It’s a question that has plagued artists and critics for centuries: What is art?
What links a cave painting, the words of Shakespeare, the pirouette of a dancer and the
sharp planes of a modern sculpture? Art has united and it has divided—yet through it all, it
has remained a decidedly human endeavor.
Poet Amy Lowell defined art as “the desire of a man to express himself, to record the
reactions of his personality to the world he lives in.” Throughout history, we have sought
visual and verbal symbols to articulate our hopes and our fears, to communicate the core of
our individual and collective beings. Art has chronicled our past, and it shapes our future.
In this issue, we celebrate artistic expression, both near and far. We take a look at furniture
designer Rebecca Justice’s custom collection, and admire the craft of master wood carver J.

the Impossible
Creations World Concierge crafts exclusive
memories for its elite clientele.

Want a private meeting with the pope? Need an elephant
for a personal parade? Creations World Concierge, an
international concierge company, can make it happen.
“There’s no request we cannot fulfill,” says Elizabeth Steen,
the company’s vice president. Based in Carlsbad, Creations
provides a host of services for the elite traveler that are far
from ordinary, from acquiring the Presidential Suite in a soldout five-star hotel in New York to procuring elephants for a
private villa’s parade in India.
“We take a client’s request and get it done as efficiently as
possible,” Steen says, adding that the company’s mantra is
simply “old-fashioned personal service.”
Coming from an hotelier family, Creations founder.
Kenyan-born Salima Ruffin, refined her own intuition for
excellence as an early pioneer, providing concierge services
at the Westgate Hotel in San Diego. After becoming the first
woman in the world to be invited to join the prestigious Les

Clefs d’Or, a hotel concierge professional association, Ruffin
formed Creations World Concierge.
Twenty years later, the company serves celebrities,
dignitaries, Forbes C-level executives and their families, and
even royalty, arranging four- and five-star accommodations
worldwide. While the vast majority of services are travelrelated, the company also offers chauffeured car services,
unavailable tickets to sold-out events, party and event
planning and security services for remote locations, all
delivered with impeccable attention to detail.
“We seek to satisfy both clients and any staff they travel
with. We need to make everyone happy,” Steen explains. “We
actually provide seven-star service.”
For example, while most clients travel by private jet to their
destinations, accompanying staff typically travel commercially.
Of course, Creations arranges all accommodations for staff
as well. The company can also arrange yacht travel and
should a client make a specific request—for example, a tennis
partner with a particular skill level—Creations “simply finds
an appropriate player at that location,” Steen says.
It’s no surprise that many of Creations’ clients have
remained loyal for more than a dozen years. And new clients
are acquired by referrals only, a remarkable testament to any
company’s excellence and measurement of overall client
satisfaction.
“We have good relationships with our clients,” says Steen,
who has been with the company for 20 years. “We enjoy
seeing the end results, knowing we have done something for
somebody.”
Steen recalls some recent high praise when a family attending
an Olympic event in London asked her: “Elizabeth, how did
you get these seats? They are better than Bill Gates’ seats.”
Steen worked tirelessly making multi-faceted arrangements
for several families for the Olympics, and remains busy
planning the ultimate vacations for her clients. “Right now
I’m working with a couple families planning a trip to Italy,
arranging four- and five-star accommodations, private tours
of the Vatican and a private meeting with the pope,” Steen
explains.
Steen chuckles when she recalls a memory of getting
elephants for clients visiting India: “It was a family with four
children that we arranged a private villa for in India. During
their stay, we acquired two elephants from the prince. The
four children painted the elephants and placed flower leis on
them and had a traditional Indian parade.”
With these kinds of memories, it is not hard to see how
clients remain so loyal to Creations World Concierge, where
no stone is left unturned in accomplishing the impossible.

