Lake Fork produces season’s first Toyota ShareLunker
ATHENS—David Roulston
of Frisco kicked off the current Toyota ShareLunker
season with his catch of a
13.88-pound largemouth bass
from Lake Fork November 20.
Roulston was fishing in
25 feet of water with a Brush
Hog when the fish slammed
his lure.
Roulston’s catch sets the bar
for anglers hoping to become
Angler of the Year. The person
who catches the season’s largest entry will be named Angler
of the Year and will receive a
G. Loomis rod, Shimano reel
and PowerPro line combination. If the Angler of the Year
is a Texas resident, that person
also receives a lifetime Texas
fishing license.
Anyone legally catching
a 13-pound or bigger largemouth bass from Texas waters,
public or private, between
October 1 and April 30 may
submit the fish to the Toyota
ShareLunker program. Fish
will be picked up by TPWD
personnel within 12 hours.
All anglers entering fish
into the Toyota ShareLunker
program receive a free replica
of their fish, a certificate and
ShareLunker clothing and are
recognized at a banquet at the
Texas Freshwater Fisheries
Center in Athens. Prizes and
funding for the banquet are
provided by Toyota, which
also provides a Tundra pickup
truck for use in picking up and
returning the majority of lunkers and their offspring.
ShareLunker catches can be
reported 24 hours a day, seven
days a week during the season,
by calling (903) 681-0550.
If poor cellphone service
prevents use of the voice
number, anglers can leave a
phone number (including area
code) at (888) 784-0600. That
number is also monitored 24/7
during the season.
For complete information
and rules of the ShareLunker
program, tips on caring for big
bass and a recap of last year’s
season, see www.tpwd.texas.

It’s wintertime on Lake Fork!
December is here and the year is
winding down. It’s been a great
year of fishing here at Lake Fork.
Just the other day we had the first
Toyota ShareLunker of the year
caught by David Roulston from
Frisco, TX. The bass weighed
13.88 lbs. There will be more
of these fish caught through
this winter and spring as the big
bass in the lake are at their peak
weight. If you are after one of
these giant Lake Fork bass I suggest you spend as much time on

the lake as you can over the next
few months.
Lake Fork water conditions
are less than normal for this time
of year. Without any substantial
rains we are feeling the effects of
this multi year Texas drought. We
are currently sitting at 395.85,
which is just over 7 feet low.
Water temperatures are sitting in
the low to mid 50’s. The water is
clear to 3 feet on the south end
and fairly stained on most of the
north end of the lake. The hydrilla is in good shape where you
can find it and will provide some
excellent cover for the bass.
December invites a number of
shallow water patterns but one
of my favorites is targeting fish
around any shallow vegetation or
stumps near main lake or secondary points. Most of these winter
fish will move into these shallow grass beds or hug stumps for
cover and security as they look
to feed on unsuspecting prey.
During the sunny warmest part
of the day can be best as water
temperatures in these shallow areas is at its peak and the fish are
most active.
My favorite December lure is a
lipless crank bait. Best sizes are a

1/2 oz or 5/8 oz but will also keep
a 3/4 oz bait handy as well. I like
to use shades of red, orange, or a
combination of these two colors
as well as chrome or gold. I like
to use a 7’ 1” medium heavy Abu
Garcia Veritas rod with 17-20 lb
Trilene 100% Fluorocarbon on
a high-speed reel like the NEW
Abu Garcia Revo Rocket. This
reel is 9:1 ratio so you can really
burn a bait with this set up or use
it to take some of the work off
of your arms while you fish these
baits all day making numerous
casts. I like to use the lipless
bait as a “search bait “and once
I get bit I will slow down and
work the area over thoroughly.
A lot of times you will find the
fish in small groups this time of
year but may not be able to catch
all of them on the same bait or
presentation. If you double back
and fish something like a suspending jerk bait or jig you may
catch a few more fish or that BIG
one you’ve been looking for! On
the jerk bait I will throw a suspending model in a gold/black,
clown, or ayu color. Fishing this
bait slowly with twitch and long
pause technique is great for a
real big fish especially during the

sunny calm days. On cloudy days
I do better fishing slowly through
the area with a jig and I will flip
or pitch a 3/8 or 1/2 oz jig tight
to every piece of cover available. A jig can be very effective
on deeper points at the mouth of
creeks and the creek edges inside
the creek. With the lake low like
it is you can follow the trees that
line the channel edge very easily. Best colors for me are black
& blue, black/blue/purple, bama
bug, or black/brown. I like to tip
my jigs with a 3” or 4” Berkley
Chigger Craw or Chigger Chunk
in matching colors. The action
on the Chigger Craw is very attractive to a big fish and they
hold onto the jig longer with the
Powerbait scent. This is an important advantage as most bites
are light and normally fish will
not hold onto the jig long during
the winter months.
The deep bite has been decent
over the past couple of weeks. I
am catching a lot of fish out deep
using a multitude of different
techniques. Locating big schools
of fish can be challenging out in
the depths. That is why I rely on
my Lowrance HDS Gen2 Touch
to show me where they are hiding. The bass have been holding
close to the schools of bait in 1828 feet of water. Once I locate

