This November, the accent is resolutely on art: enough to make us forget the days which are getting shorter!
A confidential monographic museum, an innovative gallery in an unusual place, an exceptional exhibition
of an entire recently-acquired collection: Paris’s vibrant cultural scene is multifaceted. Also this month, the
opening of two amazing hotels, and an exceptional spa – an irresistible invitation to relax in one of the
most beautiful palaces in Paris. Finally, a former local eatery, a few steps from Trocadéro, has some delightful new flavours since it was taken over by an excellent team.

For its thirtieth anniversary, the Musée Zadkine looks younger
Opened in 1982 in the artist’s former studio, the Musée Zadkine is devoted to the work of the Russian-born
sculptor Ossip Zadkine. A wonderful showcase for his collection, the museum safeguards the place of creation
that it was and in which the artist lived from 1928 to 1967. Ossip Zadkine was one of the leading representatives
of the École de Paris, close to Modigliani and Foujita, in this district of Montparnasse that was so creative in
the inter-war years.
After a year of work, it is a place bathed in light that welcomes the visitor, at the end of a discrete passage a few
steps from Luxembourg. Large stained-glass windows, whitewashed spaces, pine parquet flooring, zinc roofing
and a small garden suited to discovering the so complete yet so simple sculptures of Zadkine.
70 works are exhibited in more ample space. A samovar stands in the entrance hall – a reference to the Russian origins of the sculptor, inviting the visitor to take a welcome drink of tea. The artist’s main themes are
highlighted: the musician, the women with the bird, the torso, and mythology. Zadkine’s interest in primitivism,
his ability to make good use of the imperfections in the material become evident in the course of a visit of this
rich collection which today offers a veritable re-discovery of this major 20th-century artist.
The garden has also been redeveloped, harmoniously linking the buildings. The favourite plants of the artist have
been reintroduced, all of modest origin: holly planted at the foot of three old sycamores, hawthorn, ferns, cyclamen, oak-leaf hydrangeas form an undergrowth. Eleven sculptures are exhibited here thus extending the visit.
Today the property of the City of Paris, the place and the collection are free to everyone, all year round.

A unique art gallery at Le Bourget Airport
Modern and contemporary art are thriving in Paris: the Gagosian Gallery, a must since 1979 with 11 addresses
in Los Angeles, New York, London, Athens, Geneva, Rome, Paris and Hong Kong, has just moved into a huge
space in the north of Paris, in the heart of Le Bourget Airport, the leading business airport in Europe. The
world’s most influential personalities now pass in front of the heavy blue door that opens on to this gallery,
unique in its genre.
It was Jean Nouvel who supervised the layout of this hangar – typical of the industrial architecture of the
1950s, an empty 1,600 m2 space. Two levels give visitors a unique vantage point of the installations, with a
340 m2 mezzanine offering a bird’s eye view of the central space.
Despite the constant turnaround of private aircrafts, the gallery is quiet and conducive to contemplation.
Numerous works are available for consultation in a reading room, a veritable catalogue of all the artists
exhibited by Larry Gagosian worldwide: Cy Twombly, Richard Avedon, Zeng Fanzhi, Roy Lichtenstein, Andreas
Gursky, Hiroshi Sugimoto, etc.

The inaugural exhibition, which runs until the end of January 2013, is devoted to the German artist Anselm
Kiefer, with his Morgenthau Plan (an enormous field of wheat in a cage), a surrealist vision of nature muzzled
in the middle of an airport.

The Cinémathèque française opens a Galerie des donateurs
Since it was founded in 1936, the vocation of the Cinémathèque française has been to safeguard cinema history.
It houses numerous documents and films entrusted to it by collectors, fans or cinema industry professionals
(actors, directors, technicians, etc.). Hence the opening of the donators’ gallery, in situ, in the famous building by
Franck Gehry as well as on its website (a veritable virtual gallery).
The purchase in 2009 of the Marcel Carné collection – and that of his friend, the actor Roland Lesaffre – from
the French Library, in Boston, has substantially increased its current collections: more than 5,000 photos, scenarios, letters and other objects have been assembled thanks to the support of private and public patrons and
the support of the Ministry of Culture and Communication. This collection is presented temporarily and partially
in the framework of exhibitions; a new reason to return to the Cinémathèque!