Lux Art Institute redefines the museum experience.

oncealed in a lush wildlife preserve in Encinitas
lies Lux Art Institute, an innovative art museum
that allows visitors to “see art happen.”
Lux alters the standard museum experience by letting
visitors see artists’ processes firsthand. This engages people
and provides a “link between the visitor and the artwork,”
just as the institute’s founding director Reesey Shaw says.
Even for people unfamiliar with the world of art, the artists
are a “stepping stone between the visitor and the work,”
says Shaw, who considers the process of watching an artist
“modeling creativity” to be much more engaging than just
seeing the completed piece in a museum.
In 1998, a group of San Diego area art patrons and
philanthropists envisioned something more than a
museum—a place where visitors would be directly exposed
to the artistic process. The vision began to take shape when
Ramona Sahm joined the board as president and donated
$1 million in seed money. The founders named the new
endeavor Lux, Latin for “light,” and began working to build
a facility that would bring international artists to Southern
California to realize commissioned works on site and in the
public eye.
True to its mission, Lux draws different types of artists
from all over the world to live on location and use the
facilities to create art. According to Madamba, the artists
are “so dynamic, always changing—with someone working
in a new medium every time.”
From painters to sculptors, Shaw chooses a wide variety of
artists for each season. Past artists have included installation
artist Ann Agee, painter Emilio Perez and sculptor Lila
Yang, among others.
“It’s an art project,” she says of her opportunity to keep up
with her favorite artists as well as new, developing artists who
have “interesting, sometimes unusual, work.”
But it’s not just the studio art that’s worth seeing. The grounds
and architecture of Lux alone are a work of art. As you wind
up the hill, native trees, flowers and shrubbery cover five acres
in every direction.
The museum’s sharp, cube-like shape stands against
the backdrop of natural greenery and the soft, rolling
mountainside. Inside the studio, the wall-sized farm door
provides fresh air and a great view, allowing visitors to view
more than just one-of-a-kind art.

area set aside for the current resident artist. This chic living
space comes fully equipped with basics, as well as a computer,
laundry facilities and art library. Artists come and go as they
please. Some explore the city, hit the beaches or keep their
daily schedules, but with 24-hour access to the studio upstairs,
there is always time for creativity.
The scenic sculpture walk down to the soon-to-be Education
Pavilion displays the diverse talents of past artist residencies.
Exclusive art is surrounded by lavender, California buckwheat
and other native foliage that reaches its peak of fragrance
in the spring and summer, according to event coordinator
Grace Madamba.
Outside the main building stands “Home,” a work of art
by Turkish artist Ali Acerol that features a welcome grouping
of brick furniture. At the top of the hill, future home of
an Artist Exhibition, rests Lux’s own panther, sculpted by
a former artist-in-residency. The walk continues with some
ceramic birdhouses created from everyday objects like salt
and pepper shakers, broken china and old figurines.
At the end of the sculpture walk sits the bright green
modular building that has become the favorite classroom
to hundreds of students since the museum was established
nearly 15 years ago. But Lux staff is eagerly anticipating
the 2013 move further down the hill to the new Education
Pavilion, equipped with more lecture and studio space,
offices, storage and labs.
“We have that bursting-at-the-seams kind of feeling,” says
Madamba, who looks forward to the opportunities the extra
space brings, such as serving more students through field trips
and after-school classes.
While the classes take place in the education pavilion, the
studio itself is not an official school. Instead, children and
adults watch artists work, and, through their time in residency,
artists complete one or more pieces. This gives visitors the
chance to learn from a professional, developing their own
techniques, picking up pointers or just admiring the skill.
When asked if it is possible to teach creativity, Shaw says:
“That’s exactly what we’re doing at Lux.”

f surroundings are a reflection of self, then the Villa
de Justicia speaks volumes about its designer. Every
adornment in the Poway estate is fraught with meaning,
unapologetically lush and remarkably beautiful—a true
likeness of the woman who inspired every inch.
And when it comes to Rebecca Justice, it’s hard not to be
inspired. The wife of famed Major League Baseball player
David Justice, Rebecca is an accomplished model, mother
and furniture designer, who accepts her fame with poise and
grace.
“When you pay attention to detail, that’s what carries you
through with anything,” the Poway native said. “You have to
have that type of mindset.”
No detail has been spared in Justice’s home, which became
the springboard for her blossoming career as a high-end
furniture designer. Each heirloom piece showcased in the
home was lovingly and painstakingly designed by Justice.
“I would say that I discovered that, really, your dream
home is you, and that’s where your family resides,” she said.
“Every wall, every art piece, every console is me.”
And an appreciation of each piece requires an
understanding of Rebecca Justice—the designer, model and
mother.
Justice, the Designer
In 2007, Justice had just finished building her dream home.
Unlike other professional athletes, the Justices hadn’t built
the perfect home in each city David Justice had played.
Instead, they saved all their money to build the ultimate
home in San Diego, where they chose to live after David
retired.
But the 2007 wildfires razed all of the Justices’ hard work.

