School is out and pools are in!
The official first day of summer begins with the summer solstice on Tuesday,
June 21, but for the kiddos, the first day of summer begins when the pool is
open. If you’re anything like me, the summer goes by way too quickly and
you’re left with dozens of things still on your summer to-do list. Well, we’re
hoping our 2016 Summer Family Fun Guide will help you successfully kick that
summer bucket list and even add on a few that you didn’t know about.
As with all great things, it’s a work in progress. We’ll keep adding to this list
as event information rolls in, so you’ll need to check back to make sure you
haven’t missed anything. Also, if you’ve found something that you want to share

Drowning is the leading cause of injury-related death among
children ages 1-4.
TOP TIPS
• Actively supervise children in and around open bodies of
water, giving them your undivided attention.
• When there are several adults present and children are
swimming, use the Water Watcher card strategy
(CUT OUT THE IMAGE ON THE RIGHT), which designates an
adult as the Water Watcher for a certain amount of time (such
as 15-minute periods) to prevent lapses in supervision.
• Whether you’re swimming in a backyard pool or in a lake,
teach children to swim with an adult. Older, more experienced
swimmers should still swim with a partner every time. From the
first time your kids swim, teach children to never go near or in
water without an adult present.
• We know you have a million things to do, but learning CPR
should be on the top of the list. It will give you tremendous
peace of mind – and the more peace of mind you have as a
parent, the better. Local hospitals, fire departments and recreation departments offer CPR training.
• Educate your children about the dangers of drain entanglement and entrapment and teach them to never play or swim
near drains or suction outlets.

There are so many great reasons to ride your bike: It offers fun,
freedom and exercise, and it’s good for the environment. Here
are a few tips from safekids.org to keep your family safe while
you ride.
With almost 100 different kinds of boats – from kayaks to canoes to motorboats – there’s a good chance most of us will be
having a great time on the water at some point. So when you
do, please remember these simple safety tips for the entire
family.

More children ages 5 to 14 are seen in emergency rooms for
injuries related to biking than any other sport. Helmets can
reduce the risk of severe brain injuries by 88 percent – yet only
45 percent of children 14 and under usually wear a bike
helmet.

• We have a simple saying: “Use your head, wear a helmet.”
It is the single most effective safety device available to reduce
head injury and death from bicycle crashes.
• Tell your kids to ride on the right side of the road, with traffic,
not against it. Stay as far to the right as possible. Use appropriate hand signals and respect traffic signals, stopping at all stop
signs and stoplights.
• Teach your kids to make eye contact with drivers. Bikers
should make sure drivers are paying attention and are going
to stop before they cross the street.
• When riding at dusk, dawn or in the evening, be bright and
use lights – and make sure your bike has reflectors as well. It’s
also smart to wear clothes and accessories that have retroreflective materials to improve biker visibility to motorists.
• Actively supervise children until you’re comfortable that they
are responsible to ride on their own.
• Always have your children wear a life jacket approved by the
U.S. Coast Guard while on boats, around open bodies of
water or when participating in water sports. Make sure the
life jacket fits snugly. Have the child make a “touchdown”
signal by raising both arms straight up; if the life jacket hits
the child’s chin or ears, it may be too big or the straps may
be too loose.
• A large portion of boating accidents each year involve alcohol consumption by both boat operators and passengers.
To keep you and your loved ones safe, it is strongly recommended not to drink alcoholic beverages while boating.
• Infants and young kids are at a higher risk for hypothermia,
so if you are taking a baby on a boat, just take a few extra
precautions to keep your baby warm. If your children seem
cold or are shivering, wrap them tightly in a dry blanket or
towel.
• Teach children that swimming in open water is not the same
as swimming in a pool: They need to be aware of uneven
surfaces, river currents, ocean undertow and
changing weather.
In 2013, 77 percent of all fatal boating accident victims
drowned, and of those who drowned, 84 percent were not
wearing a life jacket.

