is important for maintaining good health? It is known that
both types of fatty acids are essential for the body, but if the

ESSENTIAL FATTY ACIDS
Fatty acids are highly
important in ensuring that
all the body's functions,

are divided into omega-3,
-6 and -9. Omega-3 and
-6 are essential fatty acids,
which means that we are
not able to produce them
on our own, but have to get
them through our diet or as
a supplement. These fatty
acids are necessary for
the development of the
brain, the function of the
immune system and the regulation of blood pressure,
and it is highly important to
get them daily to ensure
optimal development.

A CHANGING DIET
Before the industrial revolution the Western diet had
about as much omega-3
as omega-6. The last 40-50
years have, however, seen
big changes in what we
eat. Today we consume a
lot of processed foods and
vegetable oils from i.a. soy,
sunflower and corn, which
have up to 80 % omega-6
and little or no omega-3.
There is also a notable
amount of omega-6 in feed
given to the animals that
are the source of the animal products we consume
– the same can be true for
feed given to farmed fish.
OMEGA-6/OMEGA-3 RATIO
An imbalance with a large
majority of omega-6 fatty
acids can be a big problem
to your health. Unfortunately
this is the case for most of
us, without us even knowing
it. Today the ratio between
omega-6 and omega-3
fatty acids in the typical
Western diet is between
10:1 and 20:1. This means
that we are getting up to
20 times more omega-6
than we are omega-3. The
recommended ratio is under
5:1. During the last decade
it has become general
knowledge that long-lasting
inflammations are a driving
factor in several chronic
diseases, i.a. cardiovascular
diseases, cancer, type 2
diabetes and obesity. A ratio
higher than 5:1 increases the
length and severity of inflammatory reactions. Balanced

Since the earliest times the olive tree has followed human
development and given rise to rituals and traditions. For millennia
olive oil has been used in beauty care and as medicine, and
today olives are known to prevent a number of diseases.

plenty of essential vitamins,
including vitamins A, B1, B2, C,
D, E and K, as well as iron.
he history of olive oil is connected
to the ancient civilizations around
the Mediterranean Sea. Already
then, as people were celebrating
the olive tree as a sacred tree, the benefits of
the precious oil were recognized. The Eqyptians, who were huge consumers of olive oil
during the time of the Pharaohs, imported
the olive tree from Crete and the oil was
used in burial rites and cleansing. But it was
the Phoenicians that, in the 16. century B.C.,
started to plant olive trees first everywhere
in Greece, and then along the entire coast of
the Mediterranean Sea. During the prevalence of the Roman culture, the amount of
olive groves and mills multiplied. Olive oil
was used in cooking in addition to medicinal
purposes and skin care. The oil has been
called "beauty oil" because of its ability to
soften and tighten up tissue, and give skin
more luster. The World's first eyeliner was
created in ancient Greece by mixing coal
and olive oil. In ancient Rome women used
olive oil on their skin and hair to protect
themselves from the sun, and for the pleasant scent. This was the green gold of the
gods, kings and queens before it became a
regular part of all Mediterranean life.
A HEALTHY DIET
A public study was done on the different
eating habits across Europe during the sixties. People on Crete had a much higher life
expectancy than those living in Northern Europe. The explanation given for this was that
their well-balanced diet provided protection
against cardiovascular disease.
Medical research done on olive oil has
documented that a high content of oleic acid

in the diet contributes to creating a good
balance between the healthy and unhealthy
types of cholesterol in our bodies. Some
focus mostly on the beneficial effects on the
cholesterol in the blood and the oil's ability
to reduce the risk for cardiovascular disease
by keeping the LDL cholesterol (so-called
bad cholesterol) in check and increasing the
LDL cholesterol (good cholesterol). Other
researchers study the oil's cleansing and
regenerative affect. Olive oil is referred to as
a "dietary supplement" because of its high
contents of monounsaturated fat, which has
a cleansing and protective effect on the blood
vessels and digestive system.
COLD-PRESSING
The olive tree is an evergreen tree that can
live up to 2000 years. Today there are over
750 million olive trees planted all over the
World. All olives are green at first, then
turning dark brown or purple as they ripen.
Olive oil is technically a plant juice, as the
olives are pressed to release their juice in the
same way as oranges, lemons and other fruit.
Cold-pressed "extra virgin" olive oil has
not been through chemical treatment.
Cold-pressed is the term that was used
for the olive oil produced long ago when
the mills used to press the olives were not
as powerful as today. At that time they
first did a cold-pressing, and then added
warm water to get more oil from the olive
pulp. Modern production equipment and
methods make it possible to cold-press the
olives more efficiently without needing to
add heat. Because of this today's oil retains
more of its nutrients and goes through less
deterioration than what it did before. •