“Everything was burnt to the ground,” Rebecca Justice
recalled. “We lost everything, and based on that, I was
extremely depressed.”
It was from the ground that Justice began to rebuild her
dream home. And while the fires were a painful loss, Justice
was given the unique opportunity to start over from scratch,
scrapping the inconvenience of relying on other interior
designers.
“I honestly feel like I really never got what I wanted,”
Justice said. “I had to work with certain vendors, and then
my next-door neighbor would have the same thing. And I
was tired of paying an hourly fee. I felt like I was paying
attorneys.”
On the recommendation of a friend, Justice was put in
touch with Marie Cunning an internationally renowned
designer and founder of Andrew Morgan Furniture, a San
Diego factory famous for its hand-made wares. Justice gave
Cunning some furniture design sketches, which Cunning
produced to exact specifications.
“It really took me out of my depression and it became
an exciting project,” Justice recalled. “That’s really where it
came from—out of necessity. It took me out of depression
because it turned out the way I dreamed it would turn out.”
People’s appreciation for Justice’s “flair and unique style”—
marked by plush fabrics, ornate medallions and Swarovski
crystals—eventually lead to the Villa de Justicia Furniture
Collection. It involved a partnership with Cunning, without
whom “not one piece would be possible,” Justice said.
The Andrew Morgan Collection produces Justice’s
custom-made, one-of-a-kind furniture, among many other
styles.
“As soon as we met, I knew we were going to be friends,

and from that, it has developed into a great friendship as
well as a business relationship,” recalled Cunning, who has
been designing and manufacturing furniture in San Diego
for 30 years.
“The Rebecca Justice Collection is like no other in the
industry,” Cunning continued. “You would need to go to
the old castles of Europe to find something similar.”
Indeed, in developing her ornate pieces, Justice studied
Spanish décor, European chateaus and cathedrals, and
Tuscan villas. Her signature style is marked by fleurs-de-lis,
crosses and crowns.
“It’s a lot of royal inspiration,” Justice said. “There is a
Spanish-Mexican flair in my attraction toward furniture.
I love things that look distressed and old-world, especially
growing up with a lot of that religious, spiritual art all
around.”
One of Justice’s favorite pieces is her entryway piece, a
circular, hand-carved sofa with an angel at the center.
Rosaries that were blessed by the Vatican hang from the
angel’s hand.
“It just makes me happy every time I see it,” Justice said.
“Religion inspires me. When you grow up like that, it’s a
culture behind you. That’s what you know, and that’s that.”
Justice, the Model
Justice’s penchant for the bespoke and distinctive stems
from her background in fashion and modeling. A graduate
of Long Beach State University with a degree in design
and fashion merchandising, Justice worked as a professional
model for several years. She even founded Exotic Spices,
a professionally collaborated calendar featuring ethnic
women.
“It was to show the ethnicity and the beauty within that,”
Justice recalled. “It gained a lot of hype.”
When marriage and pregnancy grounded her modeling
career, Justice didn’t look back.
“I don’t miss the industry, and I don’t miss the lifestyle,”
she confessed. “But I do miss the art of it all. I actually
enjoy the fashions and creativity and artistry that’s involved
in modeling. I enjoy the transformation.”