The Spa Valmont at Le Meurice, a new centre for well-being in Paris
At the palace Le Meurice*****, the Spa Valmont has just been unveiled after several months of refurbishment
work. The 340 m2 space is a veritable haven of peace decorated in soothing shades, mixed with bronze, green
celadon, and beige with a few touches of gold. The architecture and furniture of the Spa Valmont have curved
shapes that create a smooth and comforting atmosphere. Opening onto a terrace, the spa is bathed in daylight
and offers three ultra-luxurious body treatment cubicles, including a double one. A nail bar, high-tech fitness
room, sauna and hammams covered in sumptuous pearly Bisazza mosaic tiles round off the facilities for relaxation. For complete repose, guests can relax in one of the comfortable relaxation spaces, or why not enjoy the
invigorating virtues of the ice fountain, a reference to the Valmont Elixir des Glaciers anti-age range.

Hôtel Atmosphères, far from a cliché
It is in the heart of the Latin Quarter, a few steps from the Sorbonne, that the Hôtel Atmosphères has just opened. After more than a year’s work, the Hôtel Sully Saint-Germain has been replaced by a new establishment that
is both a design hotel and a contemporary photo gallery. The Hôtel Atmosphères has in fact teamed up with the
photographer Thierry des Ouches to decorate its guest rooms and the common areas: 112 photographic works
can be admired at any time of the day. To round off the project and start out on a new adventure, it has called
on the interior designer Vincent Bastie, whose work is regularly praised in numerous Parisian hotels. These two
artists work hand in hand, elements of the decor taking their inspiration from details in the original photos, like
the Parisian paving stones echoed in the pattern of the carpet! Colours, material, furniture: everything has been
carefully chosen to beautify the images and extend a discovery of the capital within the hotel itself.
The 49 guest rooms, 6 junior suites and 2 apartments have been completely reorganized and the volumes
rethought. In terms of atmosphere, there are six to discover, including ‘Nature’ with green shades, in reference
to the numerous Parisian parks and gardens; ‘Monuments’ with blue and gold tints symbolizing the capital’s

cultural sites; ‘By night’ in black and red colours of the Paris night; ‘Urban’ with pure and geometric motifs
recalling transport in the city; ‘Macaroon’ with pastel and pop colours in reference to famous gourmet delights.
Equipped with all the necessary comforts, with free Wi-Fi, a safe-deposit box, and a courtesy tray, guest rooms
can also pride themselves on their bathrooms which offer welcome products from the Algotherm range, a balneo
bath and Axor wash baisins by the Bouroullec brothers.
The common areas of the hotel are equally elegant. Amenities include a reading room bathed in light from a
central patio which offers peace and relaxation. For sport and well-being, there is a fitness room with cardiovascular exercise machines, a sauna, and a water massage bed available to hotel guests.
Moreover, for guests interested in the work of Thierry des Ouches, a book published by the Éditions de la Martinière: PARIS, par Thierry des Ouches is available exclusively at the hotel in a box with a film showing the 223
photos. Large postcards are also ideas for an original gift souvenir.

