• Rum & Coffee Lapis Cakes
Unlike the traditional lapis, these rum flavoured lapis cakes are
not laden with spices but much lighter in texture and it is a cross
between Surabaya and lapis legit. The aroma and yumminess
come from a mixture of Rum with Raisin or Coffee instead.
The good news is the layers are thicker but fewer, so the baking is
done in an hour instead of the usual 2-3 hours spent on traditional
lapis! Decorate it with almond flakes for added crunch or even
chocolate chips, caramel chips or cocoa nibs what have you, for
that extra texture and flavour. A workshop not to be missed!
