Spring is a theme you’ll
see repeated often
throughout this issue.
We Chicagoan’s truly
relish the dawn of
warmer temps. A traditional time of renewal
ted and Damon Wayans
and rebirth, the city is
once again full of new additions to our eating and drinking
SCENE. The cleverly named Plan B in Wicker Park looks like
a hit already. Three Headed Productions moves away from
the club scene and does a great job of reinventing Four
into EvilOlive, while the creators of Spoon and Goodbar
just opened Courtland’s Garage in Wicker Park. Get all the
details in First on the Scene on page 32.
As the spring temperatures draw you out of your winter
hibernation, you might notice something new around the city
– celebrities. I always used to say Chicago is not a celebrity
city, but lately they have taken notice of our great town. Last
month I saw Cuba Gooding Jr. and Damon Wayans, and
then the Son’s of Hollywood were in town to kick off their new
show on A&E. The Batman sequel is currently filming here
and this summer there will be plenty more movies filming on
our streets. Check out what homegrown Chicagoan Virginia
Madsen and her Hollywood colleagues think about shooting
in Chicago on page 144. HGTV’s new star Frank Fontana
started shooting his show in Chicago too. You can get his
great design tips in advance on page 130.
And a big congratulations to SCENE’s Editorial Assistant
Megan Baldwin for running the Boston Marathon in 3:30!
I will look forward to seeing everyone back out around town!

From the team that brought you Spoon and Goodbar, comes Cortland’s Garage (1645
W. Cortland, 773.862.7877). The new venue puts beer-swigging patrons at ease – with
its perfectly polished, down-to-earth vibe. The neighborhood hang boasts a garagedoor that serves as an entrance, opening onto the sidewalk of Wicker Park. Exposed
brick walls, black leather stools, oversized mirrors and flat-screen TVs broadcasting the
live-from-Wrigley-Field action make for simple, urban décor. For tipplers with a sweet
tooth, the martini menu offers confections like the Monkey Wrench ($9) – a blend of
Stoli, crème de banana and white and dark Godiva chocolate liqueurs. The Coolant
($9), is a Malibu-pineapple-and-orange-juice spiked drink that comes garnished with
a Swedish Fish. Though the bar has no kitchen, a slew of local restaurants can deliver

Plan B (1635 N. Milwaukee, 773.252.2680) is a modest name for the new spot that’s
first on every bar-hopper’s list. The Wicker Park bar and kitchen is tricked out with
edgy accents like black chandeliers, distressed leather furniture, a cracked-marble bar
and custom-made lamps that project a moody red glow. (Fun décor factoid: The back
of the space is capped off with an antique chandelier that used to hang in Chi-town’s
historic Ambassador West Hotel). At the bar, order up a round of frosty beer (served

look, executed by New-York design firm MCCARTAN, is inspired by a 17th century
French salon, spliced with 21st century touches. Expect furniture from India and Europe,
offset with bold, bright colors. Event planners rejoice: One of the hotel’s most noteworthy features is a 10,000-sqaure-foot ballroom, which can be tailored to suit any
kind of gathering (the hotel can provide customized props, technology, lighting and
entertainment). Music-lovers rest assured, The Hotel Sax will keep a strong relationship
with the House of Blues club. The Crimson Lounge, a swanky spot within the hotel, will
open within the next few months, so keep your eyes peeled for future First on Scene

may be the brightest aspect of the posh new store.
If you have guests coming into town this spring, they’ll have two spanking-new places to

Always an exotic dining adventure, the
Moroccan-themed Tizi Melloul (531 N.

explore. The restaurant’s lavish design and
menu was inspired by Co-owner Steven Ford’s
foreign travels. Designed by English-born,
Chicago-based designer Su Hail, the Aladdin’s
den decor features deep red walls offset by
imported tapestries and pod-like lanterns. The

Behind the bar, the challenge is also to fuse seemingly odd elements and develop new
drinks based on layering temperatures, flavors and even textures. “Mixology is about
cocktail creation and understanding how different tools and techniques can influence
a drink,” said Charlotte Voisey, international bartender extraordinaire who recently
consulted The Dorechester Hotel in London and Ian Schrager’s Gramercy Park Hotel on
a scientific approach to their drink menu. Voisey is currently the U.S. brand ambassador
for William Grant & Sons and looks after the mixology needs of the company whose
portfolio includes Hendricks Gin, Reyka Vodka and Milagro Tequila.

from a blend of olive juice, vermouth and gin with xanthan gum and calcium

The ultimate goal, for mixologists like Voisey,
is to take cocktail creation a step further
by using scientific approaches to challenge conventional associations and invent
new ways to mix the seemingly unmixable.
“Applying science to cocktail creation,” she
says, “allows us to think more deeply as to
what happens to the molecular structure of
liquids when they combine chemically.”
Foams for example, are one of the cooking
techniques that Voisey has put to use at the

unexpected flavor component. “With the initial sip, the drinker experiences the unusual,
soft texture of the foam and then the rich taste of cinnamon and apple,” Voisey said.