t is wrong to say that we should eat
as little fat as possible. Fat is good,
and it is bad for our health to not get
enough. A lack of fat can be a cause
for obesity, and essential fatty acids are at
least as important as vitamins. Fat is not just
fat – there are good and bad fats. What is
important is to get enough of the good fats,
and a balanced ratio between them. Getting
enough of the good fats is one of the most
important rules for a healthy diet.
TYPES OF FATTY ACIDS
The most important types of fat are:
- Monounsaturated fat, for example olive oil,
omega-9
- Polyunsaturated fat – omega-6 and omega-3
- Saturated fat
- Trans-fat – created from vegetable oils in
the process of hydrogenating (margarine),
and is an unnatural form of fat that contributes to illnesses.
The two first types are fluid while the
second two are solid. A good rule of thumb
is to stick to fluid types of fats as much as
possible. Some of the fatty acids are called
essential because we cannot produce them
ourselves, but they are essential to our
health, both physically and mentally.
Usually we get too little omega-3 fatty acids
relative to too much omega-6 fatty acids.
Originally, in prehistoric times, we got
more omega-3 (from fish) through our diet.
Today we get considerably more omega-6
than omega-3. The ratio should be at least
1 omega-3 to 4 omega-6. The ratio is today
assumed to be generally at only about 1
omega-3 to more than 15-20 omega-6.
THE NEED FOR FAT
Fatty acids are extremely important for all
the body’s cells, vision, hormone formation,
repairing nerve damage and thus for the entire development and function of the brain.
They are also the raw material for i.a. the
substances that affect the blood’s ability to
coagulate and for the muscular cells’ ability
to contract. The brain’s fat is mainly (60-70
%) comprised of the fatty acid docosahexaenoic acid (DHA), which can be gotten from

fish oil.
Just like phospholipids, fatty acids can
be found in the cell walls where they are
responsible for the cells’ flexibility, mobility
and ability to absorb. There are also sterols
such as cholesterol, necessary for the production of new cell membranes and for the
production of vitamin D3 and hormones, in
the blood and in the cell membranes.
Cholesterol is essential to us, and we
should therefore not strive to have as little
cholesterol as possible. Even the so called
“bad” LDL cholesterol only becomes bad
after it is oxidized by free radicals, making
the LDL cholesterol turn rancid. LDL
cholesterol is in itself an antioxidant,
important for, among other things, repairing
arteries. It is also from LDL cholesterol that
we are able to produce many of our
hormones. We need to make sure we have a
balanced, healthy diet and to make sure we
get enough natural antioxidants.

from, for example fish, are
extremely important for all the
body’s cells, vision, hormone

to not get enough.
Refraining from smoking and eating
the right types of fat is one of the most
important ways to prevent cardiovascular
diseases. It has been shown that saturated
fat is not alone the cause for cardiovascular diseases, high cholesterol etc., but
that it is important to balance the fatty
acids so that we get enough of the healthy
fatty acids found in olive oil, fish, avocado,
linseed oil, almonds, nuts etc.
Fat is an important source of energy
which, when metabolized, gives more than
double the amount of energy than proteins and carbohydrates, but we do not use
all the fat we eat for our metabolism. If we
want to remain healthy and vital, we need
the essential fatty acids.
QUALITY
Oil used for nutrition should be pure and
of documented high quality regarding low
levels of dioxins and heavy metals.
Fatty acids can also be damaged, oxidi-
zed by light or oxygen, or altered through
strong heating such as the roasting or
pressing of seeds or olives at high temperatures. This is why oils should be kept in
dark and closed bottles, and stored in a
cool place. Olive oil is the exception, and
it can be kept at room temperature, as it
contains so many plant substances that
counteract oxidization. Saturated fatty
acids such as coconut oil and butter are
the ones that can best withstand heat.
For frying at high temperatures coconut
oil is a great alternative, since it contains
the energizing medium-chain triglycerides – MCTs.