L’Auberge Flora or a new conception of a gîte and a restaurant
It is just recently that Flora Mikula has opened the Auberge Flora, a much-awaited return to the Parisian scene for
this chef who in 2010 closed her famous restaurant in the 8th arrondissement, ‘Les Saveurs de Flora’, to give free
reign to her passion for travel. More than a simple restaurant, this time it is a veritable urban and contemporary
inn that has opened between Bastille and the Marais.
On the accommodation scene, 21 guest rooms have been created under the impetus of Flora herself and decorator
Sébastien d’Evry. The guest rooms spread over three floors with three original experiences linked to the awakening
of the senses: three atmospheres intimately linked to the personality and history of Flora, an inveterate globetrotter who has worked with the greatest chefs, from Jean-Pierre Vigato to Alain Passard. A concentration of elegance
and well-being in a chic and bohemian atmosphere. The guest rooms ‘Bohème’ reflect the southern and Polish
origins of the chef: colourful, warm, an invitation to travel. The guest rooms ‘Potager’ on the second floor flourish
with herbs, nature and spices. The guest rooms ‘Nature’ on the third and last floor feature raw materials and clean
lines in neutral colours inspired by stone, cotton and cork. The restaurant scene features bistro food, open every
day. Early risers can enjoy a French breakfast from 7am in the morning (fresh bread, viennoiseries, charcuterie,
eggs, etc.) and nightbirds until 11pm. Gourmet menus according to the inspiration of Flora are served at lunchtime
and dinner, but there are also mid-afternoon snacks and aperitifs to enjoy!

Gastronomy //
Bistrot de la Poste, the new ‘bistronomique’ address at Trocadéro
This 30-year-old bistro, in a quiet street at Trocadéro has just been revamped. However, it still bears the marks
of its past, with an impressive bar, in zinc, and several references to the 20th century with appliqué in the pure
art deco style. Today a touch of humour runs through the restaurant with a message mirror here and a trompe
l’œil there.
Open every day of the week for lunch or dinner, and at the weekend for brunch, the Bistrot de la Poste offers
traditional bistro cooking with a modern twist by the chef El Fahiri, formerly at the Plaza of Alain Ducasse — the
multi-starred chef has contributed to the elaboration of the menu.
Casserole of farm-reared poultry, tartare minute, club-sandwich already a house classic, all accompanied by a
fine selection of wines; a dish of the day is an invitation to discover a recipe of the chef inspired by produce
delivered that morning. Efficient service, white tableware, wooden floorboards and cast-iron casseroles: the
roots of the French bistro tradition are indeed here, a few strides from the Eiffel Tower.

For its 75th anniversary the wild cat house of the Ménagerie du Jardin des Plantes has just been renovated. It
now houses five species of cats, some of which are threatened with extinction. Reopening after full renovation
of the Hôtel Marignan Paris close to the Champs-Élysées, with 40 guest rooms, 10 suites, a bar and a restaurant. /
The Hôtel Unic, formerly a ** and situated close to the cemetery of Père Lachaise, has changed its name to Le
Paris Vingt. / Opening close to the Porte de Versailles of the Vice Versa, a hotel with 37 guest rooms decorated
by the designer Chantal Thomass on the theme of the seven deadly sins.

The shops of the national museums and monuments //
A veritable ‘museum-city’, Paris is reputed worldwide for its art and culture. What’s more, the main reason that
people come to Paris is to visit its museums and monuments. So naturally, visitors like to have something to
take back with them to remind them of their visit to one or more of these major cultural spots. The ‘museum
shops’ and the ‘bookshop-boutiques’ managed by the Réunion des musées nationaux (RMN) can be found
in most museums in Paris, such as the Centre Pompidou, the Louvre, the Musée d’Orsay, the Musée du Quai
Branly, the Musée Carnavalet, or even the Petit Palais. These boutiques total some 20 in Paris and offer a wide
choice relating to their own particular collections and exhibitions. As well as books, there are postcards and
posters, films, multimedia software, decorative items and jewellery. Plus, a wide range of exclusive products,
such as illustrations engraved on copper from the chalcography workshops of the RMN, or even reproductions
of works from the moulding and casting workshop of the Louvre. In the run up to Christmas, the workshop has
special collections for original high-quality gift ideas. Moreover, the RMN, in close collaboration with exhibition
curators, produces accessories (silk scarves, ties, watches, etc.), jewellery (ewers, perfume bottles, etc.), or even
objects for the home and office (candleholders, boxes, mirrors, letter openers, etc.) in direct relation to the
works exhibited to the public. Each of these creations bears the hallmark of the RMN and is accompanied by
a historic note and a certificate of origin. Visitors to the Louvre should not miss the museum’s two-floor boutique-bookshop, under the glass pyramid of the museum, which has the biggest choice in Europe of books on
art. The mezzanine, accessible by an impressive stairway, has a unique range of cultural objects, 800 different
gift items and more than 1,500 prints. On the ground floor, an area specifically devoted to tourists has products
inspired by the permanent collections of the museum, as well as designer items from the two exhibited works:
The Mona Lisa and the Grande Odalisque by Jean-Auguste-Dominique Ingres. All the reproductions of the
RMN are also available online (see chapter online boutiques). The Musée d’Art moderne de la Ville de Paris
(City of Paris contemporary and modern art museum) has a bookshop space devoted to works from the 20th
and 21st centuries. As well as essays, magazines and books about artists, it also stocks all the works and catalogues edited by the museum, as well as numerous monographic works on modern and contemporary artists.
Among the shops of Paris’s museums and monuments, the highest in altitude can be found on the 56th floor of
the Tour Montparnasse. It stocks some 300 different items (T-shirts, jewellery, books, etc.) on Paris, its monuments and the Tower. Services include a photo point, where you have the self-service possibility of incorporating