Justice has channeled her love for creativity and artistry
into her furniture collection, which she admitted she is very
excited about.
“It’s for a reason. I don’t do things just to do things
anymore,” she said. “Fame is not our priority, but we like to
promote something that we love, like my furniture line… I
want to share this with people.”
said her main focus remains her three children, ages
12, 10 and 8.
“Nothing comes between me and my children,” she said.
“It’s not about balance. It’s about taking care of them first,
and everything else just falling behind that.”
Of course, Justice doesn’t do this alone.
“I’m blessed because my husband is retired, so we just live
our lives,” she said. “We have our projects and the charities

down with her family in her hometown. And the San

husband.
“Once you’ve spent a little bit of time here, you get
it… and you do just have such a great appreciation for
San Diego as a whole,” she said. “You have privacy
here, and people are really great. If we step out of this
area, it’s a different world for us. Here, we’re good.”
And despite her busy life and promising career, Justice
that we are involved in. My parents live with us, and my
husband is around—and he’s a hands-on father. I have a lot
of partnership.”
In the future, Justice said she plans to focus on expanding
her collection, especially her outdoor patio furniture, and
delving more into her accessory line. She’s also considering
fashion apparel. However, her focus remains on her
family—both now and in the future. “I don’t just have
my dream home,” she said. “I have my grandchildren’s
playground. I built this for the future.”

Master woodcarver J. Chester “Skip” Armstrong crafts lasting tributes to nature.

W
oodcarving is an exacting medium. Instead of the
quick flit of a brush on canvas, the artist wields
chainsaws and chisels to bring detail out of an
often-unwilling piece of wood. The craft is difficult, but the
results can be extraordinary. So it’s no surprise that a master
woodcarver like J. Chester “Skip” Armstrong finds himself in
such high demand.
Working mainly on a large scale, Armstrong creates impressive
wood sculptures that have adorned public places such as
hospitals and airports, private businesses and churches, and
prestigious homes, including Burt Reynolds’ and Michael
Jackson’s residencies.
Having been firmly ensconced in nature since early adulthood,
Armstrong finds that themes in his work largely reflect the
natural world and organic structures. “There is definitely a sense
of the primitive world, that is to say, the world of animal,” the
Northern California native explains. “The raw, cutting edge of
nature that doesn’t tolerate mistakes.”
His work, which ranges from sprawling multi-form landscape
pieces to small single objects, is always striving to look at nature
from a “non-anthropomorphic” perspective. “I’m trying to stay
away from the luminosity of the eye of the deer that sucks you
in on an emotional level,” he says, and suggests that his work

attempts to appeal to a more purely aesthetic sensibility.
Armstrong lives out the rugged American artist’s lifestyle. His
home sits on a 20-acre parcel of land that shares a border with
the Deschutes National Forest, right outside the small town of
Sisters, Ore.
“When I moved there, in the early 70s, there were 600 people
there,” he says of the area. “Now, there are 1,500. We finally
graduated to a movie theater.”
The region, which gets its name from the Three Sisters
mountain peaks, is very dry, getting less than 10 inches of rain a
year. The opposite side of peaks gets closer to 150 inches of rain
per year, but Armstrong prefers the dry eastern slope, partially,
he confesses, because “it agrees with the wood, which doesn’t
rot or mildew.”
Armstrong’s career started in earnest around 1974. He had
only just graduated from Berkeley with his degree in philosophy,
an encyclopedic knowledge of poetry and the solid conviction
that “words were a pretty weak attempt at getting to anything
that was truth-oriented.”
Following a short tour through Central America, where he
viewed some of the ancient ruins, Armstrong was impressed at
how “a whole culture was represented a thousand years after it
had collapsed by its artisans and craftspeople and sculptors.” He