FAT FOR THE MIND
DHA - Docosahexaenoic acid – is the
omega-3 fatty acid that has the most
powerful effect on the brain, including
the retinas. Fish oil is the best source
of DHA, but also EPA, linoleic acid and
monounsaturated fatty acids are good for
the brain. For example olive oil has been
shown to be beneficial for the memory.
A fetus’s brain does not develop properly
if the mother does not get enough of the
healthy fatty acids during her pregnancy.
The essential omega-3 fatty acids have
a great importance in transferring signals
from one neuron to another, and have
also been shown to help against depression and mania. Fish oil also seems to be
able to curb aggression and be beneficial
in cases of schizophrenia. According to a
study done at the University of Göterborg,
Sweden, omega-3 fatty acids can also
help restless children and children with
behavioral difficulties such as ADHD. Too
much saturated fat in relation to unsaturated weakens the brain and impairs
the ability to learn. Hydrogenated fats
(margarine) are not good either, the same
with trans fats and too many vegetable oils
with omega-6 fatty acids such as corn oil,
soy oil, grape seed oil, sunflower oil etc.
Fat is good, but it needs to be the
right type, there needs to be a balanced
relationship between the types of fatty
acids, they must be of high quality and
correctly treated. •

Menaquinone-7 is an
interesting vitamin that has
received a lot of attention
among researchers - both

