RIVER NORTH | 312 329 9960 letter the team from the publisher Spring is a theme you’ll see repeated often throughout this issue. We Chicagoan’s truly relish the dawn of warmer temps. A traditional time of renewal ted and Damon Wayans and rebirth, the city is once again full of new additions to our eating and drinking SCENE. The cleverly named Plan B in Wicker Park looks like a hit already. Three Headed Productions moves away from the club scene and does a great job of reinventing Four into EvilOlive, while the creators of Spoon and Goodbar just opened Courtland’s Garage in Wicker Park. Get all the details in First on the Scene on page 32. As the spring temperatures draw you out of your winter hibernation, you might notice something new around the city – celebrities. I always used to say Chicago is not a celebrity city, but lately they have taken notice of our great town. Last month I saw Cuba Gooding Jr. and Damon Wayans, and then the Son’s of Hollywood were in town to kick off their new show on A&E. The Batman sequel is currently filming here and this summer there will be plenty more movies filming on our streets. Check out what homegrown Chicagoan Virginia Madsen and her Hollywood colleagues think about shooting in Chicago on page 144. HGTV’s new star Frank Fontana started shooting his show in Chicago too. You can get his great design tips in advance on page 130. And a big congratulations to SCENE’s Editorial Assistant Megan Baldwin for running the Boston Marathon in 3:30! I will look forward to seeing everyone back out around town! The décor, which conjures up declarations like: “the most stunning olive-inspired palate of green and I’ve ever seen!” (and this from jaded urbanites)—really must be seen to be maroon. A pool table occupies the believed. But just to give an idea: the restaurant seats over 1,000 in a space second floor, and booth-seating that’s modeled after Spain’s Alhambra (an Arabian palace famous for its jaw- fills the first floor. To recreate the Alhambra’s palatial ambiance in the West and house rule the in-house DJs’ play lists, and live bands occasionally rock out on a Loop, the restaurant owners imported fountains, artwork and furniture from floating stage perched above the entrance. The fun-with-palindromes theme extends exotic locales like Syria, Morocco and Egypt. The cavernous space is decked to the cocktail menu, where specialty drinks created by mixologist Bridget Lawson (you out with hand-carved walls, marble tables, velvet-cushioned nooks and two, may’ve seen her on Iron Chef) and have names like Dr. Awkward ($9)and Yo Banana 30-foot palm trees framing a copper-edged stage. The neighborhood hang boasts a garagedoor that serves as an entrance, opening onto the sidewalk of Wicker Park. Exposed brick walls, black leather stools, oversized mirrors and flat-screen TVs broadcasting the live-from-Wrigley-Field action make for simple, urban décor. For tipplers with a sweet tooth, the martini menu offers confections like the Monkey Wrench ($9) – a blend of Stoli, crème de banana and white and dark Godiva chocolate liqueurs. Plan B (1635 N. Milwaukee, 773.252.2680) is a modest name for the new spot that’s first on every bar-hopper’s list. The Wicker Park bar and kitchen is tricked out with edgy accents like black chandeliers, distressed leather furniture, a cracked-marble bar and custom-made lamps that project a moody red glow. (Fun décor factoid: The back of the space is capped off with an antique chandelier that used to hang in Chi-town’s historic Ambassador West Hotel). Behind the bar, the challenge is also to fuse seemingly odd elements and develop new drinks based on layering temperatures, flavors and even textures. “Mixology is about cocktail creation and understanding how different tools and techniques can influence a drink,” said Charlotte Voisey, international bartender extraordinaire who recently consulted The Dorechester Hotel in London and Ian Schrager’s Gramercy Park Hotel on a scientific approach to their drink menu. Voisey is currently the U.S. brand ambassador for William Grant & Sons and looks after the mixology needs of the company whose portfolio includes Hendricks Gin, Reyka Vodka and Milagro Tequila. the science behind the bar stephanie miller How do you like your martini? That is, made from a blend of olive juice, vermouth and gin with xanthan gum and calcium chloride, dropped into a sodium alginate and water solution to form stable olive-shaped blobs. The ultimate goal, for mixologists like Voisey, is to take cocktail creation a step further by using scientific approaches to challenge conventional associations and invent new ways to mix the seemingly unmixable. “Applying science to cocktail creation,” she says, “allows us to think more deeply as to what happens to the molecular structure of liquids when they combine chemically.” Foams for example, are one of the cooking techniques that Voisey has put to use at the charlotte voisey’s apple slinger Rose Bar in the Gramercy Park Hotel. Riding the coattails of its culinary equivalent, molecular gastronomy, the basic idea of moto’s bacon martini apple juice and guava juice, it’s the cinnamon foam that actually delivers a separate, unexpected flavor component. “With the initial sip, the drinker experiences the unusual, soft texture of the foam and then the rich taste of cinnamon and apple,” Voisey said. “Mixology is the result of rethinking a classic combination like a traditional Mojito, and then challenging a bored palate by adding offbeat flavors.” }} 89 drink report c o n t i n u e d Sound complicated? To be a master mixologist today requires more than just a command of spirits and liquor. In fact, with access to exotic and rare ingredients as well as new technologies, mixing is becoming a part of fine cuisine with great attention paid to creating new formulas. In the kitchen this means mixing foods with similar chemical compositions to create unique, often non-obvious combinations. At Moto (945 W. Fulton Market, 312.491.0058), Chicago’s most molecular-minded restaurant, Executive Chef Homaro Cantu, describes it as similar to re-inventing the wheel. “What is cooking? It’s understanding energy or the lack thereof,” he says. “People are afraid because their mentality as a whole has been held back, we’re changing the way humans perceive food.” Did we mention that he has foreign and domestic patents pending on many inventions? Cantu also works closely with DeepLabs, a team of Chicago-based product developers with backgrounds in aerospace, moto mechanical engineering and animation (their office is conveniently located around the corner from the restaurant). Now, along with their culinary creations, Moto is known for their offbeat cocktails. “One of our best winter drinks was the Bacon Martini, an idea that came to me when I was cooking breakfast in the kitchen,” said Moto’s resident master mixologist, Mike Ryan, who has six years of culinary experience under 90 his belt. Dress code Girls don’t usually have too many problems with dress codes - almost anything goes. Don’t wear flip-flops out to a club though. I hate when girls do that. Each club in Vegas has their own set of little rules for guys, so it just depends. Jeans will work everywhere – I’d stay away from rocking t-shirts, unless you have a sport coat/jacket over it. Sneakers are 50/50 out here at most spots. As long as they’re hip and trendy and the rest of your outfit looks good, you shouldn’t have a problem at most places.
