History:
Hostellerie de Plaisance is situated in the upper part of Saint-Emilion
under the shadow of the beautiful steeple. Once a monastery, this
superbly appointed hotel offers excellent quality accommodation in an
elegant and refined environment.
The Plaisance has been faithfully restored to its 18th century origins.
Chantal, Gérard Perse and their team have turned this setting,
steeped in history (Unesco World Heritage Site) into an elegant,

There are 14 deluxe rooms. They are luxuriously furnished in an
ancient and modern style. Among them, there are 4 with terraces and

There are also 4 suites (60 at 75 m²). 2 of them have separate saloon
with a convertible sofa that can hold 2 adults and 2 children.

In the heart of the historic region of Périgord, famous thanks to its
ancient castle perched in the top of hills and its medieval cities, is
located Domaine de Rochebois, an elegant 19th century residence,
turned into a splendid luxury hotel.
Mosaics and vegetation give this hotel a Toscane touch. This luxurious
hotel is a magical place with enchanting gardens.
The hotel, adjoining a magnificent private 30-hectare
park, benefits from an outdoor infinity pool where

July 10th: Medoc Area
09.00 am: Pick up at Hostellerie de Plaisance and drive to the left
bank of Bordeaux vineyard.
10.30 pm: Private visit and tasting of Chateau Mouton Rothschild,
Pauillac 1er Grand Cru Classé where you will try wones from the 3
estates of the family (d’Armailhac, Clerc Millon and Mouton).
Chateau Mouton Rothschild
Chateau Mouton Rothschild vineyard is mostly situated on a hillock
called “Plateau de Mouton” which rises 27 meters above sea-level.
The vineryard is planted on very deep gravelly soil with typical
varieties of the region: Cabernet Sauvignon (80%), Merlot (16%),
Cabernet Franc (3 %), and Petit Verdot (1 %). Cabernet Sauvingon
always predominates and gives Mouton its rich tannions, its wealth of
aroma and flavour and ageing capacity. While Merlot, its inseperable
companion, brings suppleness, roundness and exceptional length.
12.30 pm: Light lunch at Chateau Cordeillan Bages (2 Michelin stars
restaurant) in the heart of Pauillac vineyard.
2.15 pm: Visit and tasting at Chateau Palmer, Margaux Grand Cru
Classé.
Château Palmer
Finesse and elegance, typical of the great wines of Margaux, are the
permanent trademarks of Château Palmer, characterized by the
softness and refinement of silk, the warmth of velvet, and the leather
of noblesse. The subtle balance between aromatic richness and
powerful yet always restrained tannins makes Palmer a wine of
incomparable charm, even when very young. Its length leaves the
persistent memory of a heady mix of sensations and emotions.
4.30 pm: Drive back to Saint Emilion.
Wine Expert:
Patrick was a chef for 16 years in Brazil, Nicaragua, Canada and
Belgium. When his interests turned from food to wine, he returned to
his native France to learn to make wine in Beaune Burgundy, where
he stayed for 5 years. In 2002, while living in Paris, he tasted a bottle
of Château Cheval Blanc and decided to move to Saint-Emilion. He
draws on his culinary expertise to personally oversee the tour’s daily
food and wine pairings.
July 11th: Saint-Emilion Area
10.00 am: Private class with your English speaking wine expert, in the
heart the medieval village of Saint Emilion, in order to understand the
different appellations and classifications of Bordeaux.
11.00 am: Private visit and tasting of Chateau Pavie, Saint Emilion
1er Grand Cru Classé.
Château Pavie
Château Pavie is a winery in Saint-Émilion in the Bordeaux region of
France. It lies on the plateau to the southeast of St Emilion village. In
2012 it was classified in the first rank of the Classification of SaintÉmilion wine, as a Premier Grand Cru Classé (A), after having
previously been a Premier Grand Cru Classé (B) since 1954.
12.30 pm: Gastronomic lunch in “Chateau Grand Barrail”
3.00 pm: Private visit of Chateau Beauséjour Duffau Lagarosse,
Saint Emilion 1er Grand Cru Classé and discovery of their
underground caves.
Château Beau-Séjour Duffaut Lagarosse
Château Beau-séjour is located on the left bank of Dordogne River, at
the top of the Montagne Saint-Émilion hillside, 2.5 miles from SaintÉmilion.
The age of the vines (some plots were planted in 1901, 1902, 1934
and 1946!) and this outstanding chalky-clay soil produce a distinctive
wine, ideal for ageing, magnificently produced following the guidelines
laid down by Stéphane Derenoncourt since the vintage 2005.
Château Beauséjour, created from this outstanding terroir, has now
become one of the greatest Bordeaux wines.
04.00 pm: Back with your guide for an Old Vintage Tasting.
5.00 pm: Drive back to your hotel.
The Arcachon Bay
8:30 am: Meet your English speaking licensed guide driver in the
lobby of your hotel and drive to Arcachon Bay.
Start your day with the famous Pyla Dune, the highest sand dune in
Europe.
Rising 107 meters above sea level, 100 to 117m high, 2.7km long,
500m wide, 60 million cubic meters of sand grains, Grand Site
National since 1978.
Once you reach the top, all your efforts are rewarded by breathtaking
panoramic views over the whole of the Arcachon Basin. Down below,
stretching between ocean and Bassin lies the vast Arguin Sandbank,
where a variety of species of seabirds live together in perfect
harmony.
The visit continues with The Bird’s Island, nowadays, as its name
suggests, this strip of land is a birds’ paradise. It has been a listed
Natural Site since 2008, and almost 300 species have been observed
there, including egrets, Eurasian curlews, moorhens, teals, ducks and
barnacle geese, all of which arrive each year to spend time
surrounded by stretches of heath and Japanese acacia. Only a few
wooden huts bear witness to the presence of mankind.