Fellowship offers several activities for children in the summer. Vacation

Healing Hearts Camp: Where little hearts learn to smile again. This camp
is Oklahoma’s first overnight grief camp for kids and teens. One in seven
children will lose a parent or sibling before they are 20. Kids that have
experienced a loss can feel isolated, different. They may feel like no one
understands what they are feeling. They need a safe place to tell their story
and heal. Healing Hearts Camp gives them that place. Healing Hearts
Camp is a weekend full of canoeing, climbing, swimming, crafts, bonfires
and laughter! It gives campers a chance to just be kids and learn how to
grieve in healthy ways. Every little heart gets to share their story with professional grief counselors and kids just like them – kids that have also experienced loss. They learn they are not alone and they don’t have to “just
get over it.” They learn that it is ok to have lots of different emotions when
somebody dies and that there are people that will stand up for them when
they cannot stand up for themselves. They learn how to heal. Overnight
camp is available for kids and teens 8-18 and new in 2016 is a day camp for
kids 5-7 who may not be ready to spend the night. The Grief Center and
New York Life Foundation provide camp to all children in need at no cost.
A one-time registration fee of $20 is due at enrollment.

Camp
Over 100 Tulsa area youth spend their summer learning about the theatre arts and the skills needed to perform
in front of an audience. Each year, Clark Youth Theatre hosts a series of two-week Summer Theatre Camps for
aspiring actors ages 8 to 14 years old. Campers spend the day taking classes in singing, acting, and dancing,
culminating in a final performance for family and friends. Classes are taught by industry professionals.
Summer camp at Clark Youth Theatre is a great introduction to theatre for beginners and welcomes those with
experience in acting. Clark Youth Theatre, located at the Henthorne PAC in Brookside, is a safe, open, and
collaborative environment where many new and lasting friendships are formed. Many campers return each
summer to Clark Youth Theatre because they enjoy working together with their teachers and peers to create a
one of a kind performance.
Enrollment for 2016 Summer Theatre Camp is still available; however,

D. Salt Plains National Wildlife Refuge
Location: The refuge headquarters is located 1.5 miles southwest of the
junction of State Highways 11 and 38.
Salt Plains National Wildlife Refuge was established in 1930 as a refuge and
breeding ground for birds and for use as a sanctuary for migratory birds.
The refuge is a great place to learn about science, math, art, history and
more. Crystal digging is permitted from April 1 through October 15, sunrise
to sunset. The refuge’s namesake, the salt flats, is a very unique geological

tickets and selected concession items, such as Dodger Dogs,

and piece of fruit. The days will also feature a souvenir giveaway to help ensure that the first 500 kids at the ballpark go

kids wear and much, much more!
New to the nightly lineup will be Anniversary Mondays where
the Drillers will slow things down and throw it back to the way
Wednesday nights will continue to be “Bark in the Park”
nights! Fans can bring their canine best friend out for any of
the 7 scheduled dog nights at the ballpark; provided the owners present documentation that their furry friend has received
necessary vaccinations.
Finally, all Thursday games are Thirsty Thursdays, featuring $1
beers and soft drinks. Eight of these nights will also feature a
premium jersey giveaway as part of our Jersey Thursdays. In
addition to the Pudge and College Rivalry Jerseys, there will
also be a green 1977 Throwback Jersey, a 2003 Throwback

BLUEBERRY PICKIN’ WITH THE FAMILY
Thinking of berry picking? Here are five tips from Betsy Endicott of
Endicott Farms, to get you ready.
• All ages of kids are welcome, but elementary school age kids really enjoy
the experience.
• Dress for the outdoors. Most berry farms are well maintained, but you
should still wear sturdy shoes. Also, bring water to stay hydrated while
picking.
• Make it an experience. Talk to the kids about the farm and growing food
locally. Then, get them excited about eating and cooking on the way
home.
• Be safe. Remember you are on a working farm, so especialy keep an eye
on young kids.
• Have fun! Enjoy your time on the farm and fruits of your labor.
The prime “pickin’ season” is between mid-May and early-June, but it’s
best to call the individual farm to find out specific dates, times, pricing and

(From countrY living magazine )
Ingredients
1/4 c. (1/2 stick) unsalted butter
1/4 c. canola oil
1 c. whole wheat pastry flour, spooned and leveled
1 1/2 tsp. baking powder
1/2 tsp. fine salt
3/4 c. 2% milk
1/3 c. agave syrup
1 tsp. pure vanilla extract
4 c. fresh blueberries
Directions
Preheat oven to 350 degrees F. Place butter and oil in a 10 1/2-inch cast iron skillet or 9 by 13 inch
ovenproof baking dish and transfer to oven to heat, 5 to 7 minutes.
Meanwhile, combine flour, baking powder, and salt in a bowl.
Add milk, agave syrup, and vanilla and stir to combine.
Remove the hot skillet from oven. Add butter oil mixture to
flour mixture and stir to combine. Return batter to the hot pan,
and spoon blueberries over top. Bake until brown and batter
has risen up and around the fruit, 30 to
35 minutes. Transfer to a wire rack to cool
slightly. Serve with vanilla ice cream.