a school of bass around the bait
with my sonar, I am positioning
my boat to take aim and start
firing at them with several different baits. The best and most
reliable lure has been a jigging
spoon. I use a flutter spoon the
most because this spoon mimics
dying shad and big bass cannot
resist it as an easy meal. It takes
some practice to get used to it if
you have never thrown one but
once you get into the rhythm of
it you will have a blast catching fish on it! I have also been
targeting the feeding schools of
bass with a Carolina rig. I have
had great success with the Berkley Havoc Back Slide on my
rig right now. It is just the right

size and has lots of action as you
pull it along. Best colors for me
have been chartreuse pepper and
green pumpkin. The deep football head jig bite never really got
going good this fall like it normally does but every once in a
while you can catch a couple if
you toss it out there. For the suspended bass out deep I have been
throwing the Powerbait Swim
Shad. Bunker or Pearl white are
best. These baits will catch some
giants reeled along slowly in the
depths!
If you are headed to Lake Fork
this month in pursuit of a trophy
bass and are looking to book a
guide, I would enjoy the opportunity to take you or your group
fishing and show you a great time

HIDDEN LAKES-WHERE THE QUAIL ARE
By Luke Clayton
I remember well the first time I hunted quail at Hidden Lakes Hunting Resort located near Lake Fork
at Yantis when the shooting resort first opened about 7 years ago. Owner Billy Burnett invited me up to
check out his operation. Before our hunt, Billy gave me a tour of his place. He raises the birds right there
on the property in long flight pens that are situated in a secluded area where the birds have almost no
contact with man. The flight pens give the birds plenty of space to strengthen their wings. A nice little
house served as ‘headquarters’ where the noon meals were served to hunters that had spent the morning
shooting quail or pheasants or chukars. Expert dog work, very fast flying birds, great guides that soon
became friends and an excellent meal are my memories of my first visit to Hidden Lakes.
Prior to hunting at Hidden Lakes, I’d hunted and written articles on many shooting preserves but none
that raised and conditioned their own birds. Most of the preserves I’d hunted were what I refer to as ‘wind
row’ operations consisting of small tracts with trails interspersed with areas of manmade cover. Often,
the birds we shot did little more than hop up in front of the dogs.

Hidden Lakes
Continued from page 5
The dogs that were used on these
operations had learned exactly
where the birds would be placed
and of cover out of habit more
than the scent of a game bird, at
least that is the way it appeared
to me. I’d also hunted several of
the upscale hunting resorts with
onboard chefs and million-dollar
lodges. While I enjoyed these
outings, the shooting usually left
me well aware that I had been
shooting ‘pen raised’ birds.
These ‘home grown’ upland
birds at Hidden Lakes that are
reared in near-natural conditions
make all the difference when it
comes to the hunt. They will
often cause an old wild quail
hunter like myself that remembers the good old days of Texas
quail hunting back in the sixties,
seventies and part of the eighties,
into reliving past hunts. At Hidden Lakes, the good old days are
back! The preserve is an excellent place to introduce newcomers, young and old, to the excitement of shooting upland birds
over well-trained pointers and
setters.
Things have changed at Hidden Lakes through the years.
Lots of improvements have been
made, including a fine lodge with
rooms for overnight lodging,
brand new and even bigger rearing and conditioning pens for the
birds, a new shotgunning course
and a new manager.
Back on my first hunt at Hidden Lakes, Cord Burnett, the son
of Billy and Kathryn, was still
a teenager but already guiding
hunters. When I hunted with him,
it was obvious he had as much
‘bird savvy’ as the pointers and
setters he was handling. Cord
grew up with his family hunting
wild quail back when their numbers were high out in West Texas. I don’t think I’ve ever known
anyone with more of a passion
for hunting upland birds and
working dogs. Cord has worked
hard at the family operation and
now is the manager, overseeing
everything from raising the birds
to keeping the kennel of dogs
trained to perfection.
Upon arriving for this hunt,
I spent a little time visiting with
Cord, who had a full plate of duContinued on page 7

ties for the day ahead.
“I still guide, but not as much as I
used to,” says Cord. “I now have
to divide my time between duties managing the operation and
guiding. Overseeing the logistics
of an upland bird hunting resort
is most definitely a full-time job
but I make sure I am still out
there guiding as much as possible.”
I’ve made friends with most
of the staff at Hidden Lakes
through the years and my guide