The human body produces

The problem is that the small

oday there is an increasing
interest in research and understanding the physiological
aging process. New and known
ingredients’ abilities to influence the
aging process are being studied.
As we age most people get stiffer blood
vessels, either because of a loss of elasticity
or calcification of the veins. Several international studies show that vitamin K2 has a
favorable effect on cardiovascular diseases.
Vitamin K2 is a also a substance that
delays the development of age-related
osteoporosis. This is good news for people
who are concerned with health and who
want to exercise preventive selfcare – which
can lead to a prolonged life of higher quality.
VITAMIN K – HISTORY
Vitamin K was discovered by the Danish
researcher Henrik C. P. Dam at the Biochemical Institute at Copenhagen University already in the early 1930's. During
experimental studies on chickens fed with
a low-fat diet he discovered an unknown
substance that was necessary in order for
the blood to coagulate. The fat-soluble
vitamin was named vitamin K after its
function: necessary for coagulation.
Some years later the American researcher Edward A. Doisy managed to determine the molecular structure of vitamin K1
and synthesize it in the laboratory. Later it
was proven that several related molecular
structures could have the same function
- these were also called K-vitamins (K1,
K2). In 1943 Dam and Doisy were awarded the Nobel Prize in Medicine for their
discoveries. Vitamin K is a collective term
for a group of vitamins with more or less
common molecular structures.
STUDIES OF DIFFERENT FOODS
Today we know a lot about the effect of
vitamin K, as some population groups have
a diet containing much larger quantities of
vitamin K than others. In Japan, the dish
natto, with high concentrations of vitamin
K2/MK-7, is a traditional dish that has
been served for hundreds of years. Of the
European countries it is the Netherlands
that has been especially active in conducting research on vitamin K. This might
be due to the fact that the Netherlands is
known for its wonderful cheeses and that
the population eat a lot of dairy products
in general, including cheese. Researchers
in the United States are mostly focusing on
vitamin K1, but they are discovering that
vitamin K1 is not as efficient as K2.
VITAMIN K2 AND BONE HEALTH
Bone is formed and broken down continuously as long as we live, both to repair small
injuries and to make it possible for the body
to utilize the large calcium reserves the
bone tissue represents in order to preserve
vital functions. During childhood and
adolescence, the rate of formation is greater
than the rate of decomposition. After the
age of ca. 25-30 this changes, leading to a
gradual loss of bone strength and mass.
Several important studies conducted in
Japan have identified that vitamin K2 (as
menaquionone-7 or MK-7) in natto (bacterial fermented soya beans) has an especially
good effect on bone health. Women from
areas in Japan with a high consumption
of natto have proven to have less broken
bones and bone fractures and to have
generally better bone health than women
from districts where natto is less common.
Currently natto is the dish that is measured
to have the highest content of K2/MK-7.
Studies from Europe and the United States have confirmed the discoveries in Asia:
K2 is the most effective form of vitamin
K when it comes to bone health. Vitamin
K1 also has an effect, but due to the rapid
turnover of vitamin K1 in the body, much
larger doses of K1 are required to achieve
the same effects as smaller doses of K2.
The most extensive clinical study so far
on vitamin K2/MK-7 is from the Netherlands – a double blind placebo-controlled
study with a total of 244 postmenopausal
women (Ref. Osteoporosis Int. 2013). This
study shows that vitamin K2/MK-7 gives
a good effect, but that it takes some time
before the effect becomes apparent. It
was after two years of regular consumption of vitamin K2/MK-7, that a delay in
"natural" bone decay was documented.
A review of relevant studies that are
currently published show that vitamin
K2/MK-7 has a good effect on bone health
and is more efficient than vitamin K1,
but that measurable changes in bone indicators such as bone mass, mineral density
and bone strength show up after 2-3
years. Vitamin K2/MK-7 is therefore first
and foremost a preventative supplement
that should be taken regularly over time
in order to reduce the risk of age-related
changes in the bone tissue – which again
might lead to osteoporosis.
VITAMIN K2 AND CARDIOVASCULAR
HEALTH
The classic scientific article that ­confirms
the effect of vitamin K2 on cardiovascular diseases is the so called “Rotterdam
Study”, published in 2004. Originally
“The Rotterdam Study” was only one of
approximately 1000 articles that were
written after an extensive study was
conducted in a district in the Dutch city
Rotterdam. Already at the end of the
1980's almost 8000 men and women
above the age of 55 were recruited to
phase one of the population study. The
aim was to study a population for many
years to examine life style factors that
affect health, disease and cause of death
with a particular focus on cardiovascular
diseases and cancer. Since 1990 more
and more people have been included
in the study. In 2008 approximately
15 000 people (45 years old and older)
were included in the study. In the study
from 2004 approximately 4800 men
and women (who initially were healthy)
were monitored over a period of 10 years
with regards to cardiovascular diseases
and cause of death in relation to dieatry
consumption of vitamin K1 and K2 .
The results revealed a clear connection
between the dietary consumption of the
largest doses of vitamin K2 and a reduced
risk of cardiovascular disease and the
risk of dying from such diseases. Despite
the fact that vitamin K1 was consumed
in much larger doses than K2, there was
no such protecting relationship between

The findings in this part of the Rotterdam Study were confirmed in another
extensive population study, also from
the Netherlands (PROSPECT-­EPICcohort; Utrecht). This study includes
more than 16 000 women aged 49-70
who, when recruited, did not suffer from
any cardiovascular diseases.

8 years and the trend was the same:
even after adjustments for traditional
cardiovascular disease risk factors such
as age, obesity, smoking, high alcohol
consumption, diabetes etc., there was
a clear connection between the dietary
consumption of K2 and a reduced risk
for cardiovascular diseases. Vitamin
K1 once again did not demonstrate the
same good effect as vitamin K2.
Amongst a selection of 564 postmenopausal women from this study it was also
discovered that the women who ate most
K2 had less calcification of the arteries
supplying the heart muscle – a condition
that leads to stiffer veins and potentially to
for example a heart attack. Several studies
have now generated the same results:
Consuming foods with a high content
of vitamin K2 (some dairy products/
fermented cheeses and soy beans/natto)
has a positive effect on cardiovascular
health. The ­latest clinical study conducted
on vitamin K2/MK-7 revealed that K2/
MK-7 has a good effect on stiff veins – socalled arterial stiffness. Arterial stiffness is
shown in several studies to be an independent risk factor for developing cardiovascular diseases, and it occurs relatively
often with increased age. Loss of elasticity
in the veins is connected to the risk of high
blood pressure, a phenomenon that affects large parts of the older population.
A study that was published in Thrombosis and Haemostasis in February 2015
showed that the 120 women that took
vitamin K2/MK-7 for a period of three
years showed a reduction in arterial stiffness while the same amount of women
that received a placebo (capsules without
vitamin K2), show an increase in arterial
stiffness. Since arterial stiffness develops
over time, it is important that such studies
are conducted over enough time for the
effect to show itself.
The study was conducted under
controlled conditions and confirms the
previously mentioned positive effects:
regular consumption of vitamin K2
seems to reduce the risk of developing
cardiovascular problems. This study also
shows that women who already have stiff
arteries can reduce this development
with the help of vitamin K2.