then challenging a bored palate by adding offbeat flavors.” }}

Sound complicated? To be a master mixologist today requires more than just a
command of spirits and liquor. In fact, with access to exotic and rare ingredients as
well as new technologies, mixing is becoming a part of fine cuisine with great attention
paid to creating new formulas.
In the kitchen this means mixing foods with similar chemical compositions to
create unique, often non-obvious combinations. At Moto (945 W. Fulton Market,
312.491.0058), Chicago’s most molecular-minded restaurant, Executive Chef Homaro
Cantu, describes it as similar to re-inventing the wheel. “What is cooking? It’s understanding energy or the lack thereof,” he says. “People are afraid because their mentality
as a whole has been held back, we’re changing the way humans perceive food.” Did
we mention that he has foreign and domestic patents pending on many inventions?
Cantu also works closely with DeepLabs, a team of Chicago-based product developers
with backgrounds in aerospace,

Now, along with their culinary

VEGAS:
Timing is everything
Peak party hours in Vegas are anywhere from midnight to 3:30ish. On the weekends
(Fridays and Saturdays are the busiest nights) I’d recommend going out around 11-

things to the next level, you can stay out and party all day long. They serve alcohol 24
hours a day here. It’s great.
Dress code
Girls don’t usually have too many problems with dress codes - almost anything goes.
Don’t wear flip-flops out to a club though. I hate when girls do that. Each club in
Vegas has their own set of little rules for guys, so it just depends. Jeans will work
everywhere – I’d stay away from rocking t-shirts, unless you have a sport coat/jacket
over it. Sneakers are 50/50 out here at most spots. As long as they’re hip and trendy
and the rest of your outfit looks good, you shouldn’t have a problem at most places.
But there are some clubs that won’t let you in with tennis shoes on no matter what.
I wouldn’t recommend wearing any kind of hat either. Usually dress codes are less
enforced during the week as opposed to weekends. And DON’T wear your sunglasses
out – save ‘em for the pool Fonzie.
How to get in
GIRLS, GIRLS, GIRLS!!!  Period. It’s that simple. The more girls (the hotter, the better) you
have with your party, the easier it’s going to be to get in anywhere. If you don’t have

How to get blacklisted

-Showing up with your entire fraternity pledge class – nothing will get you denied
faster than showing up with a pack of guys.
-Sport a ‘do you know who I am?’ attitude – if you’re not famous or from Vegas,
chances are, they don’t care who you are.
-Walk up to the club sipping from the 2-foot-long margarita glass you’ve been drinking
since 4 pm.
-Get so wasted that you’re puking before midnight. Vegas goes super-late, so pace
yourself.  (Note: However, do not by any means stay sober).
-Go up to a random girl and grab or touch her. (Note: Girls do not like this. TALK to
her first, ask her for her name, buy her some drinks, and hopefully later she’ll let you
touch and grab her).

We’ve come along way since then, and not necessarily in a good way. Today it’s
estimated that women apply more than 200 chemicals to their skin a day, many of
which are absorbed into the blood stream and can lead to conditions like eczema.
This raises a question. Why would you choose synthetics, when you can use wonderful
natural things?
What Makes Something Natural?
You would think that the definition of natural would be pretty straight forward. But,
when it comes to beauty products it’s not. Why? Nearly all products must contain at
least some synthetic ingredients to make the production process possible, to preserve
life and to keep composition. Unlike the food industry, which is regulated by the FDA,
the cosmetics industry is relatively free to boast “natural” or “organic” when many of
the ingredients may be synthetic and chemically derived.

When it comes to choosing beauty products, you can employ many of the same rules
you use at the supermarket. In a truly natural product, ingredients should be easy
to decipher, with few multi-syllabic chemical sounding names. You will, however, see
things like isopropyl, butyl and propyparaben on most labels. Don’t be alarmed – these
are the preservatives used to protect the product from bacteria or oxidation. While

Many common plants have astringent properties that can freshen your skin when used

boiled in water have the potential to match your most expensive

Kreiter and Lodal didn’t intend to take on poverty alone. They saw NSP as a mechanism
to mobilize a generation of students who also had been dismissed. They hoped to
provide an outlet for the untapped energy, creativity and idealism they saw among
their peers and to get them off their campuses and involved in their communities.
Nearly a decade later, NSP has built a network of drop-in resource centers, staffed
completely by student volunteers from a base of over 50 partner colleges and universities. Locally, NSP operates offices in Evanston and Uptown. The Chicago office is

Working one-on-one with low income clients, the student volunteers coordinate access

Backyard munchies are easy, especially when you’re
pouring martinis. Hold off on the grill and go for an
easy cheese display. Include a flight of three – a goat

fresh crusty bread or flatbread triangles and round out
the buffet with slices of seasonal fruit.

On the day SCENE catches up with Madsen, the skies are depressingly overcast. Still,
they haven’t got Madsen down. Looking out the window at our skyline, she exclaims,
“Oh! I love this city! I’m so happy to be back here.” As we get to chatting about her
position on the President’s Advisory Board at Columbia, her recent roles and her next
big step – starting her own production company – something dawns on me: Madsen’s
