Quinoa with leek and carrots
Ingredients (for 4 people)

· 500 g carrots, peel and cut into 1 cm
large cubes
· 500 g leek, wash and cut into 1 cm rings
· 200ml vegetable stock
· 1 tsp thyme, chopped
· Extra virgin olive oil
Preparation
Heat up oil in the DUROMATIC® and cook
carrots and leek lightly in it. Add quinoa
and vegetable stock and close the lid.
Cook 8min on level 1.
In a large bowl mix the quinoa and
vegetables together with the cubes of
grapefruit/blood orange. Season with
thyme, pepper and salt. Finally, sprinkle
with chives and pine nuts.

Strawberry jelly
Ingredients
· 1 kg Strawberries
· 50 g Sugar
Prepare
Fill the pressure cooker with 500 ml of water.
Insert the juice bowl into the pressure cooker.
Layer the clean fruits or berries and sugar in
the perforated fruit bowl: see table. Note: if
the juice is destined to be turned into jelly, do
not add any sugar (only at the stage of jelly
preparation).
Place the fruit bowl onto the juice bowl.
Place the lid on the pressure cooker and close
correctly (refer to the DUROMATIC® usage
instructions by Kuhn Rikon) and place onto the
hotplate.
Heat at the highest temperature until the 1st red
ring appears.
Reduce the heat (to stop the water from
vaporising before the completion of juice
extraction)!
The cooking time commences when the 2nd red
ring becomes visible (red ring must only be just
visible).
Cooking time: 10 min. Allow the pressure cooker
to cool, until it is no longer pressurised (refer to
the DUROMATIC® usage instructions by Kuhn
Rikon).
For juice

Cut the fennel in strips, blanch in
salted water, plunge in ice-cold
water and drain. Heat the oil in the

at moderate heat for 1 min. Add

Preparation
For the sauce: Bring coconut milk, lemongrass, soy sauce
to the boil, simmer for 4 minutes, then puree using a
blender and pass through a sieve. Place aside. Heat the
sesame oil in the wok, fry portions of the chicken breast
strips in hot sesame oil until golden; season with salt,
freshly ground pepper and keep hot. Sauté the onions
in the remaining sesame oil at a medium heat, add the

into the fondue pot
Heat whilst stirring

Ingredients (for 6 People)
Preparation
Cut the bread into bite-sized cubes.
Grate the Gruyére, Appenzell and
Emmental cheese with the coarse
side of the grater. Place the cheese
in the fondue pot. Sprinkle the
FRUQ³RXURYHULWDQGDGGWKHZKLWH
wine, lemon juice and garlic cloves.
Heat the mixture on high until
the wine starts to boil, and then
turn down to medium heat. Stir
continually with a spatula. When
stirring, make sure that the spatula
always remains in contact with the
bottom of the fondue pot so that
the cheese does not catch and
burn. As soon as a creamy mass
forms, increase the heat so that
the fondue bubbles up. Allow to
simmer for 1 – 2 minutes and season
to taste with pepper, nutmeg and
paprika.
Light the burner in the rechaud
and place the fondue pot with the
simmering fondue mass on top of
it and immediately continue to stir
with the bread cubes skewered on
the fondue forks.
During the meal make sure that the
cheese mass is thoroughly stirred
on a continuous basis. Now all you
have to do is select your favourite
accompaniment (see tips for
cheese fondue) and the cosy
get-together around the fondue