It seems inevitable that when I decide to team up with another mom and
pile our children in one vehicle for an adventure we will get lost, and
yesterday was no exception.
I heard about Blue Hole last summer and had wanted to visit then, but
somehow it just fell off the Summer Wish List. My kids have been out of
town for the last couple of weeks and I have been up to my ears in
housekeeping for my small business and attending births for my clients, so
when Jeannie mentioned it, I was eager to join her on the adventure!
Jeannie, my sister-in-law, was able to find the listing for the swimming hole
on SwimmingHoles.info Oklahoma and we looked up the
directions with latitude and longitude. All I can say is thank goodness for
smart phones and gps! We did make it into the general vicinity of the park,
but still couldn’t find it. Once we passed a sign in the woods that said,
“When flooded turn around, don’t drown” we thought it was time to stop
at a gas station and ask for help.
When Jeannie asked the gas station attendant if he knew where Blue Hole
was, he simply replied, “8 miles east!” She asked him to clarify which street
she should turn on and he indicated Kenwood. Kenwood street was in our
directions and we had been driving around for the last 45 minutes looking
for it. It turns out the street sign for Kenwood is very small and the large
sign attached to the stoplight at that intersection says the street is Ferry!
Glad we asked for directions!
He also said we should look for an old, rusted, blue and white sign that
said Blue Hole.
The name of the park is Wanda’s Blue Hole Park, LLC and admission is $10
per vehicle. Camping is available, as well as swimming and there are even
cabins for rent! Contact information and clear directions from Tulsa are at
the bottom of this post.
As soon as we drove in and found a parking spot we were thrilled and
knew it was worth the drive and getting lost!
It wasn’t long before the kids were throwing their lunches aside and
begging to get in the water. The swimming hole is spring fed and so clear.
I highly recommend sport sandals or some kind of swim shoes.
Near the entrance there’s a concession stand with hamburgers, hot dogs,
pizza, ice cream snacks and sno cones.
Make a day or weekend out of it at Blue Hole; it’s a little treasure of an
Oklahoma getaway!

Witness the daily routines of animals such as guinea hogs, river otters,

10 COOL RECIPES FOR
HOT SUMMER DAYS

1. STRAWBERRY PARFAIT PIE
This pie is a favorite for summer for two
reasons: It’s easy enough for kids to make, and you don’t have to turn on
your oven to have a
perfect pie. Use any favorite fresh fruit – peaches, plums,
bananas, blueberries, blackberries.
Hint: If you use a premade graham cracker crust, there’s no need to bake it.
Strawberry Parfait Pie
• 1 (9-inch) graham cracker crust, baked
• 1 small package strawberry gelatin
• 1 1/4 cups hot water
• 1 pint vanilla ice cream
• 1 pint fresh strawberries
• Whipped cream
• Prepare the crust.
• In a medium bowl, dissolve the gelatin in the hot water. Add the ice
cream by spoonfuls, stirring until melted. Chill in freezer until thickened
but not set. Fold in the fruit and turn the mixture into the pie shell.
• Chill until firm. Garnish with whipped cream. Drizzle with chocolate
sauce for an extra treat.
2. STUFFED CHERRY
TOMATOES
Mix cooked orzo pasta with pesto. Hollow out cherry tomatoes, then fill
each with the pesto pasta. Healthy, pretty and tasty.
3. PULLED PORK TACOS
Keep your kitchen cool with these great tacos, adapted from Epicurious.
Serve with slices of lime, cabbage, lettuce, tomato and cheese.
Pulled Pork Tacos
• 1 tablespoon cumin
• 1 teaspoon garlic powder
• 1 teaspoon chili powder
• 1 teaspoon onion powder
• 1 teaspoon paprika• 1 teaspoon oregano
• 1 teaspoon salt
• 1 3 1/2 to 4 pound pork shoulder, rinsed and patted dry
• (16 ounce) jar mild salsa
• Corn or flour tortillas
Mix seasonings together in a small bowl.
Place pork shoulder in a Crock Pot. Rub all over with seasoning mixture.
Pour salsa around the pork. Cook on low heat for 8 to 12 hours.
Using tongs, place pork on a plate or cutting board. Using two forks, shred
into bite-size pieces, removing the fat as you go.
Add a scoop or two of the liquid from the Crock Pot, then stir to combine.
Liquid should be used sparingly. You don’t want soup, but you also don’t
want dry pork. Fill tortillas with pork.