itamins and minerals are among the
type of nutrients that must be gotten
through our diet if we want to avoid
deficiency diseases. They are also a
part of the body’s building blocks, but we do not
need them in as big quantities as for example
proteins, carbohydrates and fats.
Most of the 13 vitamins the body needs are
gotten naturally in small doses through our diet,
similar to how we get minerals, also called trace
elements.
If our diet, for various reasons, is not varied
enough, this can cause deficiency diseases. Similarly to how our muscles become less strong
if they do not get enough protein, the body
becomes less able to resist certain illnesses if it
is suffering from a lack of vitamins or minerals.
Just as with vitamin C, our bodies also need relatively large amounts of vitamin D. Our natural
source of vitamin D is the sun which, as you
know, can be hard to come by during the winter
months in Northern Europe. A lack of vitamin
D can cause tiredness and a weaker immune
system. Vitamin D as a dietary supplement is
then especially good during the darker parts of
the year, and can also provide relief for acne,
rheumatism, eczema and psoriasis.
Vitamin supplements in all forms can be appropriate, and they are used both to increase our
performance in physical activity and as a useful

makes climbing so fantastic, an enthusiastic Maren Eek Bistrup tells us. She has
established herself in Norway’s Kabelvåg, Lofoten, together with her husband Seth
Hobby. Together they run a wilderness guiding
company, the Northern Alpine Guides, offering
climbing courses and guided mountain climbing
treks for all experience levels.
– You are so close to the elements when you
are climbing. It is not only about the physical
and mental challenge, but also about complex
experiences with light, weather, the stillness and
view – and not least the relationship with your
climbing companion, Maren tells us.
POPULAR
Mountain climbing is a popular activity in strong
growth. New climbing clubs are continuously
popping up and new climbing areas established
everywhere in the country. Today there are over
170 climbing clubs and there are almost 16 000
registered members in the Norwegian Climbers’
Association. The actual number of active climbers is much higher, as climbing is not a typical
organized sport.
BALANCED FOR THE BODY AND MIND
When you climb you use your entire body. Your
core muscles, forearms, legs and buttocks get a
proper workout. Your motor skills are stimulated, and your balance is improved.
– You leave your daily worries behind when
entering the mountain-side, and you are totally
focused on the now, says Seth, who has over 15
years of experience as a climber.
– Climbing is a type of meditation that helps
you stress down and become a more balanced
person. You learn to control your fear, which
can also help you in other arenas of your life. It
gives you a larger view on life.
AN ACTIVITY FOR EVERYONE
Everyone can be a climber, young or old, man or
woman, says Maren.
– Children climb before they can walk, and you
take these climbing abilities with you. We had a
72 year-old client with us on Svolværgeita, and
that went really well!
Earlier climbing was a male-dominated sport,
but today the number of male versus female
climbers is quite evenly distributed. Women are
known for being somewhat more flexible and
better at the footwork than men, while men have
the advantage of their superior physical strength.
Tall people have a good reach, while shorter people often have more strength in their bodies, and
manage heavy moves easier. Everyone has to