soon came to the conclusion that sculpture “is the way to hold
on to antiquity.”
Armstrong started making charcoal sketches and clay
sculptures almost immediately, and wood sculpting followed
quickly on the heels of those two mediums. By the mid 1970s he
had been featured in the prestigious Southwest Art magazine,
and shortly after that found himself in a limo on the way to a
party at the mansion of television personality Bob Eubanks, as
a VIP guest artist. “That was kind of like, ‘when the star was
born,’” Armstrong recalls.
Woodcarving can be a very taxing art form. Creating a single
piece, taken from timber to completion, can range anywhere
from one to nine months. Often, the canvasses are giant pieces
of wood, weighing several tons, which must be hand-selected,
carved and assembled by the artist himself. There are several
different stages of production as well.
“I can delineate the forms and define a piece within a few days,
but when you talk about a finished piece, which is sanded and
detailed and all of that, that process can go on for months with
every piece,” he explains.
But the struggle of endurance is only one of the many obstacles
a master woodcarver must overcome. Uncertainty plays a major
role in the outcome of every piece. “Before you’re dealing with
the log, you don’t know what’s in there,” Armstrong says of
starting with a blank wood canvas. “You think you know, but
you don’t actually until you start opening up with the log.”
As woodcarvers lack complete control over their medium, they
are frequently compelled to, “react continuously to surprises, act
forcefully and commit,” Armstrong says.
There is also an element of danger inherent in the creation
process. The main tool of every master woodcarver is the
chainsaw. Its cuts are efficient and precise, but the woodcarver is
often compelled to use it in very unconventional positions.
“We’re not just cutting straight pieces of wood,” Armstrong
says of the process, “I’m shoving the tip into places where it has
no business being, and that tip has a rotary wrap that can easily
kick back and hit you in the head”—at which point, Armstrong
explains, “the game is over.”
After 40 years of work, Armstrong has made quite a name
for himself in the industry, but—like a true artist—he still feels
motivated to keep creating. It is rare for him to get through a
day without creating anything, because, in his own words, “I get
possessed by images and I want to see them.”
Much of his time is thus spent creating the images he sees in
his head. “I wake up in the morning, do my routines, and then
go into the shop,” he says.
It is, for all intents and purposes, just another form of addiction.
But it is one he claims, “is a great addiction to have, really.”

could be caused by TMD.
I
f you suffer from reoccurring or chronic migraines
or pain in your jaw, neck or shoulders, you may have
temporomandibular disorder—or TMD for short. This
condition has multiple causes, and there several treatments
available ranging from conservative to aggressive.
As the owner of Adriatic Dental in San Marcos, I have many
patients with various forms of TMD, which is also sometimes
called TMJ. TMD can be a tricky issue to manage because it
presents itself in so many different ways, it can be mistaken for
other conditions and it has a wide variety of causes.
TMD has to do with inflammation or injury surrounding the
temporomandibular joint (TMJ), which is the hinge joint that
connects your jawbone to the rest of your skull. The TMJ is
what allows you to open and close your jaw so that you can
speak, laugh and chew your food. The joint is very flexible,
and when it’s working, you probably never even feel it.
• An injury, such as a hard blow to the face or whiplash from a car
accident.
• Unconscious tightening of the jaw throughout the day.
• A misaligned jaw or palette.
• Osteoarthritis or rheumatoid arthritis in the TMJ.
Treatments
This best treatment for TMD greatly depends on the
particular causes and symptoms for each individual patient.
Most often, a dentist will start by recommending a conservative
treatment, and then progress to more aggressive treatments if
the symptoms continue.
Conservative treatments include putting ice or heat on the
TMJs, taking over-the-counter pain medication, and eating
soft foods. Additional treatments may include wearing a night
guard to prevent grinding during sleep, performing behavior

When attempting to diagnose symptoms, a dentist will take a
thorough medical history from the patient. They will perform
an exam, testing the patient’s TMJs for pain or sensitivity,
observing jaw movement and listening for clicking or popping.
The dentist may even take X-rays or an MRI to help with the
diagnosis.

Causes
While a lot of factors cause TMD, the most common causes are:
• Grinding or clenching the teeth (called bruxism), which often occurs
at night during sleep.

