METHODS
"Utilize all of these methods to get the
most out of your grill and impress your
guests!"
There are several different methods of cooking
on the barbecue: direct grilling, indirect cooking,
rotisserie cooking, planking, and smoking.
The method used is determined by the cut of
meat or the type of food you are cooking. It is
possible to cook a variety of foods at the same
time using different grilling methods; however,
setting up your barbecue correctly is critical. In
this section, we outline four primary methods:
direct, indirect, rotisserie cooking, and planking.
Note: Always grill with your lid closed to maintain a
constant temperature and achieve the best possible
results.
1. Direct Grilling
The direct grilling method is quite simple; it
involves cooking the food on the grids directly
over the flame. We recommend direct grilling for
most single-serving items such as steaks, chops,
fish, burgers, kebabs and vegetables, or any other
quick-cooking foods.

Preheat the grill on HIGH for 5-10 minutes.
Remove any debris on the cooking grids
with a wire grill brush.
Spray or brush on vegetable oil to prevent
food from sticking.

2. Indirect Method
The indirect method of grilling is a technique
for cooking larger cuts of meat such as roasts
or poultry. As the name implies, the food is
not grilled directly over the heat but by hot air
circulating around the food. This set up means
there is no need to turn or baste the food.
The result is delicious, worry-free barbecuing
with little chance of flare-ups.
Indirect: Drip Pan Method (fig 2)
Juices and drippings fall and mix with the
contents of the drip pan. This mixture will
vapourize, impart delicious flavours and ensure a
moist and succulent roast, chicken or turkey.

Remove the grids and place the drip pan on
top of the heat medium.
Pour water or other cooking liquid, such
as fruit juice or wine, into the drip pan.
Continue adding liquids while grilling,
making sure the drip pan does not go dry.
Replace the cooking grids.
Preheat the grill on HIGH for 10 minutes
then adjust the heat to MEDIUM or
MEDIUM/LOW.
Spray or brush the grids with cooking oil,
then place the meat directly on the grids
above the drip pan.
Close the lid, and sit back and relax as
your food becomes infused with delicious
flavour.

Indirect: One Burner Method (fig 3)

Place a drip pan over the heat medium,
under the cooking grids, on the side of
the grill where you will be turning off the
burner.
Preheat the grill on HIGH and then turn off
one burner.
Brush or spray the cooking grids with
cooking oil.
When grilling beef or pork sear the meat
on all sides using the lit side of the grill and
then transfer it over to the unlit side.
Regulate the heat setting to maintain your
desired temperature, (generally MEDIUM).
This method is wonderful not only for roasts
but also for thicker steaks, chops and bonein cuts of chicken.
4. Planking
Another unique and delicious way to grill food
is by using a wooden plank. This is a surefire way
to get delicious results and wow your dinner
guests. The smoke created from the plank sitting
directly above a lit burner infuses the meat with
unsurpassed grilled flavour.
Using a plank is simple: (fig 5)

3. Rotisserie Method
The constant turning of the meat while cooking
allows it to self-baste, resulting in exceptionally
moist and tender meals.

Place a drip pan under the meat to collect
extra juices for making gravy.
Fix the meat securely in the middle of the spit.
With poultry, the wings and legs should be
tied in tightly to avoid burning.

Soak it in water for at least an hour and pat
it dry.
Pre-heat your grill on HIGH for 10 minutes.
Coat both sides of the plank with olive oil
then place the seasoned meat on it.
Place the plank on the grill directly over the
lit burner and reduce the heat to MEDIUMLOW.
Cook the meat to its desired doneness.
Cedar planks are ideal for salmon but don’t
be afraid to try other meats with it. Pork
goes great on a maple plank and lamb is
delicious on alder.