WHAT ARE PROTEINS?
• Proteins are the body’s
building blocks, and
play an important part in
how the body functions.
Especially the muscles
depend on proteins. Proteins are also essential
to building and maintaining cells and tissue, and
to producing hormones
and enzymes.
• Proteins become amino
acids in the body, and it
is especially important
to get the so-called essential amino acids that
we are unable to produce
on our own, but that we
must get through our diet.
When amino acids are
absorbed, they are again
converted to proteins in
different parts of the body.
• The need for proteins is
often given in grams per
kilogram of body weight
per day. If a person weighing 75 kg should get 1
gram of protein per kilo
per day, he should then
get 75 grams per day.
• Dietary supplements of
protein can either consist
of whey protein (a bi-product of cheese making), or
soy protein. Whey protein
contains animal proteins,
while soy protein contains
vegetable proteins.

of the four energy-giving nutrients. The word ”protein” comes
from the Greek word ”Protos”,
and it means ”the most important” or ”
the first”. But what is it that proteins do
for us, and what happens if we don’t get
enough?
Proteins are long molecules that
principally are comprised of chains of
several hundreds of amino acids. 22 of
the amino acids are vital to our survival.
The body can manufacture some of these
as needed, but it is necessary for us to get
8-9 of them through our diet. These are
the ones we call essential amino acids.
Foods with high protein content are
meat, fish, poultry, eggs, dairy products,
lentils, beans, soybeans and tofu.
Protein is also the nutrient that is the
most filling in relation to calorie contents. You will also stay full for a longer
time if you eat plenty of proteins. If you
train intensely, it is especially important
that you eat the right amount of proteins.
Protein can also have a stabilizing effect
on blood sugar, which again can lessen
the craving for sweets or snacking. 1 gram
of protein is the equivalent to 4,1 kcal.
FUNCTIONS IN THE BODY
Proteins have many important functions
in the body. They contribute to, among
other things, the maintenance of muscles,
hair, skin, nails and other tissues and organs such as the liver, kidneys, intestines
etc. Several important hormones, such
as insulin, are comprised of proteins.
Enzymes are proteins, and without these
there would be no metabolism. The
hemoglobin that is in our red blood cells,
and which is used to transport oxygen in
the body, is also a protein. If you get sick
often, this could be connected to getting
too little protein.
TOO LITTLE PROTEIN
If you get too little of this important
nutritional group, you will begin to see
symptoms such as tiredness, repeated
infections, edema, hair loss and broken
nails.
TOO MUCH PROTEIN
Protein can be converted to fat, but it is a
costly process for the body, and requires a
lot of energy. Because of this one does not
usually become overweight from eating
too much protein, since protein actually
also stimulates the burning of fat. Protein
also stimulates the absorption of calcium
in the small intestine, and calcium is
good for the bone structure. If you have
problems with your kidneys, you should

FILL UP AFTER EXERCISE
Eating correctly after exercise will help
you recover faster, perform better
during the next session, and you will
get a greater gain from the workout you
just completed. According to Olympiatoppen, the Norwegian association for
top athletes, leaving out eating after a
workout will lead to slower recovery,
less effect from the workout, a weaker
immune system and a higher risk for
overtraining. So take care to fill up on
both fluids and nutrition.
The best is to combine something
with plenty of carbohydrates with
something with plenty of proteins. This
is because carbohydrates cause an increased insulin secretion, which in turn
stimulates the muscles to absorb the
amino acids you get through the protein.
MUSCLE BUILDING
The debate about the benefits of a
high-protein diet has been long lasting, the results of studies have been
divergent, and some claim that there
are no great benefits while others have
shown positive results. The fact is, that
it is difficult to measure the effects of a
high-protein diet in people.
There have, however, come some
crucial study reports, which show
significant advantages for those who
exercise or are physically active. The
use of protein-rich products and
increased protein levels contribute to
building and maintaining muscle mass,
to repairing damaged muscle tissue and
to preventing muscle loss.
One of the best protein supplements
on the market is derived from milk, and
is called whey protein. Several studies
show that an intake of whey protein
increases the muscle protein synthesis
significantly, and a study done by Reidy
(2013) showed that ingesting whey protein within an hour of strength training
resulted in a clear increase of muscle

you eat fruit is not in itself healthier