Estrogen
Also known as the female hormone, estrogen is a primary sex
hormone that balances with others like progesterone. When
estrogen levels are too high, estrogen dominance can occur—
and this can cause some critical issues.
Weight gain is a serious effect of estrogen dominance—and
estrogen dominance is a serious effect of weight gain, since
abdominal fat actually produces estrogen in both women and
men. This causes even more weight gain, as well as increased
cancer risk, infertility in both sexes, enlargement of the
prostate, lowered libido, impotence and erectile dysfunction.
Estrogen dominance in children shows up as early onset of
puberty and POS (polycystic ovarian syndrome). Abdominal
fat—sometimes referred to as “love handles” and “muffin
tops”—might as well be called the “third ovary,” since
estrogen produced by belly fat is a major contributor to many
disease processes.
Estrogen dominance can be caused by excess production in
the body, such as with HRT (hormone replacement therapy),
a drop in progesterone production, or excessive intake of
environmental hormones in meat injected with hormones
and xenoestrogens, which are estrogen-mimicking chemicals
found in plastics.
Testosterone
Largely considered a male hormone, women also produce
testosterone is small amounts. Excess body fat can cause
insulin resistance in both men and women, which causes a
woman’s ovaries to produce more testosterone.
Testosterone is an androgen, responsible for a man’s deep
voice, body hair and fertility. Too much fat on a man’s body
causes a decrease in testosterone and an increase in estrogen,
resulting in more feminine characteristics such as breast
development. Low testosterone levels in a man is associated
with Type 2 diabetes, regardless of his age, race or level of
obesity.
Insulin
Insulin usually makes us think of diabetes and sugar. Insulin
is the fat-storage hormone, and when there is too much of it,
we store fat. With too much insulin for too long, our cells can
become resistant to the regulating effects of insulin, which is
the precursor to Type 2 diabetes.
For years, many followed a low-fat, high-carbohydrate diet
with lots of processed foods. Remember the non-fat cookies,
breads, pastas and treats? They seemed like the answer to our
American weight problem—but the problem was not the high
amounts of fat in our processed foods alone, but the excess of
carbohydrates. Now we have the issue of high fructose corn
syrup in massive amounts in our processed foods, wreaking
metabolic havoc. What is most concerning is that our children
are consuming much of this metabolic poison and the results
are in: American kids are getting fatter and sicker every year.
The problem we see today in the United States is large
amount of sugar being consumed in the form of processed
foods that may not even taste sweet! It helps to remember that
four grams of carbohydrate is equal to a teaspoon of sugar,
and the body will respond to sugar in the blood by increasing
insulin levels. This is a good thing, unless there is sugar
overload, causing an “insulin spike” and excess amounts of
insulin circulating in the blood.

Cortisol is a stress hormone produced by the adrenal
glands that are located on top of the kidneys. Cortisol
plays a major role in metabolism and is the key player in
the fight-or-flight response critical to survival, especially
in escaping from a predator… such as a tiger.
In our present-day lives, cortisol is secreted when we are
cut off in traffic, receive notice our company is laying off
employees or watch violent television shows. Chronic or
long-term stress increases levels of cortisol, which causes
weight gain and makes losing weight more difficult.
Cortisol increases fatigue and decreases testosterone
in both men and women, leading to muscle loss and a
slow metabolism. Cortisol stored in fat cells deep in the
abdomen—visceral fat—stimulates more weight gain.
Leptin
Also called the “fullness hormone,” leptin is responsible
for signaling our brains to tell us we are full from eating.
Leptin, which stimulates hunger receptors in our brain,
is produced mostly by our fat. The level of leptin in the
body is directly related to the amount of fat we have.
Leptin levels also increase with an increase in insulin
levels. The problem arises when the body becomes
resistant to leptin because of chronic overeating. When
this happens, it takes more and more leptin for our brains
to know that we are full. When we gain fat, our bodies
create more leptin, but we become resistant to its effects.
High-fructose diets can also induce leptin resistance
because the brain doesn’t get the signal to stop eating.
Think of the supersized sodas. It can be difficult to drink
20 ounces of water at one sitting, but why is it easy to
drink a 20-ounce soda with a super-sized hamburger and
french fries? Leptin is screaming “I’m full!”—but no one
is listening.