numerous shops with souvenirs on the theme of cinema, history, science, opera, etc. The bookshop of the Cinémathèque française, situated at Bercy, has an exceptional choice of works relating to cinema. Housed on the
mezzanine of the Cinémathèque and managed by specialists in cinema and the history of cinema, it stocks a
range of cinema-related articles from posters to film soundtracks, etc. Bookshops specializing in documentation
and souvenirs on the performing arts include the emblematic boutique of the Comédie-Française. It has an original range of goods: items linked to works that are being currently performed, DVDs of plays, cartoon albums

The main tourist areas in the capital have numerous gift shops selling traditional souvenirs. This is particularly
true of the arcades in rue de Rivoli, opposite the Louvre and the Tuileries Gardens, which have a large range
of typically Parisian souvenirs. The same goes for the Place du Tertre in Montmartre, where you can pick up a
portrait or painting from one of the numerous artists who set up their easel there every day. Other shops also
specialize in the most emblematic kind of Parisian souvenirs. I Was In, for example, develops its own lines of

Railway stations in the north of Paris. The Paris Nord and Paris Est railway stations, both
built in the middle of the 19th century a few steps from one another, are flanked with streets full of hotels
and restaurants. Ideal for a short Parisian city break – or when in transit – in this lively colourful district.

Paris Nord, Europe’s leading railway station in terms of number of travellers, boasts a facade which is listed,
surmounted with statues representing the great cities of the North of France. As well as major railway lines
and suburban lines, it also houses the TGV, which links Paris to Lille, Calais, Boulogne, etc., the Thalys, which
goes to Brussels, Amsterdam and Cologne, and the Eurostar, which goes under the English Channel through the
tunnel to London. Some 12 bus lines and three metro lines pass through Paris Nord and serve all the districts
of Paris, its museums, monuments and other points of interest. Not forgetting three RER lines, including line
B which serves the Paris Nord Villepinte exhibition centre and the Paris – Charles-de-Gaulle airport and links
Paris-Orly via Orlyval. The station has a large number of shops and services for travellers: fast-food outlets and
takeaways, florist, chemist’s, L’Occitane shop, bureau de change Travelex, Paris Convention and Visitors Bureau
tourist information point, public toilets, including showers, Wi-Fi point, etc.
A few steps away, the Paris Est railway station, a listed historic monument for its facade, roofs and arrival and
departure points, was renovated in 2007 to house the new high-speed TGV Est (to Strasbourg, Germany and
Switzerland). It serves towns and cities in the suburbs and provinces (Reims, Drancy, Troyes, etc.) to the east of
Paris. The famous trains of the Orient Express compagny arrive at Paris Est from Venise and Istanbul.
In the mainline concourse, travellers can admire a monumental 60 m2 painting by the American Alfred Herter
(1926) depicting the departure of soldiers for the front in 1914. Travellers have plenty of places to eat at the
Foodissimo (food court), which has food counters and coffee shops serving sandwiches, salads, stir fries, pasta,
desserts, etc. and a traditional restaurant, the Brasserie Flo. Services and shops include the tourist information point of the Paris Convention and Visitors Bureau, a florist, fine food store, perfume shop, beauty store,
chemist’s, Wi-Fi points, etc. What’s more, ten bus lines and three metro lines serving all of Paris make a stop
at Paris Est. Finally, it is worth noting that the two railway stations are on the route of the Open Tour (doubledecker bus sightseeing tours in the capital).

