Bar Centrale opened in the town square of Carini, Italy in 1959, by Pietro Evola, Cesare Evola's
father. In 1961 Lido Azzurro opened, seating 800 patrons in a casual and yet many times formal
atmosphere, specializing in weddings and receptions of all kinds. It was there that Cesare Evola,
aged nine, entered the Restaurant business. Cesare's first job was to sit outside of the kitchen
door and record all food going out of the kitchen and manually add the tickets for the final bill.
At the age of 10 Cesare began helping his father make pizzas, consequently, at the age of ten his
own son, Antonio followed in those footsteps as well, only here in America. In Italy, many
restaurants still operate this way, they still hand roll the dough and hand toss the pizza as past
generations did.
In 1979 Cesare came to the United States for a vacation and by a series of coincidences made
America his permanent home. He started locally in the restaurant business and has to date owned
and operated 10 restaurants. Through a multitude of successes and failures he opened Cesare's
Ristorante in 1991 and Antonio's Ristorante in 1998. He attributes most of his success to the work
ethic instilled in him by his father; Pietro, and to the hard work and perseverance of his own family
each and every day. One heart to heart talk with Cesare and you quickly learn of the days, when
struggling to open and start out in the restaurant business, he barely had a dollar in his pocket.
He tells of the times he had to ask relatives in Italy to wire money, on more than one occasion, and
was it not for his American born children would have boarded the next flight to Italy. He
persevered and for over twenty years the Evola's have served the Chester area. They are rich in
family and friendship and at the center of all of it are the restaurants. Teresa jokes about a ten year
retirement plan, knowing full well Cesare's first love is the restaurant and the many friends he has
there. She often jokes “when you marry a Restaurateur you marry the restaurant, not the man.”
Cesare's and Antonio's are family Restaurants with all members of the family contributing in
different ways. “We view these Restaurants as extensions of our home. It's hard to tell where the
restaurant ends and home begins... we frequently talk about restaurant business long after
midnight” Teresa operates and oversees Antonio's Restaurant as well as oversees menu and
product development, decor and staff development. When asked why she works so hard her
answer is usually “when you're married to a man that moves like a train… you either get on the
train or you get left”, she has clearly chosen to get on the train, sometimes riding as a passenger
and sometimes as the conductor. “All the work would not be worth it if we haven't taught our
children a thing or two along the way. “Work hard every day, educate yourself to the best of your
ability, formal education opens doors and offers opportunities you will never realize without it, and
above all never quit”. Pick a couple things that you want to do in life and try your best, to be the
best, at what you choose, family being one of those; no one in life is truly a success without the
love of family.”
This menu is dedicated to Cesare, our Founder, and the staff of Cesare's and Antonio's Ristorantes.
Their continual hard work, dedication, and loyalty are extremely uncommon in this business of
constant change. “We are truly blessed with some of the hardest working and dedicated people to
be found. The majority of our kitchen staff and head chefs have been with us over a decade;
without them the execution of this menu would not exist.”