The Arcachon lagoon is one of the major European centers for oyster
production, covering almost 1800ha/4447acres of the lagoon’s
surface. The Bassin is the main regional breeding centre and supplies
seed oysters or spats to other oyster beds in Brittany, Normandy,
Languedoc and the Netherlands.
Stop in one of the typical oyster village with its narrow streets and its
oyster huts: taste oysters around a glass of white wine! Keep on our
boat ride to look at the long and thin promontory of Cap Ferret at the
entrance to Arcachon lagoon. The area has been developed today in
a seaside resort, with holiday villas scattered among the pines.

July 15th: Caves of Lascaux and Terrasson gardens
09:00 am: pick up at your hotel by your English-speaking guide-driver
and drive to Lascaux.
You will discover the caves of Lascaux II. This cave of medium size
for the region extends for about 200 metres and is made up of
alternating chambers which are more or less circular, and passages.
An old legend says, there was an underground passage from the
Montignac castle under the Vezer and the Lascaux estate with hidden
treasures. Four teen-agers were looking for these treasures when on
the 12th of September 1940 they had found a small entrance into a
cave which concealed real riches - magnificent rock paintings dated
by the late Palaeolithic. These are depictions of different animals (
horses, bulls, deer, ibex, as well as members of the cat family, a bear,
a rhinoceros and even an imaginary creature commonly known as the
" unicorn"), and unlike figures in other caves which, at first sight, look
static and almost lifeless, those in Lascaux are full of motion and
harmony. Abbot Glory had been working in the cave from 1952 up to
1963 and found more than 2000 depictions on its walls.
These paintings are accompanied by enigmatic symbols.
The organic debris found in the Lascaux cave has been dated at
around 15000 years BC, which ties in with other finds that have been
attributed to the early Magdalenian period.
There is a very interesting fact about the drawings: the hunts were
drawn on the wall like a comic strip. The story of the hunt goes from
the left to the right, until the prey is captured. These pictures were
obviously used to tell stories.
In the afternoon,
Visit Les Jardins de l'Imaginaire in Terrasson-la-Villedieu, one of
the most famous contemporary gardens in France at the moment.
It is designed by the French-American landscape architect Kathryn
Gustafson. The concept of this garden appeals to all the senses and
includes rose gardens, water gardens with beautiful willows, and
fountains decorated with ferns.
The Jardins de l'Imaginaire will lead your imagination to randomly
stroll around the 13 thematic gardens: the sacred forest, the vegetal
tunnel, the elementary gardens, the terraces, the green theatre, the
winds' axis, the perspectives, the water gardens, the rose garden, the
springs' path, the green sculptures, the rivers, the greenhouse.
By 5:00 pm: drop off at your hotel near Sarlat.
July 16th : Cooking class in Sarlat
10.00 am: Private transfer from Vitrac to Sarlat.
The city of Sarlat is a living showcase, featuring some of the best
examples of medieval and Renaissance architecture found in the
Périgord. On market day, visiting the Maison de la Boétie, Sarlat’s
finest house; the fountain of Sainte-Marie; and the fourteenthcentury Hôtel Plamon.
10.30 am: Enjoy a private cooking class with an English-speaking
Chef followed up by lunch.
2.00 pm: private transfer from Sarlat to your hotel in Vitrac
July 17th : Ballooning in the Perigord region
7.00 pm: Pick up at your hotel near Sarlat and transfer to the meeting

A tour, ballooning over giant oaks, vineyards, chateaux and other
marvels of the Perigord.
‘This is the most beautiful village of France!’ - President Poincaré’s
reaction on arriving at La Roque Gageac. The take-off is from this
magnificent medieval cliff top village and as we cross the Dordogne
river and follow its course you can watch the canoeists down below.
Giant oaks, vineyards, chateaux and other marvels of the Perigord
Noir await you.