8. CHICKEN WITH MANGO SALSA
Start with a rotisserie chicken, and you’re halfway there to having dinner on the table. Serve the salsa on top of the sliced chicken. Or, place
the chicken and salsa on top of salad greens for a main course salad.
This simple smoothie
makes enough for two. In
a blender, combine 1 cup
fresh peaches, 1 cup fresh
strawberries, 1 cup plain
or vanilla yogurt, 1 tablespoon sugar or honey (if
using plain yogurt) and a
handful of ice. Blend until
smooth. Pour into chilled
glasses.
Mango Salsa
• 1 large mango, finely chopped
• 1 large cucumber, peeled, seeded and finely chopped
• 1 jalapeno pepper, seeded and minced
• 1/4 cup chopped purple onion
• 1 teaspoon grated fresh ginger
• 1 tablespoon chopped fresh basil
• 1 tablespoon rice wine vinegar
• 1 tablespoon balsamic vinegar
• 1 tablespoon olive oil
• Combine all ingredients. Stir well. Let sit for 30 minutes for best
flavor.
5. ICED CAFÉ

Make the smoothie for
the kids, and this one for
the grownups. This makes
a pitcher – perfect for
poolside or the patio after
dinner.
Iced Café Latte
• 6 cups strong coffee
• heaping tablespoons
sugar
• 1 cup whole milk
• 1 cup half and half
• Pour coffee into
pitcher. Add other ingredients, to taste.
• Refrigerate. Serve over
ice.
9. BRUSCHETTA
Double for a crowd or hungry kids. My kids like this with goat cheese
spread on the crostini before it’s topped with the tomato mixture.
Bruschetta
• 1 large tomato, minced and drained
• 2 tablespoons fresh basil, slivered
• 1 clove garlic, minced
• 1 tablespoon olive oil
• 1 teaspoon balsamic vinegar
• Pinch of red pepper flakes (optional)
• Salt and pepper
1. Mix everything together and allow to sit at room temperature for
about an hour.
2. Pile onto crostini (thin sliced toasted French bread). You may want to
strain some excess juice before serving.
6. CHILLED CORN SALAD
Five minutes is all it takes to make this super easy salad. Use fresh corn if
you have it for this recipe adapted from Southern Living. It serves 4.
Chilled Corn Salad
• 1 (12-ounce) can whole kernel corn, drained
• 1/2 small onion, chopped
• 1/2 cup chopped green pepper
• 2 tablespoons chopped fresh parsley or basil
• 2 tablespoons cider vinegar
• 1 tablespoon olive oil
• 1/4 teaspoon salt
• 1/4 teaspoon pepper
Combine all ingredients. Cover and chill at least 4 hours.
7. TORTILLA ROLLUPS
These are great for an afternoon snack. Use whatever fresh veggies you
have on hand. Bonus points for fresh herbs from your garden. To make:
Spread hummus over flour tortillas. Sprinkle with radish sprouts,
grated carrot and thin sliced bell pepper. Sprinkle with chopped basil and
salt and pepper. Roll tightly. Use a serrated knife to cut into circles.
10. HOMEMADE
ICE CREAM
SANDWICHES
You can say these are
for the kids, but you’re
going to want one, too.
You’ll need two dozen
bakery cookies to make
a dozen ice cream
sandwiches. Place one
scoop of ice cream between two cookies.
Gently press cookies
together. Roll ice
cream edges in sprinkles
or mini chocolate
chips. Eat immediately,
or wrap in plastic
wrap and freeze for later.