Accommodation near to the Paris Nord railway

There is a huge choice of hotels in the streets around the station, notably along the busy boulevard Magenta.
The Avalon Hôtel***, for example, offers 64 guest rooms (including 15 triples) and was refurbished in 2012. Warm
grey and beige colours on the walls and parquet flooring … all contribute to creating a relaxing atmosphere. The

vicinity, the long rue La Fayette has two upmarket establishments. The first, the 6-floor Hôtel Hor***, with its

Rocroy***, which has opted for an original decor with pop colours that vary from floor to floor. The 54 design

and remote control with large buttons, etc.). Housed in a Haussmann building in a quiet street, the Appia La

have communicating doors for families or groups of friends. If you are looking for a view of Sacré-Cœur or a
pretty interior courtyard, opt for the Timhotel Gare du Nord***. The harmonious yellow, beige and pastel blue

The Brasserie Flo is housed on two floors in the art-deco-style former left luggage office, just at the entrance
to the Paris Est railway station. The chic decor and attractive setting make this an ideal place for an enjoyable
meal before leaving or on arriving in Paris. The cooking is refined with delicious classic dishes: foie gras, sole

A new laboratory for Eurosites’ gourmet catering centre
The Eurosites group, a leader in the organization of seminars and business events, has just equipped itself with
a new culinary production laboratory for its catering activity. This new ultra modern 3,000 m2 centre at Chevilly-Larue, next to Rungis, will enable the group’s gourmet centre to develop the gastronomic production capacity of its three entities: Toutbio (1st 100% organic caterer), Nomad (specialist in Food and Design) and Saint
Laurent (100 % Gourmet). With its ideal situation, and in order to have a quicker response time, it benefits for
its produce supply from Rungis international market and from its immediate proximity to Paris. What’s more, it
produces organic and conventional food preparations on a single site with a high health control guarantee. The
new laboratory, which has been approved by European veterinary services, meets the most demanding hygiene
and security standards.
The production of the certified Toutbio range, produced on the Chevilly-Larue site, has also been designed to
respect the standards of Ecocert, whose certification label it has proudly held since May 2010. A large part of
investment has been devoted to cooking and cake and pastry making equipment in order to cater to the most
demanding clients. The laboratory also has a research and development department to design and perfect its
culinary innovations, and a photo studio to anticipate trends and diversify their culinary offer.

A check-in system for Concorde La Fayette
The Concorde Hotels & Resorts Group has launched an e-check-in system making it a pioneer in up-scale hotels.
This new facility, launched at the hotel Concorde La Fayette, enables a client that has booked their stay online
to receive their room key quickly on arrival. All they have to do is to tap a code, received by text message
during their online registration, at a Smart Way terminal situated at the reception of the hotel: the room key
is immediately delivered. Thanks to Smart Way, checkout is just as rapid: the key can be re-deposited in the
terminal after validation of their bill. Developed by Ariane Systems, a specialist in ticketing solutions developed
for airline companies, this type of facility meets the requirements of business travellers, whose time is precious,
and that of groups wanting to avoid having to wait on arrival: hotel staff are then free to devote their time
entirely to welcoming guests. This innovative service is one of the Group’s new range of services, like the hotel’s
client loyalty programme ‘Concorde Privilege’ launched this autumn, which enables guests to enjoy numerous

