produce rum.
The second leg was the shipment of rum to West Africa
to trade for slaves and the third and final leg of this triangle was
the passage of slave ships to the sugar plantations of the Caribbean and South America where these same slaves were put to
work in the sugarcane fields

AMERICAN
WHISKEY
Bourbon whiskey is a type of American
whiskey – a barrel-aged distilled spirit made primarily from corn. The name of the spirit derives
from its historical association with an area known
as Old Bourbon, around what is now Bourbon
County, Kentucky (which, in turn, was named after the French House of Bourbon royal family). It
has been produced since the 18th century. While
it may be made anywhere in the United States, it
is strongly associated with the American South in
general, and Kentucky in particular.

GIN
Gin is a spirit which derives its predominant flavour from juniper berries (Juniperus
communis).
From its earliest beginnings in the Middle
Ages, gin has evolved over the course of a
millennium from a herbal medicine to an object of commerce in the spirits industry.
Today, the gin category is one of the most
popular and widely distributed ranges of spirits, and is represented by products of various
origins, styles, and flavour profiles that all revolve around juniper as a common ingredient.