naturally and without drugs, shots or procedures.
One of the most important things we can do is to not
allow ourselves to become overweight. Exercise and
eating low carbohydrate and adequate protein diets rich
in vegetables, whole grains, lean meats and moderate
amounts of fruit—while foregoing the readily-available
snack foods—can help fight fat. Planning meals ahead
of time and limiting dining out to special occasions, or
only once per week is helpful in controlling our intake of
sugars and empty calories.
Knowing the risks of excessive body fat should be
enough to inspire us to take control of what we put in
our mouths, and also what we put in our refrigerators and
pantries. If our eating and exercise habits don’t change,
the Center for Disease Control has estimated that two out
of three children born in the year 2000 will develop Type
2 diabetes in their lifetime. If we don’t buy it, it makes it
harder for our children to consume the foods that may
make them sick.
And sleep on it, rather than lose sleep over it. Sleep
well, sleep more and stop stressing out! Knowing what
we can control and what we cannot takes us a long way
in reducing our stress levels. Avoid stressful television and
stressful conversations before bed, and indulge in warm
baths and a cup of herbal tea rather than a few cocktails,
since alcohol converts to sugar, causes us to store fat and
disrupts sleep.
Finally, choose organic as much as possible and avoid
toxic chemicals in food, household products and plastics.
We don’t need to be perfect, but never be afraid to seek out
the help of a trusted professional to help you balance your
lifestyle and determine what more you can do to improve
your health. Keep in mind that wellness is a process—

Sushi on the Rock has something for everyone.

estaurants located in trendy places face a unique
balancing act of trying to appeal to tourists and
regulars alike. And when you’re located in downtown
La Jolla, it’s like performing in the Olympics.
But if it’s a competition, then Sushi on the Rock is the
Gabby Douglas of restaurants—an all-around gold medalist
with something for everyone. Equally chic and approachable,
there’s a reason this hot spot has brought back regulars for
nearly two decades.
“When you walk in here, it’s like you’re in our house,”
says Celeste Johnson, who co-owns the restaurant with her
husband, restaurant founder Paul Johnson.
Created by Paul Johnson and executive sushi chef Robert
Cassidy, the menu at Sushi on the Rock is ambitious and allencompassing.
“We infuse different spices and flavors, but keep it simple,”
Cassidy explains.
The restaurant serves a full gamut of sushi, ranging from
California rolls to live sea urchin. It’s equally prepared to serve
the Midwest tourist who has never tasted sushi alongside the

local aficionado. There’s also cooked and non-seafood dishes to
please every palate, and the staff is quick to make suggestions.
“We like to sit down with the customers,” she adds. “It’s like
a family—there have been very few times when I don’t know
everyone in the restaurant.”
The family feeling has even crept onto the menu, which
features signature rolls named for customers. Ozstar’s Roll—a
poplar combination of tuna, yellowtail, salmon, with cream
cheese, serrano chilies and cucumber—was named for
real estate guru and loyal customer Ozstar DeJourday. And
Ashley’s Roll—tempura fried soft-shell crab, sprouts, gobo,
avocado and cucumber layered with pan-seared sesame tuna,
and served with a whole grain mustard sauce—is named for
Ashley Napper—the restaurant’s floor manager and the “heart
and soul” of the restaurant, according to her sister Celeste
Johnson.
First-timers will feel part of the family right away. For starters,
try Coco’s Korean Short Ribs, marinated short ribs with
kimchee and sweet mashed potatoes. And fish-lovers must taste
the Golden Monkey, fantastically tender yellowtail sashimi
served with yuzu ponzu, rayu and a side of seaweed salad.
And also not to be missed on the specialty sashimi menu is the
Tijuana Tataki Sashimi, seared tuna served with a delicious
spicy garlic, serrano chili and cilantro ponzu sauce.
While there’s the expected fresh selection of sushi and sashimi,
don’t miss out on Sushi on the Rock’s specialty rolls. Nothing
tops off a day sunning on the cove then a Coco Roll—coconut
crusted shrimp, cucumber, avocado and sprouts topped with
eel sauce and toasted coconut—or a Sunkist Roll—shrimp
tempura, spicy krab, cucumber and avocado layered with
salmon, green onions and zuperman sauce.
If you’re into sharing, there’s no better choice than The Don,
the restaurant’s most popular specialty roll. Grilled shrimp,
asparagus, krab, avocado, sprouts and cucumber are layered
with seared tuna and served with that amazing spicy garlic and
cilantro ponzu sauce.
If you’re craving something cooked, try the Lobster Mac
N’Cheese or the Blackened Salmon with Ponzu Butter Sauce.
And landlubbers will love the tender Mongolian beef, sautéed
with red chilies and green onions.
Top it all off with a prime selection of sake, such as unfiltered
cold Sayuri or filtered Hakutsuru Superior. The restaurant
encourages lingering—whether it’s enjoying the ocean view
from the patio or celebrating a significant event.
“People like to come here to celebrate special moments,”
Celeste Johnson says. “There’s a lot of competition out there,
so we’re very, very blessed.”
For a completely unique experience, Cassidy recommends
sitting at the bar.
“All our chefs are very talented, and each chef has a unique
flair,” he says. Sitting at different stations at the sushi bar
lends itself to unique experiences, especially when you order
the chef ’s daily selection. Its this variety that has drawn back
customers, year after year.
“Our Customers continue to come back to enjoy artistic
creations in a intimate setting,” Cassidy says. “We continue
to strive daily to give our customers the best of the best.”