Using wood smoke to enhance barbecued
meals may seem like an over-and-above
addition to modern barbecue cooking;
however, many cultures have used wood
smoke for centuries to preserve and
flavour meats. Think of smoking as another
seasoning to add to grilled favourites. Like
any seasoning, it is important to balance it
with the existing flavours from marinades,
rubs, and the meat itself.

keeps ash contained to keep your barbecue
clean. Milder flavours like apple and cherry
are a good place to start as well. The acrid,
almost burnt taste of something that is
over-smoked is not pleasant.

wood chips is very bitter and acrid imparts
an unpleasant flavour to your food. The
sudden rise in temperature can also impact
the overall cooking result in your food.
Soaking your chips and monitoring cook
temperature is very important when using
chips, especially on a gas grill. Controlling
airflow on a charcoal grill is the key to
both temperature and smoke control –
it becomes second nature with a bit of
experience.
Once you get comfortable with the amount
of wood chips required for a pleasant smoke
flavour, feel free to experiment with different
flavours of wood chips and even blends of
different flavours. Many world-renowned
barbecue restaurants use blends – try apple
and hickory or cherry and alder together for
a true ‘sweet and smoky’ experience.
For ‘low and slow’ barbecuing, wood chunks
make a great addition to your charcoal grill
– large, softball sized pieces of hardwoods
offer an extended smoking time and mesh
well with lump charcoals to create true
southern barbecue classics.
Barbecued Back Ribs
Ingredients:
RIB RACK & ROAST SUPPORT
3 lbs. pork backribs salt and pepper to taste
Sauce
1 cup of ketchup
1
/3 cup of worcestershire sauce
2 tablespoons of brown sugar
1 tablespoon of chili powder
½ cup of water
A dash of hot pepper sauce
Directions
1. Using the indirect cooking method, place a drip pan over the vapourizer, under the cooking grids. Pour in one inch of water
or other liquid such as apple cider or wine, or a combination. Replace the cooking grids and preheat barbecue on medium.
2. Peel the membrane off the back of the ribs using your fingers. (This makes a great difference in the tenderness of the ribs.)
Cut each sleeve or rack of ribs into 6" sections. Sprinkle with salt and pepper and place in a rib rack on the barbecue. Place
the ribs upright in the rib rack, with the bone tips pointed upwards.
3. Cook slowly on low heat for approximately 1½ hours, until very tender. Meanwhile, combine the remaining ingredients in a
saucepan and simmer until the sauce thickens. Apply this sauce during the last few minutes of cooking to prevent the sugar
from burning. A warmed sauce will penetrate the meat better, and result in more flavourful ribs.
4. Let stand 5 min before serving.

If you’ve been in the supermarket or butcher shop before you’ve probably seen or heard some, or all, of the types of steak listed below.
However, you might not know what any of the terms actually mean. Well, now you will. We’re here to help you differentiate the most popular
cuts of beef, from the T-Bone to the Sirloin.

A. Strip Loin: Cut from the short loin the
strip loin offers a tender, well marbled,
and flavourful cut of beef perfect for
grilling. Because it is cut from a single
muscle, the strip loin cooks evenly and
can be cut from 1/2" to 2" thick or more.
B. Tenderloin: The tenderloin is a cut of
meat that is exceptionally tender. On a
cow, the tenderloin is found in the middle
of the back between the sirloin and the
rib. The tenderloin is extremely tender
because the muscles that make it up are
rarely used. When the tenderloin is cut
into pieces it is called fillet mignon.
C. T-Bone: The T-bone is a bone-in steak
from the short loin. This cut has a T-shaped
bone that separates the tenderloin
section from the larger portion of the top
loin. These steaks are not as tender as the
porterhouse steak but are still very tasty.
D. Porterhouse: The porterhouse is a large
steak from the thick end of the short loin.
The porterhouse contains a T-shaped
bone and large piece of tenderloin.
Porterhouse is one of the most popular
types of steak.
E. Rib-Eye: When cut into steaks, the rib
eye is one of the most popular and juicy
steaks on the market. Meat from the
rib section is fattier than other cuts of
beef. This extra fat makes rib-eye steaks
exceptionally tender and full of flavour.
F. Flank: Flank steak is cut from the belly
muscles of the cow. The flank steak is
much tougher than the loin and rib steaks
which is why many recipes for flank steak
use marinades, braising or low and slow
cooking.
G. Sirloin: The sirloin is actually divided into
several types of steak. The top sirloin is
the most flavourful. The bottom sirloin is
less tender, much larger, and is typically
offered when one buys sirloin steaks.
THE PERFECT STEAK GRILLING GUIDE
Using The Perfect Steak Marinade, marinate steak for 1 hour at room temperature or up to 24 hours in the
refrigerator. If refrigerating, bring steak close to room temperature a half hour before grilling for more even cooking.
Preheat grill on MEDIUM/HIGH. Brush grids with olive oil and proceed as directed.

