NEWSLETTER

WE HAVE A FRESH NEWSLETTER AND A NEW DIRECTION
Welcome Neighbor!
This
newsletter,
“Neighbor,” is our community’s
newsletter.
While the Social
Committee puts the Neighbor
together and it is edited by the
Board, all have an open
opportunity to provide input,
suggestions and even submit
articles/stories.
The intention is to
have this become a semiregular publication… that is,
there really (at this point) is no
set circulation schedule or
deadlines for submissions.
The current goal is have an
edition every two months or so;
but the level of interest (both

high and low) will be the
greatest driver. If many find
the Neighbor interesting and
helpful, we may publish more
frequently – especially if there
are submissions provided by
“neighbors.”
We hope you enjoy
the Neighbor and we look
forward to getting your
feedback on it… please let us
know what you think and enjoy.
This Year’s Approach
As we head into
spring 2009, it seems an
appropriate time to introduce
the guiding tone and attitude of
this year’s Lake’s Edge Board
of Directors. While it has taken
a little time for us to gather
ideas and communicate them

This year’s Architectural Committee (‘AC’) will also take a new approach. Foremost, it will attempt
to take a firm, but very “common sense” direction in its assessment of the neighborhood. This AC
has also agreed with the HOA Board that it will not communicate its findings directly... but, rather,
those will be done through the HOA Board. The intention is to eliminate some of the feelings of
individual homes being singled out and to limit inconsistencies. The HOA Board will also notify the
neighborhood at large how our homes are doing as a whole. Finally, both the AC and the HOA
Board will regularly look to the newly formed Community Forum for guidance on AC (and other)
matters. You can expect more communication on the AC as the plans become more formalized.

Meatlovers just throw your favorite chili meat in there.
OK, here is the best tasting Mexican stew you have ever had!
The real name is "Chipotle, Corn, and Black Bean Stew" and I got it from "Vegan
with a Vengence", an awesome vegan cookbook by Isa Chandra Moskowitz and
her cat, Fizzle!

EASY CHOCOLATE PIE
Submitted by Dolores Stephens
1 Large Hersheyʼs chocolate bar with
almonds 1 (16 oz) ctn. Cool Whip
1 Keebler graham cracker pie crust
Melt chocolate in double boiler over medium
heat.
Stir in Cool Whip.
Pour mixture into pie crust and freeze.
2 tbls olive oil
1 lg onion, quartered and thinly sliced
3 cloves garlic - (I just smash them and throw them in)
2 tsp cumin
1/2 tsp salt
a few dashes of black pepper
2 chipotle peppers (canned), drained and chopped
1 (28 oz) can crushed tomatoes
3 C water
4 russet potatoes cut into 3/4 in dice
2 carrots, peeled cut into 3/4 in dice
1 cup corn (if using fresh, it's 2 ears)
1 (16 oz) can black beans, drained and rinsed
1 cup fresh cilantro, lightly packed, torn into pieces (stems and all)
finely grated zest of 1 lime
juice of 1 lime
In a stock pot, saute onions in oil over moderate heat for 5 minutes. Add garlic,
cumin, salt, and pepper. Add chipotles, tomatoes and water and stir. Add
potatoes, carrots, cover, bring to boil, and simmer for 20 minutes.
Uncover, add corn and beans. Thin with more water if needed. Cook uncovered
for 5 more minutes. Add Cilantro, lime zest, lime juice. Let sit fop at least 10
minutes. Serve!!!!
The best thing about this besides the taste is that it only uses ONE pot!