Art N Soul touches the community through art.

P
ablo Picasso once credited art with washing “away from
the soul the dust of everyday life.” And one gallery in
downtown Encinitas has mastered this cleansing ritual,
using the proceeds from art sales to benefit local charities.
Showcasing the distinctive talent of local artisans, Art N Soul
on 101 is a visual treat, housing impressive, yet accessible,
creations. The gallery boasts an eclectic display of one-ofa-kind pieces, including hand-crafted jewelry incorporating
antique watch pieces into pendants, clocks fashioned from
vintage vinyl and whimsical sculptures designed from recycled
materials. Forged with imagination and ingenuity, the pieces
combine aesthetic quality with environmental consciousness
by using reclaimed materials.
Though the art alone is enough to warrant a visit, Art N Soul’s
partnership with the community is equally engaging. In 2007,
co-founders Cindy Blumkin and Paige Perkins declared that
the gallery was not-for-profit. After artists receive commissions
for their work, the remainder of the proceeds is donated to
local charities.
Blumkin and Perkins, who keep the store running along with
a staff of volunteers that shares their commitment to the local
art community and to the charities that benefit from their
efforts. Retirees, high-school students and local artists make up
the volunteer staff that allows Art N Soul to donate proceeds
to local grassroots organizations.

“In choosing smaller local charities, the amount of money
we donate really has an impact and makes a big difference in
what they are able to accomplish,” Blumkin explains.
Every two years, the gallery rotates the recipients of its
donations. Recent recipients have included Leap to Success,
Conner’s Cause, Angel’s Depot and the North County
Humane Society--all San Diego-based organizations that
represent a wide range of local needs.
For example, the mission of Leap to Success is to “empower
women who have overcome adversity to become leaders in
their lives, families and communities.” Serving women who
have been victims of domestic violence or become homeless
from varying hardships, Leap to Success uses a holistic
approach to provide women the tools and support necessary to
reclaim themselves as vital members of the community.
In contrast, Conner’s Cause was founded 15 years ago in
memory of Conner Champ, a beloved San Diego toddler who
lost his battle with a terminal brain tumor. The purpose of
Conner’s Cause is “to ease the burden for families who have
children with life-threatening illnesses.” The organization
assists with out-of-pocket expenses that can debilitate families
caring for children with terminal illnesses or permanent
injuries.
And Angel’s Depot provides a little-known, but crucial, service
to ensure San Diego’s elderly do not go hungry. Thousands of

local seniors live in poverty, and Angel’s Depot supplies many
of them with well-balanced meals. It also acts as a community
outreach program that informs the public of the dire needs of
many seniors who are also “struggling to maintain their dignity
and independence.”
Finally, many services of Ranch Coastal Humane Society
remain unseen. In addition to animal adoptions, the
organization also acts as a safe house for pets that are victims
of domestic violence. It also has special senior adoptions and
hosts Pets for Patriots, which offers adoption discounts to
military personnel and continuing-care discounts with local
veterinarians.
These are just four sectors that have been touched by the
ongoing efforts of Art N Soul, a gallery dedicated to washing
away the dust from the soul of the local community.
Art N Soul hosts quarterly public events introducing the
artists, and presents selected charities with their donations at