New autumn-winter menu for Butard-Enescot
Gastronomic tradition revisited for this reception caterer. Under the impetus of new managing director and chef
Hubert Primas, the new autumn-winter menu 2012 of the caterer Butard-Enescot renews with the comforting
flavours of our grandmothers’ cooking. Prestige menus mix tradition and inventiveness. The proof is in the
velouté of chestnuts and foie gras, poultry and wild mushroom pie, poached sea bass with butter from Nantes,
nougat of beef and foie gras, etc. These seasonal dishes have all been boldly reworked by the house chefs
whilst retaining a note of tradition. It is however the way that they have been put together that makes them
stand out and gives them the stamp of renewal and avant-garde: the velouté of chestnuts is associated with a
fine topping of coppa and our fishermen’s box is served in a small metallic box with warm brioche! This way of
presenting things is taken up for the new cocktail buffet offer, with the metal haute-couture style ‘Gourmet box’
which replaces the traditional box in spruce to serve a new recipe: breast of duck confit with apples and quinces
and Valley of the Auge sauce. The great French classic pain surprise (surprise bread) has also been relooked in
an elegant, hat-box style black casing. Two versions are available: the 96 with its colourful bread full of refined
and original flavours (cod-wasabi, poultry-tarragon, Savora-curry and smoked salmon); the Sweet, which for
the dessert comprises pistachio or chocolate-coffee biscuits, with flakes of raspberry and apricot. Along with
this new menu comes an increased number of Butard-Enescot reception venues. In addition to the two Parisian
venues run by the company – the Pavillon Royal, in the Bois de Boulogne, and the Chesnaie du Roi, in the Bois
de Vincennes – new prestigious venues: the Galerie Montmartre and the Espace Dalí have chosen the caterer
as a privileged partner for the organization of events. To celebrate the Spanish artist as is befitting, the ButardEnescot team have designed a bespoke menu inspired by the prodigious creative energy of the painter: the

The Lutetia**** continues its vocation to support artistic creation with a new artistic season based around sensuality, emotion and inspiration. After the exhibition of photos by Fabrice Leseigneur (Les Rives de la beauté),
then perfume with the Parfums d’Empire, two events organized in September, October continued in the vein of
the international contemporary art fair, the FNAC. Alongside the Saint-Germain-des-Prés art itinerary, organized
on the fringes of the FIAC, students from the studio P2F of the Paris School of Fine Arts were able to show their
work inside the hotel. Until 30 November, the Lutetia is taking part in the month of the photo and is showing an
original exhibition by Jean-Baptiste Senegas. This singular artist who uses techniques from the past, such as the
ambrotype process, offers a journey in black and white, questioning the visitor on the relationship between man
and animals. From 1 December to January 2013, the French sculptor Mauro Corda will present his monumental
works in the common areas of the hotel: amazing figures, mixing classicism and modernity, questioning the

identity of the body. Simultaneously, the season continues at the brasserie of the Lutetia, with the exhibition
Figures urbaines, by photographer Christian Deroche (to beginning of January 2013). A hymn to design and to
urban lines in three colours: black, white and red.

Maxim’s in Paris gets bigger
After a year’s work, the famous Maxim’s at N0. 3 rue Royale has been extended to take in the two neighbouring buildings. Renowned for its restaurant and nightclub, Maxim’s will now be able to widen its activity to the
events sector and at the business centre with the newly-created 1,000 m2. This extension on three levels offers
wonderfully decorated and fully-privatizable spaces. On the ground floor, the mythical room, with its stage and
superb glass roof, can welcome up to 180 guests for a sit-down dinner and 350 people for a cocktail party, a
dance, company event or concert. On the first floor, the Chez Maxim’s bar, the René Gruau theatre – a tribute
to the fashion illustrator of the belle époque – and the salons comprise 400 m2 of fully-modular space, from
the 11 m2 private salon to the 90 m2 room for the organization of meetings, seminars or press conferences.
The business centre is also here and comprises 6 private offices and a large equipped meeting room. Finally,
on the second floor, the huge reception rooms overlook a large terrace for all types of events in a bright, fun
and elegant atmosphere. A new venue to remember for the organization of evenings out, fashion shows or a
product launch. Of course, Maxim’s de Paris can provide full catering facilities throughout, from a large choice
of dinner, cocktail or buffet menus.