BEER ROASTED CHICKEN
Preparation Time: 5 minutes
Ingredients:
1 Whole Chicken 2-4 pounds
Poultry seasoning
2-3 Cloves fresh garlic
1 (355ml) can of beer
Fresh rosemary
Salt and pepper to taste
Preparation & Cooking
Preheat your outdoor grill on medium heat.
Rub the outside of the skin with poultry seasoning, lightly
covering the entire bird and grind fresh pepper & salt
over bird, to desired taste. Place 2-3 small cloves of
garlic in beer can along with 2-3 sprigs of fresh
rosemary.

Place the beer can on the stainless steel base
then place the diffuser cone with diffuser plate
over the beer can. Place the chicken on the
assembled roaster and add vegetables, herbs
and spices around the chicken. Pour in a liquid to
steam the vegetables and add flavour and aroma
such as more beer, water, or a fruit juice. Place the
roaster with the chicken on the grill, keeping lid
closed.
Cook the bird 18-20 min. per pound, or until the
breast meat has reached an internal temperature
of 170ºC.
EGGPLANT PARMIGIANA
Preparation Time: 15 minutes
Ingredients:
1 Tablespoon olive oil
1 Eggplant, sliced ½" thick
2 Tomatoes, diced
¼ Cup parmesan cheese, grated
1 Clove garlic, crushed
1 Cup pesto sauce
¾ Cup mozzarella cheese, grated
Fresh basil (for garnish)
Preparation & Cooking
Preheat barbecue, brush griddle with olive oil and set on LOW.
Prepare eggplant by covering slices with coarse salt for 20 minutes.
Rub off salt with a paper towel and pat dry. This removes the
bitterness of the eggplant. Brush bottom of eggplant slices
with a mixture of olive oil and garlic. Place on griddle
and cook for 8 minutes.

1 teaspoon salt
1/2 teaspoon pepper
2 tablespoons balsamic vinegar
2 teaspoons rosemary, crushed
1 small butternut squash (peeled, cubed)
1 medium sweet potato (peeled, cubed)
Preparation & Cooking
Preheat your outdoor grill on medium heat.
In a large bowl, combine red peppers (cut into
1" pieces), potatoes, squash, sweet potato
and onion. In a small bowl, whisk oil, vinegar
and seasonings. Pour over vegetables and
toss to coat. Transfer to roaster topper and
roast, uncovered, 30-40 minutes or until tender,
stirring occasionally.

Fajita Seasoning (combine in small dish):
1 tbsp chili powder
1 tsp ground cumin
½ tsp garlic salt
2 tbsp water
½ tsp ground oregano
Preparation & Cooking
Preheat grill to 400°F. Meanwhile, in large resealable food-storage plastic
bag, mix steak, onion, peppers and fajita seasoning; stir in a dish or turn
bag to coat.
Place fajita pan on pre-heated grill. When fajita pan is heated, coat lightly
with cooking oil and place steak and vegetables on bottom surface,
spreading evenly. Cook 4-6 minutes or until steak has reached desired
doneness and vegetables are crisp-tender. Remove fajita pan from the
grill using the handle cover and place on the wooden base for serving.
Squeeze fresh lime over the meat and vegetables.
Spoon steak and vegetables down center of each tortilla. Top each fajita
with sour cream and salsa and any other toppings you would like. Bring
sides of each tortilla up over filling; press to seal.