for this most recent hunt was
Dennis Hyde. Dennis was raised
on property adjacent the preserve
and grew up back when wild
quail numbers were still strong.
“We have young hunters here
all the time that have never had
the opportunity to hunt quail
or watch bird dogs work,” says
Dennis. “I’m not sure anyone
really knows why quail have all

often as easy as walking out behind the house with our pointer
and getting into the birds. Those
days are long gone; hopefully
the biologists can get a good
handle on the demise of quail in
the state, but, even if they don’t,
the Burnett family has most definitely brought the sport back in a
fashion that comes very close to
the good old days. I might like it
a little bit better, to tell the truth.
We had to cover a good bit of
ground on our hunt but I remember back in the eighties walking
from sunup to sunset in pursuit
of quail!

Got venison? Now it’s time to feast!
Luke Clayton
Deer season is well underway and I’m betting many of you have a
freezer full of venison. What would you think is the most popular
method of cooking venison? Maybe chicken fried steak? I’m betting
the old standard fried backstrap or ham steak is very high on the list!
I’ve enjoyed chicken fried venison since childhood and thought I’d
share with you my method of preparing it.
It’s important to keep in mind that venison is a very dry meat
and what fat the steaks have should be trimmed away. Pork or beef
fat is a good thing that adds to the meats flavor but venison fat must
be trimmed otherwise the “off” or gamey flavor that some associate
with improperly prepared venison.
Both the backstraps and cuts from the upper hams make excellent
chicken fried steak. Make sure and trim all the connective tissue from
the hams as well as fat. When sliced fairly thin, most backstrap steaks
are very tender but ham steaks might require some additional tenderizing with a meat hammer or tenderizing machine.
Once the steaks are cut and trimmed, I dust them liberally with my
favorite dry seasonings. This can be anything from salt and pepper
to a prepared dry mix. We love garlic and I always use a garlic based
blend or add additional granulated

In order for the flour to adhere
to the meat, I sprinkle a liberal
amount of Louisiana hot sauce
on the steaks and allow them to
marinate with the dry seasonings and liquid sauce for a few

use milk instead of the hot sauce
but I’ve found the hot sauce adds
a little extra flavor.

Louisiana hot sauce on them

water; you don’t want the gravy to
stick to the skillet. Turn the heat to low, place the lid on the skillet and
let it simmer for about 30 minutes, stirring occasionally. You’ll probably want to season with a bit more black pepper and salt to taste.
Cook a pot of rice and you will have the bases covered with TWO
meat dishes prepared simultaneously. Your guests that desire chicken
fried venison steak can put a little of the gravy on their steaks or use
a steak sauce. Those that prefer smothered steak with rice should also
be happy!

Button Bushes Planted In Lake
On November 6th and 17th members of the LFSA, Yantis FFA and
Texas Parks & Wildlife planted over 620 button bushes. This is the
third year the LFSA and TPWD have partnered in habitat restoration.
The plants have been planted in areas that do not obstruct lake
front property or boat docks. These plants will survive in up to 4 feet
of water and will provide excellent cover for fish. The hope is that
over time they will provide fishermen with areas to target for that
catch of a lifetime.

Happy Holidays everyone. I hope everyone had a great
Thanksgiving, and
looking
forward
to having a Merry
Christmas. The Cowboys are in
the playoff race and that always
makes a better holiday season
for me.
My catfish year has come to
a close now that hunting season
has started and the weather has
gotten cooler. We were catching
catfish up until the weather got
down below freezing.
The boat fell 16 catfish short
of 4200 for the year. That’s a
pretty good year but my record
year was 2013. Probably 98%
of those catfish were caught on
Ernest’s Poletown Catfish bait.
Unfortunately Ernest is not
going to be able to sponsor me
anymore. I was sick when I
found out the bad news. I loved
that bait and it will catch catfish.
I’m trying to find a new bait
sponsor for next year.
As expected duck season has
got off to a slow start for me.
We have shot a few but nothing
to get excited about. Due to the
lake being so low this will probably be a tough year hunting on
Page 15

the lake. Most of the vegetation
on the lake is dried up and gone.
That is what holds the ducks in
the area.
On November 17, I did manage to shoot a 10-point buck. It
measured 17in. wide and probably weighed 150 pounds.
Looking forward to another
great year of fishing on Lake
Fork. This lake is full of all
kinds of fish. It’s starting to be
a great white bass lake too! The
crappie fishing is good and the
bass fishing is one of the best
lakes in the nation. Not to mention the catfishing as I have been
turning customers on to for 10
years now. Lake Fork is just a
great fishing lake for whatever
you want to try and catch.
Have a Merry Christmas and
a Happy New Year. Fishing trips
make great Christmas presents.
If you would like to give a guided trip I have gift certificates
available. You can reach me at