Hôtel du Collectionneur: 470 guest rooms and 1,700 m2 for private
hire
A few minutes from the avenue des Champs-Élysées and close to important congress venues, such as the Palais
des congrès de Paris, the Palais Brongniart and even the Carrousel du Louvre, the Hôtel du Collectionneur Arc

This month ParisNews takes a look at the cooking at Les Collections, the new restaurant of the Sofitel Paris Le Faubourg. Les Collections makes reference to the
neighbouring faubourg Saint Honoré, a symbol of the great names in Parisian
fashion. And of course a new restaurant means a new chef: encounter with Keigo
Kimura.
Tell us about your professional experience…
K.F.: I arrived in France in 2000, at the age of 23, after training at Tuji Culinary School, in Japan, and after
having worked in many French restaurants in Tokyo. I toured France (Megève, La Rochelle, Burgundy, etc.),
working in the kitchens of prestigious houses alongside great chefs like Marc Veyrat, Grégory Coutanceau,
Joël Robuchon and François Pierre Lobies, before returning to Paris in 2011 and taking up the reins at Les
Collections.
I completely revised the menu to offer cooking founded on the conventions of French gastronomy but which
was very contemporary. Precise and creative cooking with dishes according to the season. I also reinvented
recipes, which I had produced in other restaurants, like the ‘Ris de Veau du Docteur Kellogg’s’ crisp on the
outside and soft inside, an idea straight from Joël Robuchon, based on cornflakes.
How would you define your cooking?
K.F.: Quite traditional French cooking, inspired by my roots: everything that I have liked, tasted, experienced
… For example, when I was little, my mother used to prepare bread and butter with seaweed jam for breakfast, which you find everywhere in Japan. One day, I created a recipe for seaweed foie gras, inspired by this
memory.
I’ve never really cooked Japanese dishes, and if you went into my kitchen, you would not necessarily guess
that I am Japanese; visually, you can see that there are Japanese staff working there, but that is all, no utensil or product reveals where I come from.
How many staff are in you team?
K.F.: Some 15 people, including cake and pastry makers: seven girls, eight boys. And I’m still looking for
one or two people! They come from very different countries: Japan, but also France, Korea, Mali, Senegal …
It is interesting to have cooks who come from all over the world and who bring ideas that I would not have
thought of by myself.
What are some of your favourite addresses in Paris?
K.F.: The rue Sainte-Anne district without a doubt! You can find everything there that you need to cook
Japanese dishes; it is therefore where I go to shop with my wife.
I would also mention the market Président Wilson, in the 16th arrondissement and especially the stall of the
great fruit and vegetable market gardener Joël Thiébault where numerous chefs go to stock up on seasonal
vegetables. There are always a lot of people as unfortunately Joël Thiébault does not have a delivery service!
For Les Collections, some of our suppliers include Le Quartier du pain bakery – unfortunately we do not
have the space to make our own bread; the cheese comes from Quatrehomme – the secret to having a good
cheese at the right time! And finally, some of our cakes and pastries come from Ladurée, on the corner of
the street.

Cooking is reputed as being time consuming isn’t it ?
K.F.: It is true that I work a lot, which is why I never take advantage of Paris. When I’m at home I don’t work, I
rest! Before, on my days off, I used to go to the market; I would buy produce and have fun cooking new recipes
at home. Since I have been a chef, I try out all my recipes at work, between two services, a real privilege of
being a chef! In the evening, I finish work at almost midnight six days out of seven; it is a profession that you
have to really love.
